VILLARD, Minn. – Dairy farming has brought Nate and Angie Walter many opportunities: the chance to carry on a family tradition, the blessing of raising their children on a farm, and the ability to be prominent in their community. Their chosen career recently provided the Walters with one humbling opportunity, to be named the 2020 Pope County Farm Family of the Year. “This is a really big honor,� Angie said. “Everything we’ve worked for, someone has seen or noticed.� The Walters and their two children – Laureen and Levi – milk 100 crossbred cows on their third-generation dairy near Villard. Earlier this year, the family was recognized for their contributions to agriculture and their community in western Minnesota as part of the Uni-
versity of Minnesota Farm Families of the Year program. Nate and Angie purchased the farm from Nate’s dad and stepmother in 2002 with 80 cows and 160 acres to its name. Throughout the years, the couple has expanded their land base to 390 acres, grew their herd size and became a part of a niche market in the organic farming industry. “That’s my biggest accomplishment, other than our kids,� said Nate of the farm’s progress, particularly the accrual of land. Nate’s grandparents began farming in 1935 with six cows. The farm was 160 acres, and home to hogs, poultry and cows. Nate’s grandfather passed away unexpectedly in August 1975. He continued raising hogs while putting a greater emphasis on the dairy operation. “Dad and Grandpa planned to build a new barn, and Dad still did that in the fall of ‘75,” Nate said.
The barn was built to hold 32 cows. When the Walters transitioned into ownership of the family enterprise, Nate and Angie focused solely on dairy. They renovated the barn to include a swing parlor in 2005, built a manure pit and drive-by feeding in 2006 and became certied organic

in 2013. As the Walters have continued on their family’s farming legacy, they have also placed a great deal of focus on being present in their community. For the past 18 years, Nate and Angie have volunteered at the Minnesota State Fair’s Moo Booth and
are active in the execution of the Pope County Fair. Both have served as dairy superintendents, Angie has been a member of the fair’s livestock committee, and Nate is a part of the auction committee. Additionally, Nate is a board member on their cooperative’s regional dairy ex-
ecutive committee. “I think it’s important to be a part of the community, especially to bring consumer awareness about the industry and how we care for our animals,” Angie said. “We can show them the way we farm.” Turn to WALTERS | Page 5

Nate agreed. “We’re putting a face to dairy,â€? he said. “That matters. People need to hear your story.â€? Nate and Angie’s leadership throughout Pope County has been a model for their children to follow. Both Laureen and Levi are active members of their 4-H club, the Villard Livewires, with Laureen serving as a club ofďƒžcer. “When we got involved in 4-H, we didn’t know much about the program,â€? Angie said. “It has been the best thing for our kids.â€? Angie never dreamed of raising her family on a dairy farm but is enjoying it, and Nate has never imagined his life to involve anything but cows. The couple encourages their children’s involvement on the farm, and they are often all found working together to complete chores and ďƒželdwork. Nate does the majority of the farm work. Levi helps with feeding and skidloader work while Laureen helps milk a couple times each week. An-

gie feeds all the calves and does bookwork. “There are so few families who farm full time, especially in Pope County,â€? Nate said. “It’s enjoyable to see your work, caring for a young calf turn into a cow and have a calf of her own. To think all farming does for us; we provide a life for the cows, and they provide a life for us.â€? Last summer, Angie also took on a position as Sustainable Farming Association’s central Minnesota Dairy Grazing Apprenticeship coordinator. This role allows her to connect with like-minded farmers and help the next generation transition into dairy farming. “It’s very rewarding,â€? she said. “The people I’ve met give great ideas and hope for the industry.â€? As the Walters reďƒ&#x;ect on their time in the dairy industry and all they have left to contribute, they are simply humbled. The recognition was equally surprising as they join the ranks of fellow dairy farmers and friends. “As dairy farmers, we’re part of a dying breed, especially in our county,â€? Nate said. “We’re so glad to be a part of the agriculture community, and it’s an honor to be recognized in this way as a family farm of our size.â€?

