arpet-smooth, lush zoysia fairways and slick, immaculate bent grass greens greeted the full field of 60 teams this weekend at the Seventh Annual C-Star Member-Guest at Cordillera Ranch. In its brief history, the C-Star has already earned the reputation as the best MemberGuest golf tournament around. To say it is fun is like saying that Cordillera Ranch’s own Brooks Kieschnick slightly enjoys dancing to 80’s hair bands. The C-Star is a perfect mix of pure entertainment, somewhatcompetitive golf and a great group of members and guests slugging it out in five 9-hole matches and then the infamous Shootout with all the flight winners. Contrary to what some might be thinking, this is not an attempt to spotlight the near miss at the event by my guest, Michael Sedlak, and me – we are completely over that devastating defeat… almost (thanks again Larry and Drew Smith). No, this is more of an opportunity to say thanks to the entire Clubs staff who work so hard leading up to and during the C-Star to make this a first class event for everyone. It’s not just about this event either; I want to say thank you to the entire team’s efforts throughout 2012. We’re proud to boast one of the best – if not the best – team of club management and employee partners in the private club industry. It would be unfair to even attempt to recognize a few of the names that make the Clubs of Cordillera Ranch experience first class because I will leave too many people off the list – so thank you to all of our dedicated team. However, I would like to highlight the fourteen Clubs employees who have been with us the longest, all at least five years of tenure by year-end: Jonathan Stevens, Gevin Allen, Jack Haby, Angela Jenkins, Ernesto Fernandez, Alfredo Polanco-Revolorio, Marc Dewall, Jesus Lares, Rich Braune, Dustin Costello, Shane Reynolds, Dawn Hale, Nicole Chapman, and Glenn Barton. Golf GOLF
Cordillera Ranch has been recognized as one of the very best golf courses in the state of Texas since it opened in 2006. Now, some of the best amateur players in the state are going to see why. The Texas Golf Association has selected Cordillera Ranch to host the Texas State Mid-Amateur Championship in 2013 and the State Four-Ball Championship in 2016. These two events are majors on the TGA calendar and give us a chance to continue to expose our Jack Nicklaus Signature Course to some of the best amateur players in the state. Both events present the right demographic of players that will be competing, many of who have not played here before. The Mid-Am will take place September 18-21, 2013 while the Four-Ball will be held May 12-15, 2016. Our Club will join a list of some of the state’s top clubs to recently host these championships. The TGA has long been considered a leader in championship administration and conducts some of the nation’s oldest and most prestigious competitions. More details will be coming soon as we move forward but we are excited about the opportunity to continue promoting amateur golf in Texas as well as expanding the Club’s history and tradition of being good stewards of the game. Please stop by the Golf Shop to learn more about these great events. We still have a few great events left on the calendar as we move toward the Holiday Season. On Sunday, November 4 we will be hosting the Couples Invitational. This event is a great way to showcase the Club and community to some good friends. Members invite a guest couple to play golf and Chef Brad has a wonderful dinner planned for participants following play. The MGA Turkey Shoot Scramble is set for Saturday, November 17 so get your team together and sign-up in the Golf Shop. The Golf and Trading Shop is stocked with some great merchandise this Fall and is ready for all of your Holiday shopping needs. RESULTS
The 7th Annual C-Star Member-Guest was held October 18-20 and once again was the highlight event on the golf calendar. A full field of 60 teams competed over three great days on the Cordillera Ranch Jack Nicklaus Signature Golf Course. The format this year once again had teams playing five 9-hole matches against other teams in their flight. All of the flight winners then competed in the LoneStar Shoot-Out to determine the winners of the event. The format has been well received by participants as it gives everyone a chance to play with numerous different people during the course of the competition. Highlighting the Players Pool party on the first evening was a Jack Nicklaus themed putting contest showcasing some of Jack’s

