For the 50th anniversary of the Red & White Dairy Cattle Association (RWDCA) in 2014, Eustice produced Red & White Reections – The First Fifty Years of the Red & White Dairy Cattle Association. That book led to his most recent work, the more-detailed 275-page “They Saw RED!” History of Red & White Holstein Dairy Cattle in North America. With Minnesota hosting the RWDCA national convention this year, Eustice pushed to get the book completed for those attending. As Eustice wrote, red and white cattle were common in the Netherlands from very early times and may have been prominent. As black and white cattle became more common, they occasionally gave birth to red calves. It wasn’t until
SAVAGE, Minn. – Seeing red had a different meaning for dairy farmers 60 years ago. While most Holstein breeders enjoy seeing red in the calving pen, red calves born up until the 1960s weren’t something purebred breeders wanted to see. Red and White Holstein calves are genetically equal to black and whites, yet many breeders didn’t understand why they were born. And, the Holstein Friesian Association wouldn’t register them. Consequently, many red and white calves were disposed of or sold to grade breeders. The Canadian dairy industry was so against red and white calves that bull studs were forced to dispose of any Holstein sires carrying the red factor. By the 1960s, some breeders fell in love with the color and took the calves. ConƟnued from EUSTICE | Page 3 Holsteins were exported to the United States in the 1870s that prejudice against red and white calves began. When American buyers expressed a strong preference for black and white cattle, Dutch farmers adapted their breeding and marketing efforts to match demand. A cow named Clothilde, imported by Smiths and Powell of Lakeside Farm of Syracuse, N.Y., in 1880, carried the recessive red gene and became the most inuential source of the red factor in North America. Rules were written in the 1880s regarding red and whites, with the Association of Breeders of Thoroughbred Holstein Cattle passing a resolution requiring the examiners of imported cattle to reject any animal that had a red or red-brown spot or spots equal to four inches in diameter. It was almost 90 years before the Holstein Friesian Association accepted red and whites. Over the decades, numerous red and white calves were born at some of the most important Holstein herds in the United States, but the calves were either destroyed or given away. “During that time, hundreds or thousands of calves from the best genetics in North America were destroyed,” Eustice said. The prejudice against red and whites continued into the 1960s, primarily because the recessive gene was not understood. Although red and whites were barred from HolsteinFriesian registration until 1970,

Clothilde became the most inuenƟal source of the red factor in North America. it was well known that red and white calves were occasionally born in some of the best herds and from some of the best stock. In writing the book, Eustice had access to the records of many of this country’s best herds from the past century. Records at Carnation Farm go back to 1915 with card les on over 7,000 head and parentage recorded from 1920 on. Records show that Carnation had a red calf born in 1915, but parentage on the calf can’t be traced. “The red factor existed at
Carnation from the very beginning,” Eustice said. “Carnation had at least 70 red calves born from 11 different bulls. Their best cows were bred to Sir Inka May, and many of the red calves were by him.” The farm tried, without success, to rid itself of red calves. Eustice said a 1963 Carnation Milk Farms newsletter indicated that bulls were being tested with the intent to eliminate the red factor. Eustice also accessed the barn and breeding cards from Winterthur Farms in Delaware. In researching the records dat-
ing back to 1920, now at the Winterthur Museum, he found that red calves began to appear in 1940. Gerrit S. Miller of New York started his Holstein herd in 1869. When it was dispersed in 1937, it was the oldest purebred Holstein herd in the United States. Miller kept the Holstein herd book and records for the Holstein Friesian Association in the 1880s. He also kept a diary and identied every red calf born on his farm that was either given away or sold for slaughter. That diary still exists. Acceptance of red and
whites grew, with Larry Moore of Wisconsin at the forefront. As early as 1947, Moore secured an outstanding red and white from Winterthur Farms and began to travel in the United States and Canada in search of red and whites. He kept accurate identication records that were accepted by the Holstein-Friesian Association when red and whites were registered, beginning in 1970. The RWDCA was formed in 1964 and established a herd book, making the acceptance of red and whites into the Holstein herd book easier. HFA now issues registration certicates for red and whites in an open herd book. Eustice’s book includes hundreds of photos. Photos for the book were secured from the Holstein Association, Holstein World, Canadian Holstein Association, Canadian Holstein Journal, livestock photographers and breeders. Numerous individuals assisted the author in researching the book: Dr. Larry Specht, professor emeritus at Pennsylvania State University; Dr. David Selner of Wisconsin; Doug Blair of British Columbia, Canada; Robert Chicoine of Quebec, Canada; and others. “They Saw RED!” also details information on the bulls and cows which built the red and white breed, show ring champions, and the chronology of red and white cattle.

