1. Place eggs in a saucepan, cover with cold water, and bring to a boil. 2. Remove from heat, cover, and let sit for 10–12 minutes. Cool, peel, and cut eggs in half. 3. Scoop out yolks and mash with celery, onion, mayonnaise, salt, and hot pepper sauce. 4. Spoon mixture into egg white halves. Sprinkle with paprika and chill, covered, until ready to serve.
