ISTIOPHORUS: THE MYSTERIOUS SAILFISH

he sailfish is one of the most commonly caught billfish. Due to its proclivity for shallower coastal waters and frequency of ascension to the surface, the odds of catching one of these beauties can be much greater than for other billfish. There is little scientific certainty about the mysterious behavior of sailfish. They exhibit a general migratory pattern throughout the year, but they often break their own rules and show up unexpectedly. Summer sailfish catches are generally more associated with the Gulf of Mexico, yet they do appear on the Atlantic coast this time of year, as well. Sailfishing in the Florida Keys is usually a late autumn and early spring

bite. It can be an absolute catching frenzy. However, in July, following the passage of tropical storm Elsa, sailfish were seen tailing at the surface, cruising the waves along a strong current line off of Marathon Key. It was a bizarre and welcomed phenomenon. The conditions that followed the storm created a concise current line, with greener nearshore waters touching the blue water, and a milky powder-blue highway running down the center. Sailfish were spotted swimming east to west at the top of the waves, and seemed to dive deeper to circle back. The locals are no strangers to this phenomenon that occurs in the Keys. Though the time of year may be unpredictable, anglers are always ready to make the most of it. This type of fishing requires polarized sunglasses and a tower boat. Slowly creeping through the powder blue highway, scan the waves for black torpedo shapes or blobs that resemble black garbage bags. Hunt for the opportunity to sight cast live baits. Without the visual vantage of a tower, trolling lures or bump trolling live bait may be more productive than trying to spot them from deck level. Sailfish truly are an incredible and unpredictable species. Very few have been successfully tagged, and few have held a tag long enough to transmit much information. Of those tagged for up to a year, their patterns were generally erratic. They seem to be extremely transient, foraging and spawning in many different coastal regions, predictably unpredictable, like majestic aquatic gypsies. Commonalities in their behavior are that they primarily stay within a water temperature of approximately 80 degrees; they mostly stay near the surface, rarely diving below 300 feet; and they exhibit extremely curious evening routines. All of the transmissions showed sailfish spending the evening within 30 feet of the surface, descending briefly before sunrise and sunset. They were also observed to be active nightly, seemingly unaffected by lunar phases. or Matt Metelsky, daddy-daughter time with his 17-year-old is a little more involved than a trip to the ice cream parlor. Matt’s daughter Lily is a rising high school senior. She loves nothing more than waking up at 2 a.m. to run 85 miles off Virginia Beach and troll the edge of the Continental Shelf with her dad. In late June, the duo fished the Virginia Beach Tuna Tournament, where Lily placed second in the Lady Angler division with a yellowfin that weighed 39.9 pounds. But that’s not her biggest tuna to-date. Her heaviest yellowfin weighed 44 pounds. She caught it last summer, and at 5-foot-4 and 115 pounds, it took her about 15 minutes to haul it in stand-up with a belt. “I don’t know. We do wood work on the side, so we load wood, and I guess that gives you some back strength,” Lily offered as explanation for feats of fishing strength. “We always stay active. With Dad, it’s work hard, play harder.” Lily’s strength and stamina are a given considering she qualified and is working as an oceanfront lifeguard at Virginia Beach this summer. Matt, however, has another explanation for his daughter’s skill, as well as her love for this hard-core style of fishing. Lily was 5 years old when Matt purchased his Contender 25 with twin 150s. At a tender age, Lily cut her teeth going toe-to-toe with hard-pulling spadefish in 50 feet of water, 20 miles offshore. “I’m thinking the technique she picked up with those spades when she was little just kind of morphed over into the tuna,” Matt said. “It really amazes

me she is able to battle those things stand-up.” Lily began joining Matt for long days offshore when she turned 13. She was 15 the summer of 2019 when she was first physically able to handle a yellowfin—a 26-pounder—by herself. But pumping and reeling aren’t Lily’s only deck duties. She helps rig and bait and steers the boat while her dad deploys an eight-rod spread on the Gulf Stream. Last Jan. 11, she manned the helm while Matt battled a 550-pound bluefin. When the handle on the 50w reel broke under the stress, it was Lily’s idea to improvise with a screwdriver and electrical tape to eventually land that fish. The peak yellowfin season is June and July out of Rudee Inlet. Matt and Lily make five or six trips a summer, often with friends. Normal days consist of two or three tuna, some bonita and mahi, and occasionally a white marlin. Two or three times a year, January and February bluefin trips are just for the two of them. There aren’t many people interested in waiting on one big bite in brutal mid-winter conditions, anyway. “She’s just tough as nails,” Matt said of his daughter. “I don’t know how else to describe it. She’s just tough.” Lily doesn’t seem to perceive any hardship. She considers herself lucky to be able to spend time with her dad on the water. “When we’re out there on the boat, it’s just so peaceful,” she said. “I pretty much sleep the whole time. BAY COUNTY’S

