The Maison has led the way with some of the world’s most extraordinary writing instruments, and when you take the time to consider what’s underneath the cap, it’s easy to see why the term instrument fits so well. Following on from the company’s launch in 1906, the German brand went on to apply the same successful formula to craft stunning wristwatches and a selection of leather goods that are every bit as coveted as its writing ranges. However, the focus has never strayed from the legacy at the company’s heart. “Particularly for the writing instruments, it is even more crucial that we are the best, and the only centre for these techniques. The Maison is the essential expression of fine writing today, there are young guys at the manufacture trained to do things that they will be the only person in the world to do,” adds Lambert. —— In the Artisan Studio at Montblanc’s Headquarters in Hamburg, a new crop of craftsmen and women are nurtured as time-honoured techniques are handed down the generations. Lambert explains it’s a place of quiet concentration, where passionate artists hone their craft. He says: “It’s very much a workshop culture, you have quite sophisticated and elaborate processes taking place in each of the different workshops – you have different experts, different approaches, and you see at each stage quite a big evolution of the product itself. For example, at the nib workshop, everything is done there from the cutting to the decoration of the nib and the preparation. There is a great sense of responsibility as we take forward skills of the past into modern lines. “Creating a bridge between modern times and tradition is something which is a given when it comes to a Maison like ours. A lot of the training is on the job from our masters, we have around 40 young guys that are in a three-to-four-year programme, learning all about our technical craftsmanship. From tooling to injection, at every stage it’s a journey we have to plan carefully. Most of the artisans have been with the brand for 25 to 40 years; they have spent their lives working for the Maison.”

Some of the world’s most iconic writing instruments have come from the renowned manufacture, not least the famed Meisterstück. The pen was first created in 1924 as a fountain pen, and has since been issued in a ballpoint and rollerball. Down the years the impressive roster of names to have used the pen include Winston Churchill, Nelson Mandela and Ernest Hemingway. There is also of course the famous story of 1963 when during a ceremony German Chancellor Konrad Adenauer borrowed a Meisterstück from John F. Kennedy to sign the Golden Book of the city of Cologne. Still as important to the brand today, the Meisterstück boasts an 18 carat gold handcrafted nib complete with platinum inlay, gold-plated clip and a barrel coated in black-precious resin for an exquisite finish. Elsewhere, Montblanc has capitalised on a link between history’s most creative characters and its pens. Some of the world’s greatest authors, from Leo Tolstoy to Honoré de Balzac, have been celebrated with a special edition piece in the Writers Edition collection. Special touches honouring the authors include detailing on the caps and nib to ref lect their greatest works, as well as inscriptions of their signatures. In a similar vein, the Great Characters collection presents stunning limited-edition pieces dedicated to the last century’s greatest personalities, such as Kennedy and Leonardo Da Vinci. “There is a synergy between some of history’s most creative figures and great thinkers, and what we do at Montblanc. It makes sense for us. The craftsmanship and passion embodied in each and every piece over the decades is truly special and reflects a natural link to some of these characters,” says Lambert.