ISU churning ice cream for rst time in 51 years

AMES, Iowa – Ice cream is being churned in the Iowa State University Food Sciences building again – the rst time since 1969. The ISU Creamery opened in August. From 1881, when the rst campus creamery was built, through the late ‘60s, the creamery made butter, ice cream and cheese. Rapidly changing dairy processing technology led to the facility’s closing. Now the space houses the university’s Department of Food Science and Human Nutrition. But it was not lost forever. Dr. Stephanie Clark had a vision that took seven years to reach fruition, working toward developing a creamery that would educate students, earn its keep through sales and provide a positive dairy experience to the community. Clark, a professor at ISU, came to Ames in 2009 after earning graduate degrees at Cornell University and teaching at Washington State University, both of which had on-campus dairy processing facilities. “It was a big change to come to ISU
and not have that,” Clark said. “It was a big void and a shame that our students didn’t have that experience.” After she was appointed to her endowed position, Clark wrote a business plan for a creamery, an endeavor that went beyond her assigned duties. Starting without space or funding, she took steps toward the goal until a grand opening was scheduled for April 2020. But the novel coronavirus pandemic delayed the opening until students returned to campus in late summer. The ISU Creamery sells ice cream from 11 a.m. to 3 p.m. Mondays, Tuesday, Thursdays and Fridays in the Food Sciences building. Wednesdays are reserved for the Dairy Science Club’s weekly ice cream sales down the street. Students at the ISU Creamery scoop ice cream from hand-packed tubs in a space with a retro look to reect the department’s history. Eight-ounce containers of ice cream are also sold at the university’s Sparks Café in the Student Innovation Center. Several special events have also featured ISU ice cream. But it is the behind-the-scenes story that matters more. Clark said students can now get hands-on learning in milk handling, sanitization, milk chemistry and microbiology, pasteurization and formulation. Turn to ISU | Page 7

ConƟnued from ISU | Page 6 The creamery purchases pasteurized milk, cream, egg yolks and other ingredients to create a variety of base ice cream mixes which are pasteurized and aged. The creamery uses a smallscale soft-serve ice cream machine to freeze the mix, after which it is handpacked into tubs before hardening in a minus 10-degree freezer. Marketing, too, is part of the process. Student involvement helps prepare them for careers, Clark said. “It’s incredibly important,” Clark said. “There are jobs in food science and the dairy foods industry; this handson experience prepares them for those jobs.” Ten students work in the creamery, hired and supervised by a program coordinator Clark hired a year ago. Sarah Canova is an ISU food science graduate and a former student of Clark’s. She worked in research and development in the meat sector before coming back to campus to work in the creamery. The Midwest Dairy Foods Research Center, the Iowa State Dairy Association and the Leopold Center for Sustainable Agriculture are some of the stakeholders who have provided funds to meet other costs.

Iowa State University students gain food processing experience by making ice cream for sale in the newly opened ISU Creamery at the campus in Ames, Iowa. “It’s a dream come true,” Canova said. “And business has been really good. … Last week we made about 2,000 pounds of ice cream.” Since opening, the ISU Creamery
has sold more than 4,700 scoops of ice cream, she said. Canova is responsible for ordering supplies, managing students and completing many of the marketing and
business operations tasks. “For me, it was a sprint,” Canova said. “For Dr. Clark, it was a marathon.” Canova’s goal is for the creamery to be nancially self-sufcient. The history behind the venture is not lost on her nor on Clark. Both have enjoyed alumni returning to campus and visiting the facility. Among them was a man in his 90s from Slater who worked in the creamery in the ‘40s. “He has an impeccable memory; he even remembered the names of the people who were there,” Canova said. “He still has his shirt from his stint making ice cream.” With the creamery now operating, it is the future Clark is looking to build. There are plans to make cheese and to feature other Iowa dairy processors on a rolling basis. The creamery will also be available to help Iowans who want to do value-added dairy processing. While the ISU Creamery is a microcreamery, Clark dreams of a standalone facility (at a price tag as high as $9 million), where the ISU Dairy Farm’s milk could be processed. Meanwhile, the creamery’s rebirth will serve as a recruiting tool to a food science program that more closely resembles its rich history.