t the mid-point of the Florida Panhandle, St. Andrew Bay dominates the map of Bay County, flanking Panama City on three sides. It’s a 107-square-mile inshore playground that bustles with all sorts of watersports during the heavy tourism months. But there’s a quieter side to St. Andrew. With access points spread throughout Bay County, skinny water is where it’s at for redfish anglers. The water is clear and maintains predictably high salinity thanks to limited freshwater inflow. There are vast prairies of spartina grass, cut through with channels, as well as acres of sand, mud and grass flats. Much of it is accessible only to shallow-draft vessels, and therein is the allure for folks seeking respite 2 FLORIDA

from party pontoons and jet skis. When you’re in less than 2 feet of water, the only other boats you’ll see are kayaks, paddleboards and flats skiffs. “I fell in love with inshore fishing and kayaking here because of the ease and lower expense,” said Josh Damon, who hails from Fountain, Fla., about 25 miles north of Panama City. “I enjoy the tranquility and access to areas big boats can’t reach.” The fishing is good, too. Damon is a passionate angler who enjoys inshore tournaments, so he specializes in redfish on artificials. He said a good day might results in five or six reds from 18 to 24 inches, with a few trout or flounder thrown into a mixed bag. He fishes from a paddle-powered kayak, which is perfectly at home in the one-and-a-half-foot depths he prefers. Redfish are comfortable and free from predatory threats in extreme shallows, and it’s also where the food is. St. Andrew reds grow fat on mullet, mud minnows, pinfish and a variety of other little baitfish. With good visibility, sight fishing is a good tactic. This time of year, there’s usually a good topwater bite in the mornings and evenings, and walking baits are a favorite of many anglers. Damon, however, fishes soft plastics almost exclusively. With tackle modifications, they can be worked across the top, bounced on the bottom or fished anywhere in between. They’re delicate enough for sight casting and also make great chunk-and-wind search baits. “Aside from the versatility of a soft-plastic bait, I don’t want a fish flopping around in the kayak with six hooks,” Damon said. At St. Andrew, Damon’s go-to lure is a 4-inch D.O.A. C.A.L. Shad Tail rigged on a 1/8-ounce 4/0 Screw Lock jig head. He likes the Houdini color and dresses it with Kings Stank Stick, a scent product he said increases hookups. He fishes variations of this set-up, but this basic rig gets the job done. For safety reasons as well effective fishing, planning is key. Damon studies wind and tide before selecting a put-in on a given day. ith the dog days upon us, night fishing can be productive and much more comfortable than slogging it out during the heat of the day. Many fish feed aggressively in the still of the night. They can be

targeted by anglers in multiple ways in different locations. Here are a few options to try. I’ve utilized all three methods and found success with each. • Perhaps the coolest strategy is wade fishing in the dark. Large trout and redfish move unbelievably shallow under the cover of the night sky, and tossing a topwater plug on the flats can result in exciting explosions. I typically wade in the dark without lights, other than a headlamp for changing lures or unhooking fish. With vision impaired, your sense of hearing is on high alert. Nighttime is quiet on the water, which makes the commotion of a topwater take startling. It can give the impression that a fish is larger than it really is. That’s part of the excitement of a topwater bite! For safety reasons, I only wade at night in areas I know well and have fished many times. • Another way to beat the heat is to focus on dock lights. This can be done from the dock, a kayak or a boat. Many canal homes have lights, both under water and above the surface. Lights attract baitfish, which in-turn attract the gamefish we target. Trout, reds and snook are all drawn to baitfish around lights at night. I like to target these areas with smaller lures. In this situation, I’ve had a lot of success throwing my Knockin Tail Lures, which are soft-plastic paddletails with a built-in rattle. Small, lipped hard baits can also be very productive around canal lights. I prefer natural colors, with some shade of white or clear and some silver mixed in. • Fish also feed around rock jetties at night. The setup for this bite requires a little more work, but it can yield terrific results. When jetty fishing, I bring a generator and two 1,500 watt stage lights. These areas typically have more current, so I fish slightly larger lipped hard lures, but I still go with the smallest lure I can work properly in the current. I stick with the same color pattern as mentioned earlier. The channel and surf side of the rocks can both be productive depending on the tide, water clarity and bait presence. I recommend pointing one light in each direction until you determine which areas have the best conditions. Night fishing definitely brings new challenges, but it can offer some of the best catching of the summer. Remember, safety first and don’t fish alone. Capt. Reports Look Mighty Good

eports from a few of the historic scalloping hotspots indicated a very good beginning to the season. Capt. Katie Jo Davis, of KD Outdoors Fishing Charters, said scalloping out of Crystal River and Homosassa has been great. “It’s been fantastic. It’s been a lot better year than the last few to be sure,” she said. “They have also been larger than in recent years. The quantity and quality are very good, and I expect it to continue into August and September.” Davis said they are finding scallops six and seven at a time in 2 to 6 feet of water. She took her 6-year-old out, and it took them about an hour to get their 2-gallon limit. Up in Steinhatchee, there are reports of plentiful scallops. Headed north out of the river, scallopers are seeing tons of scallops in 6- to 7-foot depths. The bottom is loaded with them, but they are on the small side. Headed south, scallops are running larger, but there are not as many. Either way, quick limits are being reported. With the bulk of the season still ahead for most of the scalloping zones and Gulf County opening up this month, it’s shaping up to be a mighty good year for scallops. Community Joins Together for AustinBlu Foundation’s 3rd Fishing Tournament

