By the time winter tightens its grip in Minnesota, most of us start plotting an exit strategy. In the Caribbean, St. Maarten and St. Barts offer two very different ways out.

It functions as a regional hub, with direct flights and a wide range of accommodations, beaches, restaurants, and activities. Visitors naturally move between the Dutch and French sides, each with its own customs, cuisine, and pace.

St. Barts, by contrast, is fully French and intentionally low-key. There are no large resorts, no direct commercial flights from the mainland United States, and very little mass tourism. Arrival requires either a small-plane flight or a ferry ride from St. Maarten. That extra step shapes the island's calm, curated atmosphere.

Days revolve around small beach coves, a yacht-lined harbor, designer boutiques, and long lunches that require reservations. It is less about packing in activities and more about settling into a cadence where everything feels intentional.

St. Maarten

My time on St. Maarten began at Maho Beach, where watching planes land is not a novelty, but a daily event. I settled in at Sunset Bar and Grill just off the shoreline with a bowl of local clams in a garlic butter broth and a glass of Pinot. Minutes later, a jet dropped low over the water, engines rumbling so close you could feel it in your chest. Travelers lined the roadside and beach, phones raised, cheering each touchdown. Flight arrival boards are posted inside the bar because people plan their afternoons around the landings. On St. Maarten, plane watching is second only to the sunsets.

Days on St. Maarten mix culture and coastline. The French side brings sidewalk cafés, bakeries, and a slower lunch hour. I crossed to Marigot and headed to a roadside boulangerie, settled at a simple bistro table, ordered a pain au chocolat and an espresso, and spent the morning people-watching. For a quick moment, it felt like I'd been transported to the streets of Paris.

The Dutch side shifts the energy. Beach bars spill onto the sand, nightlife runs late, and shopping districts stay busy well past sunset. For cultural context, I visited WeCulture, a local center focused on the island's history and Carnival traditions. The visit gave me context I wouldn't have picked up from a beach chair.

On the Dutch side, meals lean casual and beach-forward. You'll find plates of BBQ, grilled fish with rice and plantains, and rotis. A local staple you'll see everywhere is the Johnny cake, a lightly fried bread that shows up at breakfast stands, beach shacks, and roadside grills. It's simple filling, and part of everyday island life.

St. Barts

The ferry ride to St. Barts is an excursion I won't soon forget. Ocean swells reminded everyone on board that the Caribbean can be both beautiful and humbling. Of the roughly hundred passengers, most spent the ride face down in courtesy sickness bags. My morning smoothie had officially joined the waters of the Atlantic somewhere between St. Maarten and St. Barts.

Stepping onto the dock in Gustavia and seeing solid ground again, I was more than ready for a proper meal. A word to the wise: If the ocean is choppy, pool your money with a few travel companions and take the small plane instead. It costs more, but your dignity may thank you.

The payoff came with the arrival at Gustavia Harbor, where yachts line the waterfront and designer boutiques replace beach bars. From there, a short transfer delivered us to Gyp Sea Beach Club in Saint-Jean. The setting felt boho chic and intentionally relaxed. Shoes-off dining with tables set in the sand. White umbrellas. A quiet buzz of conversation instead of thumping music.

Lunch stretched into the afternoon. Fresh dishes from the grill arrived at an unhurried pace that made it clear no one here was checking the time. Afterward, the beach was only steps away. Calm water, soft sand. No crowds. No spectacle. Just space to exhale.

Vacation destination scammers rake in big bucks charging tourists for free travel forms

Fraudulent lookalike websites are impersonating a tropical island's official entry portal, charging unsuspecting visitors a fee to complete a free form.

Sint Maarten, the Dutch side of the Caribbean Island of Saint Martin, has issued a warning for travelers, flagging that scammers are charging money to complete the Embarkation/Disembarkation form (ED card).

"Recent reports have identified a private, third-party website charging visitors a fee to complete or 'process' the required form," an official press release says.

"The Government of Sint Maarten reiterates that there are no fees associated with submitting the ED form through the official website."

Scam sites are reportedly charging up to $139.99 per person for the ED cards.

The government of Sint Maarten has warned people that certain websites are impersonating an official portal to fill out an ED card.

