FROM THE EDITOR WITH BOB HOLLAND Hi friends How’d you enjoy our first Bathurst Extra? It should have been delivered to your letterbox last month over the weekend of May 23 and 24. We’ve received quite a lot of favourable feedback and the future for our Bathurst Extra is looking quite good. I hope you thoroughly enjoy this one too. Good news aside, we did experience a few teething problems with our first issue and with your help we’ll try to address those. First up, we had some delivery issues with our first issue due to rain. We had reports that some copies were wet, others were delivered late, some people claim not to have received a copy and so on. Unfortunately this is the nature of letterbox delivered material and we just have to work with it. We delivered 10,500 copies and believe that most people received their copy. Anyone with delivery enquiries should call our office on 6361 3575 and we’ll sort them out. We do place additional copies at the Bathurst Visitor Centre each issue for people who miss a copy and want one. We’re also still organising our new staff in Bathurst and that should be completed very soon. When this happens, everything should run much more smoothly. In the meantime we’ve had to improvise a bit to get the job done. Such is life when establishing a new newspaper like our Photo News Bathurst Extra. Let me assure you, despite these teething troubles, in the fullness of time when you get the drift of what we do, you’re going to come to love your Photo News Bathurst Extra.

The winning artwork will remain at the Flannery Centre to begin the building of a permanent collection. “We’ve set ourselves the mission through this centre to inspire, lead and learn our way to a positive future,” said Flannery. Skillset’s Flannery Centre, funded by Skillset and the Australian Government’s education Investment Fund, focuses on assisting businesses and individuals to build sustainability skills and transition to a low carbon economy. Skillset Business Development Manager Narelle Stocks says the Flannery Centre is the result of Skillset’s commitment to the

importance of regional Australia. “The Flannery Centre will help us to deliver initiatives that build the resilience of businesses by supporting their economic, social and environmental sustainability; in addition to ensuring that our young tradespeople have the full complement of skills they will need for their future careers,” she says. The centre was designed from and uses three main principles; solar passive, very high energy efficiency and fresh air and is host to a function centre that has already been utilised for a number of local ceremonies and conferences. Skillset’s Flannery Centre is located in Panorama Avenue Bathurst and is home to Skillset’s Bathurst-based staff and the Western Research Institute. The inaugural Flannery Art exhibition available to the public for view free of charge during business hours until August 10.

FAIR’s FAIR Although this married couple enjoyed their luxury fishing boat together, it was the husband who was behind the wheel operating the boat. He was concerned about what might happen in an emergency. So one day out on the lake he said to his wife, “Please take the wheel, dear. Pretend that I am having a heart attack. You must get the boat safely to shore.” So she drove the boat to shore. Later that evening, the wife walked into the living room where her husband was watching television. She sat down next to him, switched the TV channel, and said to him, “Please go into the kitchen, dear. Pretend I’m having a heart attack. You must set the table, cook the dinner, and wash the dishes!”

Secret Creek A place to try

BY BOB HOLLAND Quite some time back friends told me of a place called Secret Creek down near Lithgow. They said it was a restaurant and some kind of a wildlife sanctuary and it was very nice indeed. Like with any such suggestions from friends, I tucked the information away in the back of my mind with the intention of going there one day. That day arrived last month. It was my wife’s birthday and I decided that would be a nice thing to do and I could also keep it a bit of a surprise until we got there. Being at Lithgow and with our daughter living in Sydney, it also wasn’t too far for her to drive up and join us for lunch and add to the surprise. Anyway that was the reason we ended up there and the experience was such that I thought I’d share it with readers who might like to consider a visit there themselves one day. It’s called Secret Creek Café and Restaurant and it’s located in a rural setting about 5 minutes from the centre of Lithgow up among the hills. It essentially offers a delightful restaurant experience and is open Thursday to Sunday. The building is in the fashion of a big log cabin and sits on a property that is also home to a wildlife sanctuary where you can see emus, kangaroos, dingos and other animals wandering around in enclosures. The setting provides a wonderful atmosphere for enjoying a dining experience in the company of friends or family. The whole feel of the place was one of relaxation and friendliness which was complimented by staff who appeared to genuinely enjoy their work.

when it’s put in front of you, you think “wow!” That’s all well and good but I think the main attraction is the food. It’s one thing to have a nice situation, but it’s something else to have great menu choices and then to see your meal presented in such a way that when it’s put in front of you, you think “Wow!”

