George Gregan is one of Australia’s most celebrated rugby union players and a respected philanthropist. As the most capped Wallaby in history, he captained his country with distinction and became known worldwide for his leadership, determination, and sportsmanship. Beyond the field, George co-founded the George Gregan Foundation, which has raised millions to support children’s health initiatives and build all-access playgrounds across major Australian cities. Today, he continues to inspire through his charitable work, entrepreneurial ventures, and passion for travel, wellness, and family.

t feels like only yesterday that the George Gregan Foundation (GGF) partnered with Phil Harte and his incredible Classic team to create Children’s Playgrounds in Brisbane, Canberra, and Sydney — a partnership that spanned 14 years, from 2005 to 2019. What began as an ambitious dream became a remarkable reality. Together, we raised millions of dollars to build these all-access playgrounds, offering children and families a place to play and connect while receiving world-class care in hospital environments.

During this time, we were also proud to fund 19 Fellowships dedicated to improving the diagnosis and treatment of epilepsy in young children and their families. The driving force behind this mission was deeply personal — our son, Max Gregan, who was diagnosed with epilepsy in October 2004.

None of this would have been possible without the hard work and dedication of so many people, and especially Phil and his Classic team. Their genuine care, understanding, and ability to foster trust among

everyone involved played a huge role in the success of the GGF. I know that other charitable organisations who have worked with Phil and Classic would share the same sentiment.

Each year, the Classic Book embraces a new theme and supports a range of worthy causes, raising millions of dollars and providing vital assistance to those in need. Some of these include:

• CareFlight Rescue Services

• Cure Our Kids

• Bear Cottage (Hospice in Manly)

• Women’s Legal Services – supporting domestic violence initiatives alongside Dame Quentin Bryce

• SpinalCure Australia

• Vinnies – in support of the homeless

I want to extend my heartfelt thanks to all the partners and sponsors who have supported Phil and his Classic team over the years. Your generosity and belief in their vision have helped turn countless dreams into reality. Cheers, George Gregan

PUBLISHERS NOTE

Thirty-one years doing anything is a feat in itself. But when your work is constantly scrutinised, judged, and compared in an industry far outside your comfort zone, there’s a unique sense of pride— and deep humility—when you rise above the pack and earn recognition for your efforts.

The Classic has now been honoured twice as Book of the Year and charity activation of the year —not only for its voluminous offering, but also for its philanthropic spirit.

For more than three decades, The Classic has shone a light on those less fortunate, drawing extraordinary support from our generous corporate partners and friends. Together, we have raised millions of dollars, directing them each year to causes that make a tangible difference—from Women’s Legal Services supporting survivors of domestic violence, to the Vinnies Vans feeding the homeless, to SpinalCure Australia, tirelessly pursuing a cure. Each edition has aimed to surpass the last, with compassion at its core.

Over the years, we have never shied away from calling out wrongs where we saw them. In 1998, we challenged the Catholic Church with our “Jail the Pope” edition, exposing the scourge of child abuse. In 1999, we took aim at the International

Olympic Committee and the FIFA board uncovering corruption and vote-selling. We have also held up an unflinching mirror to Sydney’s homeless crisis, giving voice to the shame and humiliation endured by so many. And now, looking ahead, the 2026 Best in Class Edition will be our boldest yet. At four kilograms, it will be the largest in our history, showcasing only the very best in hotels, airlines, fashion, cars, restaurants—and, most importantly, the triumph of the human spirit.

As always, The Classic will dazzle with its spectacular imagery, thanks to the brilliance of our photographic team. Danielle Harte, Tony Hewitt, Dominika Ferenz, and Cam Bloom. A special note of gratitude goes to our gifted creative team, led by Creative Director Tayla Harte, from EDIT Agency whose creativity brings each page to life.

After thirty-one years, The Classic is more than a book—it is a legacy of storytelling, advocacy, and hope. And the best, as ever, is still to come.

Harte and his wife Danielle, the charming, clever photographer. They invited me to give the keynote address on International Womens Day. It was a fabulous occasion celebrating inspirational women in our country. I was deeply moved by the artistry of the superb portraits on the walls which were later published in the “Agenda Series”. Proceeds of that memorable event were donated to the Women’s Legal Service Queensland which has for 40 years provided expert advice and support to women whose lives are devastated by domestic and family violence.

There isn’t a single definitive “world’s biggest” fashion show, but the title usually belongs to the Big 4 Fashion Weeks—New York, London, Milan, and Paris. These events dominate the global fashion

calendar, attracting thousands of attendees and generating enormous cultural and economic impact. While one-off events like the Met Gala hold prestige, the Big 4 remain the most comprehensive, trend-setting showcases in the industry.

What makes the Big 4 significant? Seasonal collections, Designers debut their Spring/Summer and Fall/Winter lines, shaping trends for the year ahead. Global influence, these shows attract designers, buyers, press, models, and fashion enthusiasts, driving billions into local economies.

Trendsetting powers, that dictate the future of style, while also cementing their host cities as the world’s fashion capitals. Working alongside Alex Schuman and the Carla Zampatti team, I experienced firsthand both the extraordinary possibilities and the gaps preventing Australia from fully claiming its place on this global stage.

A SYDNEY MOMENT TO REMEMBER

From May 12–16, 2025, the Carla Zampatti team transformed the boardwalk outside the Museum of Contemporary Art into a breathtaking fashion mecca. With the Sydney Opera House on one side and the Harbour Bridge on the other, the stage was set for two unforgettable hours that rivalled any runway in the world.

In the weeks leading up to the show, I had the rare privilege of spending time inside CZ headquarters, documenting the artistry, discipline, and magic of a premier Australian fashion house at full throttle. It was an experience I will never forget.

THE FUTURE VISION

If Australia is to join the ranks of the Big 4, bold collaboration is key. My vision? Pair Alex and the CZ team with VIVID Sydney, which takes place shortly after Fashion Week. Imagine the fusion of high fashion and one of the world’s most spectacular cultural light festivals.

VIVID SYDNEY IS AN ANNUAL FESTIVAL OF LIGHT, MUSIC & IDEAS HELD OVER THREE SPECTACULAR WEEKS IN SYDNEY TOGETHER, THEY COULD SEDUCE THE GLOBAL FASHION WORLD AND SHOW—DECISIVELY—HOW THINGS ARE DONE HERE IN AUSTRALIA.

n May 2025, Carla Zampatti returned to Australian Fashion Week with a powerful statement, not just about fashion, but about the future of the brand. Set against the unmistakable backdrop of the Sydney Harbour Bridge, Opera House and city skyline, the show marked a defining moment for Carla Zampatti: a house built on legacy, committed to leading the next chapter of Australian fashion.

