One of the most distinctive voices on the Greek artistic scene, Panos Mouzourakis has that certain "something." He is the kind of person who transforms imagination, emotions, and ideas into creation, offering new ways to perceive, understand, and experience the world around us. His new song, titled "Ti Oraio" (How Beautiful), has just been released, while his older collaboration with Haris and Giannis Michaelides on "Afti einai i zoi" (This is life) still speaks to my very soul. The exact same thing happened with the song "Megalono" (I'm growing up), as well as with many, many others. Now, he is kicking off his Summer 2026 tour. From the seas to the mountains... "Ti Oraio" summer ahead!

The song "Ti Oraio" accompanies the launch of your new tour. What message does it carry for you, and how does it connect to what you will present on stage this year? "Ti Oraio" was the reason for me to get back to performing live after a five-month hiatus. Amidst all these strange things happening on the planet, amidst the hardships we are experiencing and the questioning of values, I was looking for something beautiful. And the only thing that woke up inside me-sparked by this song-was the desire to seek out the beautiful things that have flooded my own life, and which I am certain still exist around us. In defiance of the ugliness we live in, I wanted to take a stand using love and joy as my compass, which are also the overall symbols of this tour. We want to travel around and try to bring back a little bit of that light, just like the lyric that opens the concert says: "The weather is bad, bombs are raining down in heaps, and I hold an umbrella, to keep love, light, and joy dry, until its own turn comes."
"Ti Oraio" is yet another song by Dramamini. How is one of your songs usually born? It is the third time I am collaborating with Giannis and Haris Michaelides, aka Dramamini. I can say there is something magical about this collaboration, as if we are very close to the same field of thought and inspiration.
It’s like we are reeling in our "catch" from the same river; it's just that the guys go fishing more often, so they have a lot more material and more inspiration. I also feel that they identify deeply with the artist they are writing for. I don't know if this song was written with me in mind, as had happened, for example, with "Afti einai i zoi" or "Bollywood." For me, however, it came about coincidentally and made me feel incredibly beautiful-just with a guitar, a voice, and an exceptional lyric that takes you on a journey to a more romantic state of mind and a more serene place inside your head.
What is it that still fascinates you the most on stage?
The unexpected, that element which a live performance possesses: the fact that you might have planned everything, everything might be going exactly as it should, but suddenly a new thought or energy hits you-a reaction from the audience that creates the need to evolve what you were saying and take it to the next level.
I am deeply moved by the moment you extend your hand with the microphone toward the audience and see the reflection of the lyric you have just sung to them. And in that exact moment, both of you sink into the very same emotion-of joy, of moving sentiment. Depending on the song and the moment.
Music, acting, the stage… What is it that expresses you most deeply today compared to your first steps?
My first steps were an effort to convey the messages of Sidiroypoulos, Savvopoulos, the Katsimihas brothers, Machairitsas, Tsaknis, but also Elvis Presley, Chuck Berry, and Led Zeppelin, and to make sure this voice wasn't silenced.
Now, having built my own discography and taken my steps in cinema and television, I always keep them distinct within me. Music has always been my "wife" and cinema my "mistress." Acting involves a very beautiful relationship and journey, but the difference is that in acting, I try to step into someone else's shoes and understand what they feel. In music, on the other hand, I try to dive deep into myself, to see what it is that expresses me and how I can express it, too, so that it can be understood by the world. The combination of these two has created a massive chaos in my mind-a mess that ultimately ends up being creative and is perhaps worth all the panic attacks and anxiety it causes me from time to time.
How much has the Panos Mouzourakis of today changed from the artist we first got to know years ago?
They say that every seven years a cycle is completed, and there is no longer a single cell of yours that hasn't been regenerated or recreated compared to who you
were seven years ago.
So, I think I am the natural evolution of a character who came to this earth with the values he was given, into a world that was presented to him in a specific way. And because those values and the world weren't always in sync, many questions arose. All these questions evolved my character and brought him to what he is today: a very confused, optimistic person who believes that someone is keeping the light on at the end of the tunnel, and that light, love, and joy will win!
So, yes, I imagine I have changed.
Is there something the public takes for granted about you that isn't true at all?
What people take for granted about me is that they know better than I do what I should do and how I should do it. In recent years, though, I realized that nobody knows me better than I know myself. Just as, code for code, nobody knows you better than you know yourself. Consequently, there is a major learning process through which you must filter out and understand what it is that you want, so you can then figure out how you need to go about doing it.

