Everything corn silage Producers share insights, experiences to maximize forage impact on herd By Danielle Nauman danielle.n@dairystar.com
JUNEAU, Wis. – A building block to a successful dairy is the ration cows are fed every day, and the quality of ingredients in those rations is the cornerstone of that success. Growing the best corn silage possible, in the most economically efcient manner, is paramount to the equation. Three Wisconsin dairy producers shared their thoughts and experiences on everything corn silage on a recent segment of the Professional Dairy Producers of Wisconsin’s Dairy Signal program. Joining PDPW’s Executive Director Shelly Mayer on the Dairy Signal were dairy producers Mitch Breunig of Mystic Valley Dairy in Sauk City, Brody Stapel of Double Dutch Dairy in Cedar Grove, and Brett Bonlender of Clover Hill Dairy in Campbellsport. All three producers agreed there is nothing certain about growing corn for silage each year. They stressed the importance of selecting corn for silagespecic varieties such as high yield, high digestibility and high starch. “If you have a drought, corn silage is going to perform way different than if you have a lot of rain,” Breunig said. “We want to have a corn silage variety that can maybe thrive in both those environments. It’s tough, but you sort of have to use that as your selection criteria.” Breunig milks 400 cows on his family’s Dane County dairy and crops 1,050 acres, 650 of which are devoted to corn for silage, high-moisture corn and dry corn. The herd average is around 32,000 pounds of milk, and Breunig said his goal is to be at 110 pounds of energy corrected milk per cow. “We start with corn silage being the most important part of that situation,” Breunig said. “If we have a poor crop year, we can go down into that highmoisture corn variety and use that for silage, since it is similar genetics. We can do the same if it’s a really good si-
lage year. We can use some of our silage corn for high-moisture corn. It gives us some exibility.” He has fed a 2-to-1 corn silage to haylage ratio in his ration for the past ve years. He strives to have his silage harvested with a three-quarter inch cut and a processing score at or near 70. “What the corn silage brings to the table is it gives us a less expensive ration with a nutrition prole that product brings to us,” Breunig said. All of Breunig’s silage is custom harvested and stored in three bunkers. This year will be the fourth year Breunig has used bunkers; he previously used bags but found the bunker allows for a more stable and consistent product. “Pack, pack, pack, pack; when you think you are done packing, go back and pack some more,” Breunig said of working with a bunker silo. “Packing is what makes good corn silage. You just have to have it packed.” Stapel milks 250 cows with his brother and farms about 1,100 acres in Sheboygan County and operates a beef herd. Their herd of Holsteins is averaging about 25,000 pounds of milk with a 3.9% butterfat and a 3% protein content. The farm Stapel and his brother purchased in 2012 had a 1970 freestall barn and six Harvestore silos. In 2016, they built a 90-by-200 blacktop pad for feed storage. They have been experimenting with lowering their plant population and using more cover crops to promote soil health along with an increased use of no-till cropping practices. Sustainability is paramount to Stapel. He said spending a lot on seed corn with $12 to $15 milk is not an option. “We have found a seed company that we have really come to like and respect, and we’ve stuck with them,” Stapel said. “We can’t sacrice quality, but we need to be aware of the costs.” Turn to CORN SILAGE | Page 4

Stapel said seed selection can be tricky because the majority of corn breeders want a hard-kernel corn that is exportable. “That’s not what the dairyman wants,” Stapel said. “We want a soft kernel that is highly digestible.” Although they have always harvested their own silage, this year Stapel said they are having their silage custom harvested. He hopes it will shorten the harvest time, giving them more consistency and hopefully a better processed product. Stapel stressed that growing corn silage is a year-long process and is a cycle that keeps continuing. “It starts in September when you are chopping and evaluating and then buying your seed for next year in the fall,” Stapel said. “Silage is such an important crop, and you have one chance to make a crop each year.” Bonlender is the fth generation on his family’s Fond du Lac County farm, cropping 3,400 acres, 1,800 of which are corn. The 2,150-cow herd consists of crosses of Montbéliarde, Viking Red and European Holstein. The farm is non-GMO, and their milk is made into cheese marketed as non-GMO. “We really like what we’ve seen from crossing these breeds,” Bonlender said. “Their health, their feet and legs, their udders and their components; it has been a learning curve learning to manage them.” Bonlender said he is not as concerned about getting high volumes of milk out of his cows, which average about 75 pounds per day, but is more concerned with the components as their
milk goes to cheese production. The herd averages 4.3% butterfat and 3.7% protein. “We don’t feed as heavy of a corn silage diet because our animals don’t respond that well to it,” he said. “They are grazers by nature. We are probably more at a 1-to-1 ratio of corn silage to