The event was ambitious in scale; 60 models, an open-air runway, and a city backdrop framing the stage. Earlier in the day, heavy rain created moments of uncertainty, but by the time the show began at 6pm, the skies had cleared. The rising full moon and harbour light created a striking atmosphere. It was a reminder that even in a high-pressure environment, calm and clarity can arrive right on cue.

Surrounded by many of the country’s most accomplished women across business, politics, and culture, the runway celebrated Carla Zampatti’s deep connection to the lives of Australian women. From the boardroom to the red carpet, the brand designs with purpose, clothing that reflects ambition, confidence, and independence.

The collection drew on house signatures; sculptural silhouettes, structured tailoring, and rich fabrications, reworked with a modern point of view. It was evening and everyday wear designed for today: powerful, sharp, and relevant. The vision remains consistent, to help women feel like the most confident version of themselves.

The show was called Ubiquity. It celebrated the whole Australian fashion industry, inviting 14 fellow Australian designers to present their interpretation of Carla Zampatti’s legacy. Carla’s daughter Bianca Spender, alongside legendary fashion legends such as Akira Isogawa, Romance Was Born, Michael Lo Sordo and Toni Maticevski showcased their bespoke looks, with by the sweeping musical score, commissioned for the show by Gary Sinclair.

Media coverage reached across Australia and around the world, affirming Carla Zampatti’s place in the global fashion conversation. At the same time, the show was a proud celebration of Sydney, a city that continues to shape outlook and energy around the world. It felt fitting to share this moment in the heart of the harbour, where past, present and future meet.

CZ also acknowledged the creative partnerships that enrich the brand’s world, including a quiet nod to artist Lindy Lee, whose sculpture at the front of the MCA, resonated a link to the collaboration with the artist in 2023 - a symbol of reflection, continuity, and creativity.

DUBAI DOESN’T JUST DO LUXURY— IT DEFINES IT. THIS GLITTERING METROPOLIS HAS MASTERED THE ART OF EXCESS WITH IMPECCABLE TASTE, TRANSFORMING INDULGENCE INTO A LIFESTYLE AND THE IMPOSSIBLE INTO EVERYDAY REALITY.

A DESTINATION WHERE EACH MOMENT UNFOLDS AS QUIET WONDER, AND EVERY DETAIL SPEAKS TO THE ART OF REFINED LIVING. FROM SUNLIT HORIZONS TO STARLIT NIGHTS, LIGHT GLIDES ACROSS OCEAN, MARINA, AND SKYLINE, REDEFINING MODERN COASTAL GLAMOUR. WITH ITS PRIVATE MARINA, PRISTINE BEACH, AND ELEGANT SPACES TO GATHER OR RETREAT, JUMEIRAH MARSA AL ARAB IS NOT SIMPLY A RESORT—IT IS A NEW CHAPTER AT THE WATER’S EDGE.

aving called Dubai home since 2008— and now a frequent visitor—I’ve had the privilege of watching this city evolve from a bold vision into one of the world’s most compelling destinations. I’ve witnessed architectural icons rise, technologies transform everyday life, and, perhaps most impressively, the city’s hospitality sector ascend to global eminence.

But to achieve the rarefied title of “Best in Class,” a property must do more than dazzle. It must be led by visionaries who understand that true luxury lies in guardianship, detail, and experience. That journey began with finding the right leader—a master general to orchestrate this next chapter. The appointment of Mr. Harun Dursun as Managing Director of Jumeirah Marsa Al Arab was more than a strategic move; it was a statement of intent.

What followed is nothing short of extraordinary.

Conceived by acclaimed architect Shaun Killa, the creative mind behind the Museum of the Future,

Jumeirah Marsa Al Arab is not merely a hotel—it is a masterpiece of modern hospitality. Shaped like a futuristic super yacht and perched on its own private peninsula, it completes Jumeirah Group’s oceaninspired trilogy alongside Jumeirah Beach Hotel and the Burj Al Arab.

Knowing Harun as I do, he is a master of cultivating exceptional environments, surrounding himself only with the very best in class. It is therefore no surprise that he has appointed Matthew Rowlette — a distinguished sales and marketing executive with over two decades of global experience in the luxury hospitality industry — to lead the sales and marketing team. Matthew brings transformative commercial strategies that strengthen revenue growth, elevate brand positioning, and deepens guest engagement.

His leadership journey spans key roles across multiple luxury brands, and I have had the distinct pleasure of witnessing both Harun and Matthew at their absolute best for more than a decade.

Harun DURSUN

MANAGING DIRECTOR AT JUMEIRAH MARSA AL ARAB, DUBAI

At Jumeirah Marsa Al Arab, modern elegance is the balance between design, innovation and emotion – a superyacht-inspired architectural statement infused with warmth, joy, and generosity. For us, elegance is not about excess; it’s about intuitive service, serene spaces, and details that quietly elevate every moment. Jumeirah Marsa Al Arab is more than just a place to stay; it’s a lifestyle destination designed to inspire and host intimate cultural exchanges. At its heart lies a commitment to intuitive, personalised service, where every guest interaction is guided by warmth, generosity, and joy.

Jumeirah Marsa Al Arab completes a trilogy of Jumeirah properties on Dubai’s coastline alongside Jumeirah Burj Al Arab and Jumeirah Beach Hotel. Beyond its architecture, what sets it apart is the intimacy of each space, the bold culinary scene with 11 restaurants and four destination bars, the 3,500 sqm wellness haven, and our commitment to making each stay unique, through our signature, warm and generous Arabian hospitality. Guests are often surprised and thrilled by how private and secluded the resort feels, despite its scale. We are also celebrated for offering one of the most generous breakfasts at The Fore – you can expect caviar with your eggs, the freshest oysters and seafood platters, dim sum, Levantine mezze, a colourful variety of pastries and fruit selection plus so much more.

Marsa’s seamless integration of architecture, interiors, and landscape makes me really proud. Architect Shaun Killa has created a landmark that feels futuristic and timeless, while the interiors draw inspiration from Italian Riva boats and Arabian sunsets. Details like self-shading terraces and natural light ensure sustainability without compromising beauty. I’m proud of how the design reflects both Dubai’s bold vision and a softer, more personal side of luxury. The lobby lounge, for example, reimagines the traditional Emirati majlis with mashrabiya screens that softly divide the space into seven refined, private settings.

The cultural richness of the space is further elevated by our collaboration with UAE-based designer Nadine Kanso, who created exclusive Arabic calligraphy tableware in partnership with Bernardaud. It’s a subtle yet powerful expression of our values – elegance, identity, and a deep connection to our heritage. Together, these elements transform the lobby into more than just a gathering space; it becomes a living tribute to the spirit of Jumeirah Marsa Al Arab.