—— With an eye firmly on future innovation, the brand’s recent triumph, the Montblanc M, is a bold new writing instrument and is the result of a collaboration with edgy designer Marc Newson. Lambert says: “This is the first time in the history of the company, in 109 years, that we have collaborated with a designer on a writing instrument – this has been a long time coming. I have known Marc for a long time, I have collaborated with him before and I recognised in him a truly amazing artist.” Launched a few months ago, the Montblanc M caused a stir with its new look. The distinctive shape boasts a plateau at the end while the black resin finish gives a stylish feel. The iconic Montblanc emblem appears twice, on the cap and at the end of the plateau. Elsewhere, clever additions include a magnetic cap to close with ease. It’s available as a fountain pen, rollerball, ballpoint and as a thin Montblanc Artefineliner for technical drawing. To celebrate the release, Montblanc chose eight calligraphy artists from the Middle East to draw a link between the Montblanc M and the ancient art form. “The pieces of art that have been created are quite amazing, being a pure handwritten word, calligraphy is a very powerful link with this region as it’s a local tradition dating back centuries. chosen have, in some cases, used some of the oldest and most difficult calligraphy styles, but interpreted them in such a contemporary way,” says Lambert. Each artist was asked to depict a distinctive landmark or symbol of their country, using their preferred style of calligraphy, and the Montblanc M for the initial sketch.The works include Dubai’s Burj Khalifa, Sheikh Zayed Grand Mosque in Abu Dhabi, Kingdom Tower in Saudi Arabia, a landscape of old Jeddah and a geographical map of Oman.The pieces will be exhibited in Montblanc boutiques across the GCC and reproduced as a limited edition coffee table book and collectible postcards. Emirati artist Hamda Al Hashemi created a stunning portrait of Sheikh Zayed Grand Mosque, adding subtle touches of colour with Montblanc inks as an added reference to the UAE. “I chose a landmark from Abu Dhabi as I live there. There were lots of landmarks to choose from but most were commercial buildings and that doesn’t really relate to anything about Abu Dhabi or its identity. Sheikh Zayed Grand Mosque of course does that and it’s one of the most beautiful mosques I have been to, even inside the mosque itself, there’s a lot of beautiful calligraphy,” says 24-year-old Al Hashemi. The piece Al Hashemi created makes the most of colour and adopts an interesting perspective to draw the viewer in and really make it stand out. Al Hashemi explains: “I didn’t want to create a two-dimensional building, so I chose the entrance to try to show the feeling that people have when they enter, and I added a couple of figures, just to add more life. I decided to go for the colours of the UAE flag so there’s a bit of red in it and a hint of

green, and of course black. The Montblanc inks are really beautiful colours. The paper itself also has the same marble effect as you see at the mosque, I actually stumbled upon it in an old shop. I had it for a long time so I decided it would go perfectly with this piece.” She adds: “I’m really proud of this, I’m hoping I can develop my own calligraphy style, I wish I could master all kinds of calligraphy but in some cases it takes 20 years to master a style, it’s all about perfecting it and getting the angle right, hopefully one day I’d be able to reach that.” For the Dubai calligraphy piece, the team at Montblanc turned to creative young artist 20-yearold Ali Kashwani. “Montblanc found me through Instagram, they found my work interesting and it fits the style they were looking for,” says Kashwani. Each artist was given the freedom to choose any landmark from their country, but for Kashwani, it could only be one. He says: “I thought it was interesting to mix Burj Khalifa which is a modern building with calligraphy which is an ancient art. Burj Khalifa is a difficult shape to represent, but I have an interesting approach to calligraphy, I like to paint using the words, so instead of trying to just depict the building, I wanted to represent the whole scene using calligraphy. That was my perspective on the piece. “To represent Dubai is a great honour. I think that this collaboration with Montblanc is amazing, it’s a privilege to work with such an international brand. In the future, I would like to present more pieces of art that represent my country and region, and to leave a mark in the big picture.”

STYLE QUEEN ——— Emirati designer Lamya Abedin is pioneering a modern take on the abaya

Geometric prints, bold colours and edgy fabrics are not traditionally associated with the abaya, a garment often viewed as more functional than fashionable. On the whole, attempts to add to the aesthetic have centred on subtle touches and enhanced detailing – that is until Lamya Abedin came along. The Emirati designer has brought a fresh creative approach with abaya designs that have succeeded in making a serious fashion statement. Since the launch of her label Queen of Spades in 2008, Abedin’s creations have been worn by a steady stream of A-listers, and are in high demand around the world. Her work has been snapped up by major retailers and exclusive boutiques where the city’s fashion elite vie for the unique styles.

