We can do that again! It is so exciting. Let’s keep vigilant and keep washing those hands to make this go right and keep our freedom. Royalty Revered Celebrating 150 years since the opening of the Royal Albert Hall. It’s somewhat unfair that a landmark anniversary of the Royal Albert Hall’s long legacy won’t be celebrated on the exact date. In fact, when David Arnold – he of Bond, Independence Day and Sherlock soundtrack fame – takes to the stage in mid-July, it will be over three months late, given the South Kensington venue first opened its doors on March 29th 1871. The spectacular dome, which measures 20,000ft, sits above an auditorium that boasts a capacity of 5,272 people and is, of course, named after Prince Albert, the husband of Victoria. When the Covid-delayed celebrations begin, the Royal Albert Hall, in 2021, benefits from incredible acoustics, stateof-the-art sound systems, impeccable lighting and firstclass stage technology, yet so many other parts of the original venue still remain untouched, and that’s what gives it its unique charm.

The venue was funded out of the proﬁts from London’s Great Exhibition. Now Grade I-listed, it cost £200,000 to construct and took four years to complete. The ﬁrst performance was by Charles Gounod on May 8th 1972, as his orchestra played Handel’s Messiah. In respect of that landmark event, Messiah has been played every Good Friday afternoon at the venue since. Electric lighting was introduced shortly after the hall opened, and over the years arts and science exhibitions have utilised the space, with more events actually held in the outer rooms – over 400 per year – than the main auditorium. Tradition has always been at the heart of things – there were Sunday concerts for six decades up to the end of the World War II, and the Proms has a permanent place in the hearts of traditional music devotees.

The hall was partially bombed by the Germans in 1942, while moves to cure the ‘Albert Hall echo’ were put in place in the 1960s, with acoustic diffusing discs being hung from the ceiling. A £40m refurbishment programme was undertaken in 1996 and these days the Royal Albert Hall continues to promote various education and outreach projects. It’s a charity in its own right, and even boasts a performance database that lists each of the artists who have appeared at an estimated 30,000 events since 1871. Attendees are treated to unobstructed viewing, some incredible VIP boxes, private rooms, and awe-inspiring auditorium, and a gallery around the perimeter that houses bar and restaurant space. What’s more, one special person, each night, will ﬁnd themselves with the unexpected privilege of sitting on seat 87, row 11, under the K stalls in the main auditorium. It is an unassuming seat, but one that rests on the foundation stone that was laid by Victoria way back in 1867.

ANDOVER’S HISTORIC STREETS CHANTRY STREET

Church Mews Guest House, which opened in 2004. In 1983 this property was listed by Historic England as grade 2. During an Archaeological dig in 1982 on the site of number 50, which is further down the street, Saxon pits, Roman ditches, a medieval well, ditches, kiln, post holes and pottery were found. Much further down the street and still on the north side existed “Chantry Farm” at number 72, this farm covered much of the area of the new town centre on the South side, and the farm buildings were demolished in the 1960's. Now moving to the south side, the remaining buildings have much historical interest. The four cottages and shop are all that remains of old Chantry Street, on this side, due to demolition and new building projects since the 1960's. Numbers 11,13 and 15 were listed as Grade 2 by Historic England in 1983. 11 and 13 is a classic three bay Wealden house, one of only a few survivors in Hampshire, with parlour, hall, cross passage built soon after the great ﬁre in 1435; circa 1440 to 1460. In the mid-16th century, a chimney

was inserted in the hall to create a hearth passage plan. (more information can be found from Elizabeth Lewis, “Three Hampshire Wealden Houses” a PDF dated 1990) It has been found that number 17 is a 17th century structure built around 1650 with Georgian windows dating around 1730. It was listed as Grade 2 by Historic England even earlier than the cottages in 1950. 20th century occupiers of number 17 are listed over the door as follows: Up to 1904 – Fred and William Walters – Butchers. Up to 1969 – Frank R Simpson – Wholesalers 1969 – 2004 – Fred, Ruby and Wendy Holloway – Bric-a-brac. The current occupier is Rigby's Classic Barbers Shop. Thanks to David Borret's research we can go back even further and also ﬁll in some of the gaps above. Around the turn of the 19th Century, the shop was a marine stores, the antique shops of their day, run by William Harman and later Miss Emily Pearce. Circa 1910 the shop was owned by