We live in an era of overexposure. How do you handle the world of "appearances"?
In this day and age, we have lost our sense of aesthetics. Everything is done so easily, and the entertainment industry drives you to produce things and put them out there, regardless of their quality.
I often argue or disagree with social media strategies. I try to ensure that whatever I produce and put out there-whether it's a song or a social media story-has at least one of three things: good aesthetics, humor that makes you laugh, or a beautiful message to convey to you. If it meets even one of these criteria, I feel it's worth putting out there. If it's just a "good morning," a "good night," "this is my food," or "this is when my concert is," I feel it just becomes another redundant element inside an already existing overabundance of videos and useless information-the kind that pretty soon our brains won't even be able to process.
Do you believe that today there is time for meaningful art, or is everything moving way
too fast?
In today's era of content creation, where we put absolutely anything out there just so people won't forget us-just to be present throughout the day, smiling, real or fake, it doesn't matter, as long as we "exist"-we are losing the substance.
Instead of looking to see if there is a nice photograph, an aesthetic, a proper performance, a meaningful message, we often only care about putting out that "one frame" that will grab attention. I think that in the past, there was a factor operating as a filter, which frequently led to more carefully crafted results than what we see today.
I am not saying this to slight young people who have a platform. It's just that the music and film industries, seeing how easily someone with a camera, a phone, a YouTube channel, or a social media account can produce something that grabs attention, have largely stopped truly investing in art and aesthetics.
Of course, there are standout examples and people who strive for the best-the image, the message, the aesthetics. It's just that the industry doesn't support them as much anymore, because it has turned its focus toward what is easy, fast, and cheap.
How has the way you view love changed over the years?
To answer that, I first need to explain how I view love right now. It used to be a big question of mine: how something we experience internally can be given a label, and how we can be sure that when we ask for it from someone else, or mention it to them, they understand the exact same thing we do.
Love is something our parents teach us very simply. They say: "Do you love daddy? Do you love mommy?" and so we begin to connect love with the person who takes care of us, who sings us lullabies, who puts us to bed at night, who brings us breakfast, but who might also ground us.
Then comes our social circle. We might say we love Mr. Thanasis at the grocery store because he is always nice to us, lets us buy things on credit, and helps us out. Or we don't love someone because they didn't help us out during a difficult time.
But in the end, what is love? It is found in "love one another." You cannot say that you love only two people or five people and that this is all there is. For me, love is a constant struggle to manage to love all people, along with their flaws.
At this stage of my life, that is what love means to me: a genuine effort to come closer to "love one another."

The greatest challenge in a hotel of this scale is maintaining consistency of experience across different concepts and guest needs within the same day. Breakfast requires speed, organisation, and immediacy. Fine dining at Salonika calls for personalised service and exceptional attention to detail. The lobby bar demands social energy and relaxed luxury, while the banquet and conference department requires flawless coordination and precision in execution.
Although each outlet operates with different demands, they all share the same philosophy. We invest in strong operational standards, continuous daily training, and consistency in quality, ensuring that guests experience the same high level of hospitality in every part of the hotel.

At the same time, we make a conscious effort to recognise the team’s contribution and encourage creativity, as the high expectations of our guests make consistency and professionalism indispensable elements of our everyday operation.
Could you share some of the most significant events hosted or organised by Makedonia Palace, both within and outside the hotel premises?
We have managed highly demanding events and prestigious guest stays, including hosting the President of Israel and his delegation during the Greece-Israel-Cyprus trilateral summit, under strict security protocols and exceptionally high hospitality standards.