“It all began in 2008, I was searching for an abaya for myself and I just could not find a one-of-a-kind piece. I have a real love for fashion, styling and creative design, so it seemed to me I should explore that calling and started making abayas for myself. It all grew from there. My family’s support, as well as encouragement from friends, were the final elements that got me to where I am today,” says self-taught Abedin. Influences from all over the world can be seen in the designer’s work, which combines various cultural cues. There are abayas which can be worn during the day in bright colour palettes, crafted from lightweight fabrics with tassels and intricate patterns. Others are perfect for a special occasion and come in striking black and gold with dramatic detailing and glittering needlework. “Abayas have evolved and have been redefined to not only suit the Emirati woman, but women of all nationalities and all cultural backgrounds. It has become an admired garment, and is becoming a staple in the wardrobes of many women. “My belief is that a designer is someone who brings style into life, so I always look for ways of making the everyday extraordinary through my designs,” Abedin says. While the abaya’s role in Middle Eastern society features prominently in her work, Abedin is far from limited by traditional notions in her creative process. Influences stem from all walks of life to give designs a truly global feel. “I have taken inspiration from folk dancers in Mexico and the spring ceremonies of the Japanese Cherry Blossom season. At other times, I’ll look a little closer to home and find myself intrigued by my son’s car collections or my daughter’s bedtime stories.” She adds: “I love sourcing materials and drawing inspiration from all around the world. I believe

every country holds treasures, and depending on the theme, mood board or vision I’m working on, I start collecting my textiles to produce the collection I want the world to see. I also feel this helps my collections reach out to fashion-loving women, no matter where in the world they are.” The designer has an impressive roster of clients and A-list collaborations under her belt, from Lady Gaga and Tory Burch, to Rolls Royce. She is keen to build on that reach to ensure the abaya appeals to women everywhere. “In a deck of cards, the Queen of Spades is regarded as powerful. So as the name of my label suggests, I make each and every piece fit for a queen. My clients could be socialites, the girl next door, a mother, an entrepreneur, a travel enthusiast or a trend setter. She is a woman who always strives to be a pioneer and distinguishable in a crowd of fashionistas,” says Abedin. At the heart of each piece she crafts, Abedin blends contemporary influences with a sense of history and culture. Her hope is that the abaya is soon taken seriously in fashion circles. She says: “My designs are all about living up to the richness of our tradition in a contemporary world. I want to tell the world that our national dress is as fashionable as any runway trend, without compromising our culture.”

Making a name for itself as something of a dining hub, The Beach is full of interesting concepts from all over the world. —— The Muhr Short Competition is a festival highlight and one of the most respected competitions in the region. It’s an opportunity to showcase an impressive roster of Arab filmmaking talent, premiering 15 hotly anticipated short films from the region. For the entrants, at stake is not only international exposure, but the chance to qualify for consideration in the 2017 Academy Awards. “Short films present a unique challenge to directors because they are produced with a limited availability of time and resources. It is for this reason the Muhr Short Competition provides an experiential kiln from which independent filmmakers can demonstrate their skill in this daring and powerful medium,” says DIFF programmer Salah Sermini. Among the films vying for success is In The Future, They Ate from the Finest Porcelain, directed by Larissa Sansour and Soren Lind. A beautiful piece, the film uses video art and photography to tackle issues relating to life in Palestine. It follows a resistance group that buries porcelain – thought to belong to a lost civilisation of hi-tech Palestinians – for future archaeologists to find. The project was a long time in the making, and the directors are honoured to have been shortlisted. “We are thrilled to be nominated this year. This is a project we have been working on for a very long time. It was always our aim to premiere it at DIFF, so we are very happy this worked out,” says Soren Lind. He adds: “As it is the most important festival in the entire region, everyone looks to DIFF as a perfect launching platform for their new films. The festival’s focus on development and regional talent further underlines its influence and its vision. “Archaeology is a major battleground in Israel/ Palestine, used to settle land disputes. So this new film is based on the idea of inventing favourable

myths and planting the archaeological evidence to support them, thereby seeking to influence history. “These are exciting times for Middle Eastern film with lots of new talent and visionary experiments coming out each year. The volatile political situation across the region has a profound impact on the kind of work being made. Generally, there is a sense of urgency, immediacy and honesty to much of the work, and this generates a much deserved interest for Middle Eastern film worldwide.” Staying with the issue of lives touched by politics, Lebanese director Ely Dagher brings acclaimed animated short film, Waves 98 to the festival. The piece has already caused quite a stir, picking up a Palme d’Or in the Short Film category at the Cannes Film Festival earlier this year. It tells the story of teenage Omar who is disillusioned with his life in the suburbs of post-war recovery Beirut and retreats to the rooftop of his school where he spends hours

