Darlington Ridge Farms manages for longevity

DARLINGTON, Wis. – Predictable cows that go about their business every day are the ones preferred by Jim and Katie DiGangi at Darlington Ridge Farms LLC of Darlington. Cows like 774 are the ones they like to work with, the cows that stay in their herd for many protable years. They have found that cow comfort,
simplicity and a good team are the keys to making those kinds of cows happen. The DiGangis featured 774 in a post on their farm Facebook page to celebrate her 17th birthday, and their favorite cow received a lot of love on the social media website. Over 2,400 people have liked and commented on the post,

and over 1,000 people have shared the post. “We’ve posted her before, each year around her birthday, but this year the post just went wild,” Katie said. “We were blown away by the response; one commenter said it was the coolest post they had ever seen.” A prolic cow, 774 has
bred back on a regular basis every year and is due in July with her 16th calf. To date, she has produced 341,830 pounds of milk, 11,298 pounds of butterfat and 8,856 pounds of protein. Throughout her lifetime, her number of days open each lactation typically reects the farm’s voluntary waiting period.
Even before the DiGangis took over the farm, 774 has been a resident on the ridgetop outside of Darlington. “Our records show that she was born in 2003 and came here as a heifer from Texas with the previous owner,” Turn to DIGANGIS | Page 4

Katie said. “We took over the farm in 2008.” Cow comfort and care is the primary focus for the DiGangis. They milk 2,700 cows and farm about 2,000 acres to grow feed for their herd. Simplicity and consistency are the hallmarks of their management style. The herd averages 92 pounds of milk per cow per day with a 140,000 somatic cell count. In addition to Jim and Katie, they have 30 employees who play an important role in the success of the farm. “We have daily milk weights and conductivity sensors, but I like to look at the cows,” Jim said. “If cows could talk, life would be great. I just walk around in the barns and try to think
like a cow might be thinking, what they might be needing or wanting today. I want to see that their needs are being met.” Cows live in deep sand-bedded free stalls in naturally-ventilated barns with fans. Their location on the ridge allows for natural air movement, helping to keep the cows comfortable and healthy year-round. During the summer, they utilize soakers and fans. They use recycled sand and capture about 85% to 90% of the sand for reuse, buying new sand primarily only for the pre-fresh, fresh and hospital pens. Jim and KaƟe DiGangi like to keep their management style as simple as possible, allowing cows to be cows at Darlington Ridge Farms. divided into groups by both age and lactation number. A fresh cow diet is fed until about 30 days in milk; cows are then moved into high-fresh groups divided by age. They stay there until about 120 days in milk before being changed to what they refer to as their herd diet. In the last 30 days of their lactations, cows are moved to a lowcow diet. “We strive for a consistent, simple environment for the cows,” Jim said. “We really focus on providing the fresh cows with a smooth transition. Getting through that time without problems sets them up for success.” The theme of simple and consistent carries through to the vaccination

and herd health protocols followed on the farm. Their vaccination program includes a J-5 and Bovi-Shield vaccination at 30 days in milk with a J-5 booster at 120 days. Dry cow vaccines include J-5, Scourguard 4KC and SRP Salmonella. They adhere to a 60-day dry period and follow a 78-day voluntary waiting period prior to rst breeding. The DiGangis focus their breeding program on fertility and place emphasis
on daughter pregnancy rate, both males and females. “We feel like if the fertility is there, they’ll be around for a long time,” Katie said. The DiGangis utilize genomics as a tool in mating decisions and are focusing on strategically creating a healthier herd using data. “It has given us options, we can do all kinds of things with our breeding program and make it very precise,” Jim said. Using genomic results, the DiGangis determine how they will breed each animal. They use sexed female semen for the top animals and diversify the farm by breeding lower genomic individuals to beef semen. Heifers are sent to a calf raiser in Texas within a week of age. Their 2019 pregnancy rate was 33%, and they have been at 40% for the last two cycles. First service conception rate for rst-lactation animals in 2019 was 53%, with 90% of the breedings to sexed semen. First service conception rate for cows in their second lactation and beyond was 45%, with 76% of the breeding being to sexed semen. Hoof care is something the DiGangis approach aggressively. All cows are trimmed at dry-off and again at 140 days in milk. Copper sulfate foot baths are used for the cows. They also utilize rubber mats in their holding areas, returns and cow decks. “We want more cows like 774 that pay for themselves over and over again,” Jim said. “They allow us to keep doing this. The really good ones are the ones you don’t talk about.”