How breeding practices transform heifer inventory

MADISON, Wis. – Breeding with sexed semen in commercial dairy herds rst began in the early 2000s. At the time, there were only 1.2% of Holstein dairy cattle bred with the sexing technology, yet today, that practice accounts for more than 19% of breedings in Holstein dairy cattle, according to the University of Wisconsin. Coupled with that is the increased use of beef semen on dairy cattle in the last two years. Data collected by the university shows conventional beef semen now accounts for 20.5% of breedings in Holstein dairy cattle. University of Wisconsin Extension, focusing on dairy replacement management. The use of these breeding practices can have substantial benets for a farm by primarily controlling heifer inventory, subsequently increasing the value of calves and putting a greater focus on high production animals. However, incorporating this strategy into a youngstock management program is more complicated. For farmers considering these multiple breeding practices, they should rst evaluate their current herd inventory to understand the number of replacement heifers needed to sustain the dairy operation. “You don’t want to be short, because dairy should be your main focus,” Akins said. “To know what percentage of your herd should be bred to sexed and beef semen, work with your reproductive consultant and area extension agent. It’s really going to be dependent on the farm’s management and look different across all herds.” Akins’ colleague developed an interactive heifer replacement program as part of the university’s dairy management support tools that allows farmers to provide data on their herd inventory, including heifers and cows in lactation. For each service number, farmers can modify the groups bred to conventional, sexed or beef semen. “This will give you an idea to know if you’ll produce enough heifers to replace cull cows,” Akins said. “It’ll give you the best scenario, economically, with current market prices.” Sexed semen should be used on the high-end genetic animals in the herd to produce the majority of the future herd, and then beef semen on those animals that do not meet a certain genetic or genomic threshold. “That’s been a big change as of recently,” Akins said. “There is one herd I work with where they use sexed and beef semen very intensively because their replacement rate is as low as 25% to 30%. They can use dairybeef crosses to increase the value and income of their calves.” If bred appropriately, the dairybeef cross calves will provide a greater return than their pure dairy penmates. In the latest market reports recorded Oct. 23, beef feeder cattle settled at $135.18 per hundredweight, while dairy feeder cattle had an average price of $102.16 per cwt. “The (market value) difference between a Holstein bull and crossbred is not as high as it used to be, but it’s still signicant,” Akins said. “That’s a major reason most farmers get into it.
They get that extra income to the farm compared to pure dairy calf prices they might receive.” While some dairy farmers may choose to sell their calves within a week of birth, others may feed them out if they have the facilities and resources available. “There’s really a large range for how people are managing these crosses, and that depends on management and what the farm is able to do,” Akins said. “There’s been a good learning curve and people are starting to gure it out.” One of the greatest trials the dairy industry has had to overcome with this breeding tactic is adapting to the beef industry’s needs. As farmers make mating decisions that will ultimately better their dairy herd, they must also be conscientious of the beef market they are contributing to. “A big challenge was that farmers were using the cheapest beef semen they could get and not paying attention to the genetics of the bulls they were using,” Akins said. “That’s important. If you use beef semen, the goal can’t be to get a black calf.” In the beef industry, carcass value and weight, feed efciency traits, ribeye area and yield grade are particularly important. For dairy, breed characteristics considered important include semen cost, sire conception rate, calving ease and hair coat color, said Akins. “There’s a lot of frustration on the beef side because dairy farmers are bringing in these animals that look black, but they don’t have the same frame and nish as a purebred beef animal,” he said. “Dairy farmers have to have a goal that those animals are going to a feedlot to be nished.” Likewise, farmers should raise these calves with the same care as they do for their replacement heifers. “Give them high quality colostrum, quality milk or replacer to gain and do well right away,” Akins said. “The last thing you want to do is send these calves to a grower that won’t do well. Growers won’t want to purchase from you again.” Whether a farmer is reevaluating their heifer management with existing breeding protocols or incorporating new ones, understanding how sexed and beef semen work together can aid a farm in meeting its goals. “Farmers have to be constantly monitoring replacement inventories to make sure they have enough,” Akins said. “Look at your management. In the end, you don’t want to be short on your lactating herd so as to keep production at the optimal level.”