looking out over the city. Upon noticing a light in the distance one day, Omar embarks on a journey of discovery to find its source. The beautifully animated story is a wonderful exploration of the Beirut-born director’s own fragmented relationship with the city and a teenager’s view of a segregated urban landscape. An emotional tale from Egyptian director Shady El-Hamus has also been shortlisted, and marks the world premiere of short film, Fairuz, at the festival. The film features Yousef, a man in his mid-60s who struggles to come to terms with his daughter’s marriage and flees on her wedding day – embarking on an illuminating journey. The competition this year also sees the return of Muhr alumni who have gone on to attain great success. Previous winner Nasri Hajjaj is back with a piece that resonates with current world events. The Palestinian director’s film The Purple Field follows

a young refugee fleeing war-torn Syria in search of a better life. It’s a journey that traverses Turkey, Greece, Macedonia, Serbia, Hungary and Austria, to shine further light on the current refugee crisis. Another previous Muhr winner, Egyptian director Sherif El Bendary enters the competition this year with the world premiere of Dry Hot Summers which tells the tale of a chance meeting of two lonely people in Cairo. While Morrocan director Maryam Touzani brings her second short to DIFF, Aya Goes to the Beach. The touching story centres on a 10-year-old maid in Casablanca. With the winner set to be announced during this year’s festival, DIFF artistic director, Masoud Amralla Al Ali, pays tribute to all of the entrants. “Every year the Muhr Short Category attracts more and more talented filmmakers with fresh and exciting concepts that give a whole new perspective to the filmmaking industry. The creativity and diversity of these up-and-coming directors is testament to the talents that are striving to make a name for themselves.”

—— Another of the festival’s important competitions is the IWC Filmmaker Award. The prize aims to support Gulf directors and writers and offers a prize of USD100,00 towards taking one promising script to the big screen. Three directors have been shortlisted and a panel of judges, made up of industry experts from around the world, will deliberate and announce the winner during the festival. Past judges have included Hollywood stars Emily Blunt and Cate Blanchett. In the running for the 2015 edition are Qatari director Khalifa Al Muraikhi, Saudi director Shahad Ameen and Emirati director Layla Kaylif, with a series of compelling stories based in and around the region. Khalifa Al Muraikhi’s latest project Sahaab chronicles the experiences of aspiring falconers as they prepare to take part in a race, but lose one of the birds and face a battle with time to find the lost falcon before the contest starts.

Shahad Ameen returns to DIFF with Scales, the magical story of Hayat, a teenage mermaid. While Layla Kaylif’s romantic piece, The Letter Writer, follows a young boy Khalifa who uses his skills as a professional letter writer to help his customer pen notes to his secret love, only to fall in love with the woman himself. Kaylif explains: “The Letter Writer is inspired by my father’s experiences as a boy working as a professional letter writer in Dubai in the 1960s, before federation. I’m pleasantly surprised to be nominated and very pleased, it feels great. “I never saw myself directing but it’s an interesting challenge, and my first experience of it was positive. I’m sure the film scene will keep growing and more films will get made as the Arab film industry grows and more people develop their craft. It’s just a question of time.”

—— Elsewhere at the festival, there is a host of opportunities for local and regional talent to shine. The Samsung Short Film Contest offers 10 shortlisted entrants the chance to shoot a short film with Emirati filmmaker Nayla Al Khaja, while the Young Animators Award offers young people, between 10 and 17, a much-coveted place on a stop-motion animation workshop during this month’s Animate Dubai at Dubai Design District (d3). Commenting on the strength of talent in the Middle East, Amralla Al Ali says: “The Gulf region is rich in culture and stories, which provides an inspiring canvas for regional filmmakers to bring their ideas to life. That is what we aim to celebrate at the festival and beyond, by providing a platform to share their gripping tales with the global community.”