Applications are being accepted for college scholarships that are awarded by America’s dairy farmers and importers through the National Dairy Promotion and Research Board (NDB). Eleven scholarships worth $2,500 each will be awarded, in addition to a $3,500 James H. Loper Jr. Memorial Scholarship to one outstanding recipient. NDB funds, in part, Dairy Management Inc. (DMI), which manages the national dairy checkoff program. The Agriculture Department announced the February Federal order Class III benchmark milk price at $17.00 per hundredweight, down 5 cents from January, $3.11 above February 2019, and the highest February Class III since 2014. Late Friday morning Class III futures portended a March price at $16.36; April, $16.02; May, $16.29; and June at $16.51; with a peak at $17.13 in October. The February Class IV price is $16.20, down 45 cents from January, 34 cents above a year ago, and the highest February Class IV price since 2014. You’ll recall that January US milk output hit 18.8 billion pounds, up 0.9% from January 2019. The latest Dairy Products report shows where the milk went. Cheese output totaled 1.103 billion pounds, down 2.3% from December but 0.4% above January 2019. That’s a record high for January, according to the Daily Dairy Report. Wisconsin produced just under 274 million pounds of the total, down 1.6% from December and 0.9% below a year ago. California output fell to 212.0 million pounds, down 2.4% from December and 0.9% below a year ago. Idaho cheese came in at 85.2 million pounds, down 4.1% from December and 1.7% below a year ago. Minnesota output totaled 61.9 million pounds, down 2.3% from December and 5.2% below a year ago, while New Mexico output climbed to 83.9 million pounds, up 1.6% from December and 4.65 above a year ago. Italian type cheese totaled 482.2 million pounds, down 0.2% from December but 0.4% above a year ago. American cheese totaled 436.3 million pounds, down 4.9% from December and 0.7% below a year ago. Mozzarella, at 380.2 million pounds, was up 0.1%. Cheddar output, the cheese traded at the CME, fell to 317.4 million pounds, down 15.9 million pounds or 4.8% from December and was 5.8 million or 1.8% below January 2019, and helps explain the strong prices. Butter production climbed hit 190.7 million pounds, up 13.9 million pounds or 7.9% from December and 1.1 million pounds or 0.6% above a year ago, the eighth consecutive month butter output topped that of a year ago and was also a record high for the month of January. Dry whey totaled 84.8 million pounds, up 6.3% from December and 4.4% above a year ago. Stocks fell to 66.7 million pounds, down 7.7% from December and 16.0% below a year ago.
Nonfat dry milk production hit 173.2 million pounds, up 8.5 million pounds or 5.2% from December and 500,000 pounds or 0.3% above a year ago. Stocks climbed to 279.2 million pounds, up 31.7 million or 12.8% from December but were 7.2 million pounds or 2.5% below the 2019 level. Skim milk powder output slipped to 51.5 million pounds, down 2 million pounds or 3.7% from December but was 11.7 million pounds or 29.4% above a year ago. Tuesday’s Global Dairy Trade (GDT) auction saw its weighted average of products offered slip 1.2%, following the 2.9% drop on February 18 and 4.7% plunge on February 4. A year ago, the rst GDT’s weighted average for March was up 3.3% and was the seventh consecutive month of gain. Buttermilk powder led the declines Tuesday, down 4.8%, followed by GDT Cheddar, down 4.7%, after gaining 5.3% in the last event. Skim milk powder was down 3.2%, after a 2.6% drop, and anhydrous milkfat was down 1.7%, following a 5.5% dive. Whole milk powder was off 0.5%, after a 2.6% drop last time. Lactose was up 5.7%. Butter was up 1.0%, after a 3.9% decline, and rennet casein inched 0.5% higher. FC Stone equated the GDT 80 percent butterfat butter price to $1.8282 per pound US, up 1.8 cents from the last event. CME butter closed Friday at $1.8550. GDT Cheddar cheese equated to $1.9437 per pound, down 10.9 cents, and compares to Friday’s CME block Cheddar at a bargain $1.75. GDT skim milk powder averaged $1.2460 per pound and compares to $1.2882 last time. Whole milk powder averaged $1.3389, down from $1.3455. CME Grade A nonfat dry milk closed Friday at $1.1150 per pound. Meanwhile, US exports of nonfat dry milk and skim milk powder surged higher to a record January volume and remained on track with the strong shipments seen monthly since September, according to HighGround Dairy (HGD). Product moving to Mexico was down 10% for the fourth consecutive month, says HGD, but continued shipments into Southeast Asia kept demand strong in the month. “Total cheese exports eked out a gain versus prior year and were supported by shipments moving south to Mexico,” says HGD, up 21% from a year ago but South Korea and Japan imported less US cheese to kick off the year. “January marked the 17th consecutive month of losses for US dry whey exports and against steep prior year losses,” says HGD. Exports to China were down 13% year over year and “the weakest for January in