How do you balance your menus and services in order to remain appealing to Thessaloniki’s local audience while also meeting the expectations of an international jet-set clientele?
In a city with such a strong gastronomic culture as Thessaloniki, the challenge lies in achieving balance. Our goal is to remain equally appealing to local residents and international visitors alike.
This balance is achieved through contemporary Greek cuisine delivered with high standards of quality and presentation. We want Thessaloniki’s local audience to find a venue with character and consistency, while international guests experience an authentic sense of hospitality worthy of a luxury hotel.
We also organised the celebration marking the 90th anniversary of PAOK at the Thessaloniki Concert Hall, providing external catering services for 1,500 guests, as well as major international conferences both inside and outside the hotel. Among them was the 28th Annual International ESGE Congress at the Vellidio Conference Centre, where we managed catering services for approximately 2,000 guests daily over a five-day period.
Particular emphasis is also placed on curated gastronomic experiences, including the Greek Cuisine Awards, themed wine events with leading winemakers from Northern Greece and across the country, modern cocktail and food pairing experiences, and exclusive culinary presentations that further strengthen the hotel’s gastronomic identity.
What is the one thing you would like guests to take away from their experience within the hotel’s F&B departments?
Makedonia Palace, particularly through Salonika Restaurant, has cultivated a strong gastronomic identity. How do you ensure that your F&B strategy continues to reinforce this identity while preserving the hotel’s timeless elegance?

The greatest challenge lies in managing the diversity of guest profiles, from business and leisure travelers to conferences and social events, as well as adapting swiftly to unforeseen changes in daily operations. These may include sudden increases in guest numbers during an event, weather-related adjustments to outdoor setups, or last-minute dietary requirements.
This demands operational flexibility, fast team coordination, attention to detail, and consistency both in service delivery and in the overall image and aesthetic of the venues.
Within a high-pressure F&B operation such as Makedonia Palace, what truly holds a team together and allows it to consistently deliver high standards of hospitality?
What truly binds a team together is a shared vision and a culture of collaboration, built through clear communication and strong leadership. Equally important are well-defined roles, mutual support in daily operations, and respect within the team. These elements foster trust and stability, even in periods of high pressure.
Makedonia Palace is widely regarded as a benchmark for hospitality and gastronomy in Thessaloniki. In your view, what is the most important element in a guest’s interaction with the F&B departments in creating an experience worthy of the hotel’s reputation and enhancing the overall stay?
The most important element is the overall hospitality experience within the F&B outlets, which is based on warm and human-centered service, consistency and quality in food and beverage offerings, and attention to detail at every touchpoint. The spaces themselves, along with the views, also play a significant role in enhancing the sense of experience and the uniqueness of each moment. When all these elements come together consistently, they create a holistic experience that elevates the guest’s overall stay.
In the luxury hospitality and contemporary dining landscape, guests are increasingly seeking more personalised experiences. How do the hotel’s F&B outlets ensure this sense of exclusivity, personal care, and authentic hospitality?
We place strong emphasis on recognising each guest’s needs and offering immediate, human-centered service without standardisation. Through the continuous presence of the team in the outlets, effective communication, and knowledge of guests’ history and preferences, we create a sense of familiarity and exclusivity that makes each guest feel genuinely valued. At the same time, we maintain the discretion and balance required in a luxury environment. Consistency in quality, discreet care, and authentic hospitality are the key elements that shape this experience across all F&B outlets.
How do you ensure that the F&B outlets remain in excellent operational and aesthetic condition throughout the day, so that they consistently meet guests’ expectations?
Maintaining an excellent overall image is based on strong pre-service organisation and effective team coordination throughout the day. At the same time, regular inspections and immediate resolution of any technical issues or wear and tear ensure a consistently high level of guest experience. Equally important is the continuous upkeep of order and cleanliness, so that the aesthetic quality of each outlet remains impeccable at all times. The team’s prompt responsiveness at every stage of operation ensures smooth service flow and overall consistency throughout the day.