greatest holes from his Signature Golf Courses from around the world. A Game Box truck was also on hand that had participants enjoying in some friendly competition. Forecaddies were introduced to the tournament this year and placed with each group. This added to the overall experience of the event as well as helping to improve the pace of play. Larry Smith and his guest Drew Smith from Boerne were crowned the Grand Champions of the 2012 C-Star MemberGuest when they defeated Charlie Hill and his partner Michael Sedlak on the last hole of the Shoot-Out. The Lob Shot By Marc DeWall
There are a few basic fundamentals for the Lob Shot that start with the address position. If you can get yourself in a good position to start before trying to execute this shot you will have a much better chance to succeed. Here are the important things to remember: • Slightly open clubface position. • Ball position more forward in stance. • Slightly wider stance that is open to the target. • Hands even with the ball. • Clubface passes the hands during the swing. TIPSANDTRICKS PLAYING THE COURSE Hole 15 599 yards Par 5 Hndcp. 4
This month we have our fourth installment in a series of articles describing course strategy for some of the best holes at Cordillera Ranch. Hole #15 is one of the most beautiful holes on the golf course and considered to be one of the really good birdie opportunities on the course as it can sometimes be reached in two with the right wind conditions. Six-time Senior Club Champion Jarratt Jones gives a few tips on how to best conquer this hole: Hole fifteen starts a very challenging stretch of 4 finishing holes. The tee shot should be struck down the right edge with a little draw as the fairway slopes slightly right to left. This hole can be reached in two with a longer tee-shot and has little trouble to prevent you from trying. If you have 270 or less, take your second shot at the greenside bunker on the right. Prevailing wind and slope will bring it back to the green and the ball will run out. Do not go directly at the pin as there is a swale in front that will direct your shot below the green to the left. The trouble spot is the deep bunker on the left-hand side of the green. The best layup option leaves you short and left of the 3 cross bunkers. This green is deceptively quick from front to back with the back left hole locations being the most difficult. Par is always a good score but this is an excellent birdie opportunity.

Nick and Mary Denise Verses both work from home as executives with IBM, the same company they have both worked for their entire careers. Their career paths, while different, have kept them both hand in hand for over 28 years, and have taken them all the way around the world and ultimately to Cordillera Ranch. Mary Denise begins, “I almost went to law school. I was attending Boston College as a Marketing major with a minor in Finance, and the head of Boston College Law School told me I had talent in law and that I should look into it. But IBM offered me a job upon graduation, and I took it because it had an immediate return.” Nick, on the other hand, relentlessly pursued IBM. “My plan coming out of high school was just to get to college, and I was able to attend Villanova. I got into the business school and while I was taking classes, I became fascinated with IBM. I pursued them relentlessly. I interviewed with them multiple times, and they turned me down multiple times. I even found myself working as a security guard while interviewing. One day I got two letters from IBM: one told me ‘Thanks but no thanks’ and one said ‘Please come back for a second interview.’ Shortly thereafter, I was hard at work at IBM.” And while they were both at IBM, it didn’t take long for Mary Denise to catch Nick’s eye. “It was a summer day, and we had done a sales call together and I asked Mary if she wanted to go for ice cream. We were sitting there just enjoying the sunshine, and she laughed at one of my jokes. I thought to myself, ‘Boy Nick, you’re pretty funny.’ However, I then looked down and noticed that my ice cream cone was broken and was dripping all over me, and that’s what she was laughing at. It was an inauspicious start, but we really liked one another.” Mary Denise adds, “He was so meticulous, and it was just funny to watch him with the ice cream dripping everywhere. I was attracted to Nick from the beginning. He was the young hip guy in the office. I think the first few months I called him ‘Rick’ and he never corrected me. Anybody who knows him knows that he’s full of charm, and he was always so kind and helpful to everyone in our group. Guys my friends were dating were never like that, but Nick was just so giving.” So within a few months of them both starting at IBM, their courtship began. However, IBM made a point to always remind their employees to not date within the company, so Mary Denise and Nick initially tried to keep their relationship quiet. “We thought nobody knew, but I suppose it was quite obvious,” Nick states. “We tried to keep it a secret for over a year. We would go separately to functions, and people began picking on me because I never had a date! After a year or so, we let everyone in on our secret. And as soon as IBM found out about it, they separated us.” Mary Denise had a commercial sales territory in New York City, and Nick was moved into educational sales. And there they enjoyed successful sales careers, all the while still dating. Nick
adds, “Six years we dated. And we both knew that we had a cultural difference. She’s Irish Catholic and I’m Greek Orthodox. It wasn’t that our parents didn’t like the other one, the question was whether they thought we were right for each other. My family was cool with us dating, and they really liked Mary Denise, but they did want me to marry a Greek.” And as they both sensed some amount of pressure from their families, change entered their lives. Mary Denise explains, “I got a promotion to move to Atlanta. I said to Nick, I’m moving to Atlanta and this is probably the right time for us to break up. I guess we’ll see where this goes.” Nick continues, “I’m left in New York, and two months after Mary Denise left a new job came my way that just so happened to be based in Atlanta. It took us a while, but we finally began to realize that while our families were important, what we felt between us is the most important thing. Distance makes the heart grow fonder, but also the distance from our families was good. It got us out and we were on our own, and created our own social circles and were really able to grow as a couple.” Mary Denise and Nick grew so much as a couple that Nick decided it was time for them to marry. “I ended up calling her sister, and I planned this great event to propose to her. I talked to her Mom and she was excited, and we were going to go to the lighthouse at Marblehead in Massachusetts. We were going to go on a picnic and we had some wine, and there’s this great spot overlooking the harbor where the views are beautiful and I had it all planned out. I had rented a plane with a banner that said ‘MD – will you marry me?’ and was so very, very nervous. I heard the prop plane, and Mary was talking to me, and I’m hoping she’ll notice this banner. I had the ring in my hand, kind of hidden beside my leg, and she looked at the plane and just said ‘Oh, that’s so sweet.’ And then she kept drinking her wine and talking with me. And each time the plane circled she glanced up at it, and I think it was the third or fourth time around that she finally exclaimed ‘Oh my gosh, that’s for me!’ And luckily, she accepted.” Shortly after their marriage, the Verses welcomed Jason in 1988, and then Liam came along in 1999. As for why the long break between siblings, Mary Denise explains, “My mom had 6 kids, and her last at 40. I had Liam at 43. She always told me that he will always keep you young. They have been a real blessing to us. Jason is fulfilling his dream by living and working in New York City as a management consultant and Liam is thriving in Texas attending BMSS.” And as their children grew, so did their careers. Nick explains, “We were opening some retail stores, and Mary’s job was to retrofit these stores. I was a field industry representative, which means I would come in and help close deals with educational software, and so this meant that we were both on the road a lot.” And while they traveled, they also grew as professionals. As is sure to be a rarity, IBM grew with them and worked to ensure that their careers took them in similar directions. Mary

