Our Fonds portfolio Our Fonds are neutral and flavoured cream stabilizer powders to be used with dairy or non-dairy creams. They help stabilise, gelatinise, flavour and sweeten cream for a variety of applications. Simply mix the Fond with water and fold in the whipped cream. We offer a wide range of flavours from neutral to quark, fruity options as well as warm tastes.

Tips & tricks Water temperature • The warmer the water is, the better it gelifies, however: Fonds need to be handled with water at ambient temperature (20-25°C), otherwise it is too hot to be combined with whipped cream Water dosage: • You can vary the water dosage depending on the application • Firm: 200g, for piping/free style filling (without form) • Medium: 250g, works for the majority of applications • Soft/liquid: 300g, for easier handling, to fill a specific mould/form (tunnel or silicon) Cream: • Whip the cream to the right consistency (avoid overwhipping which leads to volume loss) • Add the whipped cream step-by-step: not all at once Timings: • Have the whipped cream ready from the start, ideally already scaled • Have the forms ready for the end applications, to be able to pour the mousse in right away => to avoid that the cream would set too fast in the bowl, before being applied in a cake form (it still needs to be soft and smooth) Setting process: • Refrigerate for at least 1 hour • Freeze if desired
