recipe using that local produce. We’d promote the event with ads in places like your magazine, because we all know how many people are interested in food,” she added. The key, she believes, is then tapping into our local brewers and wineries and musical performers to make a very special home-grown success of the event.
The event would showcase the best the region has to offer with an “eat local and support your community” theme while also promoting environmental awareness of “food miles”.
“Lastly, a suggested play list from the Music Conservatorium or Orange Theatre Group to play while cooking or dining. This would provide a very broad-based approach appealing to multiple community members and groups.
TAFE hospitality maestro, Lesley Smith — headingoff as we speak to a local winery and restaurant at the base of Mt Canobolas to enjoy the best local fare available — believes we could pull it off.
“We’d make it a concert with music from the Con and other local performers with local beers, wines, ciders to complete the evening,” Lesley enthused.
“We have a lot of growers in Orange who have become disconnected from local markets due to supply chains and COVID-19,” Lesley said.
The event could even tap into other flourishing creative fields in the district.
“We’d be asking local celebrity chefs to create a

“Growers, makers, and thinkers are abounding in Orange… we have a lot of talent in town, we’ve also got artists and authors and it’s about recognising what we have.
deserving of being revisited given the latest dire climate projections with a local supermarket selling asparagus from Mexico when it is currently in season.
“It would be a way of saying ‘look what we do here in Orange’… these are connections worth preserving and promoting. The way it would work is, all interested groups can be involved and would be invited,” she added.
We should all, she says, aim to be “locavores” in our food choices. “We are fortunate to have an abundance of fresh seasonal food and artisan products on our doorstep — it makes sense to encourage the community to buy local and seasonal products and contribute to a sustainable diet for a small planet … there is no ‘Planet B’.
With many people taking time during the recent lockdowns to reconnect with family, friends, and their local community, the dinner would be a way of solidifying local support for our local food and drink producers.
“My motivation is a ‘soft’ approach to encouraging people to be aware of the impact on the climate of Food Miles.
“It’s a seasonal event highlighting the best food, drink, and entertainment that the Central Tablelands can provide.
“I can’t control leaving coal in the ground but can encourage small but significant steps in reducing carbon emissions in a subliminal manner. Consumers purchasing habits are very powerful.”
“Regionality is worth preserving, worth having, and worth promoting,” Lesley said. The dinner would also have an important environmental purpose, she emphasised.
TAFE hospitality maestro, Lesley Smith — enjoying the best local fare available at a local winery and restaurant at the base of Mt Canobolas — believes we could pull off an “eat local and support your community” event featuring local wine, food, and song.
She sees the event featuring a seasonal theme for each dinner. “We’d hold it about four times a year and focus on each season, autumn, winter, spring and summer, whatever was happening with agriculture at that time,” she explained.
“Most importantly though, this event would raise awareness of how intelligent ethical eating using local food reduces the carbon food print associated with ‘Food Miles’. This is the distance that food is transported from the time of its making or production until it reaches the consumer, Lesley said.
Lesley says that promoting events like this in the Colour City helps local producers, highlights our amazing food and wine, while promoting efforts to reduce our carbon footprint.
“Food miles are one factor used when testing the environmental impact of food, such as the carbon footprint of the food.
“On a day-by-day basis, this is where we live, where we call home,” Lesley concluded.
“This is not a new concept; it is, however,

TRADES AND SERVICE BUSINESS PROFILE
SHANGRI-LA IS NO LOST HORIZON FOR HAPPY BOARDING PUPPIES Shangri-La was the earthly Himalayan paradise that featured in British author James Hilton’s famous novel from the 1930s, “Lost Horizon”.
And that is exactly what Judy and Max Player aim to provide for the lucky dogs staying at their famous boarding kennels. Located on their property which has the same name as the famed Tibetan city, and which is located on Amaroo Road near Fairbridge Park at Molong, their business has grown and developed organically. “We love dogs, we’ve always had three or four of our own, I love the cocker spaniels and Max likes the working dogs, kelpies, and my daughter has a Coolie,” Judy said. “We’ve been boarding for about 15 years.
32 OCTOBER 7 — 13, 2021
How it happened was, we had to get some cages for our own dogs and we started looking after neighbours’ dogs and family members’ dogs, and it all just went on from there,” she said. They have since built a steady and highlyregarded business with the COVID-19 lockdowns of the past 18 months the first real fly in the ointment. “At the moment, we’ve got four dogs in for a 20-dog capacity but, before COVID, we’d often have a lot of dogs in at any one time,” Judy added.
Visiting pets are well looked after at ShangriLa, and even have their own personal heaters at night! “At daytime, we take them out to a big yard where they have their own runs and kennels, and then they come inside their own kennels at night with individual heaters to keep them nice and warm,” Judy said. Customer loyalty is one of Judy’s greatest sources of satisfaction with clients coming back year in, year out. “We have so many people who always return... regulars who come back all of
the time. “A lot of people even give us a call and tell us when their dog has passed away, which is a lovely thought,” Judy added. Max and Judy have seen what began as a sideline to their cattle business grow and thrive over the years, while still keeping that personal touch that is the keystone to their success. “It’s family run, we don’t employ staff. We personally make sure that all the dogs are okay and look after them ourselves,” Judy concluded proudly.
