Both are unique; Petit Chamois is located on the piste in Méribel and Ben Nevis is situated in the heart of Les Gets. Both push the boundaries of what you would expect from a self-catering apartment, coming complete with our world-class concierge and in-resort services – to find out more, flick to page 6. This summer we have been working hard to minimise the impact on the environment from every aspect of the business. Focusing on reusing, recycling and buying local, we are all embracing the challenges of acting more sustainably in the mountains. Read about how to enjoy an eco-friendly holiday on page 48. Accessibility is something both we and our partner charity Disability Snowsport UK (DSUK) believe in. We have teamed up with them to ensure that everyone can enjoy a holiday in our amazing properties no matter their requirements. The DSUK team are experts in accessible snowsports and are working with us to ensure that fully accessible holidays can be enjoyed while not compromising on luxury, bringing the Consensio experience to all. We are also delighted to be sponsoring a free adaptive snowsports lesson per week of the winter season so a child with a disability can learn to ski – see page 72. It is located on the third and fourth floors above a fantastic communal spa and pool complex. Adorned with gorgeous oak, Ben Nevis sleeps up to eight adults and two children. The annual awards ceremony took place on the 17th November 2018, where chalet Marco Polo in Val d’Isère received the most votes from the public and industry leaders to clinch the prestigious title; this comes as their sixth consecutive win in this category. M E AT Attached to Cash 2000 in Val d’Isère is an incredible butcher called Cash Frais, run by Charlie, a friendly gentleman in his 30s with long blonde dreadlocks. Cash Frais source all their meat ethically from the Savoie region and it is all sold fresh. You can tell Charlie is really passionate about his work as he will enthusiastically tell you exactly where each cut of meat is from. Additionally, if they don’t have something you’re looking for, they are always super helpful and recommend other things which you could substitute. Charlie goes out of his way to give me the best fillets and short ribs! Cash Frais is open in the mornings. Alternatively, there is a fantastic butcher in the Spar Butchers down the road which is open for business in the afternoons. Seb, a super friendly brown-haired bloke in his 40s, always has an amazing selection of local organic meats. He is also happy to make last-minute changes to orders which is very helpful when creating bespoke dishes. Having been there for at least four years, you can always trust him with your order. He is very kind to us local chefs and even offered to sharpen my chef’s knives when we couldn’t find my knife sharpener. Chef’s top tip: Buy a beef fillet from Seb. It is always a good alternative when people don’t like fish, and the quality of the cut is brilliant. FISH AND SEAFOOD Seafood is always best served freshly caught and there’s a man in Val

When we walk past, they always wave and ask how the guests liked their cheeses the previous week. I highly recommend trying the local Morbier cheese. To create this traditional French semi-soft cheese, they milk the cows first thing in the morning and from the milk they make a layer of cheese. They then sprinkle a layer of ash over it to stop it from setting while all the dairy workers go to eat lunch. In the afternoon they make a second batch of cheese and layer it on top of the morning’s ash-covered cheese. This is why there is a black squiggly line through the middle. Chef’s top tip: Add Morbier cheese to your cheese board after a delicious dinner. It is creamy, mild and delicious. DAIRY PRODUCE There is a wonderful local farm in Val d’Isère called Ferme de l’Adroit. They make their own cheese, milk, yogurt and butter and I make sure to always have their products in the chalet. imon Beck grew up in Somerset, South-West England, and most of his life has been based in his parents’ home. Since 2004 he became the owner of an apartment in the French ski resort of Les Arcs, but still spent a lot of time living with his parents to delay the inevitable time when they would have to move into a care home. “It’s so sad to see people declining at the end of their lives,” he muses. “I may well simply disappear one day when I die on a mountainside somewhere, but that’s side-tracking.” Simon is an incredible artist who is renowned for creating vast geometric artworks, making tracks in fresh powdery snow with his snowshoes. His work is physically demanding and can often only be admired first-hand by a few off-piste skiers, before fresh snowfall covers it up for all eternity. We met up with Simon to find out more about his fantastic, yet temporary art. How long have you been into snow sports? I learnt to ski in 2002 when I was in New Zealand escaping the foot-and-