Our guests value privacy, wellbeing, and the luxury of time. Increasingly, luxury is defined by personal space, freedom of choice, and the ability to truly disconnect and recharge. Our guests privilege distinctive dining experiences, as well as interactions with art and culture. We believe people make the place, and our diverse team bring this philosophy to life every day, creating a culture of global connection and thoughtful spirit.

From the moment you arrive, Jumeirah Marsa Al Arab doesn’t just welcome—it envelops. Over the course of three unforgettable days, we found ourselves immersed in a world that constantly redefined possibility. A standout moment?

Discovering an entire floor of restaurants that, by evening, transformed into a kaleidoscope of new dining experiences—each one more captivating than the last.

One morning, I enjoyed a tranquil breakfast overlooking the Arabian Gulf, the Burj Al Arab rising like a sculpture in the distance. That very evening, I returned to the same seat— now surrounded by moody lighting, elegant ambience, and exquisite Japanese cuisine. These seamless transitions—from sunrise serenity to culinary spectacle—are Jumeirah Marsa Al Arab’s signature.

EACH DAY BEGAN WITH A PANORAMIC VIEW OF THE ARABIAN SEA, THE ICONIC BURJ COMMANDING THE SKYLINE. AT MOST RESORTS, THE CITY OUTSIDE BECKONS. HERE, YOU NEVER WANT TO LEAVE. THE FOMO IS REAL.

Our mornings often started with a workout at the state-of-the-art gym, followed by a steam and a leisurely beachfront stroll. From there, we were spoiled for choice: jet ski adventures, a day on a super yacht, or simply lounging poolside until lunch at IIiana—a stunning eatery inspired by the effortless flavours of the Greek islands.

Afternoons unfolded with drinks by the pool, surrounded by the architectural brilliance of the Jumeirah Group on all sides. With a stretch of pristine white beach and the sea gently kissing the shore, it felt dreamlike—a scene that demanded a pinch to believe.

Dinner offered yet another delightful dilemma. Do you lean into the grandeur of The Rialto, a glamorous Italian restaurant and bar? Or surrender to the spell of Kinugawa, a symphonic fusion of Japanese precision and French elegance? I often chose the latter. It became a personal favourite—equal parts seductive and sublime.

As our three days seemed to evaporate far too quickly, the memories will linger far longer. The magic of Jumeirah Marsa Al Arab is not just in its beauty, but in its ability to create moments that imprint.

Having been part of Dubai’s hospitality scene for over 15 years, I can say with certainty: this is a new benchmark. Jumeirah Marsa Al Arab isn’t simply an evolution—it’s a revolution. A breathtaking leap forward that challenges the global luxury industry to reimagine the limits of possibility.

A FOOD

AS ALBERT EINSTEIN ONCE SAID, “IMAGINATION IS MORE IMPORTANT THAN KNOWLEDGE.”

JUMEIRAH MARSA AL ARAB, THAT PHILOSOPHY ISN’T JUST QUOTED—IT’S LIVED.

GUESTS VALUE PRIVACY, WELLBEING AND THE LUXURY OF TIME. INCREASINGLY LUXURY IS DEFINED BY PERSONAL SPACE FREEDOM, AND CHOICE AND THE ABILITY TO TRULY DISCONNECT

Being my eighth trip to London this year, I never tire of that seamless blend where tradition meets classics and effortlessly fuses with modern luxury. It’s late September, and the city is basking in perfect autumn weather—crisp, brisk mornings that give way to warm, golden afternoons. My schedule is packed: catching up with good mate and now local Wallaby legend George Gregan, and completing my final UK review for the year.

AS YOU KNOW, LOCATION IS EVERYTHING IN LONDON. THE JUMEIRAH CARLTON TOWER BOASTS ONE OF THE MOST ENVIABLE ADDRESSES—JUST A TWO-MINUTE STROLL TO HARRODS AND A STONE’S THROW FROM THE DESIGNER BOUTIQUES OF SLOANE STREET.

The hotel has long been a focal point of the neighborhood, and as I check in, I’m eager for my first gym session. From the treadmill at The Peak Fitness Club & Spa, I’m greeted by panoramic views of London. The club is renowned as one of the best in the city, fitted with Technogym’s most advanced equipment. I finish with a swim and steam before retreating to my suite.

It’s been a few years since enjoying the Peak and what was really cool was the members eatery open for breakfast lunch and dinner again with those spectacular views across London.

My Junior Suite is a perfect blend of classic elegance and timeless décor—featuring a king-size bed, oversized towels, luxury amenities, and, to my delight, personalized lambswool slippers. Designed with an emphasis on light and space, the suite exudes tranquility. Balconies frame sweeping views over Cadogan Gardens and the city beyond.

That evening, review number one takes me to Chinoiserie, the cornerstone of Knightsbridge’s social scene. Known for its award-winning afternoon tea and refined international cuisine, it doesn’t disappoint. I enjoyed delicate tempura prawns followed by a perfectly cooked medium-rare sirloin, my guest, Wallaby legend George Gregan opted for the signature lamb biryani—a dish as impressive as its reputation.

With a day to spare it was time to take advantage of the world class wellness spa and a 90 minute deep tissue treatment and a steam was a god send. Having been in town for only seventy two hours daily workouts become essential so always check that your hotel has a good gym and spa, it’s a sure way to combat jet lag.

So now at 4am, I find my self at the lobby waiting for the traditional black cab and that final ride to Paddington and onto the Heathrow express, the good news is I get six hours sleep back in the Qatar Airways Qsuite to Doha.

DOHA’S SKYLINE is a showcase of cutting-edge architecture fused with Arabian artistry. From the Museum of Islamic Art by I.M. Pei to the futuristic National Museum of Qatar by Jean Nouvel, the city offers a visual feast that marries heritage with avant-garde design — perfect for travelers seeking beauty and sophistication.

Entertainment is equally bespoke. With the latest films, shows, and music curated for discerning travellers, Qsuite transforms long-haul flights into cinematic escapes. When you fly Qatar Airways, the indulgence begins long before you arrive.

MANDARIN ORIENTAL Doha

eading into Doha, I was scheduled to review Qatar’s premier luxury address — the Mandarin Oriental. From the moment I landed, the experience was seamless.

Immigration was effortless, with a dedicated first and business class arrivals lounge — no queues, no waiting. Within five minutes of disembarking, I was kerbside, greeted by the hotel’s car and on my way into the city.

Check-in was swift and discreet, leading directly to my suite — my familiar suite, 607. The space is the epitome of refined luxury: a marble spa bath, acres of crisp towels, a separate lounge and study, walk-in wardrobes, and even a private butler’s closet. Waiting for me was a personalised welcome — an elegant selection of hand-crafted chocolates, fresh dates, fruit, and a dozen bottles of chilled water.