SHIVANI PANDYA ——— The managing director of Dubai International Film Festival (DIFF) gives the inside track on this month’s glittering cinema showcase

I believe that DIFF is the most incredible event Dubai hosts, and, to achieve that, a huge amount of work goes in from the entire team. In the last 12 years alone, we’ve had the honour of welcoming HH Sheikh Mohammed bin Rashid Al Maktoum – his presence is the best way to start the festival. We’ve had thunderstorms hit the red carpet, last-minute celebrity confirmations and arrivals, and so many other surprises, all the while thinking ahead to the next edition. Our activity peaks during the second half of the year as films are selected, talent and guests are invited, events are planned, and logistics and operations are locked down. As the festival nears, sleep deprivation becomes a way of life. A programme of 128 films from 40 countries requires the team to be alert and available for all conceivable time zones, at all times. We’re negotiating, finalising, sourcing information, scheduling, blocking tickets, rooms, hiring and more. It really is a whirlwind of activity. Throughout the year it’s busy too, one of the main perks of my job is that I get to watch some incredible films. I also travel to international festivals such as Cannes, which is a big event in our calendar. I also make a

point to attend the Berlinale, Telluride and Mumbai festivals. It’s important for us that we are doing everything to ensure DIFF represents Dubai in the best way, retains its status as a leading film festival and is a true champion for Arab cinema. We have some fantastic elements to look forward to this year and of course, an excellent programme of films. Many will divide the team and we will end up debating which ones to include for hours. When it comes to the opening night film, we will be locked in a room for what can seem like days going through our top list. We have so many front runners for the opening spotlight this year, all with their own story to tell, all brilliantly cinematic and all deserved of the platform. We have some exciting big names again this year, including Jake Gyllenhaal who is attending to pick up the Variety Magazine International Star of the Year award. We also have the legendary Richard Dreyfuss who will be coming along to our special outdoor screening of Jaws, at The Beach cinema, to mark the 40th anniversary of the film. In the Muhr Competition this year we have 60 of the latest films from the Arab world competing. I’m really thrilled to see

so many women with brilliant feature films in the lineup, with several from Saudi Arabia. There’s of course a lot more to DIFF than the public screenings. An important part of our festival is the Dubai Film Market. We are determined to support Arab filmmaking and act as a catalyst to the organic development of the local film industry. Since its inception, the Dubai Film Market has supported over 270 projects; and co-produced over 120 films which have gone on to enjoy critical acclaim and find new audiences across the globe. So much of our existence depends on building relationships and networking with the rest of the world. We have some truly unique talent here and brilliant ideas. As a platform, our purpose is to ensure that this pool of creative talent acquires the necessary acumen and makes the right connections to help them grow and reach a broader audience.

Nasif Kayed is an important figure in the UAE community. For this month’s National Day celebrations, SMCCU has rolled out the fourth edition of its annual schools’ art competition. Eighty three schools took part in the contest which saw pupils draw a historical site in the UAE. The pieces are then judged and 24 winners are given prizes, as well as the chance to appear in an official calendar of the works.

“People are very thirsty for knowledge, for the true history of exactly what has happened in our culture, particularly in pearl diving, fishing and trading,” says Kayed. “Aside from our programme of tours, workshops, and the chance to sit down for a traditional Emirati meal with a local host, we also hold regular lectures from some of the country’s greatest historians. These events are very important. After the lectures we find that people leave feeling that they have learned something.” Long before oil, the UAE’s lifeblood was pearling and fishing along the Arabian Gulf. Its humble harbours of Abu Dhabi and Dubai grew up around their respective waterways, where communities thrived from the hard-won spoils of the sea. Tales of life back then are not only gripping, but give a greater understanding of the nation today. Pearl diving in particular was a dangerous pursuit, which saw men dive to the bottom of the sea, holding their breath with only rudimentary equipment, as they hunted for pearls. Kayed says: “Luckily there are people who are willing to sit and talk about their experiences. At any majlis where the older people gather, such as the Jumeirah fishermen’s majlis or the diving

