Heat rice according to package directions.

In medium, microwave-safe bowl, combine beans, corn, salsa and chili powder, if desired. Microwave on high 1 minute.

Mix in rice. Place lettuce in bowl and top with rice and beans mixture. Garnish with sour cream, avocado and chopped cilantro, and serve with tortilla chips if desired.

Prepare rice according to package directions.

In large skillet over medium heat, heat 2 tablespoons oil. Saute spinach, garlic, ginger, salt and pepper 3-5 minutes, or until spinach is wilted. Transfer to bowl and keep warm.

Wipe out skillet. Heat remaining oil over medium-high heat. Stir-fry rice 3-5 minutes, or until slightly crisp. Stir in soy sauce and vinegar.

Divide rice among four bowls. Top each serving with bean sprouts, carrots, kimchi and one fried egg. Drizzle with Sriracha and sprinkle with sesame seeds.

The Simple Way to Begin Again The Power of Persistence

Local West Michigan competitive athlete, John Huffman, is chasing his next finish line.

For John Huffman, fitness has never been about chasing attention or collecting medals. More than a decade ago, he began running simply to stay in shape. Over time, that commitment evolved into a passion for obstacle course and trail racing that has taken him across the country — and onto the world stage.

Now an accomplished competitor in Spartan events and other elite races, Huffman’s story is proof that ambition does not have an age limit. Through discipline, determination and a willingness to embrace challenges, he continues to redefine what’s possible as an age-group athlete.

As Huffman approached his 50s, staying active became more important than ever. He began setting small goals, training for 5Ks and 10Ks and focusing less on speed and more on consistency.

That steady approach became the foundation for everything that followed. For the past six years, Huffman has trained regularly at MVP Athletic Club in Rockford, where year-round access to facilities has helped him stay consistent through Michigan’s unpredictable seasons. The club’s indoor track, weight room, pool, and training spaces have all played a role in his preparation.

“I would be lost without the indoor track in the winter,” Huffman said with a laugh. “When the weather is cold or wet, it keeps me moving.”

For Huffman, having a reliable place to train is not just convenient — it is essential. MVP Athletic Clubs has partnered with Huffman as a sponsored competitive athlete, recognizing the dedication and values he brings to the world of fitness.

After completing marathons and several obstacle course races, Huffman received an unexpected opportunity: an invitation to represent the United States at the OCR World Championships in Mammoth Lakes, California.

The course spanned nearly 10 miles of steep mountain terrain and included more than 40 obstacles. Competitors faced sandbag carries, rope climbs, monkey bars, wall scaling and relentless elevation changes.

Huffman committed himself fully to training, spending countless hours preparing both physically and mentally.

“The race was unbelievably tough,” he said. “But I pushed myself as hard as I could.”

When he crossed the finish line, Huffman exceeded his own expectations. He placed 15th in his age group and beat his goal time of under four hours by more than 40 minutes. Looking back, he credits the environment around him — built on consistency, hard work and support — for helping him rise to the challenge.

For Huffman, racing has never been only about individual success. It is also about setting an example for his family. He often includes his children in his training, teaching them the value of discipline, health, and perseverance. The lessons he has learned through competition extend far beyond the course.

“What I love most about training at MVP is that people of all ages feel welcome,” Huffman said. “There’s no judgment — just people working toward their own goals.”

That sense of community has remained a meaningful part of his journey.

Huffman continues to push himself into new territory. In December 2024, he took on the Central Florida Spartan Trifecta, competing in three events and tackling more than 20 miles of rugged swamp trails.

His progress only accelerated in 2025. Huffman achieved three double-podium weekends at Spartan events, earned a 21st-place finish at the Spartan Trifecta World Championships, and captured his first gold medal with a first-place finish at the final Spartan event of the year in Florida.

Huffman’s momentum is not slowing down. His 2026 schedule includes major international competitions, including the Spartan National Series South Tour and Northeast Tour this spring, the OCRCWC World Championships in Australia in May, and a return to the Spartan Trifecta World Championships in Sparta, Greece in October.

He also hints at additional opportunities ahead.

“Other exciting things are coming in 2026 that haven’t been announced yet,” Huffman said.

“Some of the coolest competition and my most elite invitations to compete that I’ve received yet. This next year is going to be a big one.”

Through consistency, determination, and the support of those around him, Huffman has turned obstacles into opportunities, showing that the right mindset can carry you farther than you imagined.

“The mentality is contagious,” he said. “MVP is a part of what keeps me going.”