Something I’m definitely doing in the next 12 months is... After living in Bathurst for 21 years, I am moving to Sydney to begin my career in radio and plan to continue to travel.

The meals at Secret Creek are like that and that’s why I think many reading this would find it worth the drive to Lithgow for the experience. Yes I know there are plenty of really great eating places here in Bathurst and in nearby towns and I’m not in anyway suggesting you have to go to Secret Creek to enjoy a great meal, what I am saying however is this. For those times, like with my wife’s birthday, when we’re looking for something to do or somewhere to go that’s a bit different or special, it’s good to know about places like Secret Creek. Young Filmmakers of Bathurst unite for special ‘Boys Will Be’ project By LeiLani Vakaahi When someone says ‘film’, most people automatically think ‘hollywood’. But a young group of regional filmmakers have turned the Bathurst area into a movie set, shooting a story about a father and son, and their lust for revenge. Most of the aspiring young filmmakers, their group called Rusty Shutter Films, grew up locally and developed a passion for the film industry, many studying theatre media and communications at Charles Sturt University.

But ‘Boys Will Be’ isn’t your ordinary short film. The group have picked up an Arriflex 16S 16mm Film Camera from California and French Angenieux Lens hoping these, combined with the Australian setting, will create an entirely unique piece of work. And it won’t be easy. The project is one of skill sharing and skill building as the team work together and learn new skills alongside one another. Co-producer and director of photography Thomas Druitt says the film is more about the group challenging themselves rather than the end product. “Part of the attraction of this project is,

rather than being instructed on how the camera works or learning from people who are doing it or have done it themselves, we’re kind of discovering how to do it ourselves,” he said. The inspiration for the film was also drawn locally with writer, director and producer James Arrow developing the idea after listening to Blue Mountains artist ‘Bells will ring’, who have jumped on board to help out the crew. “I didn’t write a script, I drew the storyboard because I was listening to this piece of music and thought it would be perfect for a short film. The images started coming to my head

and I drew them out listening to the song,” James said. however whilst ‘Boys Will Be’ is about growth and development individually and as a group, Rusty Shutter Films are dedicated to maintaining a high level of professionalism through their work to make the production process and end product the best it can possibly be. Beau Yates likes to be his own boss

When Beau Yates opened the doors of Tin Goose clothing to Bathurst at the age of 21, he was eager to be his own boss. Beau always had an idea that running a clothing store was, “something that I wanted to do.” After studying human Movement at university, he made this happen. Three years later, following the expansion of the store into girls and guys-wear, Tin Goose clothing is now collective under one roof. “I was fortunate enough to get a bit of money off my grandfather and we’ve been going for three years now and have just moved to a new location, a bigger shop.” Beau’s mother Sharyn has been working alongside Beau on the retail front and his father is the store handyman. It is this family support combined with building great relationships with the community that underpins the success and popularity of Tin Goose. Beau says having a strong Facebook and Instagram presence has been important in building relationships and connecting with his customers. “It’s there. They’re checking it all the time and they can see what we’re up to every day.” When it comes to trying your hand at a new business venture, Beau has the following advice: “You can sit there and not do things and wonder what could have been. We began our chat with Deni giggling about a friend of hers with the same name as mine, before she told me how much fun the show is to be a part of, and about the great time she has behind stage with the rest of the crew. Deni hines and Monique Montez will be hitting bathurst for one night in July for the Very best of Dusty Springfield- Live in concert tour. For those that haven’t heard of Dusty, she was dubbed the White Queen of Soul for her hits during the 1950s and 60s. and now, over forty years later, hines and Montez are bringing the singing sensation back to life through the performance of 24 of her hit songs. and although Deni is looking forward to her trip to bathurst, she says she will be bringing her hot water bottle along for the ride. “I haven’t been (to bathurst) for a while. I think audiences

that are in regional areas are more appreciative”. hines covered Springfield’s ‘Preacherman’ earlier in her career, but says she loves singing Dusty’s songs she can relate to such as ‘You don’t own me’ and ‘Lifting me higher’. however when I asked whether most of the inspiration that drove her career came from her mother, she replied whilst laughing; “Do you get inspiration from your Mum? There are several displays featuring different colour themes and everything is colour co-ordinated. Ladies will thoroughly enjoy a visit if for no other reason other than to look, but let me warn you, you will be tempted to do more than look. My suggestion is grab a friend or two, jump in your car and take a run to Lucknow to see 2 Fat Ladies. There’s a nice coffee shop next door and the fabulous Lucknow Skin Shop and Boot Barn is across the road so you won’t be short of things to see and enjoy. I know you’ll enjoy the experience.