Denise continues, “Nick and I were able to keep parallel careers. When one of us was promoted, they would work to find something for the other to assist with the transition. IBM would always make an effort to help both of us. We were blessed that there was always something available for us when we moved.”

She explains, “I left IBM in 2000. I wanted to go out on my own and do something else.

Mary Denise sums it up with, “The Cordillera Ranch move was the first move we ever did that was not an IBM move. That says a lot. This move was different for us; we could go anywhere in the world, and we chose Cordillera. For us to have chosen this place and started over from scratch socially just says volumes about it, and about how happy we are here.” Nick adds, “Every year we write down our goals and objectives for that year, and we can look back on those goals and dreams that we both wrote out and realize that they have come true for us. And that’s a beautiful thing.”

Nick is now the Vice President for Channel Management and Strategy for North America and Mary Denise is the Channel Account Manager for the IBM Software Group, and both proclaim to now have the

HOW LONG HAVE YOU BEEN WITH CORDILLERA RANCH? 5 weeks WHAT IS YOUR FAVORITE ASPECT OF WORKING IN THE HILL COUNTRY? I was pleasantly surprised by how beautiful the Hill Country really is. I love the flora and fauna and I see deer often. I have seen numerous birds (I am a bit of a birder) and a porcupine and a roadrunner running down the cart path. HOW DID YOU GET STARTED IN THE FOOD INDUSTRY AND WHAT MADE YOU WANT TO BECOME A CHEF? I was a pre-journalism major at the University of Missouri and in my second year I started working as a cook in a local restaurant. The next year I worked again as a cook and fell in love with it. However, I couldn’t decide which career to choose. I went to the library and looked at the US Bureau of Labor Statistics 20-year job outlook for careers in journalism and chefs. Chefs would be in demand so I made my choice. WHAT HAS BEEN YOUR GREATEST CHALLENGE WORKING IN THE FOOD INDUSTRY? The biggest challenge has been finding qualified employees. Cooks must be willing to work very hard for little pay until they advance. Even when they advance to a sous chef position they are looking forward to 60, 70 or even 80 hours of hot, stressful hours on their feet a week. WHAT HAS BEEN YOUR MOST REWARDING EXPERIENCE WORKING IN THE FOOD INDUSTRY? At this point in my career mentoring has been the most rewarding. It feels great to work with a young kid and watch him