Could you give us an overview of your role and responsibilities as Banquet Head Captain, as well as the range of events hosted or supported by Makedonia Palace?
As Banquet Head Captain in a luxury hotel environment, my role is essential to the flawless execution of every event. My responsibilities include ensuring service quality, coordinating the banquet service team, and maintaining close collaboration with the kitchen in order to guarantee guest satisfaction.
What is the greatest challenge in managing demanding events such as conferences, gala dinners, and social occasions, where everything must run flawlessly in real time?
The greatest challenge in managing demanding hotel events is the effective coordination of multiple factors in real time, ensuring that unexpected situations are handled immediately without affecting the guest experience.
Cancellations, technical issues, programme changes, or delays all require immediate adaptability, excellent staff coordination, and seamless operation of technical equipment. At the same time, the proper management of guest flow is critical to ensuring that everything runs smoothly, without guests ever noticing difficulties or operational disruptions.
After being part of so many significant events, what do you believe ultimately leaves a lasting impression on guests at Makedonia Palace?
Based on my experience in organising major
events, the element that ultimately stays in guests’ memories is not simply an expensive menu or impressive decoration. What truly leaves a lasting impression is the emotional connection created through care and attention to detail. Guests remember how the space and the people made them feel, not only what they saw.
The key elements that create this memorable experience are hospitality and personalisation. When the staff recognises a guest, remembers their preferences, or anticipates a need before it is even expressed, it creates a genuine sense of care. A handwritten welcome note or a thoughtful welcome gift that reflects the hotel’s awareness of the guest leaves a lasting impression. Equally important is the connection of the event to local culture and gastronomy, offering an authentic experience that makes each event truly unique.
In today’s social media-driven landscape, every event is designed to be visually experienced and shared. How has this shifted the way banquet setups and event experiences are conceived?

There have been many events that remain deeply memorable to me. However, one that I will never forget was a Chinese wedding hosted at the hotel several years ago. The distinct culture, traditions, and customs made it a truly unique experience. Another unforgettable occasion was the European Union Summit dinner in 2004, which took place on the deck of a ship in the presence of heads of state. Both the food preparation and the service were carried out while at sea. At the end of the event, the entire staff received applause from the guests, a moment that remains particularly meaningful to all of us.

How do you identify a guest’s wine preferences and needs before they are even expressed?
I believe that current wine trends help us understand the preferences and expectations of a significant portion of our guests. At the moment, the varieties in greatest demand are Xinomavro, Assyrtiko, and Malagousia. However, the most important step is engaging with the guest directly in order to understand their personal taste preferences, whether they are looking for a familiar and comfortable choice or are interested in exploring something new.
How do you contribute to selecting the right wine in order to create a complete wine and dining experience for the guest? Selecting the right wine depends both on the specific dish chosen by the guest and on their individual taste preferences. My goal is to recommend wines that enhance the flavours and aromas of the food while creating a balanced gastronomic experience that the guest will truly appreciate.

For me, the “DNA” of a restaurant is also reflected in the bar experience through the overall journey the guest enjoys, from the very first interaction with the service team to the final sip of a cocktail.
We aim to create cocktails that “communicate” with the philosophy of the kitchen, using premium ingredients, Greek aromas, and balanced flavours. The harmony between kitchen and bar is extremely important, because our goal is for guests to experience the same gastronomic identity whether they are holding a fork or a cocktail glass.
Beyond technical skills, how do you instil the sense of savoir-vivre and refined hospitality expected in a five-star hotel environment?
Training a bartender is not limited to technique or the proper preparation of a cocktail. Equally important are savoirvivre, behaviour, and an understanding of hospitality. I try to convey to younger team members that a great bartender must be able to “read” the guest, while demonstrating
courtesy, discretion, professionalism, and strong communication skills.
Through our daily collaboration, we place emphasis on detail, posture, manner of speaking, and, of course, teamwork, because a bar always operates as a team. Our goal is the continuous evolution of the F&B department, with emphasis on quality, creativity, and a modern hospitality experience.
What is the greatest challenge for a woman in a leadership role within the bar industry today, and how do you intend to further develop the hotel’s F&B department through your role?
I believe the greatest challenge for a woman in a leadership role within today’s bar industry is balancing strength and sensitivity without constantly having to prove her value. The hospitality industry is evolving, and greater emphasis is now placed on knowledge, personality, and leadership ability. From my position, my goal is to build a team that operates with professionalism, respect, shared vision, and genuine passion for what we do. I want the bar to have a distinct identity, consistency, and a contemporary approach that combines quality with authentic hospitality.

