DIRECTIONS Cut squash in half lengthwise. Discard seeds. Place squash cut-side-down in large microwave-safe dish. Add water to dish. Microwave on HIGH (100% power) for 12 to 15 minutes or until fork tender (or roast in 450° F oven for 30 to 40 minutes). Let stand in dish for 5 minutes. Scape squash flesh with a fork or spoon to pull apart the spaghetti-like strands. Heat oil in large skillet over medium-high heat. Add garlic; cook for 30 seconds or until fragrant. Stir in squash; cook for a couple minutes. Season with salt and pepper. To serve, top with sauce and cheese. Garnish with fresh basil and oregano, if desired.
