How to Cook a Holiday Meal Happy Holidays, As we enjoy and celebrate the holidays we gather with family and friends to enjoy a holiday meal. We have asked Lincoln City elementary students how they would cook a turkey as a traditional holiday feast. California Chicken Bake Yield: 4 servings Ingredients: 8 oz. shredded taco cheese 3/4 cups uncooked long-grain white rice 1/4 cup chopped cilantro 1 cup Old El Paso Salsa 1 cup water 4 boneless chicken breast halves
Directions: Heat oven to 350 degrees. Coat 2-qr. Casserole with nonstick cooking spray. Reserve 1/2 cup cheese for topping. In large bowl, combine remaining cheese, rice, cilantro, salsa and water; mix well. Spoon into sprayed baking dish; spread evenly. Arrange chicken breast halves over rice mixture. Cover with foil. Bake at 350 degrees for 55-60 minutes ir until chicken is done. Uncover; sprinkle with remaining cheese and bake, uncovered, for 5 minutes or until cheese is melted.

Breakfast Corn Flake Pie Yield: 6 servings Ingredients: 8 slices bacon, cooked and crumbled, reserving 1 Tablespoon drippings 1/2 cup corn flake crumbs 5 eggs 2 1/2 cups hashbrown potatoes
1 1/2 cups shredded Swiss cheese 1/2 cup cottage cheese 1/3 cup milk 1 green onion, chopped 1 teaspoon pepper 4 drops hot pepper sauce
Directions: 1. Mix corn flake crumbs with drippings. Set aside. 2. In medium-size bowl, beat eggs until foamy. Stir in remaining ingredients. Pour into greased 9-inch pan. Sprinkle crumbled bacon and crumb mixture over eggs. Cover. Refrigerate overnight. 3. Remove pan from refrigerator. Uncover and bake at 350 F. about 50 minutes or until knife inserted near center comes out clean.

Ham and Apple Strata
Yield: 8 servings Ingredients: 6 slices whole wheat bread (cut off the crust) 2 tablespoons butter or margarine, softened 1 cup shredded Cheddar cheese 3/4 cup shredded Monterey Jack cheese 1 1/2 cups cut-up ham
3 large Granny Smith apples, sliced and skinned sugar to cover apple slices cinnamon to cover apple slices 1 1/4 cups half and half (you can use some nonfat) 8 large eggs 1 tablespoon ground mustard 1 tablespoon Worcestershire sauce
Directions: Spread bread with butter. Arrange buttered slices in single layer in greased 9- by 13-inch baking dish. Layer half of cheese, then all of ham and apples (with sugar and cinnamon). Top with remainder of cheese. Beat together eggs, half and half, mustard powder and Worcestershire. Pour over casserole. Cover; refrigerate at least 6 hours or overnight. Fancy Shrimp and Egg Bake
Yield: 8 to 10 servings Ingredients: 3 Tablespoons margarine 1/2 cup chopped onion 1/2 cup chopped green pepper 12 eggs, beaten 1-1/2 cups (6 oz.) cooked shrimp 1 cup sliced fresh mushrooms Sauce: 2 Tablespoons margarine
2 Tablespoons flour 1-1/4 cups half and half 4 ounces shredded Swiss cheese 1/4 cup grated Parmesan cheese 3 Tablespoons dry white wine Topping: 1 can (8 oz.) refrigerated crescent rolls 1 Tablespoon margarine, melted 1 Tablespoon chopped fresh parsley
Directions:
Heat oven to 350 degrees F. Lightly grease 12x8-inch (2-quart) baking dish. In large skillet, melt 3 Tablespoons margarine; saute onion and green pepper until onion is crisp-tender. Add eggs; stir just until eggs are set. (Eggs will be moist on top.) Fold in shrimp and mushrooms. In medium saucepan, melt 2 Tablespoons margarine. Blend in flour; cook until smooth and bubbly. Gradually add half and half; cook until mixture boils and thickens, stirring constantly. Add Swiss cheese, Parmesan cheese and wine; stir until smooth. Fold sauce into scrambled egg mixture. Pour into prepared pan. Remove dough from can in rolled sections; do not unroll. Cut each section into 6 slices; cut each slice in half. Arrange 20 slices flat edge down around edges of pan; arrange remaining 4 slices in center. Combine 1 Tablespoon melted margarine and parsley; brush over dough surfaces. Bake for 20 to 25 minutes or until eggs are set and dough is golden brown. Let stand 5 minutes before serving. Garnish as desired.