Huffman’s journey is a reminder that fitness is not about perfection — it is about persistence. Whether training for his next world championship race or encouraging his family to stay active, he embodies what it means to keep showing up year after year.

And as his next challenges await, one thing is clear: Huffman is just getting started.

It embodies the art of comfortable luxury, carefully crafted through the progressive vision of an exceptionally talented team. Parkside Homes, LLC, Studio Chapman, and interior designer Marcy Sobczak collaborated to create a classic Texas farmhouse that radiates effortless refinement.

The Backstory Serendipity first brought Studio Chapman and Parkside Homes together when the two businesses were office suite neighbors for several years in a building renovated by Parkside Homes. Eventually, Todd Rookus of Parkside recommended architect Dru Chapman Lewis to a new client — a connection that ultimately led to this extraordinary home.

“Dru is very professional,” said Rookus. “Her strong suit is her ability to tune in, interpret, and decipher what the client really wants while painting a picture with 3D renderings of their dream.

Chapman Lewis and the homeowner immediately connected, sharing Texas roots and an appreciation for Texan architecture with Southwestern influences. After evaluating the expansive property, Chapman Lewis determined the natural ridge of the terrain offered the ideal placement for the sprawling residence.

“It’s a beautiful site,” said Dru. “The ridge is where this home wants to be. Everything in my designs starts with the setting.”

Parkside interior designer Marcy Sobczak elevated the architectural vision through thoughtful material selections and spatial layering.

“Dru’s design was exactly the right fit for this property and the client,” said Sobczak. “From the beautiful front porch with its posts and beams and the magnificent fireplace chimney to the poignantly placed windows that capture light and surrounding views, it fits the site impressively — like picture-framing a piece of art.”

The Principals — A Deeper Dive

After flipping distressed homes beginning in 2007, husband-and-wife team Todd and Molly Rookus founded Parkside Homes, LLC in 2012. Their mission was to strike a new balance between quality, design, and value within the West Michigan custom home market.

Todd and Molly are known for building meaningful client relationships and fostering collaborative job-site environments. “We want to serve our clients and be their builder for life,”said Rookus. “Building lasting relationships is one of the greatest joys of this business.

“We strive to bring our experience and knowledge to enhance the design process,” added Rookus. “Backing up great design with quality materials and craftmanship is what leaves our homes packed with value and legacy. It takes careful attention to details and teamwork.

“What we strive to do at Parkside is more of an art than a science,” continued Rookus. “There

are so many moving parts. Our goal is to create job sites that are positive, organized, and efficient, ensuring an exceptional experience for our homeowners. “

Studio Chapman was founded in 2019 by architect Dru Chapman Lewis, who specializes in highly personalized residential design, including new homes, cottages, and major renovations throughout West Michigan.

After earning a BA in architecture from Washington University in St. Louis, and a masters of architecture at the University of Wisconsin Milwaukee, Chapman Lewis was a commercial designer in Austin for 3 years before she began her residential design career in Chicago. Her relocation to Grand Rapids in 2017 gave he the opportunity to further refine both her residential and commercial design expertise.

“I came to Grand Rapids to carve out my own niche,” said Chapman Lewis. “I enjoy being small because it allows me to be nimble and responsive to each client’s needs. Most of my business comes through referrals, which speaks to the importance of trust and collaboration.”

“I’ve learned it’s not about what I want,” she said. “I need to listen, collaborate, and adapt. I’m always available to be on-site — it’s something I truly enjoy. I have great respect for Todd and Parkside Homes. I hand off the plans, and Parkside runs with them beautifully.”

Vision Mirroring Philosophy

Authenticity guided the design, beginning with the home’s signature Texas farmhouse elements. A welcoming, covered front porch with southeastern exposure encourages outdoor connectivity and provides direct access to the main home and guest suite.

Because the homeowner enjoys entertaining extended visits from friends and family, the interior was designed to feel spacious yet comfortable, with multiple bedroom suites and expansive gathering areas.

“My design vision for this home was a transitional, cozy aesthetic,” said Sobczak. “I wanted it to be a thoughtful, inviting atmosphere, creating a sense of belonging. One that would welcome guests and make them feel like they were at home. Entertaining and hospitality were top priorities.”

Natural materials reinforce the architectural vernacular, including Douglas fir beamwork and

rough-hewn stone masonry. The semi-coursed squared rubble stone reinforces structural authenticity and organic warmth.

