TRUNKEY’S PORK, BACON, AND HAM PREPARED THE OLD-FASHIONED WAY Want a top-quality, traditionally-smoked ham or pork roast for Christmas?
and other local farms where they can assure quality.
Get your skates on then and head to Trunkey Bacon and Pork at 68 Endsleigh Avenue to beat the Yuletide rush.
“They’re all raised free-range, they grow slowly and, as we don’t have that many, we get them from producers in the area,” she added.
Based at their property near Trunkey for more than two decades, Zanzie and Fred D’Souza had a vision to produce top-quality, traditionally-prepared pork and bacon for the Central Tablelands. “When we started just over 21 years ago, we had pigs ourselves and wanted to make good-quality products for the local market. “We do all the preparation and work at the shopfront in Endsleigh Ave, we ensure quality-control from ‘birth to bacon’, as we say,” Zanzie explained. Pigs are all grown locally without any HGP (hormonal growth promotants) at their own
The curing and smoking of the meat are also carried out in-house to their specific high standards. “It’s our own system and we’ve tweaked it over the years, it’s double-smoked the oldfashioned way with wood-chips; many larger producers use a type of ‘liquid smoke’ that’s based on chemicals. “We’ve got three smoke ovens and it all takes time because of the natural way that we smoke it,” Zanzie said. Like many small, independent retailers, the lockdowns over the past two years affected
their business model disproportionately compared to larger retailers.

“We were affected because we do a lot of farmers markets from Sydney to the Mountains, and it was hard with everything closed.
Everything they sell, she adds, is made to their exacting standards in-house, with one notable exception.
“But we moved to buying online and did some home delivery to keep going,” she said.
“Everything that we sell is made by us, the pork, the beef, but the lamb we buy in. We get that from Cowra Lamb, which is the best lamb that you can buy.
Festive Season 2021, however, is likely to see start of the big recovery, if current orders are any indication.
“We’re as local as you can get, a familyowned and family-run business for two decades,” Zanzie said proudly.
“We’re looking forward to things opening up... I think it’s going to be a huge Christmas; we’re getting a lot of orders online and, if you

Pop-ups offer street front for local new start ups
The transformation of McNamara Street from a sleepy back lane into an attractive and dynamic streetscape has included the establishment of two temporary pop-up offices to encourage new businesses into the area.
be able to lease the pop-up for a six months, the spokesperson added.
The pop-ups, part of Orange’s Future City project designed to make the CBD a more liveable environment for pedestrians and shoppers, offers the two pods at minimal rates for local start-ups.
Central NSW Business HQ also offers business coaching, mentoring, business plans and management.
The glass-fronted converted shipping containers are designed to offer someone starting off a chance to have a shop front in the rejuvenated street that runs behind the Aldi supermarket. “They’re designed to be a pop-up for someone working from home, Council are providing them as a low-cost option so that they get a start,” a Council spokesperson said. Rent in the order of only $60 a week will be charged for new businesses to
Leasing of the pods is through the Central NSW Business HQ organisation located at 1/34 Sale St, or by phoning the group at 1300 232 249.
Other changes to the street include new festoon lighting, street banners, artwork, and the portable seating that is being used around the CBD to create a more welcoming and convenient atmosphere for shoppers. Blue Mountains artist Cathy O’Donnell also recently installed one of her “hyperrealist” works portraying doors and windows on the side of a nightclub in the street. The overall aim of the project is to create a village market atmosphere for the street, with stalls and food outlets attracting visitors to the area.

Local National Broadband repa ir and installation cont ractor Tim Mou lt says, we are all now labo uring under a sy stem that was not really bu ilt to have people at home accessing it for m ost of the day.
Internet under pressure from the “new normal” Don’t despair if you’re experiencing slow and intermittent internet access at home over recent times — you’re not alone.
“People used to use their phone data when they were at home, now they realise they can use their home data, that as well,” he added.
Local National Broadband Network (NBN) repair and installation contractor, Tim Moult said on a recent home visit to fix a damaged cable, that we are all now labouring under a system that was not really built to have everyone at home accessing it for most of the day.
He described the analogy is that of a highway designed for peak-hour traffic that suddenly has every car in a city trying to drive on it at the one time.
The NBN was simply not designed with the lockdowns, quarantines, tick-tock videos, online conference calling, and the working-from-home revolution in mind — innovations which have all taken over our lives since COVID-19 hit in February last year. “It’s people self-isolating, working from home… people Skype-calling and conference-calling… people that have moved from Sydney to the country, it’s all adding-up,” he said.
“We shouldn’t have ever expected to have 100 per cent people online at any one time “In data technology, the bandwidth is not wide enough for everyone to be on 100 per cent of the time. It’s like having a four-lane highway when you need a six-lane highway,” he added. His role as a trouble-shooting contractor for the NBN has seen his work skyrocket since the first lockdowns in March last year. “I’m flat-out, say a 40 per cent increase since lockdown,
that’s about the order of difference,” he said. Studies on internet speeds have shown that many rural areas have experienced issues to do with slow speed and intermittent access since lockdown, especially during peak times such as on late afternoons. Covering an area that encompasses the Central Tablelands from Lithgow and Oberon to Canowindra, he understands the frustration that many people feel at delays to having problems looked-at in-person. Users however shouldn’t be taking these delays out on the front-line staff being assigned to the home and work visits, he added. “People say to me, ‘look, I’ve been waiting two months for this call, where have you been?’ and I have to say, ‘I know that, but I only received this job at about six o-clock yesterday,’ that is how we get our jobs, mostly just for the next day,” Tim concluded.
Properties in Orange and surrounding areas are still in high demand If you are considering selling your property, then a free market appraisal is your first easy step.

James Bond to help pay for much-needed amenities for RSPCA Orange Shelter — SAMUEL RODWELL — Orange RSPCA volunteer branch are enlisting the help of one famous superspy to headline their movie night fundraiser event. The spy is no other than... Bond, James Bond. But wait that’s not all on offer for attendees as a collection of lucky door prizes could be yours to take home, from locally produced wines, delicious chocolates and even pot plants to add for your home décor. Volunteer Judy Davis says, “We’re very excited to go ahead with the event and help get some money raised since we’ve haven’t been able to do that with COVID-19.” Local audiences and animal lovers alike will be heading down to Odeon 5 Cinemas on November 11th at 7:30pm, to not only enjoy Daniel Craig’s final portrayal of the iconic character in the anticipated chapter No Time to Die, but to also generously support our local RSPCA shelter. “We’ve had the movie booked for two years for the fundraiser and throughout that time the dates kept changing due to the pandemic. So we’re all very
keen to finally run it and have a good time.” “All the money that’s raised from the event, will be going towards the Orange shelter and required amenities. As an example, we need a washing machine for washing all of the animals beddings.” The accumulated donations will not only pay for much-needed amenities, such as the mentioned washing machine, but will also help fund specific services for community members. “The funds will be helping us provide vouchers for people with Health Care Cards to help get their pets desexed, whether cats or dogs,” Judy says. “We are so appreciative to Odeon 5 Cinema in facilitating the event for us, I would like to say how thankful we are for them helping our event.” $20 tickets are available from Collins Booksellers to book for the event and please note attendees must be double vaccinated to enter the cinema. If you’re interested in joining the team of dedicated local volunteers for RSPCA, call (02) 6362 6171 for more information.
