Virginia’spassionforminimizingwastea ingredientwasreflectedinhersubmiss Nachos.Sherepurposedpotatoskins blendedcilantrostemsandthezesta intoabrightcilantrocrema,finished discarded.Shefinishedthedishwith tomatoendsfromsandwichprepandSwisschardstems

ChefJoanneandherteamalsoshowcasedadditionalzero-wasteinspired dishes,includingScallionFlatbread(Chinesepancakes)madefromgreen onionpartsthatwouldnormallybediscarded.Fordessert,theteam transformedleftoverbreadfromsandwichesandbreadserviceinto deliciousBreadPuddingandcreatedOrangeUpside-DownCakethat utilizedwholeorangeswithhouse-madehoney-orangemarmalade.

Whenafriendlyhotsaucecompetitionrolledoutacrossofficesata transportationtechnologycompany,theChicagocaféteamsawan opportunitytotakeitfurther.Ratherthancreatingonecollectiveitem, eachstationdevelopeditsownsignaturehotsauceinspiredbyitscuisine, culturalinfluence,andteamidentity,evolvingthecompetitionintoacaféwideactivationfullofcreativityandpride.

Onactivationday,eachstationfeaturedadishincorporatingitshotsauce, whileacentraltastingtabledisplayedallsixbrandedbottlesforsampling andvoting.Guestscomparedheatlevels,debatedfavorites,andrallied behindtheirstations.

Theeventencouragedinteractionbeyondatypicallunchserviceand createdasharedmomentacrossthecafé Thefollowingweek,the winningsaucereturnedasapop-upfeature.Severalvoterswereinvited intothekitchenforabehindthescenestour,wheretheymetthe culinariansandtastedapreparedbitefromeachstation.

TheteamatRhodesCollegeinMemphis,TNrecentlycametogetherto helpalocalGirlScouttroopearntheircookingbadge.Theprojecttook rootinaclientmeetingwherethedirectorofaccountingservicesatthe school(alsoalocaltroopleader)raisedtheideaofhavingtheBonAppetit teamhelphertroopmeettheirgoal.Theanswer:Absolutely!

GeneralManagerChrisCaldaroreachedouttotheculinaryteamtofind volunteerstoplanthemenuforthecookingworkshopandcomeinon aSundaytohelpteachthegirls.ExecutiveChefRondellCharles, ChefManagerRyanJames,andSousChefsTonyAyersand XavierWilkesallsteppedupandputaplaninplace.

TheGirlScoutsrequiredthreemenuitemstobemadebythetroop:1)One itemfromanothertimeperiod,2)Oneitemfromanothercountry,and3) Oneitemfromanotherregion.Collaboratingwiththetroopleader,they checkedforallergensamongthegroupandsettledonamenu,landingon originalgirlscoutcookierecipefrom1917,hummusandpitachips,and guacamole.

Onthedayoftheworkshop,thechefsbegantheprepworkandlaidout stationswhileChristookthetrooponatourofthekitchen.Theythensplit intothreegroups,spokeaboutsafety,washedtheirhands,handedout apronsandgloves,andbega th f !

Thegirlswereexcitedand veryhands-oninallstations, usingtastingspoons,asking thechefsquestions,and onegirlsayingshewanted tobeachef.Oncethe rotationswerecompleted, itemswereplatedbythe girlsandcookieswere placedintheoven,everyone hadasmallsnack,andthe girlsweregiventheirown personalgiftbags

Ourteamsdemonstratedgreatscopeandcommitmentto ourFarmtoForkcommitmentsandidealswithtopicslike:

Overthepastseveralmonths,newlypromotedLeadBaker SierraRussell-Mosleyhasbecomeastandoutinourpastry programatthePorscheExperienceCenterinAtlanta.Her workhasraisedthebaracrosstheboard,fromflavorand presentationtothewaytheteamshowsupforoneanother.

Sierrahastakenonnewchallengeswithconfidenceand care.Shepaysattentiontothedetails,holdsherselftohigh standards,andtakesrealownershipofherwork.Her approachhasmadeacleardifferencebothinthepastries weserveandintheenergyofthekitchen.

TheStarbucksteaminSeattle,WAhostedaworkshop offeredbyKodewithKlossy,anonprofitfoundedbymodel, entrepreneurandphilanthropistKarlieKlosswithamission toachievegenderequityineconomicopportunity.The workshopsaredesignedtoteachgirls(manyofwhomare fromunderprivilegedcommunities)computerscienceskills. Theteamprovidedmealsduringtheweekandsetupthe concessionstandforthefinalpresentations.Thegirlsfelt appreciatedandempoweredwhilelearningandconnecting witheachother.Thecustom concessionstandwasa highlightoftheweek!

MichelleReuter,residentdistrictmanageratEmory UniversityinAtlanta,GAreportedonthesuccessofa post-racerefuelspreadforover5,000runnerswho showedupfortheWinship5ktobenefittheWinship CancerInstituteonEmory’scampusthispastfall.The teamshowedupat4:00amtogetthespreadsetup. Frombreakfastburritostosunrisesmoothies,overnight oatstobagelsandlox,thefoodelevatedtherace experience.Thespreadwasahighlightformanyofthe thousandsofrunners–andtheteamhashundredsof surveycommentstoproveit!