It shot up to $1.7675 per pound Monday but closed Friday at $1.75, up 2.75 cents on the week and 21.5 cents above a year ago. The barrels dropped to $1.4775 by Friday, down 11.25 cents on the week, 11.25 cents above a year ago, but at an unsustainable 27.25 cents below the blocks. 7 cars of block sold and 17 of barrel. A number of cheese producers are foregoing the spot milk markets for internally supplied milk, according to reports to Dairy Market News. Spot milk prices were similar to the previous week. Milk is and has been available and maintenance issues at some cheese plants had milk handlers struggling to nd destinations. Cheese sales remain steady to slow, depending on the variety. Barrel producers are limiting production to meet contractual obligations while other traditional-style cheesemakers are running seven-day workweeks. Market tones are quiet to bearish, says DMN, and “Contacts have begun to accept, but not embrace, the large block to barrel CME price gap.” Western cheese production remains active as low-cost milk continues to ow to the vats. Domestic cheese sales are stable to increasing, especially for blocks. Some processors are sending export shipments without incident while others were having logistic issues in moving cheese to the nal destination. Current affordable prices are attracting international buyers. Cheese stocks are readily available but the coronavirus outbreak “continues to bring more uncertainty into the market,” says DMN. Butter jumped 10.5 cents Monday and climbed to $1.88 per pound by Thursday. It closed Friday at $1.8550, 13 cents higher on the week but 41.25 cents below a year ago. 8 cars found new homes on the week down from 65 the previous week. Butter producers continue to report plentiful cream supplies, which naturally leads to heavier churning, some at capacity. Market tones saw some benets of the ‘new crop’ butter rule set forth every March on the CME. Contacts suggest that some of the pressure in recent weeks could have been caused by sellers clearing butter loads produced prior to December 2019, which can no longer be sold after the onset of March. That said, contacts report there is still plenty of butter and inventories are growing ahead of spring demand upticks. Plant managers are hopeful for Class II production to pick up and take more of the everpresent cream supplies. Western butter manufacturers report that ice cream production is slowly increasing and using more cream. While this is relieving some of the pressure on butter makers, there is still plenty of cream for the churns and many are running at or near capacity. Butter inventories continue to rise, albeit at a slower pace. Retail demand is steady but lower prices have spurred bulk butter demand. Grade A nonfat dry climbed to $1.14 per pound Tuesday but nished Friday at $1.1150, up 5 cents on the week and 14 cents above a year ago on 38 sales. Spot dry whey saw its Friday closing at 34.75 cents per pound, 0.75 cents higher on the week and

