CARPACCIO
“El médico de la condesa Amalia Nani Mocenigo le había recomendado una dieta muy estricta. No le permitían comer carne cocida, así que, para complacerla, pensé en cortar un filete en lonchas finas. La carne, por sí sola, estaba un poco sosa; pero había una salsa muy sencilla que llamé ‘universal’, por su adaptabilidad a la carne y al pescado, y que le puse un chorrito. Para honrar al pintor, del que tanto se habló en Venecia ese año, debido a la exposición, y también por el color del plato, que recordaba al rojo del artista, lo llamé ‘Carpaccio’. Las invenciones siempre surgen por casualidad.”

BELLINI
Al crear lo que se conocería como el cóctel Bellini en 1948, Giuseppe Cipriani se inspiró una vez más en un pintor, el veneciano del siglo XV Giovanni Bellini. Los melocotones blancos y dulces abundaban en toda Italia de junio a septiembre, y experimentó haciéndolos puré y añadiéndoles Prosecco. Quienes probaron esta nueva bebida le dieron excelentes críticas. Bautizó el cóctel, brillante y dulce, como Bellini y, a partir de ese día, la bebida se convirtió en parte de la cultura del Harry’s Bar y de todos los restaurantes Cipriani del mundo.
