Storing milk upright Silo allows Hamminks exibility with uid product storage By Jerry Nelson

BRUCE, S.D. – There once was a time when dairy farmers stored their milk in galvanized steel cans. As milk production grew, so did the need for onfarm milk storage. The venerable milk can was gradually replaced by stainless-steel bulk milk tanks. Most dairy farms have at least one barrel-shaped bulk milk tank. When a dairy expands, it can boost milk storage capacity by trading up to a bigger tank or by installing an additional tank. Wim Hammink and his wife, Nicolene, and their son, Tom, milk a total of about 4,000 cows between their two farm sites located near Bruce. A couple of years ago, the Hamminks expanded their herd and found themselves in need of additional milk storage. Instead of adding another horizontal milk tank, the Hamminks went in different direction: up. The Hamminks decided the best solution to their storage problem was to install a 20,000-gallon milk silo.
“After we expanded our herd, we had no extra milk storage capacity,” said Wim Hammink. “Our two 6,500-gallon milk tanks could hold only one day’s worth of production. We would have to dump milk if we weren’t picked up every day.” Cost was another factor in the Hamminks’ decision to install a milk silo. “The per-gallon cost for installing a milk silo is about two-thirds of that for a horizontal tank,” Hammink said. “Processing plants have used milk silos for many years, so it’s a well-tested technology.” In January 2019, a new milk silo was hoisted onto a concrete pad Wim Hammink at the Hamminks’ south dairy facility where they milk 3,000 Jersey and Jersey crossbred cows. “The footprint of a milk silo is much smaller than that of a traditional tank,” Hammink said. “We had to pour deep footings for the silo. The concrete slab where the silo sits is 6 feet thick.” The timing for the installation of the Hamminks’ milk silo proved to be fortunate.

“In April 2019, we had a really bad snowstorm and the milk trucks couldn’t get through,” Hammink said. “By the time the roads got cleared, we had seven semi loads of milk stored on our farm. We ended up dumping just one semi load of milk. Without the silo, we would have had to dump four loads. That helped justify the cost of the new silo.” The Hamminks’ milk silo features the latest technology. “The silo will send us an email when it’s getting close to full,” Hammink said. “It will also send the same email to the milk hauler. Our milk buyer, Valley Queen Cheese Factory, does an excellent job of keeping us cleaned out of milk.” The Hamminks chose to add an op-
tional exterior tank chiller to their silo. “Our milk goes from the cows to a plate cooler and then to a glycol chiller,” Hammink said. “By the time it gets to our tanks or the silo, the milk is at 38 degrees. The silo has a sensor that will alert us if the milk’s temperature goes above 40 degrees. It will also kick on the exterior milk chiller to get the temperature back down to 38. In the summertime, when the weather is hot and the silo is empty, the temperature alarm might go off when we begin to pump milk into the silo. The exterior chiller will also kick in. The alarm will switch off as soon as there’s enough milk in the silo to cool the warm stainless steel.” There is another bonus to having Turn to HAMMINKS | Page 4

extra storage and cooling capacity. “If the milk should get too warm in one of our horizontal tanks, we can pump it over to the silo and cool it back down,” Hammink said. “It’s nice to have that backup capability.” Keeping the interior of the milk silo clean and sanitized is no more difcult than any other milk tank, Hammink said. “If anything, I think it’s easier to clean a milk silo,” Hammink said. “There is a powerful spray nozzle at the top of the tank that applies the usual cycle of hot water rinses and sanitizers. In a silo, the wa-
ter and the sanitizers naturally run down the walls. Gravity works against you in a horizontal tank.” Because the Hamminks’ silo can hold multiple truckloads of milk, it is common for their hauler to only partially empty the immense upright storage tank. “Whenever the hauler takes milk out of the silo but doesn’t empty it, the hoses have to be rinsed and sanitized with a special wash cycle,” Hammink said. “Ours was one of the rst milk silos to be installed in this area. We worked closely with the state inspec-

tors to ensure that everything was done according to their specications.” The Hamminks had considered going to a system where their chilled milk is loaded directly into a waiting truck but decided against it. “Your milk holding capacity is limited to the number of empty milk trailers on the farm,” Hammink said. “That number is usually one. The milk hauler doesn’t want to invest a lot of money in trailers that would spend a good deal of their time sitting empty. If we had been using direct load-

ing during that snowstorm, we would have been forced to dump seven semi loads of milk.” Mike Van’t Hof owns a milk hauling business that serves dairy farmers in eastern South Dakota, southwestern Minnesota and northwestern Iowa. Van’t Hof has two customers that use milk silos. “The plus side of a silo is that you have more room and more exibility,” Van’t Hof said. “The downside is that it takes a long time to empty a silo and get it washed. I tell dairy farmers to put in a silo
that’s sized for one day’s worth of milk production, then add another one just like it. You need to have time to empty the silo and wash it properly. If you can do that, a milk silo is a win-win for everyone. Milk silos are a good thing, but they come with a learning curve and growing pains.” After using their milk silo for more than a year and a half, the Hamminks have just one regret. “I only wish that we had gone with a bigger silo,” Hammink said.