A lower All Milk price and higher feed costs pulled the January milk feed price ratio lower, second month in a row of decline. The Ag Prices report put the ratio at 2.41, down from 2.55 in December but compares to 2.06 in January 2019. The index is based on the current milk price in relationship to feed prices for a dairy ration consisting of 51% corn, 8% soybeans and 41% alfalfa hay. One pound of milk purchases 2.41 pounds of dairy feed containing that blend. The U.S. All-Milk price averaged $19.60 per hundredweight (cwt.), down $1.10 from December but is $3 above January 2019. California’s All Milk price was $19.40, down 40 cents from December but $3.15 above a year ago. Wisconsin’s, at $19.40, was down $1.90 from December but $3.20 above a year ago. The national average corn price averaged $3.79 per bushel, up 8 cents per bushel from December and 23 cents per bushel above January 2019. Soybeans averaged $8.84 per bushel, up 14 cents from December and 20 cents per bushel above a year ago. Alfalfa hay averaged $171 per ton, down $4 from December and $8.00 per ton below a year ago. Looking at the cow side of the ledger; the January cull price for beef and dairy combined averaged $61.40 per cwt., up $2.10 from December, $7.20 above January 2019, but is $10.20 below the 2011 base average of $71.60 per cwt. Milk cow replacements averaged $1,300 per head for the quarter in January, down $10.00 per head from October, but $160 per head above January 2019. Cows averaged $1400 per head in California, unchanged from October but $300 above a year ago. Wisconsin cows averaged $1260 per head, down $10 from October but $140 above January 2019. Dairy farm margins continued to weaken the second half of February as the milk market remained under pressure despite generally steady feed costs, according to the latest Margin Watch (MW) from Chicago-based Commodity & Ingredient Hedging LLC. “Although margins have retreated from very profitable levels,â€? the MW stated, “they remain relatively strong from a historical perspective. January Milk Production increased 0.9% to 18.8 billion pounds according to USDA, with greater productivity driving the gains. Average yields were up 20 pounds to 2,010 pounds per cow, the ďƒžrst time that per-cow production exceeded 2,000 pounds in January. USDA reported the January milking herd at 9.348 million cows, 6,000 head lower than last year, but up 5,000 from December and up 31,000 head from August.â€? The MW also cited swelling cheese and butter stocks in January, according to the latest Cold Storage report, which I detailed last week. Milk output is mostly steady to increasing in all the regions of the US, according to the USDA’s weekly update. Class I sales are generally stable, but increased a bit in Florida. Southeastern bottlers and manufacturers have enough milk to forego taking the loads they were getting from the Midwest. Midwest Class III milk is currently more steeply discounted compared to the previous year. In some parts of the West, it is challenging to ďƒžnd additional homes for milk loads. While milk constituent levels are up in the Paciďƒžc Northwest, they are low in the Midwest. Looking down under, January to December 2019 full year milk production in Australia decreased 4.3% from calendar year 2018, according to Dairy Australia, and ofďƒžcially joins New Zealand with calendar year 2019 milk output below 2018. Average milkfat was steady with 2018 and average protein was up 3.8%. New Zealand based dairy ofďƒžcials are talking about slightly lower milk production beneďƒžting dairy producers overall by helping to maintain pay prices, says DMN. Lower production relates to health concerns and weather factors. “The quarantines in China have resulted in a big decline in eating out and in store food shopping in affected areas,â€? says DMN, although the February 28 Dairy and Food Market Analyst (DFMA) stated that “Our contacts have reported signiďƒžcant improvements at Chinese ports.â€? “Chinese buyers have started contacting suppliers of dairy products in the USA and elsewhere, looking to buy at these lower price levels,â€?