Fjerstad: The wonder dairywoman Fosston farmer milks cows on own for 30-plus years By Jennifer Coyne jenn@dairystar.com
FOSSTON, Minn. – Debbie Fjerstad does it all and has seen it all on her dairy farm in northern Minnesota; from milking cows to cutting hay, from the ‘80s farm crisis to the highs of 2014, some would consider her to be dairy’s wonder woman. “I’m a workaholic and nothing stops me – I have endless energy,� Fjerstad said. “Even when I was pregnant with my two boys, Kolton and Keyston, I worked right up until I went into labor and then was back in the barn the next day.� Fjerstad milks 25 cows on her 160-acre farm in Polk County near Fosston, Minn. Every morning, Fjerstad is in the Quonset barn-style stanchion barn, milking and feeding the cows. “If you split the barn down the middle, one half has all my feed it in and the other half is where the cows are milked, and there’s a loft for hay,� Fjerstad said.

Once daybreak arrives, she lets the herd out to pasture and focuses on ďƒželdwork or other tasks around the farm before returning to the barn for evening chores. While Fjerstad purchases most of her feed, including big square bales, she is able to put up 70 acres of hay each year.
“I wouldn’t be able to farm without Kolton,� Fjerstad said. “He cuts the hay, then I rake it, bale it and haul it to the barn.� The remaining land is grazing pastures and a nearby lake. “I have to buy all of my feed because I don’t have enough acres and I don’t have
enough equipment; but being able to pasture my animals helps,� Fjerstad said. “I follow a certain paddock rotation where the cows will head east and then in a few days after milking, I’ll have them head south to a new location.� Fjerstad’s interest in dairy farming began at a young age, when her parents operated a
farm. “I would sleep on the couch, and wake up to the rooster crowing and hear my parents head out to milk cows. I still remember that and I liked that – I’ve always liked cows,â€? Fjerstad said. Unfortunately, when Fjerstad was 6 years old, her father passed away and the family sold the cows; but that did not deter her from owning her own farm someday. In 1982, Fjerstad purchased her current farm site and began milking cows with buckets. Soon after, in the early ‘90s, Fjerstad purchased a used pipeline and four units. “That’s what I milk with now,â€? Fjerstad said. “All the cows have names and know which stanchion is theirs. When I’m milking, I listen to country music and sing to the cows. I think they like that.â€? When Fjerstad ďƒžrst sold her milk, she was a Grade B farm. However, after updating the milkhouse to include a hand-washing sink and ďƒžnishing cement work in the pump house in 1998, Fjerstad was able to upgrade to a Grade A license and receive $1 more per hundredweight. Debbie Fjerstad milks 25 cows in a Quonset barn-style stanchion barn. The barn holds the cows in one side, with feed in the other. Today, Fjerstad and six other area dairy farmers provide milk to Dean Foods in Thief River Falls, Minn., where the milk is processed into ice cream for restaurants across the state. There is only one other nearby farm that is a part of the same cooperative as Fjerstad, and the dairywoman has adapted to the scarce dairy infrastructure in northern Minnesota. “There really isn’t anyone around me – it’s all beef farms. I’m one of the few small dairies left,” Fjerstad said. “But when I do get the opportunity, I ask questions – a lot of questions. I also read a lot and am in a farm management program.” Fjerstad then takes the information she gathers to make a sound deci-

