Out of the huge selection available at the Elizabeth Locker Plant’s retail store, 6-year-old Bryson Hundley’s favorite thing to eat is the brisket burger. Bryson proudly gave Elbert County News a tour, complete with commentary, of the entire Elizabeth Locker Plant. His family has owned and operated the plant since 1944. If he goes into the business one day, he’ll be the fourth generation of Hundleys to run it. When H.S. (Harold) Hundley, Bryson’s great-grandfather, moved to Colorado in 1925 at age 22, he couldn’t have known he’d end up establishing a legacy in Elbert County for the next three generations. A mule and horse trader from the East Coast, he wanted to travel to South America but a family member convinced him to come to Colorado. Hundley bought the Russell Gates Mercantile Building in Elizabeth in 1929 and he and his wife Celestine (also called Celeste) ran the business out of that building for decades.