May-Ling Chun, Sint Maarten's director of tourism, said in the release the government is committed to protecting visitors.

"We urge all travelers to verify they are using the official website before submitting their personal information or making any payments," said Chun.

"If you believe you have been charged by an unofficial website, you are encouraged to contact your bank or card provider immediately," she added.

Gabriella Ribeiro of TRU Marketing, a New Jersey-based firm focused on transportation, mobility and public safety, told Fox News Digital that travelers should know there is only one official Government of St. Maarten ED card website (www.entry.sx)

"The form is straightforward, takes only a few minutes to complete and is completely free of charge," she said.

"These third-party sites often appear at the top of search results as sponsored listings and may give the impression that payment is required.

"While they are not necessarily fraudulent, they simply charge travelers to submit a form that can be completed independently at no cost on the official government site."

Ribeiro said travelers should watch out for sponsored search results offering "expedited" or "assisted" ED card services for a fee.

"Travelers are particularly vulnerable to this issue."

"They may rely on search engine results without realizing that the first listings can be sponsored advertisements."

She said third-party sites are designed to resemble official government portals and can create the impression that payment is required.

Airlines frequently notify passengers that the ED card must be completed prior to travel, which can create urgency," said Ribeiro. "In that moment, travelers may click the first link they see without verifying it is the official government website."

She said that for travelers to avoid unnecessary fees, they should make sure to verify they're on an official website before submitting any personal information or payment.

"Sponsored ads and lookalike sites often appear at the top of search results and can resemble government or airline portals, which can lead travelers to assume they are required to use those services," Ribeiro warned.

There were 395,053 stay-over visitors and 1,318,177 cruise passengers in 2023, according to government data.

Beach clubs aren't typically my thing. They often try way too hard to be trendy, and the food can be expensive but mediocre. Many seem to take the philosophy of doing the bare minimum because they know that guests are likely tourists who will never come back. Since you often have no other food options, you're stuck paying a premium price for an underwhelming meal. Thankfully, that's not always the case. On a recent trip to St. Maarten in the Dutch Caribbean, Babacool Beach Club proved that you can have your beach chair and eat well, too.

Opened in August of last year, Babacool seemed promising from the start. Rather than cutting corners on food, the beach club recruited Chef Jérôme Ferrer, who boasts a Michelin star for his Europea restaurant in Montreal, Canada. He is the only chef on the Dutch side (the island is split into Dutch Sint Maarten and French Saint Martin) to currently hold the honor.

While some beach clubs' decor can be borderline cheesy, Babacool's pink-andwhite theme contrasted beautifully with the deep blue of the Caribbean Sea. Staring out into the horizon, we could see Saba, another Dutch Caribbean island. The views were magnificent, but what really won me over was the quality of the food. I ordered a tuna combo that included both fresh sashimi slices topped with chili peppers and crunchy seared slices with cilantro and lime. The hot and cold contrast paired perfectly with chilled glasses of French rosé wine.

Other standout dishes at Babacool

I wasn't the only one who was impressed with Babacool's food. Everyone in my group was happy with what they ordered. It seems as if you can't really go wrong with anything on the menu, but certain dishes stand out. The chef's signature surf 'n turf is an excellent take on this beloved classic. It serves grilled Angus beef tenderloin and half a roasted lobster tail doused with light candied lemon cream, and a side of smoked garlic butter mashed potatoes. Although my delicious order isn't on the menu anymore, the crunchy bluefin tuna tataki with a wasabi crust and black sesame guacamole sounds like a tasty alternative. Vegetarians can order watermelon sashimi, which is marinated with citrus juices and sprinkled with sesame seeds. There is also a fixed-price menu that offers a starter, main dish, and dessert for $70.

Babacool does better than most beach clubs in the drinks department as well. I tend to stick with beer when visiting beach clubs because their wine is often just passable and their cocktails are overly sweet. Here, you can get a wide variety of good-quality liquors, including different types of Caribbean rums The wine list is good enough to have the stamp of approval of a French Michelin-starred chef. There are plenty of great choices of reds, whites, and Champagnes. If you're like me and think that we should all drink more rosé, you'll be more than happy with the available options.