sion that will better her dairy farm. “As years go on, you really learn more from experience, too,” Fjerstad said. For instance, Fjerstad chooses to use a breeding bull when making mating decisions after trying A.I. and realizing it was not the right style of management for her herd. “All I do is work and I really don’t have the time or people to do all of that,” Fjerstad said about the A.I. practice. “I just let the bull do it, and then
I’ll test for pregnancies in six or eight weeks.” Additionally, while other dairy farmers may use their phones and tablets to record events on the farm, Fjerstad prefers a pen and paper system. “I think a new person starting out would want to use their phone, but for me I have it so small and so simple,” Fjerstad said. “I have it all in my head and a le for each cow. I write down all the information – when she calves, what she calves and so on – so I can keep track of her life events.” While the industry continues to evolve, and Fjerstad remains rooted in her management practices, there are a few advances she has been able to incorporate within her dairy. “I’ve had pregnancies conrmed through milk samples and have tried ultrasounds. I also no-till drilled my alfalfa elds this year – it’s nice what technology is available,” Fjerstad said. Although Fjerstad has never left the farm for a vacation, when she nds any small window of free time she shares her career with the community through photography. Photos of Fjerstad’s cattle and farm can be found in the Fosston hospital, as well as on a local calendar. As Fjerstad looks back on her dairying career, she is proud of the farmer she has become and the lifestyle she created through the good times and the bad. She recently started a part-time job, but looks forward to the future as a dairywoman. “I don’t know what it’s like to get up in the morning and not go to the barn and milk cows,” Fjerstad said. “I don’t know how I’m ever going to stop milking cows.”

Mother-son duo enjoys creating beautiful music Hoeslys have participated in Monroe City Band for many years By Danielle Nauman Staff Writer
BRODHEAD, Wis. – Berthold Auerbach once said, “Music washes away from the soul the dust of everyday life.” That reects the joy Trish Hoesly and her son, Jake, get from taking part in the Monroe City Band. Trish is an avid ute player, while Jake enjoys playing the French horn. Both began their music careers in fth grade. “It’s enjoyable to get together with other musicians and to get off the farm for an evening,” said Trish of her involvement. Trish and her husband, Todd, operate Hoesly Holsteins, where they milk about 70 head in a tiestall barn, along with son, Jake, and daughter, Paige. Long-time band members Trish has participated in the city band for 14 years, while Jake began participating when he was in seventh grade, playing off and on for 11 seasons, depending on his school schedule. Jake also plays in the smaller, newlyformed Brodhead Community Band. “I wanted to be like my older sister,” Trish said of why she chose to play the ute. “I’m pretty good at it, and it’s

has led her to a successful career as a graphic designer, focusing mainly on agricultural clients, including PDPW and Milksource. She also donates her design talents to the band, designing iers and programs for their concerts. “I don’t regret choosing art, but I do often wonder what might have happened if I’d pursued performance music,” she said, noting that she did play in college for two years. Eventually, the time requirements for her art major took away from the time she had to play in the band. “It keeps your skills up, and everyone is really pretty good,” said Trish of her participation in the band. “It’s rewarding to hear how good we sound. Sometimes, I wish I could be in the audience to fully appreciate it.” Prior to joining the band, Trish kept up her musical skills by playing special music in her church, as well as playing for weddings and other events. Second-generation musician Jake enjoys participating in the bands for similar reasons as his mother, enjoying the night off from the farm each week. Jake attended the University of Wisconsin-Platteville and graduated with a major in soil and crop sciences and a double minor in animal science and agribusiness. He began participating in the band, but found it conicted with the activities of the Pioneer Dairy Club. “I enjoy continuing to play, and I gure since I own the horn, I should play it,” said Jake, who works as a eld crew supervisor for Applied Ecological Services at their Taylor Creek Restoration Nursery in Brodhead, Wis. A long history for the Monroe City Band The Monroe City Band is entering its 68th year and has a membership of 50-60 musicians, mostly hailing from Green County.
“There aren’t many farmers,” Trish said. “There are a lot of music teachers and former band directors involved.” The band season starts in mid-October, with practices on Monday evenings for a December Christmas concert, held at a church in Monroe. They are then off until mid-April, when practices resume for their summer concert series, which features ve concerts performed at the Monroe City Bandshell in Twining Park. They also perform every