association, you can hear the stories. When they gather, you could have more than 100 of them there, and I just go along to sit and talk to whoever is there. “Their stories are often about how terrifying it was, being so far down underwater and trying to survive. Some of them told me stories of getting sick when they were underwater, but when you are in the sea, you are in the sea, you just had to keep on going and overcome it. One of the old pearl divers told me about a time when he started to hallucinate and dream under the ocean, he had no idea what was happening to him, it was terrifying. He told me when he finally returned to the surface, he felt like he was waking from a nightmare. There are also interesting stories from the divers who would come across fish and creatures they had never seen before. Of course, in the old days, they didn’t have cameras so they only had their memories to rely on to try and describe exactly what they came across to others. “There are lots of stories and what is amazing is that when they came back from sea, they would sit in a majlis and tell their tales. These guys would be out at sea for four months at a time, so as you

can imagine, they had vivid memories of the things that happened to them. They came back and told their stories, that’s why the majlis is so cool, you sit and you talk about life experiences. “I think it is so important to keep these stories alive, I know them from my father and grandfather but it’s difficult to pass on the knowledge these days. My kids know iPad and social media, when I try to tell them about grandpa’s experiences diving under water, they find it boring. That’s why, at the SMCCU, I try and create a lively experience for people, to come and hear these stories and to have fun with it.” Kayed adds: “We really lack, and need to put effort into, making short documentaries on these subjects, about the pearl divers’ experiences. We just haven’t invested in it, but we should reconsider it. Once these people are dead, then that’s it, it’s lost, no more tales, no more history, no more how it used to be.” Thankfully, places like SMCCU are leading the way when it comes to providing a space where people can share in the past, and gain a deeper understanding of life as it is in the emirates now. The centre’s location, in the heart of Al Fahidi Historical Neighbourhood,

itself provides a window into the emirate’s history. It’s the oldest area in Dubai where the city’s pearl divers lived in humble homes on the banks of the creek. “Having travelled the world, I always came across in any city I visited, some sort of collaboration between local cultures and the people visiting the area. I felt that something along those lines was needed here. People used to come and say that there was no one here to take them and teach them about Emirati culture. In 2007, the SMCCU became a mission to create that space. I knew we needed to turn it into something more than a museum, more interactive. “For us, the SMCCU at least creates a platform and an outlet for people to go to for an actual interaction about the culture, heritage and history. To hear it first hand from someone who has lived it, and is part of it, rather than reading displays in a museum. The part of my job I enjoy most is when you see that you have opened someone’s mind. When I talk to people and explain about our way of life, they tell me it’s like a breath of fresh air, they have changed their mindset and have become more open. That is the greatest feeling in the world.”

“National Day is a wonderful thing as long as it doesn’t become commercialised, with things like the colours of the UAE flag on cars and faces. I don’t really think that is what our celebration is all about. We try to emphasise initiatives like Sheikh Mohammed planting a ghaf tree, which is our traditional tree. It’s better to do things that add to your knowledge of who you are as an Emirati, that is what I think is most important.”

The cobbled pathways of Sharjah Art Area wind their way through a fascinating part of the city. Stepping out for a gourmet evening meal with no idea where you’ll actually be dining might seem something of a risk to some, but when you’re in the capable hands of one of the UAE’s top food experts, it’s a rare privilege. Samantha Wood, founder of food review site foodiva.net and creator of the Dine Around Dubai concept, is a veritable mine of information when it comes to the city’s dining scene and puts her skills to good use carefully curating each of the special evenings. The innovative idea sees 12 guests come together, from all backgrounds and walks of life, to join in a secret gastronomic journey to some of the city’s finest restaurants. At its heart, Dine Around Dubai is social dining at its best, allowing guests to come together and enjoy fantastic food, good conversation and learn something new along the way. “It’s an intimate and secret dining experience, tasting handpicked dishes from four of Dubai’s best high-end restaurants, all in one night with me as the guide,” says Wood. “Each restaurant serves up a different course and cuisine. We start the evening with Champagne at our first mystery location. The evening then progresses at each of the restaurants where signature dishes are presented by the chefs and paired with a selection of fine wines. It’s ultimately about injecting fun into fine dining.” Wood launched the concept last year after receiving requests from both visitors and residents