grow. I am proud to say I have mentored four cooks; I trained them to become sous chefs and now they are executive chefs at various properties. FAVORITE ASPECT WORKING AT CORDILLERA RANCH? Cordillera Ranch is a fantastic club. The best part is the people. The members have been very positive and accommodating. The staff, from the front of the house to the kitchen to the outside, has all been great. WHAT IS YOUR FAVORITE CUISINE TO COOK? I like to cook many cuisines. I started with classic French then expanded to many others. I enjoy “slow food” - three day marinades, slow smoking, roasting, playing with different brines, braising. All of these things can’t be rushed, take true love, and in the end the results are more satisfying than a ½ hour dinner. WHAT IS YOUR FAVORITE FOOD? Thai: Pad Kee Mao, wide rice noodles, soy, beef, tomatoes, chiles, basil-fantastic Indian: Lamb Vindaloo – a rich spicy stew with Naan bread to cut the heat Chinese: Peking duck with scallion pancakes Mexican: Chiles en nogata. club. I love to read, mostly nonfiction and military history. I am also an Eagle Boy Scout and love to hike and camp. But most of all I like to travel. I have been to Mexico many times, Belize, Honduras, Thailand, Hong Kong, Indonesia, and Bali. I am a certified diver and used to dive quite a bit in Cozumel, Bahamas (shark dives) and Turks and Caicos. Now that I am getting older, Europe will be next. ANY ADVICE YOU WOULD GIVE TO SOMEONE WANTING TO BE A PROFESSIONAL CHEF? Be very, very careful. Most young people don’t have a full understanding of what it takes to be a chef. Long hours can disrupt family life (you work most holidays) and it can be physically demanding. I feel bad for some of these kids who watch the food network and decide to be a Chef. They spend a fortune on tuition, and don’t understand you have to start at the bottom. They may start at $9.00/hr and decide they don’t like it and will be paying off their loans for years. (I have a problem with some of these culinary arts schools advertised on TV with the insinuation you will graduate and be an instant Chef.) When I was growing up in the 80s it was a lot easier to find good jobs - Chefs were not celebrities yet, demand for Chefs was high, and the market was good. Today there are more Chefs than jobs. Advice if you decide to pursue it? Study hard, it is not just the schooling, it’s on you. Apply yourself, research, work for free, and find a great mentor. It’s all up to you!

WATER SUSTAINABILITY AT THE HEART OF
CORDILLERA RANCH By Charlie Hill
There is one single common resource that all life depends on: water. In the Texas Hill Country everyone knows that water is precious and scarce and the recent drought only heightened our awareness of this simple fact. The majority of rural areas of the Hill Country depend solely on groundwater supplies (wells) and groundwater supplies in this area are projected to limit future growth in the Hill Country. Understanding these water sustainability constraints, best water management practices have been at the core of nearly every planning decision at Cordillera Ranch since inception. It’s been understood even since the mid-1990s, when the first phase was in planning, that being good stewards of the land and using the best water management practices are critically important

