FROM THE DESK OF THE PRESIDENT There’s an easy, happy energy in the Caribbean during Autumn, when the weather is beautiful, local culture takes center stage, and there’s no shortage of reasons to start planning your next trip. This issue is full of exactly that kind of inspiration, along with a look at what’s ahead for the Divi family this season.

Food remains one of the best ways to experience island culture, and this Fall brings back one of our favorite traditions: celebrity chef Ron Duprat returns to Divi Southwinds Beach Resort for a second year, headlining events during the Barbados Food & Rum Festival. It’s always a highlight of the season in Barbados, and we couldn’t be more excited to welcome him back. Check out a recipe from Chef Ron and more information on pages 8 and 9. On St. Maarten, Wellness Weeks return for nearly the entire month of November, complete with plenty of healthy dining options. We’re building on the momentum of the Springtime sessions with a full slate of movement, mindfulness, and relaxation programming for guests looking to make wellness part of their stay. And in Bonaire, there’s a lot to show off at Divi Flamingo Beach Resort, where a brand-new dive dock — complete with a shaded pergola perfect for post-dive happy hours — is now open, alongside a new dive operations manager at the helm ready to welcome you underwater. STAFF SPOTLIGHT Making Waves: Meet Divi Dive Bonaire’s New Dive Ops Manager. Sarah Cann made history earlier this year, and she’s got the gear to prove it. The UKborn, Portugal-raised diver arrived in Bonaire in 2018 for what was supposed to be a one-year adventure. Eight years, countless dives, and one very permanent island move later, she’s stepping up as Divi Dive Bonaire’s first-ever female Dive Operations Manager.

Sarah’s diving origin story starts in the Maldives, where a holiday turned into a lifelong love of the underwater world. Now she’s leading the charge at one of the Caribbean’s most legendary dive shops, celebrating its 50th anniversary last year and still going strong. Her take on Bonaire diving is simple: “It’s just so easy,” she says. Walk out of your room, grab your gear, walk into the water. No boat required (though those are great too). Add in the famous visibility, calm seas, and reefs teeming with life, and it’s easy to see why she calls it “heaven.” Favorite dive after all these years? The glowing, otherworldly Ostracods night dive — “it never gets old,” she says. Her mission now is to keep dives fun, the service sharp, and every guest feeling like they’ve come home. There’s plenty of exciting new happenings at Divi Flamingo on Bonaire, and she’s eager to help everyone experience it all. “There’s beauty everywhere underwater,” she says. “You just need to open your eyes.” It’s this sense of wonder and attention to detail that she hopes every guest carries with them long after they surface at Divi Dive Bonaire.

Q&A WITH SARAH! What excites you most about stepping into this role with Divi Dive? Divi Dive is the most established dive shop on the island, the years of history and the things this resort has seen, I am honored to be a part of it! Also to be the first female manager in the history of the dive shop is extremely special to me. Divi Flamingo resort is like one big family – staff and guests alike, it is remarkable to be a member of that family. What makes diving in Bonaire (and specifically with Divi Dive) stand out from other destinations you’ve experienced? Diving in Bonaire is just so easy. It is best known for the shore diving as you can literally just get into the water pretty much anywhere on the west coast of the island and dive. Add to that, the visibility which is usually amazing, very few currents, calm water, beautiful reefs, lots of marine life. Diving at Dive Dive is heaven. Everything is on hand and simple. You can walk out of your room, collect your gear and tank and walk into the water or get on a boat. What can returning Divi Dive guests expect under your leadership - any changes or improvements on the horizon? We have several plans for the future but first I need to get settled in! I am always open to suggestions and happy to listen to what our guests want. Enhancing our service and being open to diver feedback is one of my top priorities.

He’s back! Last year, chef Ron Duprat brought his Haitian-French training and Afro-Caribbean soul to pureocean Restaurant on Barbados and left our guests wanting more. This November, he’s back with a popup chef’s dinner, a hands-on cooking class, and a new daily special for every day during Barbados’ famous Food & Rum Festival. “My cooking is rooted in Haiti and the wider Caribbean, but the goal is for it to connect with Bajan ingredients and hospitality. It should feel like Chef Ron, but it should also feel like it belongs here,” he says. Rum plays a central role in his approach to the residency. “It can bring sweetness, spice, caramelization, real depth, but I never want it to shout over the food. You should still be able to taste the dish underneath it.” Duprat singled out Mount Gay as a natural partner for the visit: “It’s tied to this island’s history in a way you can actually taste. When you cook with something like that, you’re not just adding flavor, you’re adding in the story and soul of the island.” Guests at the pop-up dinner can expect a Caribbean-inspired menu built around Duprat’s Afro-Caribbean roots and international training. “I want the food to feel elegant, but still soulful and generous,” he said. “My hope is guests walk away saying, ‘I know that flavor — I’ve just never had it like this before.’”

Growing up in Haiti, Chef Ron learned early that bold seasoning, layered spice, and a little patience at the stove can turn something as simple as a plate of wings into a full experience. This dish leans into that: crackling-crisp wings, a bright citrus-curry marinade, and a silky butter sauce finished with a touch of Berbere heat.

With Curry-Butter Aioli

YIELD: 4 portions (about 2 lb cooked wings) PREP: 25 minutes + 2–12 hours marinating | Cook: about 45 minutes INGREDIENTS

INSTRUCTIONS

Chicken & Marinade • 2 lb whole chicken wings • 1 Tbsp fresh lemon zest • 1 cup fresh lemon juice, divided (½ cup for marinade, ½ cup for sauce) • 1 cup fresh curry leaves, divided (½ cup for marinade, ½ cup for sauce) • 1 tsp dried oregano • ⅛ tsp ground turmeric • 3 Tbsp granulated sugar, divided • 1 Tbsp + 1½ tsp kosher salt, divided • 1¼ tsp Berbere powder, divided

Step 1, dry the zest: Spread lemon zest on a sheet pan and dry in a 200°F oven until crisp, about 15 minutes. Cool, then crush into a fine powder.

Crispy Dredge • ¼ cup all-purpose flour • ¼ cup cornstarch Curry-Butter Sauce • ½ cup unsalted butter, cold, cubed • 1 Tbsp granulated sugar • 1½ tsp kosher salt • 3 tsp reserved lemon-curry seasoning (from marinade) • ¼ tsp Berbere powder Garnish • Lemon wedges, fried curry leaves (optional), a pinch of reserved seasoning

Step 2, season and marinate: Finely chop ¼ cup curry leaves and combine with the dried zest, oregano, turmeric, 1 Tbsp sugar, 1 Tbsp kosher salt, and 1 tsp Berbere. Reserve 4 tsp of this mix for the sauce. Toss the wings in the rest, arrange skin-side up on a rack, and refrigerate uncovered at least 2 hours (overnight is best). Step 3, dredge and bake: Preheat oven to 450°F. Combine flour and cornstarch, dredge wings thoroughly (twice for extra crunch), and bake skin-side up for about 45 minutes, turning halfway, until deeply golden and cooked through (165°F internal). Step 4, make the sauce: Simmer the remaining ½ cup lemon juice with ¼ cup curry leaves until reduced to about 2 Tbsp, roughly 5 minutes. Remove the leaves, lower the heat, and whisk in cold butter a piece at a time until glossy. Stir in the reserved seasoning, 1 Tbsp sugar, 1½ tsp salt, and ¼ tsp Berbere. Don’t let it boil once the butter’s in — keep it warm. Step 5, toss and serve: Toss the hot wings in the warm curry-butter sauce until evenly glazed. Plate immediately, garnished with lemon wedges and a scatter of fried curry leaves.
