Baking soda

100% pumpkin canned
¼ tsp
Baking powder
½ cup
All-purpose flour
¼ tsp
Salt
¾ cup
Evaporated milk
2 tsp
Pumpkin pie spice
½ cup
Granulated sugar
Optional
Cinnamon, whipped cream
DIRECTIONS Place foil liners in 12 standard-size muffin cups and coat with cooking spray. Combine flour, pumpkin pie spice, salt, baking powder and baking soda in large bowl. In a separate large bowl, whisk pumpkin, sugar, evaporated milk and eggs until smooth. Add flour mixture to pumpkin mixture and whisk until smooth. Spoon ¼ cup of mixture into each muffin cup and bake at 350° F for 20 to 25 minutes. Cool completely in a pan on a wire rack. Top with freshly whipped cream and ground cinnamon, if desired. Refrigerate for 2 hours before serving.