to the long-term viability of this development. There is a delicate balance between water management and development, and a project with this length of time horizon entails major long-range water source planning and strategic decisions to help make Cordillera Ranch as water-resource friendly as possible. This article hopefully gives some insight into the wide variety of measures that have been taken by Cordillera Ranch to help offer the best lifestyle in the Texas Hill Country with the least impact on water resources. Residential Landscaping Practices The highest intensity use of domestic water is landscape irrigation and for that reason we restrict homes to only a very small amount of irrigated landscaping around the building footprint (two additional benefits of this practice are a more
aesthetically appealing landscape and lower landscape maintenance costs). Many neighborhoods allow you to landscape as much as you want which can lead to people irrigating double or triple the amount of land that is necessary to provide a nice refined lawn immediately around the house. That alone on a community of this size could save tens of millions of gallons of water a year at full build-out. In addition to restricting the amount of area homeowners can irrigate, the list of plants and grasses allowed in Cordillera Ranch was carefully chosen while keeping water use needs for each in mind. Native plants and grasses that tolerate the arid – and more recently drought – climate of the Hill Country make up the core of the plants required at Cordillera Ranch. Among other design criteria that are part of the Best Water Management Practices at Cordillera Ranch are: 1) requirements that irrigation systems are equipped with rain sensors, 2) restrictions on the type of irrigation heads so that water evaporation is minimized, 3) requirements for 4”
minimum soil depth for any turf grasses (to better hold water and thus reduce irrigation needs) and 4) encouraging the use of drip irrigation instead of spray. Land Planning Even when we were developing lots supplied by wells in the early years, units were actually developed at a much lower density than what was required by Kendall County in an effort to minimize impact to groundwater resources and preserve the character of the ranch. In fact, the first
3,600 acres of the community – where lots are served by wells – are at a density that is 60% less than what Cordillera Ranch could develop under Kendall County regulations. This conservation approach saves an estimated 145 million gallons of groundwater per year over the Cordillera Ranch area of the Trinity Aquifer. Also, the low density development plan for Cordillera Ranch will leave over 70% of the ranch in its native undisturbed vegetation which significantly limits impervious cover thus allowing for better recharge of the aquifer in rainfall events. Transition from Groundwater to Surface Water In 2003, Cordillera Ranch secured an agreement with GBRA as part of the GBRA Western Canyon Pipeline to serve the remaining development in the Ranch with
surface water supplied from Canyon Lake (thus new lots are not served by wells). From 2005-2007, Cordillera Ranch built a water storage facility off Joe Klar Road and a central water distribution system for the Clubs Village and Units 104 (and beyond) stretching for miles across the community. By switching to GBRA surface water and not using groundwater wells the impact on the aquifer is being minimized. Overall the number of wells on the 8,700 acres of Cordillera Ranch will be over 75% less than what would be allowed if we had not brought in GBRA Canyon Lake water – that amounts to over 400 million gallons of well water annually that will not be drawn from the Trinity Aquifer because of the use of GBRA water. That significantly improves the viability of the well water for those that are on wells in Cordillera Ranch and the surrounding area. Best Agronomic Practices for Golf Course In the early 2000s as preparations were being made to develop the Clubs of Cordillera Ranch and the Jack Nicklaus Signature Golf Course, long-range water planning was at the forefront of discussion. Local historical rainfall records were used to analyze what we could expect from mother nature and calculations were made on water needs through various detailed water modeling. However, timing is everything. In the five years leading up to the golf course construction average annual rainfall in Cordillera Ranch was 48 inches per year. In the years since we have averaged 37% less annual rainfall (30 inches) and if you throw out the 61 inches from 2007, we have averaged 25 inches per year. Needless to say, nobody could have predicted a drier seven years immediately after developing a new golf course. However, the water modeling and planning implemented in the golf course development have proven worthwhile and allowed for incredible golf course conditions in the face of such a severe and prolonged drought – basically our planning has definitely been put to the test. A few of the ways in which Cordillera Ranch’s investment in design and operation methods help minimize water needs for the golf course and diversify water resources while maintaining top quality turf: • River water rights were secured and an intricate pipeline system from the river to the golf course was installed.
• A cutting-edge water recycling center was developed so treated effluent can be recycled and used for irrigation. At full build-out of the community, this will be the primary source of irrigation water for the golf course. • An advanced irrigation system was developed to allow for individual irrigation head control (i.e. a single irrigation head may be adjusted for wet or dry area). • Advanced on-site weather station allows irrigation system to water to evapotransipiration (Et), i.e. the amount of moisture lost to temperature, humidity, wind, etc. This allows us to water exactly what is needed and not waste and alarms can be set to start, stop, and pause an irrigation cycle. • Diverse mix of water resources so that one single source isn’t overly strained: river water, four storage ponds of approximately 20+ million gallons of storage, recycled water, and Canyon Lake water. • Zoysia grass was used in the fairways which is drought-tolerant and requires less water than typical Bermuda grasses. • Best Agronomics Practices (BAP) are utilized to promote healthy turfgrass and deep root systems in all grasses which includes deep and infrequent water practices among other methods. • Use of wetting agents from tee-to green to make watering more efficient. • Plant growth regulators are used from tee-to-green allowing plant to store energy for stressful times (i.e. drought) instead of top growth. This promotes a stronger root system which minimizes water quantity needs. • Hand water with hose-end nozzles are utilized during hot summer months on isolated areas. Developing with sustainability in mind is essential for any development and particularly for large communities like Cordillera Ranch. There is not a single “silver bullet” to solve the water sustainability issues in developing a community, but combining the methods we employ in planning, design and operation at Cordillera Ranch drastically reduce the impact on groundwater resources in Cordillera Ranch. Of course, when all else fails, we simply resort to heavy use of native tribal rain dances!