Walter Frederick Hardy but it is not known what was sold. The shop then passed to John Herbert Simpson in about 1918 and was a Stationers which passed to his nephew, Frank R Simpson in circa 1939. He expanded the business to include confectionery. During the Holloway's occupation the shop was gradually restored and this included the ancient brick lined cellar. Adjacent to 17a, now a twobedroom apartment, stood the Phoenix Inn and Nutley's Phoenix brewery which produced Andover's best regarded beer, Chantry Bitter Ale, up until the 1920's. It was built on the site of a property which had been destroyed by ﬁre in 1435. The Phoenix was demolished as part of the town centre redevelopment. Incidentally, at numbers 7 and 9, now Eagleside House ﬂats, was the site of the old Eagle Inn, which burnt down in 1903.

he origins of the name Chantry Street was probably due to its close proximity to the Parish Church; “Chantry” meaning the singing or chanting of mass. Looking at the north side ﬁrst, number 2 is a mid Tudor galleried town house dating from 1550, which was occupied until the end of the twentieth century by H Page and Sons, monumental masons. The long established family ﬁrm had operated on the site for some 200 years and included an adjacent yard, which is now occupied by four relatively modern houses. h lt a e H & wellbeing HOME For many, the daily reality of work has involved long hours of driving a desk and computer. This has been associated with aches and pains, particularly of the neck, shoulder girdle and lower back. The coronavirus epidemic has meant that, for many, their work environment has shifted from the office to working from home and there seems to have been an increase in the number of people suffering work related aches and pains. This has mostly been a result of a poor work environment, decreased levels of physical exercise and increased levels of stress. So, what can we do to keep ourselves pain free whilst working from home? The first thing is to pay attention to how we physically set up our work environment. Find a table and chair that allows you to maintain a slight arch in your lower back. Make sure that your computer screen is at least level with your eyes. As many of us are on laptops, that means raising it on a cardboard box or a pile of books or a laptop stand and using an external keyboard and mouse. The second is to make sure that you regularly move and change your position. Movement is the key to remaining pain free and it needs to be an integral part of your 14

working day. Scheduling regular breaks to move and stretch is a great idea. You should set an alarm or use an app that will remind you to move. However, be aware that it is all too easy to ignore these reminders, so commit to taking breaks even when inconvenient. Make sure that you take a lunch break and use it to schedule an exercise session, which could include a walk around your garden or a local park. Some further movement strategies could involve standing up at a kitchen counter for a while. You could also answer your phone standing up and make a point of walking around whilst talking on the phone. If you keep your fluid intake up, you will also need to get up and move! Lastly, make sure that you have a strategy to manage stress. We know that stress effects the body. It’s not a coincidence that we have phrases like ‘the weight of the world on your shoulders…’. I’m often struck by how few people have active strategies to manage the stress in their lives. I would encourage everyone to give some thought to stress management. It can be as simple as scheduling time away from work to read, listen to music, go for a walk or engage in other forms of exercise or use one of the many meditation apps that are available. If you do find yourself with aches and pains that do not go away then do get them assessed by a professional. A casual cyclist’s review of an electric bike Cycling up hills is not exactly my idea of a fun past time. My poor road bicycle has been relegated to the shed, only seeing action during the nicest of weather. Electric bicycles are not a new concept to me, but I was never really convinced they would benefit me, or if they would take away the exercise element by doing all the work for me. So, it was a surprise when I found myself road testing an electric bicycle from Hampshire eBikes on a sunny a spring day. It was a Batribike Omega in British racing green. The first thing that struck me was how streamlined the bike was. Enjoying the step-through design I was surprised by the weight of the bike. It’s reassuringly sturdy but much lighter compared to my old Raleigh Chiltern which only had 3 gears. In comparison, the Omega boasted 7 speed Shimano Nexus hub gears which provided a smooth and enjoyable ride. The walk assist helps you set off even before you start pedaling. Using the pedal assist is just as easy as changing gears. The level of assist can be increased at the touch of a button, so quickly becomes intuitive. The most impressive part for me was that I still had to put in work. You cannot benefit from the assistance the motor provides if you don’t pedal. The electric power does make it easier to ride longer and go further. I am sure this is only increasing my exercise.