MORRIS, Minn. – One of the dairy industry’s growing markets is A2 milk. “(A2 milk) is one of the most increasing sectors of the dairy market,” Brad Heins said. “Several research studies have talked about A1 and A2 milk and the effects on human health. The jury is still out, but there’s a lot of recent interest in A2 genetics.” Heins, a dairy scientist with the University of Minnesota West Central Research and Outreach Center in Morris, presented ndings from two research studies as part of the seminar, “Dairy Genetics: breeding for A2 milk” during the center’s virtual organic dairy day Aug. 11. The university partnered with Penn State University to genomically evaluate the two Morris dairy herds – a 130-cow organic milking herd and 160-cow conventional milking herd. Each herd includes purebred Holsteins – contemporary and 1964 genetics – and two crossbred rotations of Viking Red, Normande and Jersey, as well as Holstein, Viking Red and Montbéliarde. The rst study, “Genetic traits and beta casein A2 of Holstein and crossbred dairy cattle in an organic and
low-input dairy herd,” compared cows for milk production, fertility, longevity and health as they relate to A1 or A2 genetics. “We’ve been exploring genomics of those animals,” Heins said. “So far, we’ve been nding about 50% of the herd is A2.” The A2 gene determines whether an animal produces A1 or A2 beta casein proteins in the milk, said Heins. Every animal has two copies of the gene, allowing for the following possible combination: A1A1, A1A2 or A2A2. Farmers can increase the probability of A2A2 genetics by understanding herd matings. “The fastest way to get A2 genetics in the herd is to breed with A2A2 bulls,” Heins said. For the study, Brad Heins the 1964 genetic Holsteins were considered the control group to compare against the two crossbred rotations and contemporary Holsteins. “This was a part of a larger study for genetics and health in crossbreeds,” Heins said. Then, researchers looked at predicted transmitting ability from the December 2019 genetic evaluation published by the Council on Dairy Cattle Breeding, paying particular attention to the indepen-

dent variable of A2 status and genetic line. Of the breeds genotyped, 50% purebred contemporary Holsteins in the Morris herds are A2A2 carriers with 14% of the Holsteins being A1A1 carriers. The 1964 genetic Holsteins tell a different story with only 23% carrying the dominate A2 gene. “Overtime, we’ve selected for a greater percentage of A2 genetics in Holsteins cows,” Heins said. Of the crossbreds in the herds, 47% of Holstein sired animals are A2A2; 51% Jersey sired with only 8% being A1A1; 50% Montbéliarde sired; 45% Viking Red sired; and 55% Normande sired with 4% being A1A1 carriers. Across the entire herd at the research center, 43% are dominate for the A2 gene and 15% are A1A1.

“(The A2 prevalence) was much higher than we might have expected,” Heins said. The study also compared net merit to A2 genetics but observed no difference amongst genotypes. In Heins’ presentation, he also reviewed data collected from a second study between the university and Penn State, “Update on beta casein A2 genetics of organic Holstein dairy cows across the Midwest and Northeast.” The group also looked at A2 genetics of organic dairy cows amongst the other major breeds. Of the total 1,485 cows genomically tested across the region, 1,326 were Holstein. And of that group, 45% are A2A2 carriers. The percentage of Jersey cows with A2A2 genes is similar (44%) and Brown Swiss slightly more (59%). The Ayrshire pool of seven cows has no A2 dominate carriers, but 57% are A1A2. A group of 10 Guernseys are 90% A2A2 with 10% being A1A2. The study also looked at Montbéliarde, Norwegian Red, Swedish Red and Normande breeds, including animals which the breed is unknown. Over this entire population of cows, about 40%50% are A2A2. “We then looked at organic Holstein cows, specically, on pasture,” Heins said. “We wanted to determine milk, fat and protein production and somatic cell score for A2 genotypes.” Of the 637 Holsteins from seven herds on Dairy Herd Improvement Association, 6% are A1A1, 44% are A1A2 and 50% are A2A2. “We did not see any difference in production of milk fat or protein based on beta casein genotypes,” Heins said. “There was no difference in somatic cell
either.” As with the rst study, this one also evaluated the genetics of the research population against December 2019 PTAs as published by CDCB. This time, researchers looked at net merit and grazing merit. The study found that A2A2 cows had a higher net merit, at about $60 lifetime dollars, and $80 more in grazing merit compared to A1A1 cows. Those same cows had higher milk and protein PTAS and a slight difference in increased productive life. However, dairy wellness prot was largely unaffected. Research indicates a benet for understanding the A2 genetic prole of a herd and selecting for A2 genetics to capture a growing market. However, A2 should not be the only criteria when making breeding decisions, said Heins.

