—— Master perfumer Jacques Cavallier’s passion for crafting scents is never more evident than in a Bulgari creation. Cavallier has collaborated with the luxury French maison for the last twenty years on iconic fragrances such as Aqua Pour Homme and Bulgari Extreme for men but Concierge is especially enamoured with the Eau Parfumée luxury cologne collection that is inspired by the rich aromas of tea. Cavallier was the nose behind Thé Blanc perfume from the celebrated collection, and now, Thé Noir. It has been a very special project, as the perfumer explains: “I love tea. My grandmother was a great tea specialist and when I was eight or nine years old, I used to smell all the different varieties. All those aromas of tea with rose and bergamot as well as Russian and Chinese teas were special souvenirs. For Thé Noir, I evaluated the smell of different black teas and chose one that comes from Yunnan blossoms in China. The smell is smoky but also very floral.”

“To translate tea in terms of perfume is another story because you can’t be too literal. I recreated the tea accord by keeping the tobacco, hay and honey aspects and illustrated the smoky effect with agarwood I bought from Dubai and patchouli for a richer depth,” explains Cavallier, who regards the Middle East as an important source of inspiration for him. “The roots of perfumes are here (in the Middle East) as well as a genuine taste for perfumes. I’ve regularly visited the UAE and Oman for decades and I create perfumes because I think it’s important for the wellbeing of people. In Europe and America today I feel that sometimes people forget that perfumes are part of beauty and allure, but that is never forgotten in this region. People here, especially women, blend and layer scents to create their own signature scent. They are specialists,” he says, adding that fragrances should have its own signature: “There should always be something intriguing about the perfume in order to capture attention and add to a woman’s allure.”

Traditionally Friday was the day for shopping in Abu Dhabi. Vendors gathered to set up their stalls at the local souk and people would buy everything from fruit and meat to household items and material for clothes. The event used to take place at Central Market, which was the nexus of trade in Abu Dhabi until a huge fire destroyed it in 2003. Today, the site is occupied by The Souk at World Trade Centre, an impressive structure designed to recall the traditions of the old marketplace in a sophisticated setting that caters to a new era of commerce in the capital. It’s just one of a growing number of modern-style souks that offer a fresh take on traditional retail experiences in Abu Dhabi and a chance for visitors to browse a broad selection of wares from across the Middle East.

Spread over three floors, shops and stalls at The Souk stock an eclectic variety of items with traditional handicrafts, perfumes and Middle Eastern spices available alongside contemporary clothing labels and accessories. The building’s design reinforces this balance between old and new with a nod to classic Arabian architecture in the lattice woodwork and narrow alleyways leading out onto airy public squares. Modern touches are evident in the landscaped rooftop gardens and the central atrium, which features a retractable roof. The souk forms part of the impressive World Trade Centre Abu Dhabi complex and connects to the neighbouring mall, affording easy access to its many shops, which include the region’s first House of Fraser.

Part of The St. Regis Saadiyat Island Resort, Abu Dhabi, this luxury arcade occupies one of the capital’s most sought-after addresses and caters to visitors with a choice blend of restaurants, retail and entertainment facilities. The Mediterranean village architecture with its terraces, courtyards and piazzas, adds to the holiday ambience of the place, which comes to life at night as people arrive to enjoy the excellent restaurants that have opened up here, including Los Angeles-based Japanese restaurant Koi and Lebanese eatery Abd El Wahab. Saturdays are particularly bustling as local farmer’s market RIPE sets up shop with a tantalising displays of farm-fresh fruits and vegetables as well as stalls selling locally made arts and crafts, jewellery and gift items.

Built around meandering waterways, this atmospheric souk at Al Maqta is set over two levels with stalls that sell everything from jewellery, clothes and accessories to antiques, furniture and art. The venue is equally known for its restaurants – many of which afford spectacular views of the Grand Canal and Sheikh Zayed Grand Mosque. A blend of Arabian and Venetian themes makes this one of Abu Dhabi’s most architecturally striking shopping venues with high arched ceilings and shop-lined alleyways illuminated by Arabian lanterns. Abras (water taxis) can ferry visitors to the neighbouring Shangri-La Hotel, Qaryat Al Beri, which also features a number of excellent dining venues, including award-winning French restaurant, Bord Eau.