After a smooth Sydney–Doha flight, departing at 9:45 p.m. and arriving at 4:15 a.m., I managed a full eight to ten hours of sleep. Feeling refreshed, I headed straight to the gym for a morning workout and steam before my 8:30 breakfast meeting.

Dinner on the first night was reserved for Liang, the hotel’s signature Cantonese restaurant. Translating to “beaming light reflected by the moon,” Liang delivers precisely that — a glow of excellence and elegance. Under the mastery of authentic Cantonese chefs, the menu is exquisite: delicate dumplings, beautifully balanced stir-fries, and flavours that rival Hong Kong’s finest. Without question, Liang is the best Cantonese restaurant in the Middle East.

Stepping out, I couldn’t resist a stop at the hotel’s artisanal gelato creamery, a sweet surprise that perfectly captures Mandarin Oriental’s attention to every indulgent detail. Day two was filled with meetings, yet I made time for the essentials — sunbaking in the pool, a revitalising spa treatment, and a morning workout in the Technogym-equipped fitness centre, finishing, as always, with my daily steam.

THE POOL DECK WAS AN OASIS AMID THE 48-DEGREE ARABIAN SUMMER . SHELTERED CABANAS OFFERED A COOL REPRIEVE, COMPLETE WITH COMPLIMENTARY FRESH JUICES, ICY TOWELS, AND BUCKETS OF CHILLED WATER — THOUGHTFUL TOUCHES THAT TRANSFORM ENDURANCE INTO INDULGENCE.

As the home of Qatar Airways, Doha is an ideal stopover hub — and the Mandarin Oriental makes it impossible not to linger a few extra days. Whether you’re in transit or planning a stay around the Qatar Grand Prix, this property defines contemporary Middle Eastern luxury with timeless precision.

Doha has long been a gateway city — but with experiences like this, it’s quickly becoming a destination in its own right.

BEYOND ITS MODERN OPULENCE, DOHA OFFERS AN AUTHENTIC CONNECTION TO QATARI CULTURE THE SOUQ WAQIF’S WINDING LANES, TRADITIONAL DHOW CRUISES ALONG THE CORNICHE, AND CURATED CULTURAL EVENTS AT KATARA CULTURAL VILLAGE BLEND SOPHISTICATION WITH HERITAGE, APPEALING TO TRAVELERS SEEKING BOTH DEPTH AND INDULGENCE.

andarin Oriental’s acclaimed collection of luxury hotels, resorts, and private homes has redefined the global benchmark for hospitality.

Perfectly situated in the world’s most prestigious destinations, I’ve had the privilege of experiencing several properties; from London’s Knightsbridge, New York’s Central Park, Paris, Doha, Munich, Prague, Santiago, and of course their flagship in Hong Kong. With each visit, Mandarin Oriental welcomes you with its unwavering legendary service, epitomizing 21st-century luxury while remaining deeply rooted in the timeless values of the Orient.

As with every journey, I ensure time for a restorative ritual: a ninety-minute spa treatment complete with massage and steam. Each property features a world-class gym powered by Technogym innovations, alongside award-winning spa and wellness facilities. Inspired by Oriental philosophy and authentic rituals, these sanctuaries artfully blend ancient techniques with modern innovation, creating serene spaces that feel both unique and universal.

In today’s world of endless loyalty programs — airlines, rental cars, hotels — few truly stand apart. Yet Mandarin Oriental’s I’m a Fan program remains a personal favorite. More than a recognition program, it’s an invitation into a world of flexibility, exclusivity, and personalized touches. Each stay brings not only member-exclusive privileges but also unexpected gestures of generosity, elevating every journey into something remarkable.

Cake

Heston Blumenthal’s cuisine draws equally from Britain’s culinary heritage and modernist technique, reimagining childhood memories, historic recipes, and forgotten traditions with wit and reverence. The result is food that feels at once intellectually playful and deeply comforting. Few dishes express this philosophy more eloquently than his iconic Tipsy Cake. The dessert was once a modest indulgence of brioche, custard, and fortified wine; in Blumenthal’s hands, it becomes something sublime.

Brioche is roasted on a rotisserie until deeply golden, soaked in fragrant sherry, and paired with caramelised pineapple and silken vanilla custard. The balance is exquisite—rich yet refined, nostalgic yet unexpected. More than a dessert, the Tipsy Cake is an invitation to linger, evoking the warmth of historic dining rooms and the quiet decadence of a bygone era, distilled into a moment of modern luxury. Do yourself a favour & make sure you try this!

BEING A CHEF, I INEVITABLY MAKE A BEELINE FOR THE RESTAURANTS, AND MANDARIN ORIENTAL NEVER DISAPPOINTS. AMONG THE MOST MEMORABLE EXPERIENCES:

MANDARIN ORIENTAL HYDE PARK

Home to three outstanding restaurants, including the two Michelin-starred Dinner by Heston Blumenthal. The team continually reimagines British classics with seasonal finesse, reaffirming its place as one of London’s finest culinary destinations.

PRIVATE DINING

Tucked within a labyrinth of exquisitely adorned rooms, the private dining room offers an intimate and decadent escape. Wood paneling, low ceilings, and crystaldripping chandeliers set the perfect stage for unforgettable gatherings.

MANDARIN ORIENTAL Mayfair

n arriving into London I was quietly excited to review the Manderin Orientals latest offering, having enjoyed the flagship Knightsbridge, the latest edition nestled in the upmarket district of Mayfair was boasting some remarkable unique culinary offerings as well as some spectacular luxury accommodation.

In a neighbourhood long defined by heritage façades and grand dames of hospitality, Mandarin Oriental Mayfair arrives not with bravado, but with quiet confidence. This is luxury that doesn’t shout — it whispers. From the moment you step inside, there is a distinct sense that something different is unfolding: contemporary, residential and effortlessly refined, yet unmistakably Mandarin Oriental in its DNA.

Guest reviews consistently speak of a “quiet revolution,” and it’s easy to see why. The design language is calm and assured — warm timbers, honed marble, bespoke joinery and subtle Asian influences layered with London references. The result is an atmosphere that feels more like an elegant private residence than a traditional hotel, offering a sense of calm that is increasingly rare in the heart of Mayfair.

Rooms and suites set a new benchmark for comfort. Spacious layouts, plush furnishings and intuitive high-tech controls create an environment designed for living, not merely sleeping. Complimentary minibars stocked with thoughtful signature items elevate the experience further, while palatial marble bathrooms — complete with deep soaking tubs and generous rain showers — deliver a spalike ritual at the start and end of each day.