haylage. We also use some snaplage. We only feed about 48 pounds of dry matter per day.” Bonlender said his goals for his silage each year is to yield at least 30 tons per acre with about 35% to 40% starch, and to have the nal product be highly digestible. The hilly topography of Bonlender’s farm requires him to be mindful of conservation cropping, and he uses a great deal of cover crops and contour stripping. “Listen to your crops, your ground and your animals,” he said. “Just because something is easy, it might not be the right thing to do. Take the extra step, listen to the things around your and try to do what is right.”

Mayers’ historical event barn brings people together for all occasions By Stacey Smart

RICHFIELD, Wis. – When Dwight and Shelly Mayer decided to restore their family’s 1850s barn, the thought of hosting weddings and other milestone events was far from their minds. The original goal was to ensure the structure stayed standing for years to come. However, bringing the building back to life stirred up ideas of transforming it into an agritourism site – a destination they could share with the public to tell the story of agriculture and host special groups and events. Since 2017, Folk Song Farm in Richeld has been the site of numerous weddings,

birthday parties, farm-totable dinners, corporate and community functions, and other special events. Last year, Folk Song Farm was booked every from May through October. Built in 1853 on the Mauer homestead where Dwight’s grandmother grew up, the barn was seen as a liability and valued at only $600 when it came into the Mayers’ hands six years ago. Dwight, who goes by the name of Ike, was not willing to watch the barn at Folk Song Farm be destroyed. He and his family were determined to save it. “Some people wanted us to light a match to it or push it over,” Ike said. “I told them, ‘You don’t understand – this is more than a barn – it’s our heritage.’ Our relatives built this barn with their own hands. registered Brown Swiss and Holstein cows and farm 200 acres at Mayer Farm, a mile north of Folk Song. Ike and Shelly farm with their son, Devin, their daughter, Cassandra (Cassie) Strupp, Devin’s wife, Kayla, and Ike’s brother, Dennis. Devin and Cassie also work full time off the farm. Devin does installation, service and maintenance for Gehring Sales and Service in Rubicon. Cassie is program manager for the Professional Dairy Producers of Wisconsin. The Mayers’ son, Dylan, is a recent graduate of the University of Wisconsin-LaCrosse. Ike is the sixth generation on his family’s farm, and his children are the seventh. Cassie’s son, Gabriel, will be the eighth generation at Mayer Farm. Ike’s aunt, Marge Mayer-Slaughter, bought Folk Song Farm from Ike’s uncle, Henry Mauer, in the 1970s and lived there until her passing in 2011. Marge, who was both a teacher and professional clown, who went by the name of ‘Oopslaw’, put herself through college at UW-Madison in the 1940s by calling square dances and is the one who gave Folk Song Farm its name. “She was a smart, fun, whimsical and artistic person,” Cassie sad. “She always had a vision of doing something special with Folk Song. She had once said about the barn, ‘I always thought I’d hear music in here someday.’ I’m glad we were able to make her dream come true.” Ike and Shelly agreed. “We had a close connection with Aunt Marge,” Shelly said. “She was a dear friend.” The Mayers purchased the 48-acre property from Marge’s four children in August 2014 and proceeded to turn a falling-down building into a living piece of history. The remarkable