Focus on fresh, local produce for Bathurst By LeiLani Vakaahi With such a broad variety of fresh produce grown in and around Bathurst, why not start a cooperative that sells just that? Well that’s exactly what a group of local farmers and community members have done. Bathurst Wholefood Cooperative was an idea that originated at community meetings in 2009 and now two and a half years later, the business has come into being at Shop 5 Macquarie Plaza in William Street. Committee treasurer Jess Jennings says the cooperative is a great opportunity for the community to source fresh local produce, which is full of nutrients, at a low cost.

“the reality is, in our region 95% of what we produce is exported out of the region to Sydney,” he said. in comparison to large supermarkets, the price of the produce is very similar but the difference, Jennings says, is the quality of the food and the impact on the environment. “there is a reduction in food miles which means greater economic and environmental benefit. And there are health benefits for consumers”. the produce sold at the cooperative is hand picked then arrives on shelves within 24 hours making the food fresher than that available at Woolworths and Coles. in a recent study by the co-op, it

was found that when comparing the price of the produce at Bathurst Wholefood Cooperative to that of Woolworths and Coles, the difference was in the cents range. “We are generally as cheap as the lowest priced produce there, but stock better quality in terms of nutrition. A lot is certified organic,” says Jess. All community members are encouraged to get involved with the Bathurst Wholefood Cooperative by volunteering to become a member. households may pay $50 for a 12-month membership that entitles them to a 10% discount on all stock. Alternatively, anyone can volunteer with the co-op, which requires a minimum of one fourhour shift per month carrying out shopkeeping duties which entitles them to a 20% discount. Eglinton Public School recently submitted four pieces of artwork to ‘Operation Art’, a program that collects and distributes art from public schools across NSW. The selected artworks will be displayed at childrens hospitals around the state, Parliament House, and on greeting cards and calendars. Students across the school have participated in units of work written for visual arts by the Operation Art team.

It all started with persuasive writing. Year Four students had to convince Eglinton Public School principal, Mr Small, that iPads in the classroom would enhance their education and engagement. After some serious persuading, school fundraisers and generous donations from the community, Year Four students now have fourteen new iPads to share amongst three classes.

EPS debaters have recently won both debates in round one of the Central West debating competition arguing the negative case ‘That we are doing enough for the environment’. Later this month, round two will see the team debate against Grenfell and Mulyan schools ‘That zoos should be abolished’. Western region sports representatives for tennis, cricket, AFL, swimming, netball, basketball, hockey and soccer at Eglinton Public School have been busy over the last month. The school was named Western champions for both netball and tennis and the girls hockey and boys cricket teams both reached round four in their divisions.

85g packet mango-flavoured jelly crystals 1 cup boiling water 140g tub diced two-fruits, drained 140g tub diced apricot, drained 1 Place jelly crystals in a heatproof bowl. Add boiling water. Whisk until crystals have dissolved. Add 1 cup of cold water. Stir until well combined. Cover. Place in freezer for 45 minutes or until jelly starts to set. 2 Gently stir fruit into jelly. Spoon into four ½-cup capacity glasses, ramekins or jelly moulds. Cover and refrigerate for 3 hours or until set. Serve.

Chocolate sprinkle biscuits Makes 40

250g butter, softened ¾ cup cater sugar ½ cup sweetened condensed milk 2½ cups self-raising flour, sifted 250g packet white choc bits 375g packet milk choc melts ½ cup hundreds and thousands 1 Preheat oven to 180c. Line two baking trays with baking paper. 2 Using an electric mixer, cream butter, sugar and condensed milk until light and creamy. Add flour and mix on low speed until dough almost comes together. 3 Stir in choc bits. Roll tablespoons of mixture into balls and place on prepared trays. Bake, one tray at a time, for 12 minutes or until golden. Stand biscuits on trays for 5 minutes. Transfer to wire rack to cool. 4 Place choc melts in a heatproof, microwave-safe bowl. Microwave, uncovered, on HIGH (100%) in 30 second bursts, stirring every 30 seconds with a metal spoon, until smooth. Spoon melted chocolate into the centre of each biscuit. Sprinkle with hundreds and thousands. Allow to set. Serve.

