Romesco sauce is a favorite condiment from Spain. Famously paired with charred and roasted leeks, it is versatile and can be used on seafood, beef or chicken. Add it to dips, soups or stews. The flavor is deep, smoky and robust. Consider adding this to your summer grilling repertoire.
1/2 cup olive oil, plus extra for coating vegetables
Heat oven to 350°. In a large bowl, toss tomatoes, bell pepper, onion & garlic with 2 tbsp. olive oil & ancho chili powder. Place vegetables in a roasting pan & roast, turning as needed, until soft, about 25-30 minutes Check garlic because it cooks faster Let cool, peel & discard vegetable skins
In a small saucepan, heat 1 tbsp. olive oil over medium heat. Add the almonds & cook, stirring, until lightly browned, about 1 minute. Using a slotted spoon, transfer the almonds to a plate & return the pan to the heat. Add bread & cook, stirring, until lightly browned, about 1-1⁄2 minutes. Using a slotted spoon, transfer bread to the plate Combine bread, almonds & roasted vegetables along with 7 tablespoons olive oil, vinegar & paprika. Blend until smooth. Season with salt.

Gold Tee Flights, Two Person Best Ball Two player teams will play their own ball recording their gross score The lowest score of the two-person team will count for the hole over 36 holes
Blue Tee Flights, Round 1, Shamble/Best Ball. Players will tee off selecting the best drive. Players will play from this point selecting the best score gross/net for Round 1. Round 2, Best Ball. Players will play their own ball recording their best gross/net score per hole.

Corpus Christi Country Club Members, Guests, Professionals and College Players. High School players or younger with High School eligibility are not eligible to play. Teams can be Member/Member, Member/Guest or Guest/Guest. One Professional or one College Player per team, not both.
Gold Tee Flight/Best Ball or Blue Tee Flight with Shamble Day 1/Best Ball Day 2 Gold/Blue Flighting will be determined by the low handicap index of the two person team Gold Tee Flight(s) will be gross only Blue Tee Flights will be gross/with at least one flight net. Professionals and College Players will participate in the Championship Flight.

Age 70 and over can move up one tee from the flight they are in. Example: If your age is 70 or over, you can move up one tee. If you are in a Gold Tee flight, you can move to Blue Tees. If you are in a Blue Tee flight you can move to the White Tees

Amateurs will receive pro shop credit based on the number of entries. Pro receive cash.
