Quick Preserved Lemons

Cooking with Chef Ramos

Ingredients

4 lemons

3 Tablespoons of fresh lemon juice

1 Tablespoon of kosher salt

3 Tablespoons of sugar

Directions

EXECUTIVE CHEF/ HAROLD RAMOS

Preserved lemons are a great addition to any culinary arsenal. Originating in Northern Africa and Morocco They are a quick way to add depth and dimension to salad dressings, marinades, stews and even potatoes. The one caveat is that preparing them the traditional way takes three to four weeks until they are ready to use. Once cured the rind can be chopped raw or used at the end of cooking. The pulp can also be used in stews and dressings. With the quick method you can achieve a similar flavor profile in just 1 day

To prepare quick preserved lemons, start by rinsing the lemons in hot water to remove any waxy coating. Dry them and cut them in half from blossom end to stem. Cut a small Vshape in the middle of each half and remove as many seeds as possible Slice the lemons thinly crosswise. Combine them with the salt sugar and lemon juice. Place into a nonreactive container. Make sure the lemons are completely submerged. A layer of plastic wrap on tap will help with this. Label and date the container and leave out at room temperature for twenty-four to forty- eight hours You can leave them out for up to ten day for even better results. Store in the refrigerator for up to two weeks.

Our facility is a Licensed Operation 36® Network Facility. We leverage the Op 36 On-Course Development Model (see below) and technology to make it fun for our golfers to improve their skills. To do this we use the Op 36 App. You will be invited to make your golfer an account in our community. Throughout the week, we will not only send communication through the app, but we also log all on-course scores of the golfers to track overtime. Any coaching program you join at our facility, we are able to track progress and give you a fun tool to guide your golf development outside of our classes.

GOLF COURSE UPDATE

drainage, oxygen exchange, and relieve compaction. The greens were verticut, mowed, then aerified, cleaned, topdressed, and sand dragged in. The approaches were mowed at a lower height, verticut, and mowed again. Thatch removal began on the tees and will be continued until completed. We received 2.2 ” rain on Wednesday but the grounds team persevered and completed our cleanup on Thursday. The golf course will recover over the next few weeks with time, irrigation, and fertilizer applications.