Dining is a headline act - the hotel is home to globally celebrated chef bringing their signature flair to London.

Dishes such as the now-iconic tuna pizza and Dynamite Lobster draw both hotel guests and in-the-know locals, cementing the restaurant as one of Mayfair’s most soughtafter tables. Above, the Hanover rooftop Bar offers a sophisticated retreat — cocktails crafted with precision, city views unfolding softly, and an ambience that feels exclusive without being exclusive.

Wellness is equally compelling. The spa is a sanctuary, anchored by a striking star-lit lap pool, vitality pools, steam and sauna facilities, and a sleek, modern gym. While some guests note that the vitality pool jets can be energetic rather than meditative, serious swimmers and wellness devotees will appreciate the focus on function as much as indulgence. Service, as expected from Mandarin Oriental, is largely

exceptional — warm, intuitive and personal — though early reviews suggest the occasional growing pain typical of a new opening. Minor construction noise has also been reported by some early guests, though this is expected to fade as the property fully settles into its stride.

Overall, Mandarin Oriental Mayfair is more than just a new hotel, it is a meaningful addition to London’s luxury landscape. Sophisticated, tranquil and confidently modern, it speaks to a new generation of luxury travellers who value discretion, design and genuine comfort over overt opulence. In Mayfair, this is a new standard — and one that feels perfectly timed.

Unfortunately a couple of nights in town was a real tease at the Mandarin Oriental Mayfair, there is no doubt, I will be back!

In an increasingly crowded culinary landscape, genuinely original dining experiences are rare, which made my visit to SOMMSI by Jihun Kim at the Mandarin Oriental Mayfair, London all the more anticipated.

An exclusive chef’s table limited to just 12 seats, SOMMSI presents a Korean-inspired tasting menu crafted for a select few. Set within an intimate and elegant space, guests are invited to observe the artistry behind each course as Chef Jihun Kim seamlessly fuses traditional Korean techniques with contemporary precision. Thoughtfully composed and meticulously executed, every dish contributes to a refined and elevated journey unlike anything else currently found in London.

MANDARIN ORIENTAL Munich

fter boarding Qatar Airways flight QR57 from Doha’s Hamad International Airport, our European adventure was only just beginning. With the glamour of Dubai and the sophistication of Qatar behind us, we set our sights on Munich—a city that seamlessly blends old-world grandeur with modern affluence.

Touching down after a smooth seven-hour journey, we were welcomed by the rich cultural tapestry of Germany’s most elegant city. For the next three days, our home would be the iconic Mandarin Oriental, Munich, a flagship property located at Neuturmstraße 1, 80331 München.

This intimate 71-room hotel is a true benchmark of luxury. Nestled in a historic building, the property exudes refined elegance, effortlessly combining timeless architecture with state-of-the-art amenities. It’s the only hotel in Munich offering a rooftop pool and bar— a true urban sanctuary with sweeping views of the city skyline.

Culinary experiences here are exceptional. Matsuhisa, the hotel’s signature Japanese-Peruvian restaurant by Nobu Matsuhisa, offers exquisite flavors in a sleek, contemporary setting. But it’s at Ory Bar, recently crowned the best hotel bar across Germany, Austria, and Switzerland, where evenings take on a life of their own. With its edgy design, avant-garde cocktails, and a DJ booth tucked into a corner sound desk, nights here seamlessly flow into mornings—one handcrafted cocktail at a time.

Evenings begin in style at the Moët & Chandon Champagne Lounge in the lobby, where guests gather before Matsuhisa opens its doors. Just steps outside, Munich’s luxury fashion houses, buzzing street cafés, and vibrant food markets beckon. Whether it’s a traditional bratwurst or schnitzel washed down with a litre of beer, the city delivers local flavour with unmistakable flair.

All too quickly, our three-day stay drew to a close. At 5 a.m., it was time to bid the city farewell. Auf Wiedersehen, Munich—until next time. Hopefully sooner, not later.

OUR SUITE WAS A HARMONIOUS BLEND OF HISTORIC CHARM AND MODERN LUXURY. ORIGINAL ARCHITECTURAL FEATURES COEXIST BEAUTIFULLY WITH CUTTING-EDGE WELLNESS TECH, INCLUDING A FULL TECHNOGYM SETUP AND A PRIVATE STEAM AND SAUNA EXPERIENCE—TRANSFORMING OUR STAY INTO A RESTORATIVE RETREAT.

Three days in the German capital left us captivated—and wanting more. But what elevated the experience from memorable to magnificent was our stay at Mandarin Oriental, Munich—a hotel that isn’t just “best in class” but a true benchmark for global luxury. Sophisticated yet warm, with flawless service and elegant surroundings, it was the kind of hospitality that stays with you long after checkout. But our journey wasn’t ending there.

As the city still slumbered, we made our way to Munich Airport. A brisk passage through customs, a moment of calm in the lounge, and then we were airborne—bound for a destination I had dreamed of visiting for decades: Prague.

IN ITS BALANCE. HISTORIC BEER HALLS AND GOTHIC TOWERS COEXIST WITH REFINED MODERNISM—CLEAN-LINED MUSEUMS, DISCREET CONTEMPORARY ADDITIONS, AND PERFECTLY JUDGED URBAN PLANNING.

MUNICH’S ARCHITECTURAL LUXURY LIES

MANDARIN ORIENTAL Prague

tepping into Prague feels like walking into a living storybook. Formerly part of Czechoslovakia, this city has weathered the torment of World War II and decades of communist rule. Yet today, it emerges as one of the most desirable cities in the world—resilient, radiant, and rich in cultural memory.

Over just three short days, Prague revealed itself as a jewel in our travel crown. From the cobbled streets of the Old Town to iconic landmarks like Charles Bridge, Prague Castle, and St. Vitus Cathedral, every step brought us closer to its deep, layered history. We were mesmerized by the Astronomical Clock, wandered through Gothic courtyards, and gazed over the city from the Petřín Lookout Tower.

A

City Reborn Through Time

The city’s architectural tapestry is nothing short of enchanting: a perfect blend of Gothic, Renaissance, and Baroque structures that have been remarkably preserved. But Prague is more than a historical showcase—it pulses with a contemporary energy, offering quality of life and aesthetic beauty in rare balance

Tucked within a former 14th-century monastery, Mandarin Oriental, Prague is a seamless blend of old-world charm and modern indulgence. With its quiet courtyards, serene ambiance, and monastic architectural details, the property feels less like a hotel and more like a hidden sanctuary.

We arrived at the St. Mary Magdalene gate, where ancient stone walls told stories of centuries past. Inside, the welcome was warm, and anticipation high. Moments later, we found ourselves standing in front of the Lobkowicz Suite.

