Grandpa's Party Potatoes
Recipe submitted by: Diane Schmitt, Fort Atkinson, Iowa
Prep: 20 min. + chilling Bake: 50 min. Yield: 12-14 Servings
4 oz cream cheese at room temperature 1 tbsp soft butter 2-3 drops of peppermint extract 2 1/2- 3 cups powdered sugar 2-3 drops of food coloring. Mix and mash the ingredients in a large bowl. Remove from bowl and knead 10 minutes until consistency of pie dough. Roll into small balls and roll in granulated sugar. Press into molds. Remove from mold and place on wax paper to dry overnight. Freeze well. Makes 30 mints.

Chocolate Cheesecake Squares
8 to 9 cups peeled potatoes 2 tablespoons butter 2 tablespoons milk 3/4 teaspoon salt 1/4 teaspoon pepper 1 package (8 ounces) cream cheese, softened 1 carton (8 ounces) French onion dip Paprika Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain. Mash the potatoes with butter, milk, salt and pepper until smooth. Add cream cheese and onion dip; mix well. Spread in a greased 2-1/2-qt. baking dish. Sprinkle with paprika. Cover and refrigerate for 8 hours or overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-60 minutes or until heated through. Yield: 12-14 servings. Recipe from tasteofhome.com

Line a 9-in. square baking pan with foil; grease the foil and set aside. In a large bowl, combine the rst ve ingredients. Cut in butter until mixture resembles ne crumbs. Stir in the egg yolk, vanilla and walnuts. Press onto the bottom of prepared pan. Bake at 325° for 15 minutes. In a small bowl, beat cream cheese and sugar until smooth. Beat in the sour cream, our, orange peel and salt. Beat in the egg, egg white and vanilla on low speed just until combined. Pour lling over warm crust. Bake for 2025 minutes or until center is almost set. Cool on a wire rack for 1 hour. Garnish with chocolate sprinkles if desired. Refrigerate overnight. Using foil, lift out of the pan; remove foil.