Going up the hills I laughed in glee! There are some hills where most would see no shame in getting off to walk up, but not with this bicycle. Whether cycling through town, or around the hilly country roads, I felt confident that this bicycle would get me there - and in style. So, am I convinced by electric bicycles? Councillors Column Thank you to everyone who voted in the local elections last month. I’m truly humbled to have been elected to the County Council and will continue to work my socks off to repay the faith the people of Andover South have shown in me. To be clear, this doesn’t affect my commitment to leading Test Valley, which remains as strong as ever. But it does mean I’ll be able to use my wealth of experience to deliver for Andover and the wider borough. Bringing the County on board to help deliver the town centre masterplans, pushing them to upgrade their waste infrastructure so we can all recycle more, and lobbying them to be more proactive on potholes. Talking of Test Valley, I’m also delighted to welcome back both Jan Budzynski and Jim Neal to the borough council as representatives of St Mary’s and Millway Wards in Andover following recent by-elections. I’m also pleased that both Mike Maltby and Terese Swain were elected in Chilworth, Nursling and Rownhams to fill the vacancies left by the sad deaths of my colleagues Nigel Anderdon and Alison Finlay last year. Whilst the national picture was extremely positive for my party this is also an endorsement of the work we’ve been doing locally. Giving us a mandate to continue to lead the local recovery from coronavirus, whilst also continuing to deliver on our plans to regenerate our town centres. My thanks too to all the candidates who put themselves forward. It takes an enormous amount of bravery to stick your head above the parapet and stand for election – and it’s great for local democracy that people were given a choice. Following the huge success of the vaccine rollout, step three in the easing of

lockdown restrictions has now kicked in. As well as bringing families together, this is great news for our hospitality industry and local hostelries, which are raring to fully get going as the summer approaches. As our lives edge back towards normality though, it’s important we don’t forget the value we placed on our local green spaces throughout lockdown and as part of our work to tackle climate change we want to make them more wildlife-friendly, by creating a number of urban meadows right across Test Valley. This means that the grass in these particularly pilot areas will be left unmown until September before being cut and collected. This approach will allow grasses and plants to develop providing valuable habitat for insects and birds. All the sites will be monitored over the next few months and a record of any notable plant species emerging will be kept. At the end of the summer, a decision will be made to continue to manage these spaces as meadow, reseed with a wildﬂower mix to improve the wildlife value or discontinue. This year, approximately 7-hectares of land within our open spaces will be managed as urban meadows. If the pilot is successful, then the longer-term plan will see the scheme extended. To be clear, this doesn’t mean whole areas of recreation land will be left unmown, we are talking about relatively small parcels of land and areas at the edges of our current parkland.

The Adventures of Daichi

The Modern Magazines Camper Van Fish. Daichi loves to go fishing with Grandad… and Grandad loves to go fishing with the family. What better way to celebrate his 86th Birthday, than on the banks of an idyllic pond with all of us together in wonderful sunshine! So, that is just what we did in May. Todber Manor is where we all met. Beautiful lakes situated in East Dorset just ten minutes from the quaint town of Shaftesbury. Dad is in his element here. My sister moved into the cottage attached to a farm where her husband grew up, in Margaret Marsh, and this is even closer at just seven minutes away. The scenery around here is stunning. Miles of rolling countryside, wildlife and glorious green land with blue sky and feather-like white clouds. It was a real treat. To be honest, I have always enjoyed fishing with Dad. Many, many Sundays were spent on the banks of a local pond up North. I love the serenity, the birds singing, the picnic and the family togetherness that we have all missed so much recently. Here we were,

Daichi... and friends out in fresh air and in great company. The fish here are huge. Some fishermen stay in bivvies (tents) overnight to fish for the real big carp. Can you imagine sitting outside in all weathers holding your rod (now now…) waiting for that all-important bite and then using all your strength for possibly half an hour or so to land a 40 pound + carp? It is a complete buzz for these guys, a real excitement for those that ‘get the bug’. Better than being 24/7 on a computer I would say. Well, we were not quite up for that, though Daichi would have been very happy to put us up for the night! We must plan our next ‘staycation’ and get the awning out again. We have really missed that, and so has Daichi. The fishing at Todber Manor is excellent. With ten ponds in total I believe, there are lots to choose from. In addition to that there are holiday lets which were currently closed due to the situation, but I am sure they will open soon, if not already. It is a really great location for anyone who likes fishing or even if you