WHAT AWAITED US WAS BREATHTAKING: A HIGH-CEILINGED, SUN-DRENCHED LIVING ROOM, A GRAND CORNER BEDROOM WITH CURATED HISTORIC TOUCHES, AND A LUXURIOUS STONE-CLAD BATHROOM BATHED IN NATURAL LIGHT. THE ENTIRE SPACE FELT MORE LIKE A PRIVATE RESIDENCE THAN A HOTEL SUITE —RICH IN ATMOSPHERE, LAYERED IN TEXTURE, AND BEAUTIFULLY FINISHED DOWN TO THE SMALLEST DETAIL.

PRAGUE IS OFTEN CALLED THE “CITY OF A HUNDRED SPIRES,” AND FOR GOOD REASON. ITS IMMACULATELY PRESERVED GOTHIC, BAROQUE, AND ART NOUVEAU ARCHITECTURE PROVIDES A VISUALLY STUNNING BACKDROP FOR HIGH-END EXPERIENCES.

It 's a city that doesn’t just invite you in— it lingers with you, long after you leave.

As always with Mandarin Oriental, wellness is not an afterthought—it’s an integral part of the experience. The fitness and wellness centre, open exclusively to hotel guests and private members, offers a quiet, upscale retreat from the city’s energy. Equipped with state-of-the-art Technogym equipment, the gym is designed to support even the most refined workout routines. Beyond the gym, the spa and wellness retreats are destinations in themselves. Signature treatments, tailored classes, and tranquil spaces are all carefully curated to support recovery, balance, and inner calm.

Whether it’s a morning stretch, a personalized massage, or a full day of restorative therapies, Mandarin Oriental, Prague ensures your wellbeing is always a priority. In every sense, Prague exceeded expectation. Its deeply woven history, vibrant present, and optimistic future are all on display. Add to this the worldclass luxury and discreet charm of Mandarin Oriental, Prague, and what you have is a travel experience that is not only unforgettable—but transformational.

INCLUDING VENICE ON THIS YEAR’S ITINERARY WASN’T A DIFFICULT DECISION— THE CHALLENGE, AS ALWAYS, WAS TIMING. VISITING THE WORLD’S MOST DREAMT-ABOUT CITY IN THE HEIGHT OF SUMMER IS NOT FOR THE FAINT OF HEART. YET, EVEN AMID THE TOURIST TIDE, LA SERENISSIMA SOMEHOW MANAGES TO CAST HER SPELL, OFFERING MOMENTS OF QUIET MAGIC BETWEEN THE CROWDS.

This trip marked a return to a personal favorite: the Hilton Molino Stucky Venice, a former 19th-century flour mill turned architectural gem on Giudecca Island. Set at the mouth of the Grand Canal, it remains one of Venice’s most underrated luxury retreats—offering refinement, serenity, and the best skyline views in the city.

With over 350 rooms and suites, a world-class spa, expansive meeting spaces, and fine dining options, it blends the charm of Venice’s history with Hilton’s global standard of service. The hotel’s design pays homage to its industrial roots while delivering comfort with Italian elegance.

t's greatest asset? Location. Perched just five minutes across the canal from the bustle of San Marco Square, the Hilton Molino Stucky feels like a wellkept secret—private, peaceful, and perfectly connected. An hourly water shuttle whisks you across the water, delivering you to the epicenter of Venetian life—luxury boutiques, candlelit trattorias, and landmark galleries— without the constant foot traffic.

Over our three-day stay, the rhythm was slow and restorative. Mornings began with access to the hotel’s fitness center and spa; day three featured a rejuvenating massage that left me ready to take on the canals again. Afternoons were spent exploring, walking, and— naturally—eating. But it was the Skyline Rooftop Bar that truly captured my heart. Cocktails here are more than drinks—they’re events. Watching the sun dip behind Venice’s spires and bell towers while the Grand Canal glows gold is nothing short of spellbinding.

Our final evening was a celebration of taste and elegance at Aromi Fine Dining, the hotel’s signature restaurant. With its creative Venetian-inspired menu, impeccable service, and waterfront terrace, it was the perfect arrivederci to a city that knows how to seduce you, again and again.

As our water taxi awaited, the morning sun cast long shadows across the canal. We were almost alone, gliding through Venice’s watery arteries, the city slowly waking up behind us. It was a cinematic exit—one that reminded me that even after all these years, Venice still has the power to surprise, to move, and to stir the soul.

Our next adventure was calling—but as always, Venice stayed with me, lingering like a favorite perfume, long after we had left.

BILBAO: WHERE INDUSTRY MEETS ICON

Our journey opened in Bilbao, a city that has evolved with the refinement of the wines that define its region. Once a gritty industrial hub, it has gracefully reinvented itself as a sanctuary of contemporary design and cultural depth. At its center rises the Guggenheim Museum—a luminous masterpiece of steel and glass, and the emblem of Bilbao’s remarkable rebirth.

We strolled along the Nervión River, where cuttingedge architecture blends seamlessly with the textures of classic Basque heritage. By evening, we found ourselves in intimate pintxo bars, savoring exquisite bite-sized creations that revealed the stories, seasons, and soul of the Basque Country, each paired with a glass of local wine that further anchored us to the place.

Bilbao’s metamorphosis from industrial port to cultural powerhouse offers the modern traveler an immersion in world-class art and avant-garde design. Private, afterhours access to the Guggenheim, curator-led gallery experiences, and VIP entry to exclusive exhibitions allow luxury travelers to experience the city’s creative heartbeat in its most privileged form.

SAN SEBASTIAN: THE SOUL OF BASAQUE COUNTRY

After two serene days in Bilbao, we boarded a bus east toward San Sebastián, a seaside gem that feels almost dreamt into existence. Nestled along the Bay of Biscay, the city radiates an effortless elegance—from the graceful curve of Playa de la Concha to the culinary treasures hidden throughout its cobbled Parte Vieja.

We wandered the bayfront promenade, dropping in and out of pintxo bars where local wines accompanied unforgettable bites: silky jamón ibérico, bright anchovystuffed peppers, and velvety croquetas. In just twentyfour hours, we tasted more than we could tally—each dish a small masterpiece. With full bellies and light spirits, we walked to the station at dawn, ready for whatever our journey would bring next.

San Sebastián’s iconic La Concha Bay, one of Europe’s most glamorous urban beaches, sets the stage for experiences that blend natural beauty with refined indulgence. Private yacht outings, bespoke surfing lessons on Zurriola Beach, and sunset champagne picnics atop Mount Igueldo reveal a coastal world where luxury is woven seamlessly into the rhythm of daily life.