The barn is handicapped accessible and holds 320 people. transformation occurred over a threeyear timeframe and cleaning out the barn was the rst order of business. “I come from a family of collectors and the barn was chock full of stuff, including an entire house that had been taken apart,” Cassie said. “We had to get everything cleaned out before we could do anything else.” Trunks full of records, books, sewing machines and other oddities, along with many dead critters, had accumulated in the barn over the years. Raccoons frequented the building and had left behind piles of waste 4 feet high. The granary was waist deep in oats, and piles of stacked-up wheat had to be forked out. The Mayers also
pitched out stalls and removed hundreds of bird nests. It took an entire season to clean out the main level, and when they were done, the barn’s contents lled 32 industrial-size dumpsters. “Our family invested a lot of capital in this barn,” Shelly said. “And everyone put a lot of sweat equity into cleaning it out, which was a huge undertaking.” The Mayers restored the barn beam by beam. The worn-out barn was crumbling around itself, yet the center of the ceiling remained intact. Made from white oak, all the beams are original to the homestead, hand-hewn and pressed together. Every beam and cross beam came directly from the barn
or was salvaged from other buildings on the property. “It took a lot of love to give it a sound structure,” Cassie said. “The barn had the bones but needed cosmetic help. We were able to save the infrastructure, restore it and make the building solid once again.” Working with Amish woodcrafters to preserve the barn’s integrity, phase one of the restoration began in the spring of 2015 as the barn received new siding and a new roof along with other xes to make it structurally sound. ConƟnued from FOLK SONG | Page 6 Mayers began phase two of the restoration – bringing the barn up to code to make it safe for public use. “The oors were not walkable and had to be replaced,” Shelly said. “That was the hardest thing to get rid of. The wide-plank oors were beautiful, but they just weren’t safe anymore.” Widening a staircase by two-thirds of an inch and moving a door 6 inches that was lined up too close to another door are examples of intricacies the Mayers had to tackle to bring the structure up to code. The barn’s original stone wall serves as the foundation, and the Mayers retained the
rectangular-shaped silo that creates a stone backdrop in the upper level. The Mayers also added a deck to the side of the barn that offers sweeping views of the countryside and the historic Holy Hill basilica. Resurrecting a barn from shambles, the Mayers retained the authenticity of Folk Song Farm – paying impeccable attention to detail to give it a breathtaking new look. Folk Song Farm is the site of numerous weddings, birthday parƟes, farm to table dinners, corporate and community funcƟons and other special events. Last year, the barn was booked from May through October. Mayers hosted 100 tours, six weddings, two farm-to-table dinners, several community groups, a fundraiser for an area conservancy group and a 4-H club chili cookoff. The barn is handicapped accessible and holds 320 people. Filled with nearly 170 years of history, Folk Song Farm’s nostalgic atmosphere, country charm and rustic character beckon guests from near and far for events ranging from elegant to casual. The rst event held at Folk Song Farm was a farm-to-table dinner. Every summer, the Mayers host three farm-totable dinners at Folk Song. Much of the lower level has remained intact to showcase the barn’s historical use and has become a focal point
for tours and an opportunity to educate the public about agriculture. The barn’s original wood stanchions and gravity drinking cups as well as the original barn cleaner that hangs from a track on the ceiling are in place. The museum includes signs telling a story about the past, and the Mayers plan to add an auditory portion. “This is a venue barn, not a wedding barn,” Shelly said. “Agritourism is our highlight. We restored an old dairy barn because we’re dairy farmers – this is who we are.” At Folk Song, guests are treated like family and are promised an unforgettable experience. “This is not an investment property,” Shelly said. “This is our home, and we’re sharing
it.”
The Mayers also hold family gatherings of their own at Folk Song, such as Cassie’s wedding reception in the fall of 2018, Devin’s wedding reception in the fall of 2019, and Gabriel’s rst birthday party this July. “We’ve held a lot of celebrations at Folk Song, and I hope we have many more rst birthday parties here,” Ike said. “Our greatest legacy is our family, and this barn is a place where families can gather and grow. This project was an investment in agriculture, our community’s heritage and is a way to honor our ancestors. Folk Song Farm is not just a place – it is our heritage.”

