New! Vegetarian Options According to 2018 Gallup poll, about 5% of all adults in America are vegetarian. If we include children, this number almost doubles. By definition, a vegetarian is a person who does not eat meat, and sometimes other animal products for ethical, religious, or health reasons. This number year over year has started to increase as well. Despite the reason of switching to a no meat diet it has been determined that there are many health benefits to becoming a vegetarian. Such as a reduced cancer risk, helping in the prevention of type 2 diabetes, lower blood pressure, decreased asthma symptoms, promotion of bone health and so much more. It is proven that a vegetarian diet can help people live a healthier life even though such a small population chooses to do so. That being said, Crossroads senior living is always striving to stay ahead of the curve and we are happy to introduce our all new vegetarian meal options featuring Beyond Meat and Impossible burgers. Any meal can now be made vegetarian for any resident! Our goal is to provide the best quality of life here at crossroads with endless options to ensure that our residents are always left completely satisfied. If you read this newsletter regularly, you might begin to think Crossroads at Lakewood caters primarily to Geologists. We’ve introduced you to resident Bob Higgins, a Geologist, and to Bill Chirnside who boasts a degree from Colorado’s School of Mines. There is another man you need to know: David Sabila. David is a Geologist who worked for the United States

I want to take this opportunity to wish everyone happy holidays and hope that you stay safe during these difficult times. With the rise of a new COVID variant and more looming restrictions, I want to assure you that we are complying with all state and local guidance in order to keep our community safe. We are looking forward to brighter days in regards to COVID and thank you for your continued support while we navigate these new waters. Thank you all again and we hope you stay safe during this holiday season,

Geological Survey. His work was his passion, always finding gems and minerals to add to his collection. A collection he gladly shares with our residents at our Geology club meetings. His passion eventually came to include hot air ballooning. He fell in love with the thrill of near silence, floating into the vast blue sky and ultimately became the proud owner of two hot air balloons. They were affectionately named The Grape Escape and the Grape Adventure and became the basis of a hot air balloon business that gave many people hours of pleasure on David’s air tours. David didn’t limit his patron’s joy to only what they experienced aloft. Back on the ground, David was king at smoking and barbecuing fine meats enjoyed by all after their sky adventure. David has a welcoming smile and kind disposition. We are happy he is part of our Crossroads community.

Update from Maranatha Despite the unpredictability of international travel, a group of volunteers made their way to Peru in November to help in the building of a large school complex in the town of Ica. The La Tinguiña Adventist school, when completed, will have 8 classrooms, administrative offices, restrooms and a large auditorium for indoor sports and convocations. Twenty-nine volunteers joined Maranatha’s local team of construction workers to lay block and rebar on this massive school building. Some volunteers also provided children’s programs for the community while others created a makeshift eyeglass clinic where community members could come, try on, and choose donated reading glasses. This month, our Veterans were honored with a poppy lapel pin and a celebration in which we were able to learn about their time in the military. We are thankful for their service and blessed that they are home.

Although we are sad that COVID precautions restricted us from having a family gathering, we also were grateful to celebrate Thanksgiving together as a Crossroads family. We talked about what we are grateful for in our lives, ate delicious food and listened to a fabulous three-piece band.

Beverly and Kit organized a lovely Thanksgiving meal for us. The Wiki Wiki Trio moved us with some traditional and toe tapping music.