for tailor-made dining experiences. Since then, the monthly evenings have gone from strength to strength, attracting a variety of guests. “We host a real mix of diners; across all nationalities, demographics and age groups – but what brings everyone together is a passion for good food and good company. The response from the hotels and restaurants has also been very positive. When I approach restaurants, they are very keen to be included.We have reached a stage where restaurants want to be involved, and are even offering to pay a fee,” says Wood. Incorporating a good mix of new restaurants and established favourites, Wood carefully plans each itinerary to ensure a smooth evening that is also informative and fun. As guests tuck into each course, the chef takes the time to come out of the kitchen and talk through the dishes, while Wood is also happy to pass on her insider knowledge on the menus and venues, which are all chosen for their high calibre. For gourmands, the evenings are a real treat with some of the city’s most exciting culinary concepts offered. From Michelin-starred chefs to world-class ingredients, the menus are outstanding. Imaginative dishes to look forward to on one of the evenings includes a divine starter of crispy cannolo with sea bass for an interesting take on the classic Italian dish, a main of buttery Wagyu

Kobe beef cooked to perfection, and a selection of desserts that includes a delicious apple tarte tatin served with Madagascan vanilla ice cream. Wood says: “I identify districts where there are top-end restaurants, so currently we have two ‘slices’ of Dubai as I like to call them. Our first experience covers Wafi, Downtown and Business Bay, and our second is on Palm Jumeirah and Dubai Marina. I then select four or five restaurants representing best-in-class across different cuisines, and based on location and courses, I develop the itinerary spending 45 minutes in each restaurant, with a little longer at the first venue for a Champagne apéritif. I then test it out with a dry run and fine tune the timings. “We don’t disclose anything else in advance. We will advise guests of the first restaurant, which is the meeting point, a couple of days in advance, but other than that the evening ahead is a mystery which of course adds to the excitement. “I hope to be able to grow the idea in the future, and plan to expand into Abu Dhabi as well as expand upon the experiences I offer, from private celebrations to team-building events. ” In a city fast emerging as one of the world’s most dynamic gastronomic destinations, Dine Around Dubai is a novel way to get to the heart of its culinary experience. A TASTE OF ITALY ——— Chef Francesco Dimonte brings a fresh approach to Italian fare at Ballarò, Conrad Dubai

It can be hard to stand out on Dubai’s crowded dining scene, where cuisines of the world are more than well represented. From Peruvian to Latvian, an eclectic selection of gastronomies is offered, and for some of the more traditional cooking styles, the challenge often lies in offering something new. At Ballarò, Conrad Dubai’s Italian eatery, Francesco Dimonte is going back to his roots for a contemporary take on the country’s classic dishes. “When I was a young boy, I used to watch my mother cooking with my grandmother and I was fascinated. Sundays were my favourite day of the week as school was closed and I was free to spend hours with them in the kitchen. If I was good, they would let me taste the food as a reward! When I graduated from school it was clear to me that I belonged in the culinary arts, and so I majored in hospitality and here I am,” says Dimonte. With a cooking career that has taken him from top Italian restaurants to five-star venues in Dubai, Dimonte is keen to capitalise on his background. He says: “I might sound boring but I am really proud of my region Puglia. I was born and raised in Barletta which has some of the finest producers of extra virgin olive oil, burrata cheese, fantastic seafood, divine wines, olives and pickles. The list goes on and on. It’s all about the ingredients, our cuisine would not be so famous were it not for the passion we have in researching the best products out there. The creativity of the chef is of course very important, but I always tell my guests that sourcing great products is half the job done.” Sourcing high-quality ingredients here in Dubai can be difficult, but Dimonte and his team have uncovered some hidden gems. “Sometimes we do face challenges in sourcing the quality ingredients we need, but at other times we are happily surprised. When we get the chance to innovate with locally sourced products, it works amazingly well. For example I have used a fantastic buffalo mozzarella cheese, and you know what, it did not come from Italy, it was made in Sharjah a mere 10 minutes’ drive from Dubai,” says Dimonte.