Fourth of July and hold a concert at the Monroe Cheese Days Festival, which happens every other year in September. “Monroe has a neat old bandshell, and it is so well maintained and such an historic piece of architecture,” said Trish. She also explained that the structure embraces the deep Swiss heritage of the area, with the crests of each of the Swiss cantons painted on the bandshell. While Trish herself does not descend from Swiss ancestry, her husband is full-blooded Swiss, with his grandparents emigrating to this county. The summer concert series are usually themed towards one specic genre of music, and the group focuses on educating the listeners as opposed to simply entertaining. Trish enjoys the classical genre the most, while Jake enjoys some of the more popular music, such as soundtracks from movies. Both list modern classical composer Frank Ticheli as one of their favorites.

The high seller of the day was the #4 CPI heifer in the breed, Coulee Crest Navajo Lark-ET, selling to new Guernsey owner Steve Linkowski of Avella, Penn., for $8,700. Lark has a GCPI of +95 and is a Navajo out of Coulee Crest Copper Leenah-ET VG-87, the #3 CPI cow in the breed. Lark also boasts a +328NM$, +2.8PL, +50F and +22P. The next six dams are all Excellent and well-known for making big-time milk records, ranking high in index and producing All-American daughters. Lark was consigned by Coulee Crest LLC of Cashton, Wis. The second-high selling consignment was a pick of seven American Pie daughters out of Mar Ral YB Margo Two-ET EX-90 consigned by Ralph Turley and Verl Weaver of Orient, Ohio and Goshen, Ind. The calves, born in June 2017, are potential eighth generation Excellent and will all be genomic tested in order to assist buyers Lang, Overholt and Basse of Big Prairie, Ohio, in making the best choice. Margo Two is a Yogibear with records to 26,860M 1,701F 875P and is a daughter of Mar Ral Royal Martha-ET EX-94, The All-American 5-Year-Old in 2006 and full sister to the popular bull Mar Ral Royal Mentor. The rst ever offering at a public sale from this cow family sold for $8,100. Two fancy show heifers also commanded prices over $7,000. The rst, Poppydale Latimer Spice-ET, is a well-grown and correct December 2016 daughter of Craig Moor Fayette Selma EX-93, Honorable Mention Junior All-American in 2010. Five embryo lots sold for an average of $556 per embryo. The high-selling embryo package was consigned by Austin and Landen Knapp of Epworth, Iowa, for $675 per embryo. The package consisted of three IVF, reverse-sorted embryos sired by either Ladys Man or a mutually agreeable sire and out of Knapps Ace Tamera EX-93, the most prolic brood cow in the breed. SHAWANO, Wis. – Current GENEX COO Keith Heikes will assume the position of CEO of Cooperative Resources International (CRI) upon the retirement of Doug Wilson in August. The cooperative, which includes GENEX, has more than $189 million in revenue and employs 1,350 people worldwide. CRI has a long-standing tradition of developing employees and promoting people within their ranks. A great deal of resources are spent on training and continuing education of employees. “I’m almost an old-timer,” said Heikes, referring to his lengthy history within the cooperative and the industry, as a whole. He has spent the past 36 years holding various positions within the articial insemination and dairy cattle breeding industries. Heikes has been with CRI or its predecessors since 1990. He held the position of GENEX COO since 2014, and previously served as the general