DICKENS ON MAIN Main Street Boerne receives a holiday makeover as all the lamp posts are decorated with wreaths and banners, streets are shut down to all but pedestrians and the occasional horse-drawn carriage. Attendees are taken back in time to the 19th century when Boerne was originally settled as they stroll down Main Street taking in the holiday sights and sounds. Everyone gets into the act as carolers serenade passers-by and shop owners dress in Victorian-era garb. Come enjoy the crisp winter air, pick up your Christmas presents and stay to enjoy the parade. NIKOLAUSMARKT IN FREDERICKSBURG During the Holiday Season, Fredericksburg is home to St. Nikolausmarkt in Fredericksburg in celebration of Weihnachten or the German observance of Christmas. Come enjoy the Christmas market and festival complete with a Christmas parade, Christmas Tree Forest, live entertainment and traditional German food and other delicious refreshments. FIESTAS NAVIDEÑAS Y FIESTA DE LAS LUMINARIAS Christmas season in San Antonio has a Mexican flair. Festivals include the four-day Fiestas Navideñas in Market Square and Las Posadas, a reenactment of the Holy Family’s search for an inn during which children go door-to-door seeking shelter. The most spectacular holiday event is the river parade and lighting ceremony known as the Fiesta de las Luminarias. This event celebrates the illumination of over 122,000 twinkling lights suspended in the trees along world famous San Antonio River Walk. Meandering through the city’s center, the Riverwalk is transformed by thousands of decorative lights. Fiestas Navideñas and Fiesta de las Luminarias take place during weekends in December. WEIHNACHTSMARKT IN NEW BRAUNFELS Christmas in New Braunsfels isn’t complete without Weihnachtsmarkt. The Christmas Market Days Festival includes a lighting ceremony, open shops and restaurants, and entertainment in the historic district. Wassailfest is an event downtown that includes wassail tastings (wassail is a hot spiced punch common in Germanic countries) and strolls through the historic downtown district. Weihnachtsmarkt takes place November 16-18.
CHRISTMAS IN COMFORT The annual Christmas in Comfort festival welcomes holiday shoppers to Comfort. The downtown historic district is blocked off to allow more than 150 vendor booths to fill the streets, as well as a food court, visit from Santa, and daylong music and entertainment culminating in a lighted parade traveling down High Street after dark. Tourists and locals alike have enjoyed Christmas in Comfort for over 20 years. Christmas in Comfort takes place November 24. JOHNSON CITY LIGHTS SPECTACULAR, HILL COUNTRY STYLE Johnson City, one of the largest Light Displays in the State, will have millions of lights. Local homes, businesses and churches add their displays to the stunning 100,000 lights on the Blanco County Courthouse. The Courthouse, the centerpiece, will be open on Saturday & Sunday nights from 6:00-9:00 pm with a tree and sales of ornaments and crafts from the Garden Club. Johnson City’s Christmas gift to you and your family will be aglow each night until midnight from November 23 through January 1. Admission to all events is free.

When kids and horses get together, the possibilities are endless. For as long as I can
remember, horses have always been a part of my life. So many of my fondest memories include my good friends and the amazing times we shared together with our horses. Four and half years ago when I had the incredible good fortune to land my dream job as the Equestrian Manager at The Clubs of Cordillera Ranch, creating a place for kids to make their own memories with horses became paramount on my agenda. Having the perfect venue for children to learn to ride and care for their horses, as well as meet and form close bonds with other horse crazy kids was only half of the equation. We had to assemble the right kind of horses.
Finding the right equine partners was no easy feat. When a student first learns to
ride, they are taught the proper cues and signals to use in order to ride effectively and safely. The horse on which the student is learning must be trained to respond to the cues and signals that are being asked in order for the rider to learn when they have done it correctly. A proper cue results in the desired reaction. So, with that in mind, the lesson horses needed to have a high degree of education and experience. They also had to be forgiving because in the beginning the incorrect cue will be used much more often than the correct one. They must be honest, and not become sour or dull to the commands of an inexperienced beginner.
Over the past 4 ½ years we at the Equestrian Center have been fortunate enough
to acquire several horses either through purchase or lease that fit our operation very well. In the beginning we chose only older, ex-show horses, both English and Western that would suit the novice riders very well. As our program grew, it became apparent that we needed to offer horses that would present a challenge to our more seasoned and experienced riders. We have recently added horses that are younger in age and greener in their education level, so our advanced students can begin learning the process of training horses. When the roles are reversed and the student begins to teach the horse, the real understanding of the entire process takes shape. They must learn how a horse thinks in order to be its teacher. They have to have a grasp of equine behavior and inherent instinct to be able to educate one properly. They also understand the time and hard work and dedication that go into making a lesson horse as reliable and safe and enjoyable as the ones they first learned to ride. Not only do our lesson horses teach the students to be effective and proficient in the saddle, they teach many other valuable life lessons as well.
From day one the kids are taught to treat each horse with respect, to be kind and
never take them for granted. They learn responsibility, not only for the horses, but for their fellow riders. They must have patience. Learning to ride takes time, and they must persevere in order to master it. They learn just how completely the horses rely on them for their most basic of needs. Even on birthdays and holidays, the horses must be fed and watered. They recognize that they have a duty to properly treat and care for the horses in exchange for the amount of joy and happiness the horses afford them. The older kids take on a nurturing and teaching role with the younger students. They learn leadership and gain confidence through mentoring the beginner students.
So many good things can come out of a child and his or her love of a horse. We
will continue to provide a fun and safe place with horses so the kids of Cordillera Ranch can form their own lifelong memories.