The AustinBlu Foundation and the River Center hosted the 3rd AustinBlu Foundation Land and Sea Fishing Tournament. This unique tournament offered two competitions for anglers: a harvest competition and a catch and release tournament. Over 90 anglers were registered to compete in this stacked competition. With lines in the water at 7:00 AM, anglers had until 4:00 PM to submit or weigh their catches in-order to be considered for prizes. Anglers in the catch and release tournament used the Fish On app from Reeltime Apps to submit catches to our River Center judges. The more fish they caught, the better their chances of winning. By the closing of the event, over 600 catches had been submitted for judging! Contestants in the harvest competition weighed their largest catch at our AustinBlu weigh-in station. Anglers could submit fish for 4 Grand Prize different categories: sheepshead, jack crevalle, snapper (any species), and checkered pufferfish. The winners, Ella and competition was steep, but twin sisters Ella and Gracie Greaton managed to catch a 15-pound jack Gracie Greaton. crevalle, which brought them into the Grand Prize position. This is the first year we have had a girl win grand prize! Fish on ladies! After the fishing, the fun kept rolling with awesome vendors like Mang Gear, a prize-packed raffle, and food trucks from local eateries Smac Shack, Little Moir’s Food Shack, and Kona Ice. We had over 225 people attend the award ceremony and festivities. Participants went home with amazing swag buckets filled with items from our generous tournament sponsors. Winners of the competition were awarded cash prizes, with a grand prize of $500! We hope to continue this tournament opportunity in the future inorder to support a great local cause, the AustinBlu Foundation. The 5th Annual Crossing for Cystic Fibrosis Recap 140 paddlers endured an 80-mile journey from Bimini, Bahamas to Lake Worth Beach, FL in the Fifth Annual Crossing for Cystic Fibrosis. This year was the most challenging year yet with paddlers battling swells up to 6 feet high due to the weather. The first paddlers crossed the finish line in 11 hours and 1 minute with the last at 17 hours. The finish line was filled with tears of joy and champagne showers as paddlers celebrated by ringing the bell with Thor’s hammer. “This year The Crossing truly exceeded our expectations coming off 2020 when the event was canceled. As a grassroots organization, we are so grateful the community rallied, and our participants set a new fundraising record. This was a powerful comeback to rebuild the momentum, and it shows the strength and resolve of the people who show up each year to make this one of the greatest endurance events in the world” Founder & Executive Director, Travis Suit, stated. Piper’s Angels Foundation, which puts on the event, raised a record high of $645,000 this year. FISHINGFORECAST FISHING WITH DARCIZZLE By Darcie Arahill Contributing Writer

August will bring light south and southeast winds and calm seas to South Florida. The air temps in the upper 80’s and low-90’s with humidity making it feel like 100-105 degrees and afternoon thunderstorms is what August will surely bring. What does this mean for fishing? Offshore fishing is generally slow in South Florida during the warm summer months, but there is certainly opportunity! I suggest you get out there early before the hot sun sends the fish down deep. Mahi are typically on the small side in August, but if you search for those weed lines and debris up to 20 miles out you can still catch dinner on most days. This is the time for all the small boat owners to take advantage of calm seas and keep running out searching for fish and covering water. Closer to shore, there should be a decent king bite but be sure you target them in the early morning. Using live goggle eyes on a “kingfish rig” or trolling spoons will do the trick to catch kings. Bonita are thick and should remain so through August, they are lots of fun on light tackle, but if you are not a fan of this fish simply save them up for bait; chunks or strips—they usually get scarce as soon as you need them! Summer also brings the best wahoo bite, especially around the full moons. We like to high-speed troll with big cowbell lures around 15kts, but some other favorite “regular” speed trolling baits include a bonito strip under a pink sea witch, a split-tail double-hook rigged mullet (with or without the sea witch) and the always popular ballyhoo under a blue/white or black/red Ilander lure. Don’t forget to

do some bottom fishing before you go in, the snapper bite should be good, and you can catch dinner. Inshore and at the inlets it’s snook spawn time! Live baits such as pilchards, greenies, sardines, and croakers will catch snook at the inlets. Be certain to go fishing when the water/ current is moving fast as this gets the bait moving so plan your trip accordingly. Snook fishing is a lot of fun and does not take a lot of gas, money, or time. Of course, next month we will all be looking for the start of the annual mullet run of bait fish, it’s a very exciting time both inshore and along the beach. FISHINGFORECAST SOUTH COUNTY INSHORE & FRESHWATER By Capt. Patrick Smith Contributing Writer

