We’re happy to share this week’s club newsletter with you a day early! With the Burke Cup coming up, we wanted to get all the details to you right away. Not playing in the Burke Cup? No problem you can still join us for the Burke Bash for just $125 per member. That includes a delicious dinner, open bar, and a fantastic live band!

Starting next week, the pool will be open on weekends! Be sure to check the pool section for Friday and Saturday hours. We’re also hosting a delightful Mother’s Day Brunch next Sunday, May 11. And don’t forget our next Members-Only Happy Hour is Friday, May 16.

May is full of exciting events, and we can’t wait to see you at the club!

Corpus Christi Country Club Golf Course has been ranked #46 on the Dallas Morning News!

I am excited to announce that the Corpus Christi Country Club Golf Course has been ranked #46 on the Dallas Morning News list of Top 100 Golf Courses in Texas! This outstanding achievement wouldn’t be possible without the membership’s commitment to improving the golf course with the renovation in 2022. Also, the leadership of our Golf Course Superintendent, Seth Smith, and the unwavering dedication of our grounds crew in conjunction with our partnership with golf course architect Chet Williams. Seth and his team’s attention to detail, and commitment to excellence keep our course in championship condition year-round and this recognition is a true testament to their efforts.

We’re incredibly proud of this honor. This is a testament to what our golf course is and what we can continue to make it in the future.

Cooking with Chef Ramos

Ingredients

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups whole milk

Kosher salt and freshly ground black pepper

Directions

EXECUTIVE CHEF/ HAROLD RAMOS

In a small saucepan, melt butter over medium-high heat Once the butter stops bubbling whisk in the four to form a paste. Continue to cook, stirring, until raw flour scent is gone, about 1 minute. Whisking constantly, add milk in a thin, steady stream, whisking thoroughly and getting into all corners of the pan to maintain a smooth texture. Sauce will initially become very thick, then get very thin once all the milk is added Heat, stirring, until sauce comes to a simmer and begins to thicken slightly. Reduce heat to low and cook, stirring, until sauce is thick enough to coat the back of a wooden spoon, about 3- 5 minutes. Remove from the heat and cool or use it in another recipe. Once cooled, the sauce can be stored for several days under refrigeration

Our facility is a Licensed Operation 36® Network Facility. We leverage the Op 36 On-Course Development Model (see below) and technology to make it fun for our golfers to improve their skills. To do this we use the Op 36 App. You will be invited to make your golfer an account in our community. Throughout the week, we will not only send communication through the app, but we also log all on-course scores of the golfers to track overtime. Any coaching program you join at our facility, we are able to track progress and give you a fun tool to guide your golf development outside of our classes.