“I’m adamant about using stone that feels loadbearing, not decorative,” said Chapman Lewis. “I’m a stickler for that.”

The dramatic tapering front exterior stone chimney epitomizes her conviction. Capped authentically in a dark metal finial, it looks to support the entire harmonic facade.

With a circular drive and rear garage motorcourt muted with tasteful, minimal landscaping, the expansive home, with three prominent peaks melds into the site’s ridge with architectural neatness. Wood soffits with support bracketry accents and vertical siding and anchors the design.

“The home is stunning from the outside,” said Rookus. “The scale of the windows, front porch, stone chimney, and timber work tie together beautifully and reflect the interior design perfectly.”

Compression and Expansion

Chapman Lewis utilized architectural compression and expansion to enhance the arrival experience. Visitors enter through double four-pane glass doors into a welcoming, lower-ceiling foyer that gradually opens into the soaring great hall.

The great hall features a dramatic vaulted ceiling clad in painted shiplap tongue-andgroove, anchored by gracefully arched West Virginia timber-frame trusses. Dormer windows, dark-trimmed muntin windows, and a substantial timber fireplace mantel add symmetry, warmth, and abundant natural light.

The Nested Heart of the Home

A primary design objective was maintaining cohesion across the expansive main level. Nested spaces create intimacy within openness, allowing rooms to feel connected yet purposeful.

“There is plenty of space for large gatherings,” said Sobczak, “but the way Dru designed the niche spaces makes the home feel cozy even with just a few people present.”

The gourmet kitchen serves as the home’s central hub, featuring medium-toned flooring, a natural-wood oversized island, and seamless transitions into a fireplace living area. A dining niche sits adjacent, while a three-season room and office provide direct connectivity.

“Even though it’s a large house, circulation paths make everything feel connected,” said Chapman Lewis. “Through collaboration with the client, we created multiple spaces within the larger space — formal yet private.”

“The fireplace stone was one of our first selections,” said Sobczak. “It became a focal point inside and out. Adding the same stone to the kitchen columns was a last-minute decision that beautifully ties the spaces together.”

A fully equipped butler’s pantry enhances functionality, featuring additional appliances, storage, and direct access to the four-stall garage. All custom cabinetry throughout the home was crafted in-house by Parkside Homes’ dedicated woodworking shop.

The four-season sunroom showcases panoramic views and features five interior glass-panel pocket doors that expand into a 15-foot opening. Structural steel was incorporated to support this dramatic architectural feature.

“A simple but meaningful design moment is the office window that looks directly into the sunroom,” noted Chapman Lewis. “Opening it reinforces the concept of layered, connected spaces.”

Outdoor Living as a Natural Extension Outdoor living opportunities extend throughout the property, from the front porch to the primary suite’s private “honeymoon” balcony beneath the home’s central peak. A spacious paver patio and additional private decks allow

effortless indoor-outdoor flow from the kitchen through the sunroom and into the surrounding natural landscape.

Luxuriously Crafted for Comfortable Living

While the home emphasizes nested communal spaces, the upper-level primary suite provides a private sanctuary. Featuring a gas fireplace, rich blue accent wall, and vaulted skylit ceiling, the suite creates a relaxing retreat.

The primary bath includes a double white vanity with black hardware, suspended mirrors, horizontal window backsplash, spa-style tiled shower, soaker tub, and expansive walk-in closet.

“For the primary suite, my vision was casual, welcoming, and relaxing,” said Sobczak. “Our client travels frequently, and I wanted the space to feel like it was always welcoming them home.”

Sobczak incorporated rich textures such as Philip Jeffries Hatchwork plaster wallcovering, stacked stone fireplaces, and oak slat-panel feature walls.

“I loved adding texture to this home,” said Sobczak. “Keeping materials neutral while layering textures adds depth and storytelling throughout the design.”

Specialized storage spaces, including a dedicated holiday décor room, further tailor the home to the homeowner’s lifestyle.

The Mom Suite includes a two-sided fireplace, great room, sunroom, full kitchen, dining nook, luxury bath, walk-in closet, additional guest bedroom, and a private north-facing porch lanai.

Intergenerational Living with Future Flexibility

An interesting extension of the home is a wing beyond the mudroom and laundry area for intergenerational living, allowing additional family members to comfortably age in place. Lately, there has been a resurgence in incorporating these separate spaces into a design due to financial, caregiving and social factors. The client was adamant that the “Mom Suite” needed to be connected yet private.