A regular feature on Abu Dhabi itineraries, this atmospheric venue at Madinat Zayed is a must-see, whether or not you’re in the market for gold. Those who do come to shop will find that there is no better place to get a good deal on precious metal in the city with rows of shops lined up ready to sell at market price, or even lower for those willing to engage in some friendly haggling. This is the perfect place to tap into the culture and character of the city, and get to know some of its residents while picking up choice pieces of jewellery or even a gold nugget or two. Those here for a longer period of time can opt to commission a bespoke piece, selecting the stones and dictating the design to create a beautiful adornment entirely to taste.

An initiative designed to keep the Bedouin tradition of weaving alive, Sougha provides employment to hundreds of local women from across the UAE. Their beautiful wares include woven bags, purses and baskets featuring colourful designs and stunning details. 11

—— Abu Dhabi’s second city is just an hour away by car and home to a number of interesting souks and markets. The Central or Old Souk is a good place to start with its ramshackle cluster of stalls selling exotic spices, colourful throws and intricate jewellery that offer a more rustic take on the souk shopping experience found elsewhere in the capital. Another place decidedly local in character is the Camel Souk, which offers a unique insight into Middle Eastern culture combined with an opportunity to witness camel auctions and see some of the prize animals with their owners. There are two souks attached to Bawadi Mall in Al Ain – both of interest to the visitor from a retail and cultural perspective. Souk Al Qaws is a souk in the traditional sense in that it provides a place for local residents to purchase all their wares, in addition to banks,

money exchanges, travel agents and other service outlets. Souk Al Bawadi is a more heritage-themed environment with some 50 stalls selling traditional handicrafts and souvenirs. Tucked away on the palm-lined road that runs between the Al Qattara and Al Jimi Oases is the recently restored Al Qattara souk. Established in the mid-20 th century by the late Sheikh Shakhbut bin Sultan Al Nahyan, ruler of Abu Dhabi for a brief period before the position was passed onto his visionary brother, the souk is now home to a collection of stores in addition to a local arts centre which hosts regular exhibitions. For visitors here between the months of October and May, the best time to visit Al Qattara Souk is on Thursdays, Fridays and Saturdays when the weekend handicraft market sets up, offering all manner of locally-made trinkets.

CRAFTING MOMENTS ——— Concierge explores the art of timepiece design with Jaeger-LeCoultre CEO Daniel Riedo

Almost 85 years ago, a revolutionary new timepiece appeared that was to herald a truly different direction for the wristwatch. The Reverso was unlike anything that had come before, presenting a perfect synergy between form and function. A sleek piece that was instantly in demand, the watch introduced clever design features, precision mechanics and new possibilities for personalisation. For the watchmaker behind the landmark model, this was one of many innovations that have continued down the decades. With the 85th anniversary of the Reverso next year, that commitment to craftsmanship reigns supreme at Jaeger-LeCoultre. “It is our capacity to create and to innovate that sets Jaeger-LeCoultre apart. Each year we introduce between three and four new calibres, and between 50 to 60 new watches. No one has the capacity to match this, considering the range of pieces in our past which we can draw inspiration from and reinterpret today,” says Daniel Riedo, CEO. In the time since founder Antoine LeCoultre created the company’s very first pieces more than 180 years ago, a host of legendary chronographs have made their mark. Alongside the Reverso sit horological legends such as the Duoplan, Memovox and Atmos clock, while the Calibre 101, created in 1929, remains the world’s smallest mechanical watch movement. As the company forges ahead, achievements of the past remain at the forefront as classics are celebrated and reimagined. The anniversary of the Reverso in 2016 brings with it the opportunity to breathe fresh life into an icon with plans for a special edition. Riedo says: “With the anniversary coming up, the Reverso will be the focus for next year with plans for many developments including complications

inside. In terms of my own favourite across the Jaeger-LeCoultre collections, the Reverso is definitely it. The watch is, for me, the undoubted icon of the brand.” A well-known tale in watchmaking circles, the birth of the Reverso in 1931 was the result of a chance encounter at a polo match when watch collector César de Trey was challenged to create a watch tough enough to withstand the game. He took the idea to his friend Jacques-David LeCoultre who provided the movements, while watchmakers Jaeger S.A. were tasked with making the reversible case. French designer René-Alfred Chauvot invented the ingenious mechanism and, when the Reverso was unveiled, it boasted a dial that could flip to protect the face from shocks. This in turn placed the emphasis on the case back, which instead faced outwards to present a surface that could be personalised. Much like with the development of an icon like the Reverso, when the idea for a new model comes along at Jaeger-LeCoultre, a team of some of the industry’s most skilled watchmakers rises to the challenge. Some of the pieces take years to complete, as complicated mechanisms are crafted and honed. It is this intricate work that fascinates Riedo. “I didn’t start as a watchmaker, I came to this because I had an interest in micro-engineering. As I went on to learn more about it, and spent time at the Jaeger-LeCoultre Manufacture, the more I realised that at the heart of this craft was a real passion worth sharing with others.” Inside the Manufacture, in the heart of the beautiful Vallée de Joux in Switzerland, a dedication to the fine art of watchmaking is immediately evident. The walls are lined with displays showing