manager of NOBA, and headed up the international division of CRI for 15 years. In his new role, Heikes will use his extensive knowledge of the organization to continue to build on the cooperative’s goals. He is looking forward to becoming more involved in the areas of the cooperative that he does not have working experience with. Setting the strategic plan for the future of the company will encompass a great deal of his time, working to develop the direction for each of the different facets of the business. Heikes acknowledges that while the company is not directly involved in marketing milk, the current dairy economy and struggles facing producers affect the company’s bottom line. “We want to help farmers make the best management decisions, and provide them with the best genetic programs for them to be more protable,” Heikes said. That help will come in the form of providing products and services to help members make more money and realize more prot from their dairy operations. These products and services are the result of CRI’s commitment to continued research and development. “We invest in research,” said Heikes, pointing out that research development is a primary driver behind developing their strategic plan. Heikes noted that recently there has great deal of consolidation in production agriculture globally, largely driven by technology. “It’s in our DNA to look into things, and to work to make things more efcient and protable,” Heikes said. Outside of his employment in the industry, Heikes has been active in the dairy cattle breeding and articial insemination industries. He has held positions on both the National Association of Animal Breeders and Council on Dairy Cattle Breeding boards of directors for several years. He has also been involved with the USDA FAS emerging markets projects.

USDA authorizes emergency grazing in drought-stricken Montana, North Dakota and South Dakota Secretary of Agriculture Sonny Perdue today authorized emergency grazing on Conservation Reserve Program (CRP) lands in Montana, North Dakota and South Dakota. All or parts of these states are experiencing severe or extreme drought conditions – indicated as categories D2 and D3 on the U.S. Drought Monitor. “Due to reduced availability of forage, ranchers in the hardest hit locations have already been culling their herds,” said Perdue. “Without alternative forage options like grazing CRP lands, livestock producers are faced with the economically devastating potential of herd liquidation.” CRP is a voluntary program administered by USDA’s Farm Service Agency (FSA) available to agricultural producers to help them safeguard environmentally sensitive land and, when needed, provide emergency relief to livestock producers suffering the impacts of certain natural disasters. Emergency grazing is authorized to begin immediately and extends through Sept. 30, unless conditions improve. Producers must work with the Natural Resources Conservation Service (NRCS) to develop a modied conservation plan that is site specic, including the authorized grazing duration to reect local wildlife needs. FSA State Committees will monitor emergency grazing implementation at the local level to mitigate adverse impact on nesting areas and established CRP vegetation. “If the drought continues and pasture recovery becomes less likely, feed supplies will decline, the quality and quantity of hay is reduced and stock water becomes scarce – considerable stressors for both the livestock and our producers,” said Perdue. “If opening up grazing lands reduces even some of these stressors for these ranchers, then it’s the right thing for us to do.” Eligible CRP participants can use the acreage for grazing their own livestock or may grant another livestock producer use of the CRP acreage. There will be no CRP annual rental payment reductions assessed for acres grazed. To take advantage of the emergency grazing provisions, producers should contact their local USDA Service Center. Cancer survivors get a taste for ker after exercise Ker may be a benecial post-exercise beverage for cancer survivors. It means that cancer survivors can enjoy the nutritional support that milk provides without the potential for signicant stomach upset, report researchers in the Journal of Dairy Science®. Regular exercise plays an important role in improving cardiorespiratory tness, muscular strength, and feelings of fatigue in cancer survivors during and after treatment. However, many people with cancer experience digestive upset due to treatment and may be wary of incorporating dairy products into their diet to help support their recovery. Ker is a fermented milk product that is a good source of protein, health-promoting bacteria, and carbohydrates. Documented health effects attributed to the consumption of ker include improved lactose use, anticarcinogenic activity, control of intestinal infections, and improved milk avor, and nutritional quality. Investigators explored cancer survivors’ attitudes about consumption and acceptance of a ker recovery beverage made from cultured milk, whole fruit, natural sweeteners, and other natural ingredients. A ker beverage that met the American College of Sports Medicine guidelines for recommended nutrition after endurance and resistance exercise was developed and manufactured at the Louisiana State University Creamery. It was made by inoculating and fermenting milk with ker grains. The ker was then mixed with a fruit base and given to 52 cancer survivors following an exercise session. Participants evaluated the acceptability of the beverage samples (overall appearance, aroma, taste, mouthfeel, and overall liking) using a nine-point scale, and they evaluated the smoothness using a three-category just-about-right scale (not enough, just about right, and too much). They also expressed their physical and psychological feelings about the beverage using a ve-point scale (ranging from 1 = not at all to 5 = extremely) and indicated their intent to purchase the drink. Following the initial test, the health benets of ker were explained and participants sampled the product a second time, answering the same questions related to overall liking, feeling, and intent to purchase. Participants showed a high intent to purchase both before and after they learned about the health benets, but the beverage scored signicantly higher for overall liking after the health benets were explained. “Ker may be a great way for cancer survivors to enjoy a post-exercise dairy drink in the future,” commented lead investigator Laura K. Stewart, PhD, Associate Professor at the University of Northern Colorado, School of Sport and Exercise Science. “The beverage received high scores overall and, except for an improvement in overall liking, we observed no signicant differences in physical and psychological feelings before and after participants learned that it contained ker and had potential health benets.”