Taking care of the natural resources within Cordillera Ranch, which face increasing pressures and demands from a growing community, is a task that requires everyone to lend a hand at whatever level they can. This topic came to mind when I recently received a phone call from a Cordillera Ranch property owner who proceeded to tell me there was a lot of broken glass at the park on the shores of the Guadalupe River where we launch kayaks. The location is also a great place for young kids to enjoy the banks of this beautiful waterway. When I arrived, I was shocked to see approximately 12 beer bottles shattered into hundreds of pieces on the edge of the river. As I proceeded to slowly pick up all the glass, my mind drifted to wonder who might be so compelled to trash such a pristine

environment? I thought, yes, we were all teenagers at some point, but for some reason I never would have considered breaking glass next to a river. One of the best places to begin to teach kids about conservation and stewardship is right where you live. Whether it’s a 2-acre lot or a 50-acre estate, your “backyard” is an important part of a larger natural community and ecosystem. The large expanse of neatly trimmed turf that’s pleasing to some is a very inhospitable environment for wildlife, and the
practices necessary to maintain such a landscape often contribute to water quality and quantity problems. By making different landscaping choices, property owners can do their part to ensure healthier habitat and cleaner creeks and lakes. One of the great benefits of living in Cordillera Ranch is the fact that most of the property is required to remain in its natural state with native grasses that flourish in the Hill Country. Teaching stewardship, conservation and environmental ethics to children can often
be challenging. Can you teach someone how to act in the outdoors? Not really. However, you can make them aware of the consequences of their actions. You can also lead by example and show them what they can do to promote the conservation of our natural resources and the creatures that live there. Here are a few tips you may find helpful in passing on key messages of conservation and ethics to the next generation who call Cordillera Ranch home. We’ll use fishing as an example. You might begin by engaging your kids in a discussion of ethical dilemmas they may face while fishing at Swede Creek Lake or the Guadalupe River. Some of these dilemmas will include catch and release,
environmental responsibility, the use of barb-less hooks, etc. Consider presenting an issue and then give an ethical solution to that issue. A good rule of thumb is to remember that ethics are caught, not taught. So set a good example when you take youngsters or a guest fishing. Here’s a good role model activity: place a plastic bag in your pocket while fishing at Swede Creek Lake or the Guadalupe River fishing. Without saying a word, begin to walk around and pick up trash. The children and guests hopefully should start to copy your actions and eventually start helping with the clean up. Another thing you can do is practice catch and release. Explain that wetting your hands when
handling fish helps minimize the damage to the fish’s protective slime. Passing on good conservation habits and ethics can be challenging. However, the benefits to fish and wildlife are extremely important. Discussing with children and guest the consequences of incorrect actions and how those actions can hurt wildlife is a starting point. As a resident of Cordillera Ranch, you have the opportunity, one by one, child by child, guest by guest, to set an example for future generations to follow as they begin to enjoy the wonderful environment of Cordillera Ranch and the great outdoor resources on the ranch.