He adds: “Dubai is a great place as it’s very well connected with the rest of the world which makes it easy to get the best products. Roughly 60 percent of our ingredients come from Italy, but I anticipate a decrease as we are constantly reviewing what can be sourced locally. In our day to day work, we want to add value to this fantastic city that we live in.” Innovation using a mixture of local and international ingredients is at the heart of Dimonte’s mission at Ballarò, where the focus is on fresh produce cooked well. The finest ingredients, combined with a subtle contemporary adaption of classic Italian fare makes for a menu of fabulous dishes. “I always look to refine traditional recipes by adding a modern twist, but I do that without having to completely change the recipe. Ballarò is very much inspired by freshness, seasonality and markets. Our Friday brunch is the best example of that, where we have live cooking stations, fresh seafood and antipasti spread on our marble bars throughout the restaurant. “The ingredients are always treated as the priority. Our cuisine is traditional and our regular guests are happy to come back because they find the right balance and taste in our food. Our mushroom risotto is a must, the beef lasagna and the eggplant parmigiana have a traditional touch that comes out in their taste that can’t be found anywhere else,” says Dimonte. Looking to the restaurant’s future on Dubai’s ever-expanding dining scene, Dimonte believes restaurants with a quality offering will lead the pack. He says: “It is becoming very competitive, but who doesn’t love a little competition? When I first arrived in Dubai in 2007 there were only a few nice Italian restaurants. Eight years later, the Italian dining scene has developed into a much more sophisticated landscape. Not only has the Italian dining scene changed, but the overall dining offering in the city has transformed. Dubai is a great place to be during the festive season as it is a place which is synonymous with celebration. I am particularly looking forward to the return of the Christmas Festival at the Media City Amphitheatre which is full of stalls and has a great atmosphere. Elsewhere in the city there is no shortage of excellent venues to ensure your special occasion is memorable this December. The Beach, a shopping and entertainment venue opposite Jumeirah Beach Residences, will be decked out in full with glittering lights and displays, which makes a beautiful setting at this time of year. For those looking to take advantage of the city’s incredible shopping offering and pick up some gifts, I recommend guests start with a visit to La Marquise jewellery boutique which is conveniently located in the lobby of our hotel. A visit to the world-famous Gold Souk and the Gold and Diamond Park is a must for quality jewellery pieces. Also, in early December, I usually suggest that guests check out Dubai International Jewellery Week at the Dubai World Trade Centre where there are many excellent finds.

At this time of year, guests are often looking for places to dine that are a little bit more special and in Dubai, there are of course plenty to choose from. For me, the excellent menu and ambience at Plantation Restaurant and Terrace here in the hotel is hard to beat. It’s one of the best places in the city for authentic French cuisine. Also, our new executive chef Andreas will be presenting a special festive menu in all of our venues which I think will rival any in the city, we’re very excited about it. For after-dinner drinks, I’m a huge fan of the fantastic venues around Dubai Marina. The views there are spectacular and an evening spent in this lively part of town is a splendid way to enjoy festivities. For those keen to take in city views I recommend an architectural tour of the city, which is offered by several operators. As Dubai is a city whose story is uniquely told through its buildings, this is a wonderful way to take it all in and offers something a bit different. However, for really amazing views, it’s best to take to the skies. Whether in a helicopter, seaplane or hot-air balloon, soaring above Dubai is one of the best ways to appreciate its grandeur and the many different sights and attractions to be found here. Another way to discover more about the region is with a visit to Sheikh Mohammed Centre for Cultural Understanding. It is not only one of the best cultural attractions in the city, but is a fantastic place to gain a deeper understanding of local traditions. Located in a traditional wind tower in Dubai’s oldest quarter, the surrounding area of Al Fahidi Historical Neighbourhood is itself a fantastic draw. Whether joining in a traditional meal, or taking one of their fascinating tours; you cannot come away from this experience without a profoundly different view of our city and its people.