BARCELONA:

THE CITY OF DREAMS & DESIGN

Our train rolled into Barcelona just after sunrise, and from the moment we arrived, the city embraced us in a heady mix of history, style, and sensuality. We began our week-long stay at the Hilton Diagonal Mar, an ultramodern escape perched on the Mediterranean coast.

To our surprise, we were ushered into the Presidential Suite—a palatial retreat on the 23rd floor, where sweeping views of the sea greeted us from every room.

By day, we explored the architectural wonders of Antoni Gaudí—from the awe-inspiring towers of Sagrada Família to the mosaic whimsy of Park Güell. By night, the city came alive: DJ sets at PuroBeach Club, tapas at MIA’s, and golden hour cocktails on the Executive Lounge terrace.

Midweek, we transitioned to the Barcelona Hilton, nestled in the city’s more traditional core. Here, we fell deeper into Barcelona’s timeless charm—wandering La Rambla, discovering tucked-away galleries, and walking off our indulgences in the winding lanes of the Gothic Quarter.

Each day started early with a gym session and ended late with laughter, wine, and the distinct feeling that we were exactly where we were meant to be.

MALLORCA: A MEDITERRANEN FAREWELL

Mallorca’s coastline is a symphony of turquoise coves, secluded bays, and dramatic limestone cliffs. For the luxury traveler, the island unfolds as a private paradise—exclusive beach clubs tucked into hidden corners, yacht charters gliding toward untouched calas, and quiet stretches of sand where the only sound is the soft rhythm of the sea.

No journey through Spain feels complete without the Balearic Islands, and Mallorca became our grand finale.

A swift 30-minute flight transported us to a world of lush coastlines, sapphire waters, and effortless Mediterranean elegance. We checked into the Hilton Mallorca Galatzo, perfectly positioned between the chic marinas of Puerto Portals and the golden sands of Peguera. Days were spent drifting from beach to beach, hiking scenic coastal trails, and savoring tapas that celebrated the island’s vibrant flavors. Evenings brought us to Vista de Rey or the Paradis Bar, where poolside cocktails tasted sweetest just as the sun slipped beneath the horizon.

From the cliffside restaurants of Andratx to the lively boulevards of Palma de Mallorca, each excursion revealed another reason to fall under the island’s spell.

On our final day, we returned to the hotel early—not to pack, but to reclaim our favorite poolside lounge and toast one last sunset over the sea.

e arrived into Spain’s Catalan capital with a week to soak in its dynamic fusion of history, art, and modern energy. With two Hilton properties bookending the city, our journey began at Hilton Diagonal Mar, perfectly positioned along the Mediterranean coastline. The welcome? Unforgettable.

Escorted to the 23rd floor, we reached a door marked Presidential Suite—and stepped into a sweeping, light-filled haven. Floor-to-ceiling windows unveiled panoramic sea views, setting the tone for an elevated stay. From rooftop lounging at PuroBeach Club, where a resident DJ spins weekend sets, to golden-hour cocktails in the Executive Lounge and bold, flavourpacked tapas at MIA Restaurant, the hotel blends cosmopolitan style with authentic Catalan spirit.

Mornings kicked off with energising workouts, followed by rich cultural dives into the heart of the city. Gaudí’s masterpieces—like the aweinspiring Sagrada Família and the whimsical Casa Batlló—reminded us why Barcelona is a global design icon. A host of world-class museums, bustling markets, and architectural wonders underscore the city’s legacy as host of the 1992 Summer Olympics and its enduring role as a hub for creativity, learning, and innovation.

NEXT, WE’LL CHECK OUT OF DIAGONAL MAR AND HEAD ACROSS TOWN TO THE HILTON BARCELONA, WHERE A DIFFERENT KIND OF CHARM AWAITS. FROM BEACHFRONT ELEGANCE TO THE CULTURAL DEPTH OF THE CITY CENTER, OUR CATALONIAN ADVENTURE CONTINUES—LAYER BY LAYER, AND BITE BY BITE.

POSITIONED ABOVE THE MEDITERRANEAN ON MALLORCA’S WESTERN COAST, SA PEDRISSA EMBODIES THE ESSENCE OF QUIET LUXURY

PHOTOGRAPHED BY DANIELLE HARTE PHOTOGRAPHY

Nestled near the artist’s enclave of Deià, the estate offers a rare sense of seclusion. The moment one enters, there is a palpable stillness—a whisper of centuries past carried on the sea breeze. Traditional Mallorcan stonework and warm terracotta tones frame sweeping vistas of the Tramuntana Mountains and the deep, shimmering blue of the Mediterranean below.

The grounds unfold as a Mediterranean dreamscape: olive groves, palm trees, and flowering oleander spill across sunlit terraces.

At its heart lies an elevated 12-by-6-metre pool, a serene vantage point for absorbing the island’s natural drama. As daylight softens into evening, the gentle glow of ambient lighting and the fragrance of warm earth and salt air lend the

property an almost meditative calm. Dining at Sa Pedrissa reflects Mallorca’s deep-rooted culinary traditions, reinterpreted with contemporary finesse. The restaurant’s philosophy celebrates local produce—freshly picked fruit, artisanal cheeses, and home-baked pastries form the foundation of its menus. Mornings here begin with a leisurely à la carte breakfast, where each dish is a study in restrained indulgence.

The French toast, in particular, achieves nearlegendary status among guests: golden, delicate, and impossibly light.

Every detail at Sa Pedrissa feels composed yet effortless—an invitation to slow down and savour. It is a place that captures the romantic spirit of Mallorca: authentic, timeless, and quietly magnificent.

THE ORIGINAL COMMUNITY WATER SOURCE AT KEBHOSERE NOW REPLACED BY A DEEP WATER WELL INSTALLED BY CARE FOR AFRICA

from TASMANIA to TANZANIA

AN ADVENTURE WITH CARE FOR AFRICA

WORDS BY: SAM BLOOM

AFRICA HAS ALWAYS HAD A HOLD ON MY HEART. THERE’S SOMETHING ABOUT THE LIGHT, THE RHYTHM, THE SPIRIT OF THE PEOPLE — IT’S A PLACE THAT HUMS WITH LIFE. BUT THIS TRIP WASN’T JUST ABOUT EXPLORING. IT WAS ABOUT CONNECTION, COMMUNITY, AND GIVING BACK IN A SMALL WAY TO A CONTINENT THAT HAS GIVEN ME SO MUCH.

hen Cam, Rueben, and I were invited to travel to Tanzania with Care for Africa, an Australian charity doing incredible work in Tarime, we didn’t hesitate. None of us had been to Tanzania before, which made the experience even more special. We didn’t know what to expect — only that we wanted to learn and witness firsthand the impact that charities can have in rural communities.