HELPING GOOD MANAGERS MAKE BETTER TRADING DECISIONS As I write this week’s market snapshot the stock market is trading down over 7% on the market open. Commodities are also having a rough day. Over the years markets have dealt with foot and mouth disease, SARS, African Swine flu, 911, flash droughts, extreme currency shifts, and macroeconomic shocks. Each and everyone of these situations has caused extreme fear to move prices. Some of these events were shorter in duration, while others caused major shocks to supply and demand that took years to resolve. Just as all good things come to an end, so do all bad things. As far as the coronavirus is concerned this too shall pass. With that said, the world is watching as the map of the spreading coronavirus begins to look like a child breaking out with measles as little red dots show up all over the U.S., Europe, SE Asia, the Middle East, and South America. Today, nobody knows how this will play out, but the trade is reacting to expanding fear driven by news media reports. Spot CME Group barrel cheddar prices declined below $1.50 once again. Block cheddar prices are slowly grinding lower in sympathy with barrels trading $1.75. This is negatively impacting Class III futures with
the front half of 2020 flirting with sub $16 values. Class IV prices are under extreme price pressure with some months trading in the low $15’s. Butter prices remain lethargically weak, and nonfat dry milk prices continue to weaken around the globe on lack of movement into key import regions. Dairy product production and supply reports appear more positive than prices reflect. Recently released cold storage and production report data should have been viewed as supportive to prices. Although it may seem as though the deck is stacked against agriculture, the market usually provides an opportunity to use one of many tools available to protect a margin to those who stay focused and make decisions. An example of this is producers that purchased DRP insurance in November through mid February will likely see a significant payout on policies. For a meager 10-20 cents/cwt these decisions bought the right to remain profitable in 2020.

The Making More From Milk workshop will be March 24-25 in Madison, Wisconsin. The course offers dairy producers an opportunity to explore various diversication options, and a chance to think about the future of their businesses and their families. The course includes information from various perspectives, all of which helps a dairy producer think about what his or her niche might be. The focus is on looking into what might work for each specic participant. Making More From Milk encourages interaction and creates a supportive environment that often continues after the course concludes. This includes hearing from various producers who have a found unique ways to add value to their dairy. Panel discussions with various consultants and resources also offer a chance to meet with professionals who can help move course attendees’ dreams into reality. Also on the rst day, the course offers two “behind-the-scenes” visits: a retail specialty cheese store and a restaurant that specializes in local foods. “We want the farmers to be able to see their potential products through the eyes of those who work directly with the consumer,” notes the other course organizer, Karen Nielsen of Global Dairy Outreach. The second day takes participants off-site, traveling to visit three locations where farmers have successfully found ways to add value to dairy and “make more from their milk”. They include an ice cream parlor next to a family farm; a farm with its own uid milk and ice-cream processing, and agritourism; and a farm that specializes in farm tours. “This farm has been in our family for over 100 years and is now being run by third and fourth generation family members. Over the years we have tried other feed storage methods such as ag bags and piles with plastic and tires. We did not care for them very much because the feed was vulnerable to being destroyed by small wildlife. With the tower silos, we have never had wildlife cause moldy feed. Other than baled hay, we now use tower silos for all of our feed storage. We like the quality of feed that comes out of them - it is really good and we don’t have feed spoilage. It only takes two people to fill them, which helps in keeping a lower number of employees and saves money. As our feed storage will be grows in the future, we’re planning on adding another silo.”

cornerstone of Mark Collins’ life from the time of his youth. And, with an education in dairy business, Collins will be further equipped to return to his family’s third-generation dairy farm in County Tipperary of the

