It has been a great week at the club. The fence along Saratoga is completed, and Seth and his crew have done a beatification project around the driving range clock. We have a very busy month coming up from Easter weekend, starting with Good Friday on the 18th to the Los Donas luncheon and Kings Ball on the 25th. A great start to Spring.

3# Yukon gold potatoes, peeled and left whole
1/3 cup heavy cream
6 tablespoons melted butter(unsalted)
1 large egg plus 2 yolks, lightly beaten
Salt and pepper to taste

Pre heat the oven to 450F. In a medium pot on the stove, add in the potatoes and cover them with cold water. Season the water liberally with salt. Place on high heat and bring to a boil. Reduce the heat and simmer the potatoes for about 20 minutes or until the potatoes are easily pierced with a knife.
Drain the potatoes and place them on a tray Dry them in the oven for 2-3 minutes to remove moisture Remove the potatoes and then pass them through a ricer or a food mill into a bowl Stir in the butter and incorporate fully. Add in the cream and season with salt and pepper. Finally, add in the egg mixture and fold in to incorporate
Transfer potato mixture to a pastry bag fitted with a 1/2-inch star tip On a greased sheet tray pipe the potatoes. To pipe the potatoes, hold the filled pastry bag at an 80° angle, apply steady downward pressure, and pipe a 3-inch-wide mound, working in a circular motion To stop piping, cease applying pressure and swirl the pastry tip away. Continue to pipe portions about 2 inches apart, for a total of 12 portions.
Transfer to oven and bake until golden brown, 15 to 20 minutes Serve immediately

Our facility is a Licensed Operation 36® Network Facility. We leverage the Op 36 On-Course Development Model (see below) and technology to make it fun for our golfers to improve their skills. To do this we use the Op 36 App. You will be invited to make your golfer an account in our community. Throughout the week, we will not only send communication through the app, but we also log all on-course scores of the golfers to track overtime. Any coaching program you join at our facility, we are able to track progress and give you a fun tool to guide your golf development outside of our classes.