Preserving the future of the family farm

LISBON, Iowa – One of the most daunting problems facing farmers who are looking at retirement is what to do with their businesses if no one in their family is interested in pursuing a career in production agriculture. That problem faced Iowa grain and hog farmer Glen Moeller, so he decided to do something that would help other farmers facing similar challenges. In 2015, Moeller retired after 40 years of farming but did not have a successor. He went through the proMike Downey Next Gen Ag Advocates cess to nd someone with a farming philosophy similar to his own to transition into his farm. Thus, the idea for Next Gen Ag Advocates was born. Next Gen Ag Advocates was founded in 2018 when Moeller reached out to fellow eastern Iowa farmer Steve Bohr. Bohr is co-owner of Farm Financial Strategies which specializes in estate planning consultation for family transitions. Mike Downey, as associate of Bohr’s, also teamed up with he and
Moeller at Next Gen. Next Gen Ag Advocates now has two ofces in Iowa located in Lisbon and Long Grove, and works to help both producers looking for a successor and those wanting to launch production agriculture careers meet up with those who make a good business t. “One thing I have observed in the dairy industry is that it is so much in someone’s blood; either you have the passion or you don’t,” Downey said. “We have had interest from as far away as Pennsylvania and Ohio.” According to a study conducted by the United States Department of Agriculture, over 70% of family farms in the United States will change hands in the next 15 to 20 years, and Next Gen Ag Advocates has developed programs to address the issue for many farm families, one farm at a time. Next Gen works with farmers in Iowa and Illinois and has been working with an increasing number of farmers in Wisconsin. They and Farm Financial Strategies have developed a relationship as a preferred referral provider with Compeer Financial. “There are a lot of other banks, cooperatives, crop insurance agencies and retailers that share the same concerns that Steve, Glen and I did while putting this together,” Downey said. “What is agriculture going to look like in 15 to 20 years? The trends concern us. I think everyone has a vision of what a family farm is in our generation. But what is that going to look like in the future?” Downey said larger farms are typically made up of several smaller farms that did not transition well for whatever reason.
“That is not a trend we’re probably going to stop, but we just want to talk with folks and let them know there are other options and ways to solve transition problems and to give younger folks the opportunity to enter the industry,” Downey said. As the company has grown, Downey has seen multiple farms transition successfully. Downey said if he spoke to ve farm couples without a successor, three of them would seriously consider the option of working toward a non-family transfer, such as what Next Gen facilitates. In the future, Downey said people will see more non-family business transfers when it comes to farms, especially dairy farms. Downey said retiring dairy farmers sometimes nd it hard to believe there are actually young people out there who would be willing to relocate to take over a dairy farm. “We think there is actually more opportunity in the dairy industry for these kind of transitions than in other types of farming,” Downey said. “The passion for dairy farming is just something you have, it is not teachable.” Downey and his colleagues work to match those questioning older farmers with the eager young would-be farmers to create a successful non-family farm transition. “A lot of times, it is that they don’t know how or they don’t know what the options are,” Downey said. “I’ve spoke to a lot of people that said they just gured when the time came, they would just have a retirement sale and pay the tax. We want them to know they do have options.”

Downey said those options are not a one-size-ts-all solution, and each situation is tailored to meet the needs of both the exiting and incoming generations as well as designed to best work with the business being transitioned. “Several farms we are working with now where the land might transition to the family, but the operation itself might be transitioned to another young couple with the interest in continuing that business aspect,” Downey said. “Often times there are win-win advantages for both sides.” Downey said for the outgoing generation, there are tax advantages from transitioning a farm over a period of years versus having an outright sale of assets; while for the incoming generation, it is more conducive to transition in over a period of years. “One of the primary limiting factors for young people entering agriculture is the capital,” Downey said. “Finding nancing to buy a whole line of equipment or a dairy facility or a herd of cattle from scratch is very difcult.” Downey said the concept of nonfamily farm transfers is growing, particularly among young people desiring to become dairy farmers. They have over 200 young people from all over the country signed up on their list, looking for a potential farm match. “We are really excited about the matches we have helped to facilitate so far,” Downey said. “Our biggest challenge right now is bringing awareness to the retiring generation, that they have other options besides liquidating the herd or selling off the equipment.”

Fourth round of food box program begins The U.S. Department of Agriculture (USDA) announced it has authorized $500 million for a fourth round of purchases for the USDA Farmers to Families Food Box Program. USDA is issuing solicitations for the fourth round to existing Basic Ordering Agreement (BOA) holders and expects to award contracts by Oct. 30 for deliveries of food boxes from Nov. 1 through Dec. 31, 2020. In the fourth round, as in the third round, states have been allocated boxes based on the internal need of the state. The program will continue the purchase of combination boxes to include fresh produce, dairy products, uid milk and meat products. The program also will continue to require that proposals illustrate