Munster province of Ireland. “I love working outdoors, especially with the land and the animals,” Collins said. “I really can’t see myself doing anything else. You could ask any of my friends, and they would all tell you; I just love cows.” The 21-year-old farms part time while studying dairy business at the University College Dublin in Dublin. His parents, Padraig and Ena, are the active owners and operators of the 400cow dairy farm established in 1979. The crossbred herd, mainly comprised of Brit-
ish Friesian and Jersey, is on pasture for 10 months of the year. Throughout November and December and when they are dry, the herd is housed in a roof-less freestall barn. Collins said they have been growing cow numbers since 2015 when the European Union abolished milk quotas. The family’s land base has the potential to support 420 cows, which Collins said they hope to achieve next year. The dairy’s replacement animals are custom raised. The Collinses began milking in a 60-unit rotary parlor in February, a signi-
cant change from the farm’s 20-unit swing-over herringbone parlor. They are milked twice a day and achieve a 3.8% protein and 4.6% butterfat. “The new parlor will really help to reduce labor and improve efciency,” Collins said. “I can really see the potential in it even though a few things have to be nished on it. cows are just so comfortable and relaxed.” Having a sustainable grazing system is what makes dairy farming in Ireland unique, Collins said. The area experiences a cool, temperate oceanic climate and an average of 39 inches of rainfall a year. “Ireland has the great ability to naturally grow grass which is an ideal and cheap source of feed for the cows,” he said. “I think it is one of the best places to be dairy farming right now. Dairy farming in Ireland

come home,” Collins said. “We get away on holidays at times of the year when the workload is low like late summer and in winter.” Collins said most dairy farms in the area are privately-owned, supplying milk to a cooperative which handles the processing and marketing. Collins said their milk is used for cheese, butter and infant formula production. The cooperative receives milk from 50 dairy producers, Collins said. “Some of these farms are not as big as ours and some may have more Friesian/Holstein cows – maybe not like your cows in the States – and feed a little more supplement,” Col-
lins said. “Some farms are split calving, calving a proportion of the herd in autumn to milk through the winter.” Collins is excited for the farm’s future success in Ireland’s dairy industry. “We look forward to the farm reaching its potential as it nears the end of this expansion phase,” he said. “Our energy will be more focused on improving efciency through reducing inputs such as feed and fertilizer while growing the same amount of grass if not more. There is potential to look into some mixed species swards, and who knows, maybe more opportunities to expand may arise in the future.”

