Members: Hope everyone had a great Christmas! It was wonderful seeing everyone at our Christmas events, certainly a highlight of our year. As we enter the new year, remember the Club will be closed Tuesday, January 6 through Friday, January 9, for our annual deep cleaning. We reopen on Saturday, January 10.

Junior Ages 18-34 years. Legacy A member’s child with direct lineage or legal guardianship (son/daughter, grandson/granddaughter) may be offered a Legacy Incentive of 20% off the initiation fee of an individual membership. Parents must have 5 years or more tenure with the Corpus Christi Country Club.

Cooking With Chef Ramos
Sauce Dijonnaise Yields 1 pint 1 tbsp.Italian parsley, chopped 1 shallot, minced 3 cloves garlic, minced 2 tbsp. unsalted butter, 2 tbsp. extra virgin olive oil ½ cup dry white wine 1 cup chicken stock
3 tbsp. Dijon mustard ½ cup heavy whipping cream ½ tsp. dried tarragon ½ tsp. dried thyme ½ tsp. kosher salt ½ tsp. ground white pepper
In a saucepot over medium-high heat add extra virgin olive oil & butter. Melt until foamy. Add chopped shallots & sauté until softened & translucent (about 2 minutes ... do not brown). Add minced garlic & sauté for 15 to 30 seconds until fragrant. Deglaze with white wine & reduce by half. Add chicken stock, raise heat to medium-high & bring to a boil, reducing stock by half. Reduce heat to medium, add heavy cream. Cook until the sauce has thickened slightly (about 3-5 minutes). Whisk in Dijon mustard. Add dried tarragon, dried thyme, salt & ground white pepper to taste. Sauce should coat the back of a spoon.

Golf Course UpdatE
SETH SMITH/ GROUNDS SUPERINTENDENT A new decomposed granite extension path was installed near the putting green. This will allow easier travel as carts pass through and provide a nice staging area for golf carts during large events. We have been patching a handful of low-lying areas on greens that were slow to recover from the summer. Additional holes have been drilled for extra drainage.