them will not stay on the bottle. What is your favorite animal on your farm? My favorite cow is Peppermint Patty because she will stand and let me pet her forever. I also love our border collie, Turbo, because he likes cuddle and helps me with my chores. What is your favorite subject in school? My favorite school subject is science because I really like microbiology and looking at things under the microscope we have at the farm. What do you want to be when you grow up? I don’t know, but I want to live in the country and be able to do woodworking and have animals. If you had a farm, describe what it would look like? It would be a dairy farm with chickens, dogs, a horse and a spot to do woodworking. What is your favorite dairy treat? Milk or ice cream. What is your favorite part about farm life during the summer? I like being on the farm in the summer because I don’t have to be in school, and I can spend time with the animals. Are you involved in any activities? What is your favorite? What do you enjoy about it? I am in 4-H, basketball, soccer, volleyball and church youth group. Basketball is my favorite because I get to be on a team with my friends. My favorite chore is sweeping the corn on the feeding oor for the cows because I like to try and pet them while they eat. Our dog, Turbo, because he loves me and helps me around the farm. I also like our dog, Jazzy, because she is calmer than Turbo and loves when I pet her. They are both border collies. What is your favorite subject in school? I like science because I like the experiments, especially the one where we got to use Hotwheels cars. But I like
recess most because it’s fun. What do you want to be when you grow up? I’m stilling thinking about what I want to be when I grow up, but maybe a farmer or Youtuber. I would have only John Deere tractors, a Polaris Ranger, beef cows, two pigs, ve hens, one rooster, a chicken coop, three cats, two dogs and a barn. What is your favorite dairy treat? Vanilla ice cream. What is your favorite part about farm life during the summer? I like riding in our John Deere windrower cutting hay and riding my bike. Are you involved in any activities? The Pilot Agricultural Microloan Program from the Minnesota Department of Agriculture’s (MDA) Rural Finance Authority (RFA) can be used for working capital (annual costs such as seed, feed, fertilizer, land rent) or equipment and other farm asset purchases with a common useful life of 10 years or less. The Minnesota Legislature this year appropriated funds to expand the maximum loan amount from $10,000 to $20,000. “We know that agricultural opportunity is not equally available to all

ISU Dairy Science Club donates ice cream to local organizations The Dairy Science Club at Iowa State University recently donated 2,200 cups of their homemade ice cream to three local organizations. When the 2020 spring semester at Iowa State University was moved to an online format due to COVID-19, the club had to discontinue their weekly ice cream sales to students and faculty on campus. Rather than let the ice cream go to waste, the club decided to donate it to community organizations in need during these unprecedented times. The club was able to donate all 2,200 cups of ice cream to the Iowa State University Food Pantry, Salvation Army of Ames, and Food At First of Ames. “With all the extra ice cream left in our freezers, the Dairy Science Club felt that the best option was to donate it. In today’s circumstances, we understand that food banks all around Ames are in need of food, and what better treat to provide the Ames community with than cold, delicious ice cream during the hot summer months,” said Cynthis Hamlett, Dairy Science Club President.

This breed was originated by Teddy Gentry of the band Alabama using Red Angus, Hereford, Barzona & Senepol genetics. Jerry and Jackie purchased their original seed stock directly from Mr. Gentry at his ranch in the late 1990’s. The advantage of this breed is their docility, easy calving and amazing ability to produce superior tasting beef while being grass fed. The Januschkas have not only produced hormone free beef for the increasingly popular organic market, but have influenced other herds with the sale of breeding stock. The diversity of this breed will make them appealing to not only value added production of hormone-free grass-fed beef, but to all commercial cattlemen and women as simply good sound herd replacements. raising a nice set of good stretchy calves with lots of eye appeal. Most cattle are red hided with an occasional blaze face. Cattle are extremely docile and easy to handle which is important with many family ranching and farming families relying on help from all members of the family. The Januschkas usually breed to begin calving in May but have turned the purebred South Poll red hided bulls in on July 8th to better align with commercial operations. Cows and calves have had 8-Way vaccinations along with pinkeye shots in the spring. Cows will be sold in groups of approximately 5 pairs per lot.