At the global and local levels, the World Wildlife Fund (WWF) is working to safeguard this jewel of biodiversity and maintain an intact ecological network. The Alps is a rich but threatened area of natural beauty. The development of tourism and transport infrastructure, as well as unsustainable urban and agricultural practices, contribute to a global trend of excessive exploitation of Alpine areas. This is why many organisations alongside the WWF have been working for many years in the continued conservation of this area. Tourism is a central lever for the economic development of the Alpine region and one of the main drivers of urbanisation. Every year, the Alps receive more than 120 million tourists. Spread over more than 300 mountain resorts, there are more than five million beds across the Alps. This impacts mountain ecosystems more seriously than first presumed as these tourist centres are often located in the most fragile and remote areas, formerly protected from urban sprawl. he summer can make or break champagne. For Maison Perrier-Jouët’s signature Chardonnay grape variety, the last harvest yielded beautiful amber-hued fruit. Picked in perfect conditions of health and maturity, it had remarkable potential alcohol levels of 10.9 degrees (alcohol by volume). Early analyses point to wines of extremely high quality, while fermentation revealed delicate aromas of fresh, crisp fruit. The first grapes in the house vineyard were harvested in Dizy on the 24th August 2019. This was unusually early compared with previous years. The grape-pickers then started in Ay on the 25th August, 26th for Mailly and 27th for Avize and Cramant. They started one day early in Dizy, Ay and Mailly than the official date given by CIVC (Comité Interprofessionnel du Vin de Champagne), the organisation grouping all those in champagne production and trade. Picking took between 11 and 13 days and was an extremely intense period of activity which lasted for a record time. Hervé Deschamps, cellar master of Perrier-Jouët, tells us: “I can hardly wait to taste the clear wines in a few months’ time to see if this harvest will indeed live up to our high hopes.”

This year, the quality of the harvest was so high that Perrier-Jouët didn’t need to select the grapes, and it didn’t suffer from any sanitary issue or lack of ripeness. Hervé reveals: “We had a very generous harvest this season, on both the three grape varieties and on each cru. We have started to blend, and it is quite promising. It is still too soon to confirm if we will do a vintage, but our hopes are high. The reserve wines bring roundness to the wine and help to rebuild the house’s style.” Regarding the cuvée, Perrier-Jouët Belle Epoque is always a vintage as it is only produced during the years where the balance between alcohol and acidity is perfect and the ageing potential is outstanding, because this cuvée stays at least six years in the cellars. The house’s prestige cuvée is an iconic blend of the three grape varieties: 50% Chardonnay, 45% Pinot Noir and 5% Pinot Meunier on average. “We have always appreciated Pinot Meunier, which is found in the majority of our cuvées,” Hervé explains. Perrier-Jouët’s Chardonnay comes from the Côte des Blancs and the Pinot Noir comes from Mailly, Verzy and Verzenay in the north of the Montagne de Reims, where it is less sunny and they often harvest last. It also comes from Ay, nearby to Épernay. The Meunier comes from the house’s own vineyard in Dizy which, with ageing, will bridge the gap between the Chardonnay and Pinot Noir and allow the blend to gain harmony and richness. “Without the Meunier,” Hervé tells us, “we would get two different expressions at different times. First the Chardonnay and then the Pinot Noir, whereas we are looking to achieve a harmonious expression.” The Pinot Noir is the pillar of this famous blend. It provides the structure while leaving the Chardonnay on top with its brilliance, elegance, and a lightness that the house insists on finding even after six years aging on lees. ‘On lees’ is the process where the wine is left to mature with the tan-coloured dead yeast particles that collect at the bottom of a fermentation vessel. Perrier-Jouët does not age its reserve wine in barrels. Instead, the blends from previous years are kept in thermoregulated vats at

ICELAND I went for the first time ever to Iceland in early April 2019. After many years of Sweden, Greenland, Norway and Spitzbergen I have always been chasing good late-season snow and the possibility to watch some northern lights at the same time. I was blessed on my most recent trip to Iceland to score some epic snow on my last day there. We could ski all the way down to sea level in perfect light fluffy powder while the night before we were watching the northern lights. It was truly a trip to remember and some of my best shots ever were taken that day. I took this photo on our very last run of the day, we had done 14 runs already and we could not stop skiing. Everything was surreal, the snow was perfect, there was zero wind and the sea was so calm that we could see some fishermen in the background.