would like a break away. The well-stocked fishing tackle shop caters for all needs too. Now, every time we go fishing with Grandad, we (well actually Stephen, Hayden and Dad) catch many fish. It looks easy, yet I am not sure why, but any time we have tried this without Grandad we don’t catch anything… just a cold. Funny that, it must be the better weather on the days we go with Grandad… mmm not sure about that. Grandad has fished all his life and his expertise absolutely makes it look easy. He has a real knack for the game. This time I did some fishing myself and caught a rather nice Mirror Carp. I can fish, but leave it to the boys while my sister and Mum have a chat on the side-lines. Oh yes and take never ending photographs and videos! It is hard work when they are catching lots of fish I have to keep getting up from my comfy, relaxed seat with my all-important coffee in hand. Really! This trip we were lucky enough to spot an egret that gracefully flew in and sat patiently on a small island in the centre of the pond. Delightful to see… and another photo was needed… Up again… We have to laugh don’t we.

The family... and the cake! Now Birthdays have to have cake and food (any excuse) and today was no exception. There is the delicious “Lakeside Diner” right here at the ponds! Perfect. It is an outside eatery with seating and the food is good! Us girls had steak, Hayden had pulled pork, Stephen had a burger and dad had fish and chips (of course!). Susan had also brought a cake and Dad’s highlight, which he said he will never forget, was us all singing Happy Birthday to him with the candles aglow, the sun setting, surrounded by his favourite ponds here in the South. Very special. I am not sure the other fishermen thought the same and the birds may well have wondered what all that screeching was about, but hey hum, we had a fabulous time. So - many ‘caught fish’ later, well fed, hoarse from singing, and aching from all that getting up and down out of the chair, it was time to say goodbye. Daichi was delighted with the trip. He, and Grandad, grinned from headlight to headlight all the way home. Happy Birthday Dad. With more areas and activities opening up, and a sunny summer (we can but hope) to look forward to, I wonder where Daichi will take us next? By Debbie Corney

Harrow Way elevates Year 10 study skills Harrow Way Community School Year 10 students recently got a serious study skill boost with Elevate Education. The award-winning experts delivered two of their specialist workshops which are designed to improve student performance through high impact study skills. Two of their presenters, both recently graduated from university, joined the Year 10 students to deliver Study Sensai and Student Elevation. Dawn German, Assistant Headteacher Raising Standards Leader, explains further: “Strong and effective study skills are incredibly important for today’s students. They need to know how to structure their notes, improve their memory, how to learn independently and use practice papers effectively. These skills are vital for effective GCSE preparation and were all incorporated into the Study Sensai session. However for all these skills to be truly effective students also need to be motivated and that’s something they can work on too as this is also an essential element in examination success.” For the Student Elevation workshop students looked at how to motivate themselves; the importance of selfbelief; how to increase their motivation and how to break goals into manageable tasks. Feedback from students show the sessions were incredibly beneficial with student Archie commenting that: “It’s actually made me want to study more!” and another student reflecting: “I’ve learned much more than I thought I would. I’ve really enjoyed these sessions. The presenter was so cool too.” Elevate Education has been delivering their programmes throughout the UK 32

since 2013. Having benchmarked the study habits of thousands of past students, their award-winning seminars cover the techniques utilised by the country's top students. International Space Station There are only two possible dates to spot the ISS in June; the first and last day of the month. Unfortunately, both of these are unfavourable passes where the ISS will be quite low. If you want to try and catch either of these sightings, please refer to www.heavens-above.com or a similar webpage for up-to-date information, remembering to set the location to your home town. July will be a much better time to spot the space station, with sightings possible most evenings. Events The Summer Solstice (from the Latin for ‘the sun stands still’) occurs on June 21st this year, and marks the day when summer officially begins in the Northern Hemisphere. On this day the Sun reaches its highest point in the sky at noon. This means we experience the ‘longest’ day of the year (the day with the most hours of daylight, and least hours of darkness). Partial Solar Eclipse If the sky is clear, residents in southern England will be treated to a partial eclipse of the Sun on the morning of June 10th. The maximum takes place around 11.10am depending on your location, at which point the Moon will cover roughly 20% of the Sun. The actual path of totality is visible from Canada, the North Pole and Eastern Siberia. The eclipse begins at roughly 10am and continues to around 12.30pm. Various websites, including www.timeanddate.com can provide up-to-date information for your specific location. There are several ways to view the eclipse safely, including the use of designated eclipse safety glasses, or making your own pinhole projector camera from a couple of pieces of cardboard. There are many websites available that show you how to construct one safely.