Welcome to the August fishing forecast for Palm Beach County. Nearshore you should be able to get into king fish pretty easily, just look for the fleet and fish the same approximate depth. Drifting live pilchards or frozen sardines will get you hooked up. Remember, it is a good idea to use a small trace of wire for those toothy critters, but do not go too heavy with it. Next, I head towards the beach to look for schools of tarpon, where a live bait or crab is going to be the ticket with them. Remember to keep your distance as they are easily spooked. Big snook will be in the inlets and at piers, please use heavy tackle to shorten the fight and make it easier on the breeders. Freshwater can be a little tougher with hot temps, but still good. I fish early and late avoiding the midday where water temps are in the mid 90s. Under docks and structure will be the key and fish slow. Live shiners are always good, but if you like artificial then I would try a suspending twitch bait or unweighted fluke. The key is to keep the bait in the strike zone as long as possible. Capt. By Brian Nelli Contributing Writer INSHORE: Summer heat is here! The beaches and inlets are still your best bets for snook fishing. Bucktail jigs and live bait fished near the bottom around the mouths of the inlets work well. Fishing these areas in a kayak can be dangerous. Be aware of tide and boat traffic at all times. On an incoming tide you can launch right at the south jetty at Jupiter inlet. Fish the outside and drift in the inlet with the tide. Fighting the tide in the inlet will be a challenge so maximize time on the outside jetties. OFFSHORE: The offshore bite will slow as usual this time of year. Running the normal depths of 90’-220’ off Boynton Beach and Palm Beach will still produce sailfish, small kings, and tuna, but with lower numbers. Look to run out 5-8 miles to find the dolphin bite. Most will be small, but there are chances for a big bull. The wahoo bite is also something not to forget about. Nate Shellen Contributing Writer In the past, we have experienced many great years of pan fishing. this year has provided some of the best summertime catches of shellcracker I can ever remember. Of course, the big bluegill are caught in the same areas as the shellcracker, but anyone that has eaten freshly caught and fried shellcracker filets know exactly what I am alluding to. The tremendous run of shellcracker started on the full moon in April and has continued each moon phase up through August. How long it will continue remains to be seen. With the water level in the 12 to 13-foot range, the panfish stay mostly to the outside edges of the vegetation, some even fanning spawning beds into the lake, where the water is still only 2 to 3 feet. The primary baits have been grass shrimp, red worms, and crickets. Many anglers target and catch large numbers of bluegill on a fly rod and popping bugs when they are in such shallow water. Bass fishing tournament anglers have found that it takes 5 bass that weigh 25 to 30 pounds to win a tournament on the lake. The numbers of quality-sized bass in the 5 to 10-pound range caught this summer has been staggering, and these bass are growing each season getting bigger and fatter. During the summer months, we try to get onto the water before sunup, to take advantage of schooling action that takes place along the outside grass lines. Bass can be seen and heard blasting baitfish, such as shad and shiners, in the cover and sometimes well out into the lake. When they are schooling on bait, a spinner tossed well back into the grass and worked toward the outside edge can present heart-stopping action. Some mornings we catch 8 to 12 bass, and the action ends quickly, other days we may catch 35 to 40 in the first couple of hours. The catching can end in a second and the rhyme or reason eludes me but the sun rising higher into the sky is certainly one reason. Once they quit eating the spinnerbait, we switch to soft plastics, flukes, speed worms, and Senkos being a key part of our arsenal. Those anglers who want to target only large bass very often will opt to flip and pitch matted vegetation or thick clumps of bulrush with creature-style baits. There are many styles, configurations, and colors of creature-style baits, some use a jig with a trailer others use a punch skirt and creature baits. There really aren’t any secrets. The best anglers in the world are those who spend their time on the water consistently, dissecting depth and cover changes like a surgeon, taking advantage of every possible angle to get the most out of each area that may hold bass. Many amateurs, however, will stay in an area that is not producing for them, especially if they have caught bass there before; know when to move and be decisive about your game plan, are all keys to success. Captain’s tip: As a rule, always use the lightest weight possible when fishing with plastics. It won’t inhibit the action built into the bait. As the water temperature has increased over the last month, we have found ourselves using heavier weights to get the bait right on the bottom in the face of the fish. We are also finding better success by using a slower presentation. Inch the bait along to keep it in the strike zone for as long as possible. The water level has risen just enough that the outside grass lines are fishable. It requires shutting down the boat well offshore of the spot and idling into fish, but it is well worth the effort. We haven’t been doing too much fishing since we do not have a boat to use. However, soon we will have the Nor-Tech 392 Superfish, and we will be able to fish! Although we haven’t been able to fish much, Tuppens did host the 13th annual Lake Worth Fishing Charity Tournament. There were 31 boats signed up and it was nice to have this tournament since not many were going on. A lot of our friends came and fished the tournament. Overall, it went super smoothly, and the winning fish was a 26 pound king. The fishing conditions during the tournament weren’t the best. Lots of weeds offshore made it almost impossible to wahoo fish or troll. A lot of decent kingfish were caught, and despite the bad weed conditions, two nice wahoo were also caught. It was a great time, and the crowd was lively. Everyone got in the raffle, stayed for the awards, and had some awesome barbeque by Firehouse Grill compliments of the Palm Beach Yacht Center. We are looking forward to hosting this event next year and I encourage everyone to fish in it. It’s a laid back, fun tournament and you will have a great time with your friends and family.