Directions: In a bowl, combine the salmon, bread crumbs, celery, green pepper, onion and parsley. In another bowl, combine the milk, mayonnaise, ground mustard and pepper. Pour over salmon mixture; toss to coat evenly. Transfer to a 1-quart baking dish coated with nonstick cooking spray. Sprinkle with Parmesan cheese and paprika. Bake, uncovered, at 350 degrees for 30-35 minutes or until top is golden brown and casserole is heated through.

Directions: Cook noodles and drain. Add sour cream, milk and mushroom soup to noodles, stirring to combine; cover and keep warm. In a large skillet over medium high heat, brown beef until done; drain. Add gravy mix, cream cheese and mushrooms to meat, stirring to blend. Combine noodle and beef mixtures, stirring to blend. Pour into 4 qt. casserole. Bake at 350 degrees, uncovered, only until sauce thickens.

Yield: 6 servings Ingredients: 4 cups (7 oz.) uncooked wide egg noodles 1/2 lb. lean ground beef 1 cup chopped onions 1/2 cup chopped green bell pepper 2 teaspoons dried Italian seasoning 1 can (6 oz.) tomato paste
1 pkg. (3 1/2 oz.) small pepperoni slices, halved 1 can (2 1/2 oz.) sliced ripe olives, drained 2 cups (8 oz.) shredded mozzarella cheese 1 tablespoon chopped fresh parsley, if desired
Directions: Cook noodles to desired doneness as directed on package; drain. Heat oven to 350 F. In large skillet, cook ground beef, onions and bell pepper 7 to 9 minutes or until meat is browned and vegetables are crisp-tender; drain. Add noodles, Italian seasoning, pepperoni, olives, tomato sauce and tomato paste; mix well. Fold in 1 cup of the cheese. Pour mixture into ungreased 2-quart baking dish. Top with remaining 1 cup cheese. Bake at 350 F. for 25 - 35 minutes or until thoroughly heated and cheese begins to brown. Sprinkle with parsley.

Roasted Rack of Pork Yield: 6 servings Ingredients: 1 (4 to 5 lb.) bone in pork loin roast, chine bone removed 2 cloves garlic, crushed Coarsely ground black pepper
Directions: Heat oven to 350 degrees F. Trim excess fat from pork loin and trim extra meat from between rib bones. (This is called “Frenching” the bones; you can also ask your butcher to do this). Rub all surfaces with crushed garlic and sprinkle generously with black pepper. Place pork roast, bones up, on rack in shallow roasting pan. Roast for 1 to 1-1/2 hours, until meat thermometer inserted reads 150 to 155 degrees F. Remove roast from oven, let rest about 10 minutes. Cut between rib bones to serve. Yield: 4 servings Ingredients: 1/3 cup sugar 1 Tablespoon ground cinnamon 1/2 cup butter, softened 1 pkg. (3 oz.) cream cheese, softened
Directions: For cinnamon-sugar mixture, in a small bowl combine the 1/3 cup sugar and the cinna 1 cup sugar mon; set aside. In a large mixing bowl, beat 1/2 cup butter and the cream cheese with an electric mixer on medium to high speed for 30 seconds. Add 1 cup sugar and baking powder. Beat until combined, scraping 1/2 teaspoon baking sides of bowl occasionally. Beat in egg and vanilla until combined. Beat in as much of the flour as you can powder with the mixer. Using a wooden spoon, stir in remaining flour. Divide dough in half. Roll half of dough between two sheets of waxed paper into a 12-by 8-inch rectangle. Remove top sheet of waxed paper. Brush 1 egg dough with half of the melted butter. Sprinkle with 2 tablespoons of the cinnamon-sugar mixture. Starting 1 teaspoon vanilla from one of the short sides, roll up jelly-roll style, removing waxed paper as you roll. Seal edges. Repeat 2 2/3 cups all-purpose flour with remaining dough, butter and 2 tablespoons of the cinnamon-sugar mixture. Roll each log in remaincinnamon-sugar mixture. Wrap each log in plastic wrap or waxed paper. Chill in the refrigerator about 1 Tablespoon butter, ing 4 hours or until firm. Using a sharp knife, cut dough into 1/4-inch-thick slices. Place slices 1-inch apart on a melted ungreased cookie sheet. Bake in a 375-degree oven for 8-10 minutes or until edges are firm. Cool on cookie sheet for 1 minute. Transfer to a wire rack to cool.