Named by Native American tribes, it is associated with the time of year when strawberries ripen and are ready to pick. In Europe and other countries, June’s full moon is known by many names, including the Rose Moon, Mead Moon and Hot Moon. Object of the Month The summer months are the best time to try and spot a rare and beautiful cloud-type: noctilucent clouds (from the Latin for ‘night shining’). If conditions are favourable, these blue-white illuminated clouds are visible thirty minutes after sunset for a couple of hours in our northern skies. Although the exact cause of their formation is unknown, we know they are composed of tiny water ice crystals and form about 80km up in the atmosphere.

Ramsay’s Revival Top chef Gordon Ramsay outlines the food trends we should look out for in 2021. It says a lot that in a Twitter post published on New Year’s Day, Gordon Ramsay decided to use the opportunity to tell the year 2020 to, well… let’s just say ‘not come back’. While the global Covid pandemic has turned a lot of us into accomplished, skilled, proﬁcient home cooks (in our own minds, at least, if not in reality), the effect it’s had on the chefs, staff and restaurateurs of the world’s best restaurants has been less positive. Most establishments have endured almost a year of closure – Ramsay’s portfolio of high-quality restaurants included. It’s a factor that has led to something of an accidental food revolution in our homes. “With every disaster there is an upside and a downside,” he says. “While a lot of industries have been torn apart by Covid, it has been the making of others – think about the way we buy stuff over the internet, and home delivery of goods. Think too about cleanliness and hygiene… things that have always been of interest to me as a chef – we’re now all obsessed with it.

“In the same way, the fact we’re not going to restaurants hasn’t meant we’ve stopped eating – instead, people are discovering and developing new ways to enjoy food at home. As someone passionate about food, I can only support that; even if it’s cost me millions!” he says, referencing

A walker’s view of

Nursling WRITTEN BY MALCOLM PRICE This month’s walk ﬂits around parts of the Test Way and oﬀers portions of underfoot conditions; tarmac, gravel and grass (or mud after rain). At around 6 miles this is an excellent outing that should take around 2 hours as there are no hills or hazards to slow the progress. The recommended start point is from The Four Horseshoes Pub, Nursling Street, Nursling, Southampton, SO16 0AJ.

industry on the right. We now turn right and proceed for around 600 metres, going under the M27 along the way and ﬁnally turning left down Church Lane, where almost at the bottom on the right is St Boniface Church.

This begins as a farm track that returns us under the M27, but very soon tapers into a twisting, narrow, footpath that wends on for another 800 metres. At the end of the path we now meet Mill Lane and turn right along a quiet, local road, that ultimately leads to Nursling Mill, which are now well appointed ﬂats. Aiming onwards, we pass through a gate and now have a river tributary as company; continuing over a footbridge then ﬁnally halting at a metal gate that opens out onto Testwood Lakes.

There is a reasonable size car park there as well as plentiful road side space, since this is the end of a ‘No Through Road’. To start the walk we must turn right out of the car park, aiming past two concrete bollards and then under two tunnels that span the M27 Junction 3 (with the M271). This provides a pleasant, traﬃc free path along Dairy Lane, broken up only by a crossing for Tesco Regional Distribution Centre. The path goes over a rail bridge for the long disused commercial railway and halts at Station Road. There is still visible evidence of the past glories that the railway brought to 40

This structure can trace it’s history back to the 13th century and both the church and the surrounding churchyard are well worth a visit,as at the rear is a centuries old cedar tree (now protected from damage) and a stunning view across the Test Valley Meadows. Once leaving the church we continue right down to the gate at the very end of the lane and passing through on the left side.

Do take a close look at this gate because at the end of our traversing the lakes this will be our exit and passport to home. By turning right you will be heading towards a selection of bird hides that overlook the third lake with salt marshes that aﬀord views of several wading birds. Keep on going round this larger lake, taking a left turn at a hairpin bend; passing the home of Totton Football Club and then the base for Eling Sea Scouts.

Just past those buildings there is an option to swing left and avoid the second lake, but to get good value from the walk it is advised to keep right and continue round until returning to the entrance gate as shown in photo 4. The homebound stretch diﬀers a good deal from the outward journey, but not to start with, as we turn right out of Testwood, down the lane, then back along Mill Lane. This time we must continue on for another 800 metres when we pick up the green Test Way arrows on the left hand side as the road veers right as well as being opposite a set of farm buildings. This section of the Test Way travels in a straight line for around 800 metres, aiming towards the M27, but turns right to run parallel with the motorway for a further 600 metres; all retained within hedges and fences. We emerge back on Station Road that formed part of our start out route; this time we turn right, travel about 300 metres, then turn left over the railway bridge into Dairy Lane.