Something of Beauty By Keith Lozott Contributing Writer

As to the title of this article I will say what I witnessed in the St. Lucie Inlet the other evening was indeed something of beauty. My buddy Gary and I had an evening fishing session chasing snook in the inlet early, followed by bridge fishing for monster snook after dark. We started the late afternoon out hoping to avoid a big storm that spared us. We could see rain and lightning just to the north moving away allowing us to make the trip a success. We headed out of Sandsprit Park and ran to the inlet looking to catch some snook on artificial baits. Once we arrived at our spot it was not long before we started getting a few blowups on topwater plugs, which is always the most exciting way to catch any fish in my mind. I started seeing bait pods of small minnows or baby pilchards making their way down the bank when a few snook would blast them giving away their location. We would cast a topwater right where the last blast was spotted and get hooked up almost straight away. We must have landed three quarters of a dozen fish each. The action on the topwater was a thing of beauty, but what I was about to witness I hadn’t seen in this magnitude at any point in my time fishing for snook! Both Gary and I were releasing a couple of 21 inch fish that looked like twin males (smaller fish are males and then change sex to female once they reach a larger size) when one of the coolest things I have seen took place. I’m used to seeing the extremely aggressive jack attack on wary schools of mullet when fishing on the flats, but I’ve never seen an all-out assault by at least fifty snook flying out of the water hitting schools of bait. The snook looked like a school of mullet during the mullet run coming out of the water. I could clearly see the distinct black line, the yellowish tail, silvery white body on each fish breaching the water in total mayhem. This action continued on and off for ten minutes or so as each bait school passed. I found myself just watching fish feed like I’ve never seen before. I have seen snook crush baits but never in such huge numbers and it was a site to see! I hope the next time I get out on the water to fish it will produce another amazing experience. I guess I can say every day on the water is a great experience that I should remember to never take for granted. Fight for clean water and get outside and enjoy the great outdoors. Culinary Delight!

How to Smoke Fish By Mark Ambert Contributing Writer One of the most rewarding ways to prepare and cook your fresh catch is in a smoker! Oily fish make especially good candidates for smoking and are often overlooked as table fair. Some of the dyer fish like amberjack also make excellent choices and can be mixed with the oiler fish for an excellent fish dip spread, please refer to last month’s article for proper care and cleaning prior to smoking. THE SMOKING PROCESS Brining fish - First we begin with brining to cure and prepare fish for smoking. I like to use one gallon of fresh sea water or tap water mixed with the following: • 6oz of sea or Kosher salt (lg grain) • 2 cups of dark brown cane sugar • 2 tablespoons Onion powder • 1 tablespoon garlic powder • 3 – 4 tablespoons soy sauce • 5-pound bag ice Make sure all fish chunks and filets are submerged and covered in brine. I use a small Igloo (24 can) 17 QT cooler with tall sides. I leave them to marinate for a minimum six hours and usually overnight. Once done, lay them on large serving plates layered in paper towels and placed in the refrigerator to dry and get tacky to the touch. This will take around two hours. Longer is ok. You can prepare the glaze and smoker for use while the fish are drying. GLAZING - This is the ingredient that really brings smoked fish to the next level – the glaze! I like to use Tequila 1800 Silver as the secret ingredient of choice that fuses everything together. In a medium size bowl, add the following: • 2 cups dark brown sugar • 4 tablespoons honey • 3 tablespoons melted butter (1min microwave) Now slowly add ¼ cup of Tequila stirred in slowly and only until the ingredients are a thick creamy paste. Too thin and it will run off the fish instead of sticking like a thick paste. This paste will melt and adhere to the fish as it slowly cooks in the smoker so make sure it’s thick! I then heat the ingredients in the microwave for approximately one minute to get things to blend into a glaze. If it’s too thin just refrigerate for a few minutes before applying to the fish. The above ingredients will be enough to glaze four racks in a medium sized smoker like the one pictured here. You should have enough glaze left over to apply a second coat one hour in and a third light glaze 20 minutes before removing the fish from the smoker.

SMOKING - I prefer an electric smoker for fish as they have a more controllable even burn. Prepare your smoker by coating the racks with an aerosol non-stick spray oil such as Pam and preheating to 225 degrees. Cooking time is dependent on the amount of fish and the efficiency of your smoker. If you have all racks full, I suggest 225 for a starting temperature and two hours cooking time. At that setting, actual operating temperature will be approximately 180 – 190 degrees. Based on four full racks and after pre-heating to the desired temperature, total smoking time is approximately 1.5 to 2 hours. You can lower the temperature if needed after the first full hour of smoking. I like an internal temp of 140 degrees for fish so if you have a thermometer, you can use it to gauge when the fish is done. Insert it into the largest piece and remove the fish when internal temperature reached 140 degrees. The fish should be moist and ready to flake apart when touched with a fork. I like mine a little on the dryer side, but this is a personal preference. For wood chip choices I prefer fruit trees for fish with apple being my favorite. Hickory and mesquite seem too heavy a flavor for fish but again – your preference. An alternate would be cherry. Make sure to buy bags that contain a wood chip size that will fit your smoker wood chip tray. I use a drip pan with no water inside the smoker to collect moister. NEVER wet or soak wood chips when smoking fish. I prefer a dry smoke for flavoring fish. I place all my fish in an oiled food basket or on a tray before placing in the smoker. The fish is glazed on the top only. As the glaze heats and melts, it will run down the sides and coat the bottom of the fish. If you glaze both sides of the fish, the bottom tends to thicken and burn as the glaze melts. I like a rubber bristle glazing brush to apply. Place the trays with the thickest pieces closest to the heating elements.