How do you implement sustainability practices at the bars of Makedonia Palace, from ice management and fruit peel utilisation to the reduction of plastic straws? Zero Waste is not simply a trend, but a philosophy that now plays an important role in both gastronomy and bar culture. At Makedonia Palace, we implement practices aimed at reducing our environmental footprint, including proper ingredient management, the multiple-use utilisation of fruits and herbs, and the reduction of plastic consumption.
We also place great importance on responsible ice management and avoiding unnecessary product waste. It is important for guests to enjoy a high-quality service experience while also recognising the environmental awareness behind it.

For Valentine’s Day, Salonika Restaurant transformed into an intimate setting filled with warm lighting, elegant ambiance, and flavors designed for two. Executive Chef Sotiris Evangelou curated a special Valentine’s menu balancing elegance and creativity. The evening began with the signature cocktail “Love Potion” and continued with sea bream sashimi with passion fruit, roasted cauliflower cream with hazelnuts and truffle, grilled langoustine in its own jus, and beef fillet with Calvados, celeriac, and caramelized apples. On Ash Monday, Salonika Restaurant welcomed its guests with a rich Lenten buffet dedicated to Greek tradition and authentic fasting flavors.
The table was filled with traditional bean soup, authentic Bourani from Tyrnavos, freshly baked lagana bread, seafood, halva, and a wide variety of creative fasting dishes. The menu balanced beloved customs with a contemporary gastronomic approach, keeping the flavors of the Greek Lent alive.
Greece’s national holiday on March 25th took on a distinct gastronomic character through an abundant Lenten buffet curated by Executive Chef Sotiris Evangelou.
The menu combined classic Greek recipes with seafood specialties, including cod with garlic dip, shrimp giouvetsi, octopus with short-cut pasta, cuttlefish with spinach, mussel pilaf, artichokes à la polita, and grilled sea bream fillet.
Alongside them, the salad bar showcased the freshness of Greek cuisine with Santorini fava, taramosalata, hummus, seasonal salads, legumes, and traditional side dishes that brought the aromas of the Greek spring to the table.
Easter at Makedonia Palace was celebrated against the blue backdrop of the Thermaic Gulf, around a table filled with aromas and beloved Greek flavors.
The Holy Saturday Resurrection dinner featured traditional magiritsa soup, kokoretsi, tsigerosarmadakia, and lamb fillets, while on Easter Sunday, the rotating spits in the hotel courtyard, glasses of ouzo, and the festive welcome created the atmosphere of an authentic Greek celebration.

Mezen's fixed menu can work as an accompaniment to the mezes, but also independently, accompanied by a wine from small producers from all over Greece and beers from microbreweries. Signature dishes such as the squid carbonara, with thin strips of squid instead of pasta, the mylokopi sheftalia with dry-roasted lamb skin on the outside and minced mylokopi on the inside, as well as the kokoretsi thrapsalo, with thrapsalo on the inside and lamb intestine on the outside, are the best sellers.

PSI BY MEZEN
PSI by Mezen is the first fish-butcher shop in Greece. Preparing daily fish preparations, which we are used to encountering in a butcher shop. Steaks, souvlaki, fillets, schnitzel, fried fish and sausages from seasonal fish can be found on the menu, which is made from scratch every morning. A special taste and texture is given to PSI's recipes by the fish dry ager, a maturation chamber especially for fish. All of this is served every lunchtime together with wines and spirits from small producers from all over Greece, but you can also buy them from the display case to cook them at home.
PSI also functions as a delicatessen, as its shelves are filled with spirits, wines and beers at cellar prices, a display case with handmade goodies sold by the kilo such as velvety tarama mousse, Volos kopanisti with smoked feta, as well as fish cold cuts such as tuna pastrami and swordfish pastourma.
