BACON WRAPPED STUFFED ACADIA REDFISH Ingredients: 3 Acadia redfish tail on filet 1/2 lb jumbo lump blue crab 1/4 c mayonnaise 1 lemon juice + zest 1 tsp each tarragon, parsley, thyme chopped 1/4 c Panko bread crumb 6 pieces Nueske bacon Old Bay to taste Salt and pepper to taste Preparation: Place the bacon in pairs on a work surface. Place one filet skin side down on the pair of bacon and season with Old Bay. Mix crab, mayonnaise, lemon, lemon zest and season crab mix with salt and pepper and herbs then fold gently as to not break up lump pieces. Place about 1/3 cup of crab mix on the upward facing side of each filet. Wrap the bacon around the each filet and crab mix to create a roulade. Place remaining crab mix on top of the roulades. Pan sear in a medium high heated pan with whole butter and transfer to preheated oven at 400 degrees. Bake until the internal temperature of the fish is 165 degrees. Remove from oven and serve.

There are now some 3,000 wineries in the U.S., making it the 4th largest producer of wine in the world. That means ample opportunity for you to stop in at a winery near you or visit one the next time you’re vacationing. Many wine aficionados have their favorite variety of vino, whether it’s red, white, blush, or sparkling. But it’s always good to remember that certain wines go best with certain foods. Gone are the hard and fast rules that red wine should be paired with beef and white should be paired with chicken and seafood. A good rule of thumb: Try rosé with hors d’oeuvres; non-oaky whites (think Sauvignon Blanc) with citrusy meals; and reds with steaks and rich tomato-based dishes. Bottom line? Since the number of wealthy individuals grew to the highest levels ever, the pool of potential luxury home buyers also grew.