DAIRY CALENDAR Attend a night of free family fun at the 2017 Family Night at the Dairy Farm. This event, put on every other year by the New Ulm Farm-City Hub Club, is set for Thursday, July 27, from 5 to 8 p.m. at the Steve and Kerry Hoffman Farm, 18868 140th Avenue, New Ulm, Minn. To reach the farm, go south from New Ulm on Highway 15, turn right on County Road 25, go one mile, turn left on 140th Avenue and go two miles. Watch for signs (and possibly construction updates). The special event promotes agriculture at a perfect time, during July Ice Cream Month! The dairy treat line-up—all free—will include root beer oats, milk, yoghurt, and ice cream bars. Brown and Nicollet County Dairy Princesses and ambassadors will take part. Family Night includes farm tours, calf petting, photos with the dairy princesses, other kids’ activities, hayrides, educational displays, and more. The event is free of charge and open to the public. All ages are invited. Strollers are welcome. This is the sixth time that the club and the Hoffmans have partnered to host the event (held in odd numbered years). The University of Minnesota is excited to be offering a Dairy Field Day in Stearns County this summer. Field Days allows the Dairy Extension to team up with successful dairy operations to showcase their farm to other local producers and agribusinesses that work with them. The Stearns County Field Day will be held on Tues., Aug. 1 from 10:30 a.m. to 12:30 p.m. at Meyer Dairy, LLC, operated by Nick, Tara, Tyler and Maddie Meyer, located at 39957 360th Street, Sauk Centre, Minn. The Meyers milk 240 cows 3X/day in a double-8 parlor and maintain a 30,000 lb. herd average. All their heifers and cows are raised on-site. In 2003 Nick took over the farm from his parents and expanded from the original tiestall operation to a 150-cow freestall and parlor. In 2012 the Meyers build a transition barn and added an additional 80 milking cows. The Meyers have incorporated a Doda manure solids separator in their operation which they use the solids for their pregnant cow and far off dry cow pens. A year ago they also installed automatic alley way scrapers. Lunch is included for the event free of charge because of generous sponsors like Central Minnesota Dairy Initiative and VitaPlus. Exhibitors and spectators are invited. Farmland leasing and land values workshops will be held across northeast Iowa counties starting August 7 through August 17. Melissa O’Rourke, ISU Extension Farm & Agribusiness Management Specialist will present a wide range of topics related to farmland values and leasing. O’Rourke is a licensed attorney with extensive experience in working with farm, ranch and agribusiness interests. She also noted that ISU research indicates that on average, cash rent values across the state have declined for three consecutive years. O’Rourke has also seen that farmland owners and producer-tenants need to have more conversation about the cost of inputs to put in the crop and reasonable expectations on prot margins. Workshop attendees will receive a comprehensive workbook packed with information about land values, leasing and different types of farm lease arrangements.