the many horological achievements of the past in a place where watchmakers have spent their lives immersed in the intricate craft. There are more than 1,800 artisans at work here, representing an extraordinary spectrum of skills. From the painstaking work of the gem setter to the artistry of the enameller and miniature painter, each comes together to create exceptional timepieces. For those at work on complicated movements, there is a sense that they are following in the footsteps of industry greats. “At the Manufacture, people are very proud and that is something you can feel. There is no compromise on quality,” says Riedo. “Our artisans stay with us and progress through their careers from working on simple movements to more complicated pieces. Our focus is very much on developing our people. Some have worked with us for a long time; one watchmaker was with us for 49 years. He started at the age of 15 and retired just before he turned 65. “It is great for the younger watchmakers coming through, and is part of their education. We have to think about the connection between mentor and protegé and the ways in which we can transmit knowledge from generation to generation. “But we are never happy or totally satisfied with the design, quality and precision, that is why we continue to push the limits. It really is part of who we are. There are more than 125 people who work just for the development of novelties. We constantly try to go beyond what we are creating and we try to improve the quality every single year.” He adds: “For all of us, it’s about continuously rethinking, looking at what we can improve upon. That’s something we have done for generations, and will continue to do as we look to the future.”

“It’s almost like everything in the UAE has been built to be viewed from above,” says Seawings pilot Cameron Hoyle, as he motions towards Dubai’s iconic skyline. And he’s right – the aerial views of Dubai and Abu Dhabi from the luxury seaplanes are nothing short of spectacular. From the air, sights famed the world over take on an entirely new view. The architecture of Burj Khalifa, the world’s tallest tower, comes into focus as an abstraction of the desert hymenocallis flower, while the largest Scuderia Ferrari “prancing horse” emblem in the world is displayed on Ferrari World Abu Dhabi over Yas Island. “Even if I’m on the same flights over and over, I still look down at Palm Jumeirah and I’m blown away. I also really enjoy flying over Fujairah and through the mountains. Living in the UAE, sometimes we forget that the mountains are so close,” explains Hoyle with a

wistful smile. Mountains are, after all, very special to him. “I lived in the mountains of Banff, Alberta in Canada when I was young which is right on the route for the main jets flying across the country. I still have this vivid memory as a boy of looking up at the sky and seeing a jet fly over with its contrails against the deep blue sky. That really was the start of it all. I can’t remember ever not wanting to be a pilot,” says 32-year-old Hoyle. That interest sparked a passion and, after securing his commercial pilot’s licence followed by hundreds of hours of flight training and practice, Hoyle specialised in seaplanes. He was working in Fiji when he was offered the chance to work for Seawings in 2012. The Dubai-based seaplane tour operator offers aerial tours and exclusive charters to destinations across the UAE, with plans in place to expand routes and experiences in the future.

The Seawings fleet currently consists of three Cessna 208 Caravan seaplanes equipped with luxury leather seating in an air-conditioned cabin and large windows for the best views of Dubai and Abu Dhabi. Every day presents something different for Hoyle, as he explains: “The first thing I do in the morning is check the weather. We’re always concerned about air pressure as that affects the performance of the aircraft and wind speed. Visibility is another important factor, not just because it’s a scenic flight, but for safety reasons. We won’t fly if the visibility isn’t good enough, though that rarely happens. “Interacting with people is what makes every flight special for me. As we predominantly do tourist flights at Seawings, I get to meet

people from all over the world. Sometimes they are really nervous walking down the ramp towards the seaplane but everyone always walks away happy. All through my career I’ve seen that flying in a small plane is always easier for some reason, even for people who are usually scared of flying.” For Hoyle, piloting a seaplane is more than just a job: “I don’t think I could ever get bored of flying seaplanes. Each time the water is always different and so is the wind. There is a whole world to explore and, since there is no air traffic control, you’re the one taking off and landing and making all the decisions. That feeling of adrenaline and sense of freedom – there’s nothing like it.”