Monitor your progress every half an hour. My smoker has a window for viewing and a way to insert extra wood chips without opening the door. This keeps the temperature even inside and I only need to open the door to add the glaze. I add wood chips every half hour, but this is a preference. You can add them less frequently to control the strength of the smoky flavor. Once complete, remove the trays and allow the fish to cool for several hours at room temperature before final processing. At this point, it can be refrigerated for eating, freezer bagged for storage, or prepped for making dip (see the recipe included in last month’s article). CLEANUP - One final note on properly maintaining your smoker. I clean mine after every smoke. Not just the grills and removable parts. I clean the inside with a BBQ grill cleaner and organic degreaser. I apply the grill cleaner while the smoker is still hot, close the door an let sit while cleaning the shelves. I flush mine out with a freshwater hose and allow it to dry before storing. Leave the smoke vents open for air circulation, cover, and store. There is nothing worse than the aftertaste of a dirty grill or smoker! Now once you’re ready, sit back and enjoy your efforts. Serve your smoked fish with cream cheese, chives, capers, and your choice of cracker – enjoy! Smoked fish makes great gifts and has created an entire food swapping network for me with select family and friends. No one will believe how you’ve transformed these often-overlooked fish into a fine culinary creation!

The summer months are always slow for shooting sports. Some may think it picks up, but it’s the opposite. People are out on vacations, enjoying amusement parks, boating, fishing, camping, and hiking. The upside is that with a slowdown the manufacturers get caught up with some of their back logs. If you have time in between all those other summer activities, check out the Palm Beach Shooting Sports Complex by the south entrance of the Corbett Wildlife Management Area. They have now opened their Sporting Clay Range, with the 5 Stand to follow shortly. The trap and skeet fields are coming along but not ready just yet. The rifle and pistol range have been opened for a while now. With the COVID restrictions lifted, you do not need an appointment to go now. The Sporting Clay Course is a great mix between easy stations and some more challenging ones. Finally, we have a nice course here in PBC. I don’t mind traveling to the 2 other public courses in Okeechobee County, but 40 minutes beats an hour and 20 minute drive any day. If you don’t mind the heat then take a ride and check them out, if not October is right around the corner. We are looking forward to those beautiful South Florida fall and winter days of smoking them clays.

FISHINGFORECAST PALM BEACH IN & OFFSHORE By Capt. Weston Russell Contributing Writer

Welcome to the August fishing report for West Palm Beach, Singer Island, and the waters up to Jupiter. You can expect calm morning waters followed by rainy afternoons. The weather plays a big part in your fishing adventure this time of year. If you plan on heading offshore looking for dolphin you should start early to avoid any weather issues in the afternoon, especially if you are going out swordfishing. You do not want to hook the fish of a lifetime and be drawn out on a six hour fight while lightning and thunder roll around you. August is also a great time to catch yellowtails on the reef. During July, there were some really big yellowtail flags taken after the cold water upwelling. Along with the flag yellowtails were some jumbo vermillion snappers; August should hold the same. If you are fishing and not getting bites, try different depths and maybe try lighter leaders. Snappers have keen eyesight and can recognize when things are abnormal in the water. The big ones are smart (that is why they are big)! On the beach there will be schools of tarpon hanging out down at the end of the condos by MacArthur Park. These fish like live sardines or thread fins so if you are going to target these fish load up on your live bait. A big rod and strong anglers are needed to land one of these silver monsters. Remember, it is illegal to pull them out of the water Offshore will hold sweet dollies. This one was landed on the troll. unless you have a permit. For anglers that like to fish the edge of the Gulf Stream, there will be chances for smoker kings, cobia, and summertime sailfish; try fishing the waters north of the Singer Island condos. The 130’ depth should get you the shot you’re looking for. I like to fish some deep and some on the top; covering all the columns of water are important because fish swim at all different depths. If you want to step up your game, throw out a chum bag and watch them come to you. There have been a lot of sharks around but riding with some of those sharks will be cobia on their backs. Keep a big spinning rod with a bucktail jig ready to cast to any cobia you may see. Reel them in quickly because sharks like to eat them too. If you have a shark chasing your cobia it is best to open up the bail and let the cobia swim away from the shark. Then when he is in the clear, lock it down and start the fight over. Best of luck! I want to end this report with some stuff that really bothers me. You know plastics are destroying the ocean. If you see anything plastic, please make the effort to pull out your gaff and get it in the boat and out of the water. Think of it as practice for gaffing fish. Thank you for your help. August provides stellar action for species inside the ICW and along our beaches. Grab your rod and get ready for some rod bending action. Snook continue to be the main target for anglers along the beaches using live bait and D.O.A. lures like the D.O.A. C.A.L. 4 inch Jerk Bait in bayou tiger or pearl worked in the troughs. While cruising the beach be sure to have a keen eye looking for any signs of life like bait schools and any dust clouds from fish you may have spooked. When working the shoreline be sure to cast parallel with the beach making a long cast for best results. The inlets are another great spot for red hot snook action. When fishing the inlet target moving water for best results. Live baits fished on the bottom are the best way to hook up with a snook. For all you artificial lure lovers, nothing beats catching a monster snook jigging the inlet. A D.O.A. C.A.L. 4 inch Jerk Bait in bayou tiger or Arkansas glow on a 3/8 ounce jig head Chris with a snook boat side.