FARM program recognized for international quality The U.S. Department of Agriculture Agricultural Marketing Service once again approved the National Dairy Farmers Assuring Responsible Management Animal Care Program’s animal welfare standards, determining that the program’s fourth version meets the requirements of the International Organization for Standardization (ISO) Technical Specication. FARM was the rst animal-care program in the world to have its updated standards veried through this process. “The ISO certication for the FARM Program demonstrates its importance and validates our industry’s commitment to animal care not only domestically but also in the world market,” said Jim Mulhern, president and CEO of the National Milk Producers Federation, which administers the FARM program. The assessment to the ISO standard determines whether animal welfare programs meet international standards for animal care as set by an independent standards-setting organization. FARM was evaluated to ensure that the standards in Version 4.0 of its Animal Care program meet the highest quality in speciesspecic welfare practices. The World Organization for Animal Health and ISO work together to help farmers and programs like FARM standardize and implement their animal care guidelines. The OIE, the World Trade Organization-recognized body for setting animal health and welfare standards affecting international trade, adopted dairy cattle welfare standards in 2015. FARM was the rst livestock program in the world recognized for the technical specication in 2018. It repeated the USDA verication process to provide an additional level of assurance for the improvements made to the program in its fourth iteration. The verication by USDA signies to FARM Program participants that its standards are among the best in the world; it also signals to consumers they can have condence their dairy products were produced in accordance with the highest level of science-based animal care. USDA to survey county small grains acreage The U.S. Department of Agriculture’s National Agricultural Statistics Service will survey producers in 32 states, including Minnesota, for its 2020 County Agricultural Production Survey and Sept. 1, 2020 Agricultural Survey. These surveys will collect information on total acres planted and harvested, and yield and production of small grains crops down to the county level. These surveys will provide the data needed to estimate acreage and production of selected crops such as barley, oats, and wheat in the United States. “The data provided will help federal and state programs support the farmer,” said Dan Lofthus, Minnesota State Statistician. “I hope every producer understands the importance of these data and will take the time to respond if they receive this survey. Producers can lose out when there are no data to determine accurate rates for loans, disaster payments, crop insurance price elections and more. When enough producers do not respond to surveys, NASS is not able to publish data. Without data, agencies such as USDA’s Risk Management Agency or Farm Service Agency do not have information on which to base the programs that serve those same producers.” You are encouraged to respond online at agcounts.usda.gov, or by mail. Alternatively, within the next few weeks NASS representatives will contact selected Minnesota growers to arrange telephone interviews to complete the survey. NASS safeguards the privacy of all respondents and publishes only aggregate data, ensuring that no individual operation or producer can be identied, as required by federal law. Survey results from the Sept. 1, 2020 Agricultural Survey will be published in the Small Grains Summary and the quarterly Grain Stocks report, both to be released Wednesday, Sept. 30, 2020. County-level survey results will be published on the NASS Quick Stats database (https://quickstats.nass.usda.gov/) at 3 p.m. ET on Thursday, Dec. 10, 2020. ConƟnued from UDDER STUFF| Page 8 USDA accepting applications to help cover costs for organic certication USDA’s Farm Service Agency announced that organic producers and handlers can apply for federal funds to assist with the cost of receiving and maintaining organic certication through the Organic Certication Cost Share Program (OCCSP). Applications for eligible certication expenses paid between Oct. 1, 2019, and Sept. 30, 2020, are due Oct. 31, 2020. “For producers producing food with organic certication, this program helps cover a portion of those certication costs,” FSA Administrator Richard Fordyce said. “Contact your local FSA county ofce to learn more about this program and other valuable USDA resources, like farm loans and conservation assistance, that can help you succeed.” OCCSP provides cost-share assistance to producers and handlers of agricultural products for the costs of obtaining or maintaining organic certication under the USDA’s National Organic Program. Eligible producers include any certied producers or handlers who have paid organic certication fees to a USDAaccredited certifying agent. Eligible expenses for cost-share reimbursement include application fees, inspection costs, fees related to equivalency agreement and arrangement requirements, travel expenses for inspectors, user fees, sales assessments and postage. Due to expected participation levels and the limited funds available, FSA revised the reimbursement amount available through scal year 2023. Certied producers and handlers are now eligible to receive reimbursement for up to 50 percent of the certied organic operation’s eligible expenses, up to a maximum of $500 per scope. This change is will allow a larger number of certied organic operations to receive assistance. If Congress authorizes additional funding, FSA may provide additional assistance to certied operations that have applied for OCCSP, not to exceed 75 percent of their eligible costs, up to $750 per scope. The changes to the payment calculation and maximum payment amount are applicable to all certied organic operations, regardless of whether they apply through an FSA county ofce or a participating state agency. State agencies that are interested in overseeing reimbursements to producers and handlers in their states must establish new agreements with FSA for scal 2020. Today’s announcement also includes the opportunity for state agencies to

apply for grant agreements to administer the OCCSP program in scal 2020. State agencies that establish agreements may be able to extend their agreements and receive additional funds to administer the program in future years. FSA has not yet determined whether an additional application period will be announced for state agencies that choose not to participate in scal 2020. States that would like to administer OCCSP for multiple years are encouraged to establish an agreement for scal 2020. FSA will accept applications from state agencies from Aug. 10, 2020 through Sept. 9, 2020. State Agencies must submit the Application for Federal Assistance (Standard Form 424 and 424B) electronically via Grants.gov, the Federal grants website, at http://www.grants.gov.
