Yields about 1 pint
1-1/2 pounds tomatoes, cored & chopped
1 cup granulated sugar
1/8 cup sherry vinegar
1/2 tsp. ginger powder
1/2 tsp. smoked paprika
1 tsp. red pepper flake
1/2 tsp. salt
1/2 tsp. cinnamon
1/8 tsp. cumin
Combine tomatoes, sugar, lemon juice, ginger, red pepper flakes, salt, cinnamon & cumin in a large, heavy-bottomed pot & bring to a boil over medium-high heat, stirring frequently. Reduce heat & simmer until mixture reaches a thick, jam-like consistency, about 2-1/2 hours.