how coverage would be provided to areas identied as opportunity zones, detail subcontracting agreements, and address the “last mile” delivery of product into the hands of the food insecure population. The Dairy Business Innovation Alliance (DBIA), a partnership between the Center for Dairy Research (CDR) and Wisconsin Cheese Makers Association (WCMA), has opened registration for the “Let’s Get Started” webinar series. These webinars are geared towards dairy farmers and processors interested in improving their business through diversication, including the development of new value-added products. The “Let’s Get Started” webinar series will help identify local resources, expertise and technical assistance to support dairy farmers and processors who have decided to move forward on diversifying their enterprise or developing a new product. The webinars will be a combination of general information presentations, breakout sessions and interviews with farmers and processors who will share their experiences and lessons learned. The goal of the webinar series is to connect dairy businesses to local or state-level resources that can assist with each stage of their project. National Mastitis Council’s (NMC) next webinar features “Improving Udder Health through Better Bedding Management.” This free, one-hour educational offering starts at 2 p.m. Central time on Nov. 19. During the webinar, Sandra Godden, a past NMC president and University of Minnesota College of Veterinary Medicine professor, will discuss years of research her team has conducted regarding bedding management and its inuence on udder health. She will share the important differences that exist among commonly used bedding materials, including sand, recycled manure solids and shavings. According to Godden, bedding is an important source of teat end exposure to environmental mastitis pathogens. Multiple studies have reported that elevated bedding bacteria counts (BBC) are associated with impaired measures of udder health at the quarter level, cow level and herd level. During this webinar, she will discuss important pathogen groups and guidelines for monitoring bedding hygiene. Additionally, she’ll share management strategies and processing techniques associated with reduced BBC in unused (ready-to-use) bedding, with an emphasis on processing techniques and the importance of bedding characteristics, such as dry matter and organic matter levels. Godden will conclude by reviewing recommendations for reducing BBC after fresh bedding

The 2020 Herdsperson Workshop will key in on some of the biggest challenges producers face when managing dairy herds. Presented by Professional Dairy Producers® (PDPW), this workshop will dive into transition-cow management, nancial tools and options, and offer producer-led panels on time management and on-farm technology. The Herdsperson Workshop is designed for dairy farmers, herd managers, nutritionists, veterinarians and others making key herd management decisions on dairy farms, and will help sharpen your decision-making skills using a practical approach. This two, one-day program, each starting at 9:30 a.m. and ending at 4:00 p.m., will be held at the following sites: – Nov. 18 – Hartford Town Hall, 3360 Hwy. K, Hartford, Wisconsin – Nov. 19 – Brooks Farms 1855 LLC, N1757 County Rd. A, Waupaca, Wisconsin Workshop trainers include Dr. Neil Michael, Manager of Ruminant Field Technical Services with Arm & Hammer Animal Nutrition and Jay Joy, commercial banker and founder of Milk Money LLC. Dr. Michael will hone in on optimizing the transition-cow period, a phase in a cow’s life that inuences her productive and reproductive performance. Jay Joy will explain why knowing your numbers is vital when making sound business decisions. Attendees will walk away with a better understanding of how inventory of animals, feed and basic farm supplies can affect the bottom line and morale of a team. A producer-led panel on time management will feature Jared Feltz and Jordan Matthews. Jared Feltz, a fth-generation dairy farmer from Stevens Point, Wisconsin, manages his family’s 680-cow dairy herd and oversees seven employees. Jordan Matthews is a partner at Rosy-Lane Holsteins, LLC, Watertown, Wis., where he focuses on developing people and team members into professionals. This dynamic duo will share how they manage their “to-do” lists while also keeping their team on task. Another producer-led panel will talk “tech,” expounding on the different wearable technologies they’ve implemented on their farms and how the data they retrieve has impacted important health and economic segments of their businesses. Panel members include: – Alex Neuenschwander is co-owner and fourth-generation dairy farmer at Neu-Hope Dairy near Bluffton, Indiana. Alex is the on-site farm manager of this 800-cow dairy and continually strives to improve herd genetics. – Jason Holschbach is farm manager and herdsperson at Cloveredge Farms, LLC, Manitowoc, Wisconsin. They manage 1,200 acres of land and milk 500 cows with eight GEA Monobox robots. – Zoey Nelson is a sixth-generation dairy farmer in her family’s dairy in Waupaca. Alongside her father they milk 600 Holsteins and farm 1,600 acres. She leads a team of 13 employees and is responsible for parlor management, herd health, calf and heifer raising and bookwork. PDPW will follow the latest CDC guidelines, with adequate distancing offered at both the farm and town hall. Ample supplies of masks and hand sanitizer will also be available.