In little over a year since opening its doors at Le Royal Méridien Abu Dhabi, Market Kitchen has already managed to become one of the capital’s most exciting culinary destinations. Boasting a modern American concept, the restaurant is inspired by renowned chef Jean-Georges Vongerichten’s take on the “hotel as a home” with an ambience that is reminiscent of a convivial family kitchen, but with an elegant twist. Imagine warm earthy tones and slick black metal complementing the restaurant’s dramatic high ceiling while a tree rises in the centre of the dining space. The food reflects this chic yet wholesome setting. “At the heart of Market Kitchen are clean, simple dishes where locally sourced fresh produce takes centrestage. It features the greatest hits from Vongerichten’s classics including salmon tartare, black truffle and Fontina cheese pizza, soy glazed short ribs, crispy sushi, parmesan crusted chicken and warm chocolate cake among others,” says head chef Jordan Annabi, who joined the restaurant in September last year. Chef Annabi first discovered his passion for the culinary arts while working as a dishwasher. “I loved the buzz of working in a busy kitchen and knew it was something I wanted to be a part of and just built my career from there. I trained in several of the top restaurants in the United Kingdom with chefs like Daniel Clifford, Willie Pike, William Curley, Daniel Gill and Craig Sandle and, now here in the UAE, with my boss Justin Galea.” There’s always something new and exciting happening at Market Kitchen. The restaurant’s signature ‘Market to Kitchen’ cooking class takes food

enthusiasts on a gastronomical journey around Abu Dhabi with visits to the local fish market and fruit and vegetable market while chef Annabi shares tips on selecting fresh catches and seasonal produce. Visitors then return to the restaurant to enjoy a fantastic meal prepared by the talented chef. Market Kitchen is also gaining a reputation for its avant-garde collaborations with top chefs such as Peter Lloyd from Spice Market London and Suzanne Husseini, regionally celebrated for her modern Arabic dishes. “To keep up with the market, innovation is a necessity in our daily life. We infused Asian and Arabic flavours during the recent Spice Market London and Suzanne Husseini’s brunch offerings and this was very well received. It is a bit of a challenge to ensure everything stays true to the concept and ethos of Market Kitchen. Sourcing good quality local produce is also not easy as it’s not very standardised here, but we always strive to support sustainability,” says Annabi. “As a chef I’m always looking forward and my cooking style is always evolving. As a team, Market Kitchen in Abu Dhabi regularly comes up with promotional tasting menus which offer variety between the classics and contemporary with unique combinations,” explains Annabi. 5 SHEIKH ZAYED GRAND MOSQUE Built by the late Sheikh Zayed to help create a bridge between faiths and create greater cross-cultural understanding, the Sheikh Zayed Grand Mosque is a must-see for any visitor to Abu Dhabi. The third-largest mosque in the world, this majestic structure is comprised of over 1,000 columns and 82 domes embellished with semi-precious stones, gold and marble. Inside, the spectacle is equally impressive with glittering chandeliers, spectacular floral motifs adorning the walls and a vast hand-woven Persian carpet in the main prayer hall.

FERRARI WORLD ABU DHABI The first ever Ferrari theme park is home to Formula Rossa, the fastest roller coaster on the planet, which reaches speeds of up to 240 kilometres per hour as well as the Fiorano GT Challenge, which offers an exhilarating simulated racing experience. artefacts at the open museum. There is also a small souk onsite which sells a range of exotic spices and herbs that make ideal souvenirs. Qasr A l Hosn is t he palace and for t around which Abu Dhabi was built. It was first constructed as a watchtower in the 17th century and is currently being restored but will open in time for the annual Qasr Al Hosn Festival in February. The 200 year old Al Maqta Fort, which was also initially constructed as a watch house, can be seen clearly from Al Maqta Bridge. For a closer look, book a tour of the area on a traditional abra boat. It’s also worth spending some time wandering around the Mina Zayed port area where historic old markets for fruit, fish and carpets still trade today. This is where a number of the capital’s restaurants still source fresh produce, while the nearby carpet souk presents a wonderful array of handmade varieties as well as colourful cushions and throws. Friendly bargaining is expected here. Al Ain, fondly referred to as the UAE’s Garden City, houses expansive green oases that thrives thanks to the traditional underground method of irrigation, known as falaj. The Al Ain Palace Museum was originally the palace of the late UAE president HH Sheikh Zayed bin Sultan Al Nahyan. Today it is open to the public as a museum. Lastly, Al Jahili Fort in Al Ain can be found near the city’s public gardens. The restored fort regularly hosts cultural events all through the year. The venue also houses an exhibition celebrating the life of British explorer Sir Wilfred Thesiger who is widely respected in the UAE for his epic journey across the Rub Al Khali or Empty Quarter desert.