From here the section home is fairly simple, with just the Tesco Centre to cross and the dual tunnel under junction 3 of the M27 before emerging once again beside the Four Horseshoes and no doubt another well earned rest and refreshment.

FLY STRIKE IN RABBITS While it is lovely to see the sun again, unfortunately it is not such good news for rabbits as we will also start to see flies. in rabbits, sadly, this often means the return of fly strike What is fly strike? This is when the flies lay their eggs on a rabbit and the resultant maggots attack the rabbit. This is a revolting condition and one which causes immense distress to the poor rabbit and will cause death if not detected and treated quickly enough. It occurs because the flies are attracted to rabbit droppings either in the hutch or, especially, because they are stuck to the rabbit’s back end. Rabbits are especially vulnerable to maggot attack because they are prone to a lot of conditions where they have mucky back ends and because they lack enzymes to “fend off” the maggots (one of the reasons why fly strike is much rarer and much less invasive in dogs and cats). Strike can occur very quickly and the maggots may hatch, develop and pupate within a day if the conditions are warm enough. So even very vigilant owners may miss it until it is too late. So how do we prevent it? Vigilance is important; check your rabbit at least three times a day. At least that

way you should pick it up earlier. Most important of all is to avoid the build up of faeces on the back end. There are many reasons for this - it occurs because of a lack of ﬁbre in the rabbit’s diet; back or abdominal pain; inability to turn and remove the material (including being very fat!); or dental disease. If your rabbit does have a dirty back end, it is vital to get him or her checked out as soon as possible. This allows us to correct the underlying cause. It is also worth regular check ups to see if these underlying diseases are developing or to discuss diet. An ideal time to do this is when you come in for the myxi/ VHD jabs. It is also vital to keep hutches as clean as possible throughout the warmer months. We are also fortunate in that there is a compound to help us prevent ﬂy strike. It’s called RearGuard and is applied to your rabbit at regular intervals. It is a prescription only drug so is only available from your vet. It is a great aid to the prevention of this horrible condition, but please remember that it is just an aid and will not replace proper vigilance and care of the underlying causes of strike. Creamy Courgette Sausage Penne Introduction

Simple and ﬂavoursome with a generous serving of veg, this is one of those weeknight meals ideal for when you want to feel satisﬁed but also a little virtuous.

Ingredients (serves four) • 6 Cumberland sausages • 400g penne pasta • 3 cloves of garlic (crushed or diced) • 1 red onion (peeled and sliced) • 1 large courgette (grated) • 250ml crème fraiche • 1 tbsp dried chilli ﬂakes • 60g grated parmesan or other hard Italian cheese • Handful of chopped fresh parsley

Method 1. While waiting for a large pot of water to boil, prepare the sausages by squeezing the meat gently from their casings - discard the skin. Heat a widebased pan with a tablespoon of oil and at a medium to hot heat add the sausage meat and cook until browned (6-7 minutes) breaking the meat up with a wooden spoon as you go. Remove and set aside the cooked sausage meat. 2. Put the pasta in the boiling water. Next, lower the heat to medium on your nowempty frying pan before gently sautéing the garlic and chilli ﬂakes - add more oil if necessary. After one minute, add the red onion and grated courgette, frying till softened.

3. Return your sausage meat to the pan with your onion and courgette, along with the crème fraiche and two thirds of the grated cheese. Next add your drained pasta along with a splash of the pasta water and simmer for two minutes until everything is combined and your sauce becomes silky and rich. Serve your pasta in bowls and garnish with your remaining cheese and the chopped parsley.

Top Tips • For perfect pasta always use a generous-sized pot, salt your water (it should almost be as salty as seawater) and avoid overcooking – al dente is the authentic Italian way! • Pasta is endlessly versatile, so feel free to riff on the ingredients to suit your taste… swap cream cheese for crème fraiche, red onion for white onion and courgette for any vegetable you fancy, from

chopped kale to tenderstem broccoli, or even Borlotti beans. • For the ultimate weeknight ease, stock up your pantry and freezer with a few handy cheats: garlic puree is the perfect way to get ﬂavour over fuss; frozen peas are delicious when added to this kind of pasta and an abundant spice rack is invaluable when it comes to last-minute ﬂavouring.