Chapman Lewis’ functional, accessible design accomplishes this necessity. A mini great room with a two sided fireplace, skylights, a sunroom, a complete kitchen and dining nook provide an informal, self sufficient space. The suite’s bedroom footprint boasts a complete luxury bath with a walk-in closet and ample storage. A second guest bedroom was included, and a private, north porch lanai offers quiet respite.

Handing Over the Keys

Reflecting on the project, Chapman Lewis describes the experience as deeply meaningful.

“I don’t take a multi-year project lightly,” she said. “It was an honor to help create this client’s dream home and see our shared vision come to life.”

Sobczak echoed the sentiment.“This home was nearly two years in the making,” she said. “It was truly a labor of love. The client trusted the process and embraced creative direction, which made the collaboration incredibly rewarding.”

A New Chapter by the Lake

Set on a low bluff along Lake Michigan, this striking home was designed as a true gathering place, where family and friends come together against the backdrop of the ever-changing lake.

For years, the homeowners summered in a cottage on this property, building memories. Once their children left the nest, the couple decided it was time to make the lake their fulltime home.

Moving here year-round meant reimagining the property. Their goal: capture the view and create a home that draws people together. To bring their vision to life, they turned to Insignia Homes, who had previously built a Grand Rapids-area home for the couple. “We consider it a real privilege when we work with someone a second time,” said Dave Morren, owner of Insignia Homes.

“To keep the budget on track, we got pretty creative,” Morren said. The team used value engineering to help the homeowners decide where to scale back and invest without sacrificing design.

What they didn’t compromise on was quality, evident in the home’s detailed custom elements and layered design.

Entertaining, Elevated

That commitment to quality comes through in the custom arched wet bar alcove opposite the kitchen where Dark Galactic Black honed granite, with angular white veining and subtle golden flecks, immediately sets a mood. The antiqued mirror backsplash, polished nickel and glass shelving, and wood cabinetry with mesh-panel doors create shine and texture. A panel-ready kegerator adds a relaxed, entertaining spirit.

Interior selections were guided by designer Christine DiMaria, owner of Christine DiMaria Design, who’s worked with the homeowners for multiple residences. DiMaria credits Todd Wiley of TruKitchens with designing the bar shelving. “It’s those little details that make this home so special,” said DiMaria.

The arched wet bar alcove features Dark Galactic Black honed granite, with angular white veining and subtle golden flecks. The antiqued mirror backsplash, glass shelving, and wood cabinetry with mesh-panel doors from TruKitchens create shine and texture. A panel-ready kegerator adds a relaxed, entertaining spirit.

In the kitchen, mercury glass Bayridge pendants above the island make a statement, while the island’s granite and cabinetry tie the kitchen and bar together.

Her collaborative approach shaped the project and extended to the full team. “She has a great design sense and she’s very collaborative,” said Morren.

The Heart of the Home

The kitchen and great room form the heart of the home’s gathering space. Clear-coated pine tongue-in-groove ceilings and wide-plank Gryffin Evoke flooring bring warmth, while layered lighting and thoughtful furnishings keep the atmosphere soft and balanced.

In the kitchen, mercury glass Bayridge pendants above the island make a statement, while perimeter Lancaster cabinetry, custom painted in Benjamin Moore’s White Dove, impart calm. The Marazzi Rice Italian porcelain backsplash adds a glossy, handcrafted feel. Panel-ready antiqued glass refrigeration and the island’s granite and cabinetry tie the kitchen and bar together.

DiMaria designed the custom hood and established the stove as the kitchen’s focal point. Two smaller windows flank the hood, along with shelving beneath them, another contribution from Todd Wiley. “It’s so cottagey,” DiMaria said. “I just love it.”

The kitchen opens to a generously appointed pantry finished in the same materials, equipped with a second refrigerator, oven, and microwave.

The Social Hub

At the opposite end of the kitchen, the great room is anchored by a see-through fireplace clad in real-stone veneer and a dramatic wall of glass facing Lake Michigan. “When the fire’s on and you can see through it, it’s pretty special,” said Morren.

Tucked in the corner is a built-in banquette with a round table, designed by DiMaria. “It’s a fantastic spot for extra dining, cards, or puzzles, and it’s unique because you have the view through the see-through fireplace,” she said. “The whole design of this house started with that fireplace.”

The fireplace guided the home’s layout, including the expanded deck, wrapped in custom tempered-glass railings for unobstructed views and wind protection. “People don’t mind cozying inside by the lake, but you want plenty of space to be together outdoors.”

