OUR STORY
In the 80 years since the first branch opened in Oakland, California, Trader Vic’s has become a much-loved household name around the globe. The Polynesian-themed restaurant and bar which now has 18 branches worldwide first launched in Dubai nearly 25 years ago, and has been situated on the same spot at Crowne Plaza Dubai since then. The exotic Polynesian décor at Trader Vic’s Crowne Plaza Dubai transports you to the South Pacific islands, with walls wrapped in handmade Tapa cloth from the island of Tonga, carved Marquesan Tikis and tribal masks from Papua New Guinea. A nod towards Dubai’s status as an international city, Trader Vic’s in Dubai takes inspiration from all over the globe. Trader Vic’s is one of the only restaurants in the city to have a traditional Chinese wood-fired oven. The design can be traced back to the Han Dynasty, and is displayed behind glass in the restaurant so that guests can view this unique operation. This technique gives a subtle smoky flavour and prevents direct contact with the flame. You will find a dedicated section of the dinner menu for dishes cooked in the Chinese wood fired oven, such as the Indonesian rack of lamb.

This April Trader Vic’s in Dubai underwent a complete refurbishment and relaunch. New luxurious seating with contemporary fabrics and carpet designed exclusively for Trader Vic’s were added, along with two unique private rooms for meetings and special occasions. The Shell Room, decorated with nautical objects and shells can seat up to eight people, whereas The Tonga Room can accommodate up to 14 people. Along with the complete refurbishment, the restaurant also has a new manager – Ximena López, who brings her warmth and international experience in hospitality to the position. Lopez has worked in Trader Vic’s properties around the world, including the flagship restaurant in California, as well as their successful Seychelles branch. Throughout 2017, Trader Vic’s Crowne Plaza Dubai has an exciting range of deals each week, including daily happy hour offers and weekly ladies’ night promotions.

A WORD FROM THE CHEF Jimmy Tejano
Head chef Jimmy Tejano has had a career spanning nearly thirty years, working in many prestigious kitchens including the Red Sea Palace in Saudi Arabia. He has a long history with the Trader Vic’s brand, first joining the global brand in January 2000, at the branch in Bahrain. Following seven years in the small Middle Eastern country, Tejano was keen to travel the world and develop his skills, as such he spent time travelling with Oceana Cruises. Heading up the ship’s kitchen he visited many places around the globe, learning about different flavours and honing his skills on board the ship. In 2008 he return the Trader Vic’s family, as head chef of the branch at Crowne Plaza Dubai. Since then he has been consistently turning out mouthwatering dishes and flavours, including his favourite New York steak, cooked slowly in the Chinese wood-fired oven and the seared tuna teriyaki.
A LOOK AT THE MENU SUSU PRAWNS Prawns served with a rich ginger-garlic ‘susu’ (meaning creamy in Malay) curry sauce, along with apple and celery. It’s a Trader Vic’s all-time favourite appetiser. WOOD-FIRED CERTIFIED ANGUS BEEF TENDERLOIN This delicious succulent meat is suspended from hooks over hardwood fire to cook and served alongside panko fried onion rings and a choice of Bearnaise or peppercorn sauce. Isaac Tigrett and Peter Morton were two shaggy-haired Americans who in 1971 just wanted to find a good American burger whilst living in London. Their solution? They opened up their own American-style diner in an old Rolls Royce dealership and called it Hard Rock Cafe. At the time, Isaac and Peter were only given a six-month lease. The now famous logo was actually created by celebrity artist, Alan Aldridge, who is best known for his work with the Beatles. It was based upon Isaac’s idea to model it after the simple design of Chevrolet’s car hood ornament. In 1973, Paul McCartney & Wings performed an impromptu concert at Hard Rock as a warm-up gig for their 1973 UK tour. That was the first live concert; today, Hard Rock locations around the world host thousands of live events each year. As Hard Rock Cafe London became the premier spot to eat, it began attracting celebrities and musicians. Famous guitarist, Eric Clapton, was even a regular at the London cafe. One day, in 1981, Eric asked Isaac to hang his guitar over his favorite bar stool to ‘mark the spot.’ Isaac did and a week later, a package arrived with a guitar and a note that stated, ‘Mine’s as good as his! Love, Pete.’ Pete was in fact, the one and only Pete Townshend, guitarist extraordinaire for The Who. Today, Hard Rock’s memorabilia collection has grown to more than 80,000 pieces, with more being added each day. In 1997, Hard Rock launched its first cafe in Dubai, in a purpose-built building, located in the desert, on the route from Dubai to Abu Dhabi. Ask anyone who has lived in Dubai for over 15 years and they will reminisce about driving from Abu Dhabi to Dubai and how passing the solitary Hard Rock meant you were nearly in Dubai.

Merchandise: It started when a local Hard Rock sponsored a local team, having the original classic t-shirts serve as their uniforms. Everybody liked them so much that the cafe started handing out shirts and then selling them. Soon enough, those shirts had become a rock ‘n’ roll uniform for half the planet and the best-selling keepsakes on earth. Irish pubs are renowned across the world for their colorful characters and friendly atmosphere. The Irish Village in Dubai is no exception. From the original idea of Colm McLoughlin, Executive Vice Chairman and CEO of Dubai Duty Free. It has never looked back. A WORD FROM THE CHEF Chef Mohamed Ferjani
Mohamed Ferjani is the chef de cuisine at Al Hadheerah. With 25 years of working in the F&B industry, Chef Mohamed is well experienced in the culinary arts. Originally from Egypt, he has worked in many different countries, including Egypt and India. His experience in different countries around the region has allowed to improve and hone his skills, while picking up tips from different culinary masters along the way. Chef Mohamed was at the helm of Al Hadheerah when it won ‘Best casual dining experience world’ at the Hotel of the Year Awards 2015. According to Chef Ferjani, he is happiest when cooking Middle Eastern food: “My favourite cuisine is Arabic food. In particular, I love creating my classic whole lamb Ouzi, which is my signature dish at Al Hadheerah.”
