Souplesse is one of our most popular products, a versatile coating that can be used in many ways:
The Souplesse range offers a selection of colours and flavours, allowing you to easily create new variations for your customers. What makes Souplesse special is that it works with both refrigeration and freezing processes. The special blend of fats used creates a flexible product that does not crack or break off your bakery product.
Use Souplesse to coat, dip or flood your bakery products. With a few simple additions you can even make a ganache or mirror glaze. Souplesse is also perfect for flavouring crèmes and custards.
Souplesse is easy to work with - the tub can be quickly heated in the microwave in just a few minutes. This process can be repeated without compromising the quality, enabling you to use only the amount you need at any given time.
We only use RSPO segregated certified palm oil and Rainforest Alliance certified cocoa.

HOW TO USE
• Melt Souplesse in a chocolate enrobing machine or in the microwave (max. 500 Watt) until a temperature of 45-50 °C is reached.
• Once the desired thickness has been achieved, Souplesse can be simply applied at a temperature between 30 and 40 °C.
• Once the coating is applied, it is highly recommended to chill or freeze the product down. Cooling will also enhance the shine!

Result: Souplesse remains flexible after setting and does not break when cut. Souplesse melts quickly in your mouth and gives a good mouthfeel and a delicate taste.
Top tip: Souplesse works best in its current form, the fat based recipe will not tolerate additional water or ingredients with a high water content to them!

Heavenly Cupcakes
Take Dawn® Genoese Cake Base - Golden and Chocolate, make up as per bag instructions and deposit the batter 4045g into cupcake cases. Bake in a deck oven at 170°C for approximately 25 minutes and allow to cool thoroughly.
Add Souplesse of your choice to a mixing bowl fitted with a beater and add cold butter at the same weight of the Souplesse (50/50). Beat on medium speed for 3-5 minutes until light and smooth. Pipe a swirl of this prepared frosting in the centre of each cupcake and place in the freezer for 30 minutes.
Warm more Souplesse (of the same flavour) to a dipping consistency and dip each cupcake into the warmed Souplesse Finish with your decoration of choice.