On the road for Christ On the road, Don and Lillian Kennedy

Capturing the hearts and minds of non-Christians is never an easy job, however spiritually fulfilling, for any dedicated evangelist. Yet Don and Lillian Kennedy have devoted their retirement to travelling all over NSW, Victoria and southern Queensland seeking new believers with a newspaper that recounts the stories of ordinary people whose lives, as they say, “have been transformed

by coming to know Jesus as our lord and saviour.” the paper’s called “Challenge,” subtitled “the Good News Paper,” and it’s published in Western Australia. As Don Kennedy describes it, “it’s non-denominational and not for

churchgoers but non-Christians outside the church. “It’s evangelistic, full of testimonies and life stories.” Challenge tells the stories of people from all walks of life – fashion models, businesspeople, teenagers, musicians, soccer players – who, battling a crisis or serious illness, have embraced Christianity. “Because it’s an Aussie product, we have at least one sports story in each issue,” Don says. He says Challenge is now an

international publication, with distribution in South Africa, India and the USA and editorial that’s “tailored to suit each culture.” He and Lillian began travelling and distributing the newspaper when he retired at 70 from years of “hard evangelistic work” in the Presbyterian Church in Queensland, during which they established two congregations in Brisbane and the Gold Coast. Don calls the work they’re doing now as his, “retirement ministry. “We’re on the road all year round

Tired of dog-eat-dog world A souring business partnership caused Roger to look for a better way of living AS a former self-employed graphic designer with a science background, Roger Berry thought he was leaving struggle town when he partnered with a friend in small magazine publishing business, until he realised he was being cheated. “My friend ran the sales side, and I took care of the art and creative side,” says Roger. “However it wasn’t long before I discovered that my partners were not being honest with me. I became angry and frustrated with this new world of business, where deceit and greed were commonplace.” then one day during his typically monotonous work he was asked to design an advert in one of their magazines for a city-centre lunchtime restaurant and night club that was unusually named the Jesus Centre. “I noticed there was a lunch-time Bible talk in two days’ time, so I went along. the subject was the Sermon on the Mount, a section in the Bible where Jesus tells us the amazing, compassionate way that God wants us to live.” In this sermon, recorded in chapters 5-7 of the Bible book of Matthew, Jesus taught His disciples to be humble, merciful, pure in heart, peacemakers, to thirst for God’s righteousness, give to the needy in secret, forgive when

others sin against you, and to “love your enemies and pray for those who persecute you”. Roger continues: “After hearing the talk, my mind was made up — that was the way I wanted to live, and that was the world I wanted to be part of.” two days later, Roger attended another event called Shindig, a gathering of over one hundred young people on a Saturday night. “I was astounded! Here were young people speaking of their love for Jesus and even praying out loud — and it wasn’t even a Sunday! these people definitely had something I hadn’t — and I wanted it! “thinking about these things as I was walking to the bus stop on my way home I had an encounter with Jesus. I was suddenly filled with an amazing and overwhelming sense of the presence of Jesus. “I felt so full of joy and assurance that God was with me. I knew that I had found the secret of what the others in the Jesus Centre had, and that Jesus was definitely here to stay in my life.”

So with Him in control of his life, Roger says that from then on, he was a different person. “I began to get rid of the things in my life that I knew were wrong — I had no desire for them anymore. I had found something much more precious to fill my life. I enjoyed learning more about God with other Christians, and reading the Bible.” through changing circumstances of his, all of which Roger says God has carried him through, “the presence of Jesus, the joy He gives, my delight in reading the Bible and the enormous blessing of other Christians have never diminished.” “I know I am right with God,” he says confidently, “and have the complete assurance of eternal life in heaven because I have surrendered my life to Jesus Christ.”

Crusty Chicken Casserole

This one is a cracker! Some caramel pies can be a bit too sweet, this one gets the balance right. You and your family will want it again and again.

This is one really nice chicken dish. It’s extra tasty, your family or friends will think you’re a Master Chef and it’s sure to end up on your “we’ll definitely have that again list”. Do try it!

BISCUIT BASE *this usually makes more crumbs than you need

1½ Cup of Nice biscuit crumbs 120g butter melted

1. Combine biscuit crumbs and butter. 2. Press into base of a lightly greased pie dish. 3. Chill.

FILLING

¾Cup Brown Sugar 1 cup of cream 1 tsp vanilla

1/3 cup of custard powder 1 cup of milk ¼ cup of Fairy

1. Mix all ingredients together. 2. Microwave for 3 minutes on high then 3 minutes medium high. 3. Pour over biscuit crumbs. 4. Cover with glad wrap. Chill to completely cold. 5. Top with whipped cream and sprinkle with grated chocolate (or flake crumbled works well).

