2 serrano chilies thinly sliced, with seeds removed
1 red bell pepper, cut into ½inch pieces
1 celery rib, sliced or julienned
1 carrot, sliced or julienned
1 small head cauliflower, cut into small florets
¼ cup salt
1 cloves garlic, slivered
Directions
1 teaspoon dried oregano
½ teaspoon red pepper flakes
¼ teaspoon celery seeds
½ teaspoon crushed black peppercorns
½ cup white vinegar
¼ cup olive oil (not extra virgin)
¼ cup vegetable oil
EXECUTIVE
In a large bowl, using your hands, mix the vegetables and salt until well combined Cover the vegetables with water Cover the bowl and allow the mixture to sit, unrefrigerated, for 8 to 12 hours Drain the vegetables and rinse thoroughly Sterilize a quart-size glass jar with lid, in the dishwasher or by submerging it in boiling water for 10 minutes
In a bowl, combine the garlic and all the herbs and spices; add the vinegar and oil and whisk well to emulsify the dressing. Pour the dressing into the jar. Pack the vegetables into the jar. If vegetables are not completely coated, make and add more dressing. Screw lid onto jar and refrigerate. Allow the mixture to mellow for a couple of days before serving.

GET TO KNOW ME!
Tell us a little about your background where you grew up, and how you got into golf? I was born in California but consider Colorado my home as I have spent most of my life on the Western Slope of Colorado. As a kid, I played baseball, basketball, and football. Once I entered high school, I continued to play baseball for all 4 years but dropped competitive basketball and football. My sophomore year, my dad got me into golf, and I never looked back.
How long have you been a PGA Professional, and what was your experience like working in Colorado?
Once I graduated High School, I began working at a local golf course and since have worked my way up the ladder as I was the Head Golf Professional for the last 5 years at a Bridges Golf & Country Club in Montrose, Colorado I have been a Class A PGA Member since 2010. Moving to Corpus Christi will be a big change for me as I love Colorado and still have family and friends there. However, I am very excited to start this new chapter in my life. What drew you to Corpus Christi Country Club, and what are you most excited about in your new role? What drew me to Corpus Christi? Back in October of 2024, I knew I was going to be leaving my current position at the end of the year. I happened to be on the PGA website and saw CCCC was hiring a first assistant. I read the job description, did a little research on the club. I had just been in Rockport a couple of weeks prior, visiting friends and really liked the area. I applied with very little expectations of hearing anything back from Brent. Then, he reached out and the rest is history I am very excited to bring my experience and knowledge to CCCC and hopefully learn a few things as well.
Outside of golf, what are some of your hobbies or favorite things to do?
When I am not at work, I am most likely taking my dog on walks. I obviously love to play golf and be outdoors as much as possible Camping, fishing, skiing, and playing tennis are a few of my other hobbies.

This is why our facility is excited to be a licensed Operation 36® facility. We leverage the Op 36 On-Course Format (see below) and technology to make it fun for our golfers to improve their skills.
Mastering the Operation 36 Model:
Golfers Play 9 Holes From Level 1 (25 Yards)
Instead of starting at the full tee box, all golfers begin in Level 1 and will play 9 holes starting 25 yards from each green.
Shoot par (36) or better to pass Level
If they shoot par (36) or better, the golfer progresses to Level 2, where they start 50 yards from each green.
Complete the Level 10 challenge
This challenge continues until the golfer can shoot par (36) from all 10 levels!

WEEKLY GROUNDS UPDATE
The grounds team has been installing drainage this week to improve water flow in some key areas. We installed a drain basin in #18 fairway, #16 fairway, and added more pipe in the creek to the right of #7 green/in front of #3 blue tee. We also removed the oak tree near #1 gold tee box. The tree was removed for a number of reasons: the leaning nature of the tree with the exposed root ball posing a safety hazard; the exposed root ball and leaning tree trunk did not provide an aesthetically pleasing landscape near #1 tee box and the practice area; the turf under the tree and on the back of the gold tee is thin to non-existent, promoting constant weed growth; and the tree canopy was encroaching and inhibiting growth from the nicer tree nearer the putting green