CANADA I have been lucky enough to spend about six weeks per season for the past nine years of my life in Canada. Being a fully qualified Canadian ski guide I work part time in Revelstoke for an heliski company and this is probably my second home. Everything people say about Canada is true: deep powder, striking cold, endless storms, friendly Canadians, an authentic laidback vibe, legal marijuana, excellent pale ale beer and by far the most consistent skiing on earth. We have barely no down days in Revelstoke as the helicopter flies in bad weather below the tree line and we ski through the trees during the storm. This is probably the best way to ski the deepest snow in a safe way. I took this photo on Christmas Day 2018 in one of those famous burned forests on a bluebird day (quite a rare thing at that time of the year). I like this shot because although you donâ€™t see much apart from the skier, there is no doubt that this is in Canada.

CHILE My summer getaway! I have worked for the past 13 years for Andes Heliboarding in Chile as an heliski guide. Chile is truly a wonder of the world. It is a very unique and diverse country that has the most amazing mountains and snow stability. The Andes is the longest mountain range in the world and there is not much there yet, so with a helicopter you can access a vast unknown area. There are wonders behind every corner. Skiing in Chile is unique because the snow lets you ski steeper and higher terrain than most places because avalanches are less of an issue. The mountains are truly bigger than the Alps and our fantastic team of pilots is always ready to take us somewhere new. I took this photo a few years back after one of those El NiĂąo storms. JAPAN I have made nearly 20 trips to Japan, and this is an exotic ski trip with the most amazing snow you can think of. You can spend weeks in Japan without seeing the sun, and this is where you will without doubt find the biggest quantities of snow you have ever seen in your life. The mountains are smaller, the lift access is not very good, a lot of the off piste skiing is forbidden and at the end of the day you sometimes wonder why the hell you have travelled all the way to Japan. But on the morning after a 70cm overnight snowfall when you hit your first tree run and every turn brings a cold, light face shot of the best powder, nothing else is relevant anymore. I took this picture on the main island after a long day skiing and touring in a very small resort close to Nagano. the sheer facts of geography. Most ski resorts are located a fair distance from airports. Which means that however much we might wish for it, there’s no such thing as a quick journey to the slopes. Years ago, on my first ski holiday – to Andorra – I discovered this the hard way. I was perplexed at how long the whole journey translated to, door to door, but I thought it was a one off. Surely, the next trip – to the Alps – would be quicker? It wasn’t. It seemed that in order to get to these magnificent snowy mountains and participate in this new-found sport, one had to endure a long journey. But on that second trip, it was by chance that I peered out of the transfer-bus window as we climbed the winding hill to the resort

I wondered whether we might have come by train – and enjoyed a nicer and less polluting journey – but imagined that it would take too long to be viable. I began to research, and gradually discovered that there are dozens of ski resorts in the Alps with train stations close by. Over the years,

I’ve been amazed to find that, door to door, train travel to ski resorts doesn’t take much longer than flying. And in terms of quality of time, it wins hands down. If you are travelling to a chalet with a group of friends who don’t all know each other at the outset, then by the time you reach the resort, you’ve got a group that has bonded. Maybe it’s the fact that you’ve popped champagne corks on the Eurostar at 10am, as the Kent countryside whizzes by. Perhaps it’s that sense of motion, of adventure,

To prepare for the CCC, I was based in Méribel for six weeks training in the mountains ahead of the race. It was a really enjoyable training camp where I could see my fitness progress every week. I spent lots of time particularly focusing on training for the long descents down the mountain paths. I had a couple of small niggles during the training, but I was regularly seeing a physiotherapist and made sure I did lots of stretching and rehabilitation. I always get pretty nervous before the start of a race and this race was no different. It was an amazing atmosphere, but I made sure that I stayed focused and kept my race plan in mind. I always think about the training that I have done and repeatedly tell myself that I am prepared. In any ultramarathon things are going to go wrong and it’s how you deal with that which determines how well you do. I struggled with eating and drinking for a couple of hours which really hampered my pace, but I think this helped with my overall performance. When things got tough during the CCC, I thought about all the hard work I had done and how ready I was to suffer because I knew just how much I wanted it. Despite the pain and exhaustion, I loved taking in the incredible views along the 101km course. The route around Mont Blanc was amazing, but I had to remind myself that the mountains must always be respected as conditions can change quickly and become dangerous. I had no idea I was going to win the race, but when I overtook Min Qi at the top of the last climb with only six miles to go, I realised I had taken first place. From there I asked myself ‘how much do I want it?’.