1BBQ or Steamed Chicken 2 shallots – chopped (white part only) 1 Stick celery – Chopped 3 rashes bacon – chopped 60g mushrooms chopped 440g can cream of chicken soup

CHEESE BATTER

1 cup S/R flour sifted ½ green pepper chopped 1 cup of grated cheese

1 Onion – chopped 30g butter ¼ cup of water 300g carton sour cream ¼ cup grated cheese

½ red pepper chopped 2 eggs ½ cup of milk

Stir flour into bowl add diced peppers lightly beaten eggs, cheese & milk – mix until just blended

METHOD

1. Remove chicken meat from bones and chop meat roughly. 2. Place chopped onion, chopped shallots, chopped celery & water in a pan, bring to the boil, reduce heat, simmer covered 15mins (you can microwave till soft) 3. Melt butter in pan add chopped bacon and sliced mushrooms and cook 3mins (you can also do this in microwave - use less butter) 4. Combine soup, sour cream, chicken, vegies and bacon mixture. Pour into greased ovenproof dish. Spread cheese batter over top. 5. Bake uncovered in moderate oven 40mins. Sprinkle with cheese – return to oven for 5mins. CVO - 1st Edition

Dance Like Nobody Is Watching There’s a song that every PE and PDHPE teacher across the world loves just a little bit too much. I’m sure you’ve all been in the same situation … once you’ve got a song in your head, you just can’t get it out. You end up humming, whistling, tapping, and in this case, grooving on the inside from the minute you wake up until the minute you fall asleep. It’s been a few years since I’d heard this song, but once I had the tune back in my head, every word and every beat came thundering back to me from all the disco’s, nightclubs, 21st and weddings I’ve ever been to. I was on an errand at school recently and I walked across the gymnasium during class time—my ears pricked up as I heard that familiar tune, and laughed my head off as I saw the Year 8 PDHPE practical class all dancing in unbelievable unison to the well-rehearsed set of moves required by the song. Funnier still was seeing my own 13 year old amongst those dancing like no-one could see what they were doing. Teaching this dance to a bunch of senior school kids is also a standard and a ‘go to’ lesson for young PE prac teachers trying to impress in their 4 week stint, they have no reservations or inhibitions in displaying their 70s dancing skills, and the kids always respond with a classic 110%. The early 1970s classic by Ike and Tina Turner—Nutbush City Limits, will go down in history as contributing in more areas than perhaps any other tune. Easily my fondest memory of this song was at the wedding of two of our good friends about 14 years ago. The bride, a classic disco lover from way back, had dragged her Irish born groom onto the dance floor with about 150 guests. The poor guy didn’t know what had hit him—he was out of his league as every person except him knew all the steps and we were all perfectly in time. Maybe Ireland didn’t do the Nutbush at school? How amazing is it that in this day and age of electronic gadgets, disposable everything and Gen Y / Gen Z, that a (dare I say it, cheesey) song from 1973 still rules the PDHPE lesson in 2012? That’s almost 40 years on! A couple of weeks ago I started a 1 hour gig on Community Radio on a Tuesday evening playing songs and shooting the breeze—I was under instructions to dedicate a song to the travellers on the Canowindra bus, so I thought ‘Nutbush’ was the perfect solution. During post-mortems on the broadcast the next day, it would appear that many of the patrons on the bus not only knew all of the steps, but performed and instructed the awesome moves of the Nutbush for their uninformed peers during the ride home. Now, I have no idea how far technological advances will have taken us in another 40 years time, but I reckon it’s a safe bet that PDHPE classes across the world (except in Ireland?) will be still be occupying their kids with Nutbush City Limits as a staple of their dance units.

This clever class has been studying the ins and outs of the ear, examining the functions of how it works, and writing all about it. Furthermore, they have been looking at the cochlear implant and learning about how it assists people to hear well. Earlier in the year the students studied perspective lines in art and drew some very impressive images, some drawings including multiple points of perspective. Another interesting topic that the class reviewed was the use of asbestos by James Hardie, and the effects it had upon Australian citizens.

The Flannery Centre Art Exhibition official opening Photos by LeiLani Vakaahi Skillset’s Flannery Centre celebrated it’s launch with the inaugural Flannery Art Exhibition, with entries received from all over NSW, QLD and Vic. The winning artwork will remain at the Flannery Centre to begin the building of a permanent collection. The exhibition is free of charge to view during business hours until August 10 at the Flannery Centre in Panorama Avenue, Bathurst.