triggers strikes. The key is to have the bait near the bottom and present a natural presentation. The snook range in size from 10 to 30 pounds. Tarpon! Aka the silver king, where the best time to target this fish is sunrise and sunset for best results. The tarpon can be seen rolling on the surface just off the beaches and inside local inlets. Inlets are prime location for the tarpon, fish the edge of the inlet with live baits free lined for best results. Usually, the first of incoming and outgoing are the best tides. The average size of the tarpon is 15 to 50 pounds with bigger fish found on the beaches. The ICW is full of bait provoking lots of action for anglers targeting a variety of species from trout, snook, tarpon, jacks, and triple tail. Docks and seawalls are the prime location for all the above species along with mangrove shorelines. The best time to fish is early morning and late afternoon due to cooler Rick with a water temps. FISHINGFORECAST JUNO BEACH PIER

By Lauren Eissey, Loggerhead Marinelife Center Contributing Writer It’s a month of mixed emotions for anglers on Juno Beach Pier (JBP). It’s almost that time for kids to put down their fishing rods and return to the classroom whereas adult anglers are reclaiming the pier on weekdays. Both can reunite on the weekends for some friendly fishing competition! This month, we welcome balmy temperatures of 89 degrees and slight reprieve with lows of 77 degrees. Pier goers can anticipate coming across Spanish mackerel, croakers, blue runners, crevalle jack, and catch and release snook. Anglers can catch the year-round Spanish mackerel by using live bait on lures and jigs. Spanish mackerel favor quick moving bait; however, they are not picky to cut bait, squid, shrimp, and mullet. Lucky anglers can whip up a finger-licking roasted mackerel with simple seasonings like garlic and paprika. Use live bait fish to reel in crevalle jacks, then use the jacks as bait for greater catches. Fun fact on the jacks – they can produce croaking sounds by grinding their teeth together while releasing gas from its air bladder. Blue runners are slightly smaller than the jacks, and are also frequently caught at the pier. Experts suggest catching blue runners with fish, shrimp, or squid as bait. Atlantic croakers are commonly surrounding the pier and can be identified by their silvery-gray or bronze, iridescent head. These bottom feeders tend to prefer crustaceans, mollusks, and small fish. Try using whiting, sand perch, or squid strips as bait to catch croakers. Considered a fatty fish, croaker contains high levels of omega-3, which is packed with nutrients to help keep your heart, lungs, blood vessels, and immune system working the way they should. Until snook season opens on September 1, anglers can catchand-release snook using cut and live bait. You can identify them by its distinguished black stripe running along the lateral line of the body. Don’t be surprised to find some snook during your next visit!

Throughout sea turtle nesting season in Palm Beach County, the JBP adjusts its angling and spectator hours to accommodate nesting and hatching sea turtles. From March 1 through October 31, the pier opens a half hour before sunrise and closes at sunset each day. Turn to Loggerhead Marinelife Center (LMC) and Florida Fish and Wildlife Conservation Commission for best practices regarding sea turtle safety. As part of LMC’s Responsible Pier Initiative, the JBP practices sustainable fishing and recycling. Please dispose of used monofilament lines in the designated recycling containers and report any accidentally hooked sea turtles. LMC offers private fishing lessons for adults and children (eight and older). One-hour lessons are offered daily and scheduled based on availability. t’s hot. The bass are transitioning, and the fishing can be very fun if you can locate them. Generally, summer bass are chasing baitfish. This can group fish up and make them eager to eat easy meals off the surface. Whether you’re throwing a walking bait, a buzzbait or even a popper, topwater lures can do some extreme damage in the heat of summer. When targeting fish chasing bait near shallow water, I like a popper-style bait or a bait that kicks up water, like a buzzbait or a Whopper Plopper. Bank dwellers usually chase bluegill and shad. They can be very aggressive and fun to target. Always keep your eyes peeled for movement and baitfish activity when you’re working down the bank. Bass won’t be far from this activity. Often times in the summer, fish group up near deeper water to harass large schools of baitfish. The baitfish will be different from lake to lake and region to region, but the patterns will be similar. Focus on points and humps, where the fish can push and ambush bait. These deeper fish tend to show themselves, and you’ll sometimes see them schooling on top or chasing bait near the surface. Keep your eyes and ears open

for activity. When schooling activity occurs, you want to get a bait in the mix as quickly as possible. I like a walking bait for this scenario and throw Spook-style baits like

the size of your lure to the size and shape of the baitfish will result in more bites. Always look for activity, and be ready when the opportunity presents itself. Summertime is an awesome time to fish, and it’s my absolute favorite time of year to throw a topwater.