For many professionals, their careers and families keep them incredibly busy. So busy, in fact, that many of the day-to-day responsibilities of domestic life can fall between the cracks. Enter Tiffany Pritchard and her company, Orchestrated Living. From grocery shopping to complete finance management, Tiffany and her team are the answer to many prayers for fatigued professionals. Pritchard begins, “I had been selling luxury high rise condos in San Antonio and had also done sales and marketing for Jose Cuervo for several years, so I had a lot of international contacts. I would have a lot of these clients that would come into town and start asking questions about where to go for certain things. For a reservation? Where do I go shopping? So it started morphing from that. I wanted to keep the real estate side of things but having the background as an executive sales assistant allowed things to move toward the lifestyle management. I then got married and was fortunate enough to marry someone that enabled me to make the decision of whether or not I wanted to work. I stayed home for six months, and just couldn’t do it. And then a lot of my husband’s friends started saying, ‘I really need help 10 hours per week’ or ‘I could use an assistant for 20 hours per week’ and so it just started to grow from there.”
And it grew quickly. What began as just Tiffany and 5 clients quickly blossomed into 20 contractors and over 60 clients. Additionally, with Tiffany’s resources in property management, she began handling a lot of second home management duties. “We started to see a lot of our international clients, as well as local clients, that have second homes and needed someone to assist them with the upkeep, paying bills, and general maintenance. We have some clients that live in Mexico, so for half the year we ensure that the yard gets mowed, the pool gets cleaned, and the electric bill gets paid.” But who uses this? Surely it’s only for the uber-wealthy, right? Not necessarily, says Pritchard. “No, there are so many dual income families that are professionals and are working some crazy hours and don’t have the time to run their households. Sometimes things like grocery shopping and picking up your dry cleaning can really put a dent in your daily schedule, so many working families have been using our services, and we’ve seen great growth with the younger families in our area.” As we enter the holiday months, it’s good also to remember that Pritchard and her team can help a lot with the craziness of this
time. “We know that holiday party planning can get seriously hectic. So we typically get quite busy during this time as we help out not only with party planning, but also holiday shopping and decorating.” Lastly, the intimate nature of a person that assists with “lifestyle management” creates good friends with clients. “I would tell you that every client of mine has become a dear friend. Traveling through the Italian countryside was the inspiration for this elegant, epicurean kitchen. The clients love of traveling in the various regions of Mexico and Cabo San Lucas were the driving inspirations behind the design and selections for home in general. To that end, various elements were infused into the kitchen to achieve that feel. Hand carved Mexican wood panels cover the massive side by side Sub Zero frig/freezer combo which are inset upon walls clad with reclaimed “Used Chicago bricks.” The massive Talavera clad vent hood allowed the incorporation of many different tile colors and shapes that fit the style. The antiqued red island with its Talavera tile counter top offer a nice contrast to the Dragon Red granite that sits atop the rest of the hand crafted Mexican cabinets that were built in Monterrey. The sky blue hued dome above the Breakfast table recalls a cloudless day in the emerald waters of Mexico. The “COOL” WAY TO GET RID OF STUBBORN FAT! By Jana Bounds
You exercise, you eat right (well most of the time!) and you still can’t get rid of those love handles or tummy bulge! We are born with the majority of our fat cells and genetics play a part in where those fat cells are concentrated. As we gain or lose weight, the fat cells are not necessarily multiplying, but rather decreasing or increasing in size. Where you have the most concentration of fat cells is where they will be the most noticeable. Sometimes, they can be very hard to eliminate through exercise and diet alone. CoolSculpting by Zeltiq is a new noninvasive body contouring technology that can help you get rid of those stubborn areas of fat. It is a safe procedure cleared by the FDA that gently cools unwanted fat cells in the body to induce a natural, controlled elimination of fat cells. CoolSculpting uses Cryolipolysis. Cryo meaning cold, and lipolysis meaning destruction of the fat cell. It is based on the concept that fat cells are more susceptible to cold than water based tissue. The device can precisely cool down
any pocket of subcutaneous fat to the point that the fat cells freeze and die without affecting any of the surrounding water based tissue. Think about putting a stick of butter in the refrigerator. It’s affected (gets hard) more than your milk, soda or tea. The best candidates are those who aren’t significantly overweight but have some localized areas of fat that they’d like to get rid of on the abdomen, hips, or thighs. We sat down with a patient who recently had the CoolSculpting procedure at Derm SA and got her take on it. Here’s what she said: Q: What made you decide to do CoolSculpting? A: Despite the fact that I’m at a healthy body weight, I’ve got a little stomach pouch right under my belly button that runs the length of my lower abdomen—a permanent remnant of my two pregnancies. While I’d love to have a tummy tuck like other women I know, I don’t want to deal with the risks and pain of surgery for something cosmetic. CoolSculpting offered me an alternative to liposuction or other more invasive procedures. Q: What happened during the procedure? A: I sat in a chair (no anesthesia) while a technician used an applicator to apply a cooling suction device to my target area. The cold temperature— which is above freezing— gave me a numbing sensation as it destroyed my fat cells. The best part was that there was no damage to my surface skin tissue.
Q: Did you feel any discomfort during the procedure? A: No pain – I only felt a firm pull and pressure sensation. There was no numbing required and it was totally non-invasive. I actually read a book on my Kindle during the whole procedure! Q: How long does the procedure take? A: I was told each area takes about one hour. I was only tackling my lower stomach and stayed for about an hour – a quick procedure with such great results. I was amazed. Q: How long did it take you to recover from the procedure? Can I return to normal activities after the procedure? A: I returned to my normal activities immediately following the procedure. I had a little redness, but it went away a few hours after the procedure. I actually returned to work after my procedure was complete. Q: When did you see results? A: I saw results three weeks or so after my procedure. I was told that I would continue to see results after one to three months, and that my body is still flushing fat cells and will continue doing so for up to four to six months after I received the treatment. I honestly can say I look better in my clothing without my unwanted belly fat. I am very satisfied. Q: Would you recommend CoolSculping to your friends? A: Yes! I was so tired of eating the right things and exercising but still holding on to the fat around my belly. Derm SA was very professional and I am happy with the results!