It seemed my grandmother never needed a recipe. She knew what to add for a little extra zing to make a dish special. I’m starting to catch a glimpse into her secret. Cooking is like playing the piano. The more you practice, the better you become. You start to understand the underlying theories of how things go together, chords or ingredients. The more I cook, the more I learn. The more condent I become into trying new ideas. When I was in Belfast, Ireland, visiting family, I ate the best clam chowder. I asked the waiter what the brown round things were in my soup (No, it was not a y doing the backstroke). They were capers. They added such a different avor. Five years later, I ventured into making my own version of this soup. It is a combination of several recipes’ ingredients and tips, but I think it turned out good. The other recipes are adaptations from family members. Jonathon loves my caramel rolls but hates how long it takes. With two little ones, he and Libby need family friendly recipes, so they created their own version of caramel rolls. My sister, Amy, uses the King Hawaiian rolls to make an elegant but simple main course for her family. The nal recipe I came across from Facebook. If you have any Girl Scout Thin Mints cookies left, here is a great Easter dessert. Enjoy! Quick clam chowder 2 cans clams 1 1/2 cups clam juice 2 tablespoons butter 3/4 cup bacon bits 1 medium onion, diced
2 large potatoes, diced 1 cup whole milk 1/2 cup cream 1 to 2 tablespoons parsley 1 1/2 tablespoons capers Salt, pepper, paprika to taste Drain clams but save juice. Add water to juice to equal 1 1/2 cups. Set aside. In pot, melt butter, add bacon bits and onion. Stir and cook till translucent. Add potatoes, reserved juice, salt, pepper and paprika to taste. Cover and cook over medium heat 6 to 8 minutes until potatoes are soft. Add clams, milk, cream, parsley and capers. Heat through. Do not boil. You can make this in the morning. Let it cool and put in the refrigerator until supper. This gives the avors a chance to meld together. You can omit the bacon if you want to serve during Lent. This will be a thin soup but great with seasoned crackers. You can also add shredded carrots for color to the soup. If you would like a thicker soup, add 1 tablespoon our after the onions turn translucent. Stir until bubbly. Then slowly add juice and potatoes. Hot ham cheese sliders by Amy Thompson 1 package King Hawaiian rolls Ham, thin sliced Provolone cheese, sliced 4 tablespoons melted butter 1 tablespoon brown sugar 1 1/2 teaspoons Dijon mustard 1 1/2 teaspoons Worcestershire Leaving rolls intact, slice in half length ways. Put bottom half on a greased 9-by-13 pan. Layer rolls with sliced ham and cheese. Place top half of rolls on top of meat and cheese.
Pour caramel sauce on top. Place in 350-degree oven for 10 to 15 minutes to heat through. You can use canned caramel sauce if you want to make it even quicker.
Food columnist, Natalie Schmitt Carefully slice into individual rolls. In microwaveable bowl, combine butter, brown sugar, mustard and Worcestershire. Microwave till bubbly, about one minute. Brush on top of rolls. Bake in 350-degree oven for 15 to 20 minutes. Amy will generally bake a couple of pans at a time. Big hit. Easiest caramel rolls by Jonathon and Libby Schmitt 1 package King Hawaiian rolls 1/4 cup brown sugar 1/4 cup butter 1 tablespoon light corn syrup Place rolls in greased 9-by-13 pan. In a saucepan, combine sugar, butter and syrup. Stir until melted and bubbly.
Thin Mints cheesecake 46 Thin Mints cookies 1/4 cup butter, melted 16 ounces cream cheese, softened 3/4 cup powdered sugar 2 cups cold heavy cream 1 teaspoon peppermint extract Chocolate sauce for drizzling Grease an 8-inch spring form pan with cooking spray. Line bottom with parchment paper. To make the crust, in a food processor, pulse 20 cookies until ne crumbs. Add butter and combine. Press into pan and refrigerate while making lling. For the cheesecake: Beat cream cheese till light and uffy, 2 minutes. Add sugar to combine then gradually add cream. Once combined, beat on high until stiff peaks form. Add extract. Crush 12 cookies, not as ne as before for crust. Fold three-quarter of them into cream cheese mixture. Spread mixture into pan. Sprinkle remaining crushed cookies on top. Refrigerate for ve hours or overnight. To serve, release cake from pan. Press remaining cookies against the sides of the cake. Drizzle top with chocolate sauce.

Onion casserole
6 medium yellow onions 1/4 cup butter 1/2 cup beef broth 1/2 cup whipping cream 2 tablespoons our 1/4 teaspoon salt 1/8 teaspoon pepper 1/2 cup shredded swiss cheese 1/2 cup shredded parmesan cheese Cut onions into very thin rings. Sauté in butter until tender. Place in greased 8-inch dish. In small saucepan, combine beef broth, whipping cream, our, salt and pepper. Warm until smooth. Pour over onions. Sprinkle cheese on top. Bake uncovered at 350 degrees for 40-45 minutes.

Homemade macaroni and cheese Cook 2 cups macaroni in boiling water. Drain. Beat 1 egg in 2 1/2 quart casserole. Add 2 cups milk, 1 teaspoon salt and 1 teaspoon sugar. Add 1 to 1 1/2 pounds cheddar cheese, cubed. Add macaroni and enough milk to cover. Bake at 350 degrees for one hour and 45 minutes.

Heat on low for at least 8 hours. Stir occasionally.

Chocolate chip granola 5 cups oatmeal 1 pack Graham crackers, crushed 1/2 cup coconut 1/2 cup raw wheat germ 3/4 cup brown sugar 3/4 teaspoon salt 1 teaspoon baking soda 1 cup melted butter 1/2 cup chocolate chips Mix all dry ingredients except chocolate chips. Add butter and mix. Spread in two 9-by-13 pans. Bake at 300 degrees for 40 minutes. Stir every 10 minutes. After removing from oven, sprinkle with chocolate chips. Cool and store in airtight container.