Topwater Gear When targeting fish chasing bait near the shallows with a popper or a buzzbait, I like a shorter rod for more accurate casts. I use a 13 fishing 7’ 1” MH Omen Black casting rod paired with an 8:3:1Concept A reel spooled up with 20-pound monofilament or 40-pound braided line. When chasing schooling fish in deeper water, I like a longer rod for longer casts. I use a 13 Fishing 7’ 5” Omen Black casting rod paired up with an 8:3:1 Concept A reel spooled with 30-pound Seaguar Smackdown braid. The braid and the long rod pair up to allow long casts to get the bait in the strike zone when fish come up schooling far from the boat. The fast gear ratio reel is important in both the shallow and deep scenarios. This applies to the following areas: • All Florida waters of Manatee County north of State Road 64, including all waters of the Braden River, and all tributaries of the Manatee River, excluding all waters of Palma Sola Bay. • All Florida waters of Hillsborough County. • All Florida waters of Pinellas County, excluding all waters of the Anclote River and its tributaries. “While it’s unfortunate that we must do this so close to the recent reopening of these species to harvest in this area, we know temporary catch-andrelease measures such as these are successful in keeping fisheries sustainable throughout red tide events such as this one,” said FWC Executive Director Eric Sutton. “We will continue working with our partners, stakeholders and local communities to evaluate this situation.” “We’ve seen the devastation to the redfish, trout and snook populations in Tampa Bay, and we support the catch-and-release initiative taken by FWC,” stated Brian Gorski, Executive Director of Coastal Conservation Association Florida. “In working with FWC on this initiative, we’ve heard support from members and guides throughout the region who also understand the need for such a change. We must protect the fish and our waterways so that generations to come can enjoy the thrill of catching one of these iconic species.” Regulations outside of those counties remain unchanged, including the measures south of State Road 64 in Manatee County through Gordon Pass in Collier County for snook, redfish and spotted seatrout. CAMP FOR TROUT DEEP IN THE SMOKIES By Nick Carter

hen the boat dropped us off Friday morning, it was with an understanding someone would return for us Sunday afternoon. We debarked into two nights and three days of camping and trout fishing deep in the Great Smoky Mountains National Park. With no cell service or road access for miles in any direction, we were about as disconnected as you can get in this part of the world. It was a glorious feeling. Actually, one of our guides, Jake Tallent, of Fish Tales Outfitters in Franklin, N.C., had a satellite phone/EPIRB “for emergencies.” Around the campfire one night, he admitted using it to text his girlfriend. Guess the whole out-of-touch and roughing-it fantasy is a little outdated these days. We weren’t really roughing it much at all. Tallent and our other guide, Nick Potts, rolled cartloads of gear up the trail to our campsite near the mouth of Hazel Creek. Three other clients and I sat in camp chairs and got to know each other while the guides set up camp. That set the mood for the weekend. The camping was comfortable, everything was provided for. All we were expected to do was fish hard, enjoy ourselves and return to hot meals around a campfire each evening. Hazel Creek flows through high mountains on the north shore of

North Carolina’s Lake Fontana. Road access to the north shore was completely cut off in the 1940s, when TVA flooded this impoundment of the Little Tennessee River. Abandoned, the communities that existed there returned to the forest. In three-quarters of a century since, it has become one of the most beautiful and historically intriguing areas of the Smokies. The best access is by boat across the lake. Proctor, N.C. is the ghost town on Hazel Creek. The town’s main drag, Calico Street, is now the gravel trail that parallels the creek for 15 miles up into the hills. Ruins of Proctor are hidden everywhere in the creek and up steep wooded hillsides. Tallent regaled us with history as we passed landmarks hiking upstream in search of good trout water each day. The creek itself is on the large side of typical for the park. It is cold and clear with a relatively flat gradient that makes for easy streamside hiking. A mix of boulder-strewn stretches and bedrock shoals create interesting holding water. There are also some deep, dark pools. Hazel Creek is loaded with beautiful 7- to 12-inch stream-born rainbow trout. There are also some big browns lurking in the deep holes. Over three days of fishing, we caught good numbers of fish with simple dry-dropper rigs on 3- and 4-weight fly rods. There’s nothing more fun than wading up a mountain stream to toy with wild trout that are eager to jump on a dry fly. Hazel Creek is a gorgeous place to do it.