Throughout the home, wallpapers, fabrics, and carefully chosen finishes create visual depth and reinforce its relaxed lakeshore character. “The homeowner loves wallpaper, and there’s a lot of it in this house,” said DiMaria. “We also used a wide mix of materials and the textures work together. It’s about balance.”

That balance shaped the palette as well. “I wanted a Midwest coastal vibe,” DiMaria said. “We used

a neutral palette, with off-white and sand tones, the soft colors in nature.” Her client gravitated toward a particular shade of green and DiMaria used variations of it to tie spaces together.

Guests experience that philosophy immediately in the two-story foyer, where a chinoiserie-inspired wallpaper introduces unexpected color and movement. “My client showed it to me and it was exactly what I had in mind,” DiMaria said. “It’s a great example of how well we worked together.”

The powder room takes a quieter approach with sand-colored grasscloth, sconces, and the same honed granite used in the kitchen, pantry, and wet bar. A curved-edge mirror adds a cottage softness without feeling overly themed.

In the mudroom, botanical wallpaper in deep greens and soft whites pairs with wainscoting in Benjamin Moore’s Avon Green. Large Bestow Telares Cream porcelain tiles, laid in a herringbone pattern, visually expand the space.

Those same tiles lead into the colorful laundry room, where a glossy Sanibel White Sand Deco Caspian tile backsplash made in Spain adds artisanal character. A white ceramic utility sink and chrome faucet pop against Lancaster cabinetry stained in a vibrant green.

The primary bath includes herringbone-laid Mediterranea Touch Snow Crest tile from DeHaan Tile & Floorcovering, polished nickel Brizo Baliza fixtures and double sinks paired with circular mirrors and Rejuvenation Hood Classic globe pendants hanging above.

Private Retreat

In the primary suite, material selection continued to play an important role. “We were going one direction with color and it was going to be beautiful,” said DiMaria. “But it started to feel too warm and didn’t flow with the rest of the house.”

In the middle of the night, she reconsidered the selections. “I changed one fabric and everything fell into place,” she said. The team ultimately pivoted to a softer palette, layering neutral grasscloth with beach-glass blues and softer greens.

The suite includes a private sitting area framed by rich drapery and double doors that lead to the deck and hot tub.

In the primary bath, herringbone-laid Mediterranea Touch Snow Crest tile, polished nickel Brizo Baliza fixtures and double sinks pair with circular mirrors for a luxurious feel. Rejuvenation Hood Classic globe pendants hang above each sink, while an antiqued-mirror cabinetry tower echoes the details found elsewhere in the home.

Above It All

At the base of the staircase, a custom black buffet that DiMaria originally designed for the homeowners’ previous home found a natural place here. On it, two green lamps purchased from a Sicilian artist flank a piece of framed artwork collected in Italy, while a map of Italy at the foot of the stairs reflects the couple’s love of travel.

Custom moldings by Insignia line the staircase and continue through the second-floor hallways, adding quiet architectural character. DiMaria, who’s collaborated with Insignia for nearly two decades, speaks warmly of the builder. “I couldn’t say enough wonderful things about their team,” she said. “They’re exceptionally organized, consistently collaborative, and they executed every detail precisely.”

That craftsmanship shows in each newel post, individually built by Insignia. DiMaria paired them with iron spindles that extend along the stairway and lofted hallway above the great room. “I have never used this spindle style in a cottage before, but here it just felt right,” said DiMaria.

we bought for the first house we did together,” she said. “That piece is special because it’s worked for them in several different homes.”

Designed for the Lakeshore

White cement board on the exterior creates a crisp, classic lakeshore look while prioritizing longevity and low maintenance.

“We like cement board because it stands up to the elements,” said Morren. “It’s more costeffective than cedar, looks more authentic than

vinyl, and the white color really handles the sun and wind off the lake.”

The restrained landscaping allows the natural beauty of the lakefront to shine. Beach grasses frame the bluff, while flower boxes and seasonal plantings add pops of color near the home.

Full-time Lake Living DiMaria was intentional about selecting materials, furnishings, and details that suggest a cottage feel without becoming overly thematic. “Every ele-

ment feels cottagey on its own and works together without going overboard,” she explained.

The result is a waterfront retreat built to endure the lakeshore climate and welcome generations to come. It balances elegance with ease, offering a home where friends and family can gather, unwind, and enjoy life along Lake Michigan.