Flying into Mwanza, we were warmly met by Diana Butler OAM, the founder of Care for Africa. A manager at Launceston General Hospital in Tasmania, Diana has spent the past 19 years travelling regularly to Tanzania, driven by her belief that education, hygiene, and access to clean water are the keys to breaking the cycle of poverty. Care for Africaworks across four key areas — water, health, education, and women’s enterprise — with a strong focus on capacity building, helping communities create lasting change from within. Diana’s energy is boundless, the kind of person who radiates purpose and compassion in equal measure.

From Mwanza, we travelled north through mountains dotted with enormous granite boulders, gleaming in the sun like prehistoric sculptures. The road wound past villages surrounded by fields of maize and banana plantations, skirting the edge of the Serengeti National Park, where we were lucky enough to spot two elephants grazing close to the roadside.

Tarime is a rural district near the Kenyan border, where Care for Africa has spent years partnering with schools, government health services, and community leaders to build capacity and help communities break the cycle of poverty. Their programs — focused on clean water, sanitation, and education — tackle fundamental needs that can transform lives. Seeing people smile and wave to Diana as we drove past made it clear just how deeply this work has touched their communities.

Our first morning began at Kembwe Primary School, where Care for Africa runs a breakfast program. Along the way, we passed children walking kilometres from their homes, each carrying sticks for the cooking fire. When we arrived, two mamas were stirring a steaming pot of porridge — cooked over an open flame and big enough to bathe in. The children donated their sticks and lined up patiently with colourful plastic cups. I helped pour the porridge while Rueben chatted in his newly acquired Swahili — his curiosity and love for people shining through — and the children laughed joyfully at his language attempts, their amusement lighting up the morning. Cam captured every smile and moment, and his drone drew wild attention, with the children watching and waving as it hovered overhead. After breakfast, they gathered around, taking turns pushing me through clouds of red dust, chanting “Beep, beep, beep,” their laughter echoing across the grounds. Before we left, Diana presented the school with one hundred fruit trees — mango, papaya, avocado, and citrus — for the students to plant and care for, a gift that would one day help feed their community.

Another day, we visited a family supported by Care for Africa, where small acts of support had created real opportunity. The charity had helped their 21-year-old son buy a motorbike and start raising chickens, enabling him to earn a living. We brought a 25-kilogram sack of rice and a huge bunch of plantains as gifts. In a touching gesture, the young man handed Rueben one of his chickens for our dinner. As the sun dipped behind the hills, his mother, Gwennie, navigated the rocky terrain with incredible strength and laughter, playfully piggybacking me to the car, while her husband followed close behind with my wheelchair. It was a moment of connection that perfectly captured the spirit of our journey.

We also visited villages where Diana and community leaders had built deep-water bores, bringing clean, safe drinking water to families who once walked hours each day to collect often unsafe water. Seeing the relief and joy on their faces as they filled their containers was profoundly moving — a powerful reminder that kindness and generosity can ripple far beyond what we imagine.

One afternoon, during a sudden downpour, we joined two local women’s groups supported by Care for Africa. They proudly showed us how they make soap from local ingredients, sew garments, and create other small enterprises that now support their families. Their laughter and resilience radiated the same spirit I’ve always loved about Africa: a belief that life, even when hard, is still something to celebrate.

AS WE PREPARED TO LEAVE, I LOOKED BACK AT THE VILLAGES, THE CHILDREN, AND THE FAMILIES WE’D MET. REALCHANGE COMES FROM CARE, COMMITMENT, AND COMMUNITY. WE WENT TO TANZANIA HOPING TO OFFER SUPPORT, BUT WE CAME AWAY WITH SO MUCH MORE — INSPIRED TO SHARE THESE LESSONS WITH OUR OWN CHILDREN, AND TO HELP THEM UNDERSTAND THE IMPORTANCE OF KINDNESS AND CREATING OPPORTUNITIES FOR OTHERS.

Over the past thirty years, have long stopped counting the number of events staged across the world—from Sydney to London, Dubai to New York, Buenos Aires to Auckland, Doha to Reykjavik, even Tehran, Macau, Tokyo and, most recently, the Antarctic. No matter the destination, the work, precision, and attention to detail remain unwavering and uncompromised. Each event begins with the same foundation, yet what makes every occasion truly unique are the subtle nuances that allow it to stand apart—those little touches that elevate the experience and the relentless insistence that each event must surpass the one before it.

hat has remained my greatest constant, however, is the commitment to ensuring that every event carries a meaningful charitable element. It is here that the true purpose of my work comes into focus. Through these collaborations, I have been fortunate to bring together an extraordinary collective of partners and corporate friends who share the same belief: that we all have the capacity— and the responsibility—to make someone else’s life just a little better. The satisfaction of knowing we’ve contributed to positive change is profound, often overwhelming, and always humbling.

I have selected a handful of highlights that continue to resonate deeply with me—moments where our efforts supported the homeless, uplifted the handicapped,

brightened the lives of children battling cancer, and offered hope to families affected by domestic violence. These are more than events; they are stories of resilience, generosity, and community.

Across 2025 these remarkable gatherings, we have collectively raised over $750,000 for various charities—an achievement made possible only through the dedication of a passionate and generous posse of philanthropists who have stood beside me over the decades. Their belief, trust, and commitment have helped transform ideas into impact, and gatherings into legacies.

Please enjoy this iconic spread—a celebration not just of events, but of the enduring spirit of giving that continues to define them.

THE ICONIC HOST

GENERAL MANAGER HILTON SYDNEY

or some, it’s a place. For others, it’s a moment, a feeling or a person who shaped a chapter of their lives. But no matter the association, iconic is a universal term. It signals something that leaves a lasting impact, something that becomes part of the cultural fabric. Hilton Sydney has spent more than 50 years welcoming guests into moments that have shaped careers, relationships, milestones and memories. And for General Manager Malcolm Zancanaro, that is where true iconic status begins.

“Hilton Sydney has long been known for hosting gatherings that become part of the city’s story,” Malcolm shares. “Within these walls, people have toasted to new beginnings, raised funds for causes that change lives and reconnected with colleagues and friends. Our role is to curate moments of meaning, no matter what has meaning to you. We are, quite genuinely, experienced in experiences.”

To Malcolm, being Sydney’s most iconic host goes far beyond delivering exceptional stays. It’s about embodying the many faces of hospitality — generous, thoughtful, celebratory, reassuring and often quietly transformative.“A great host adapts to the moment,” he explains. “Some days, we’re the backdrop for a guest’s first visit to Sydney. Other days, we’re the calm centre for someone travelling weekly for work. And then there are those magical days where we’re the heartbeat of a 500-person gala or the warmth behind an intimate family dinner. That breadth, that ability to hold space for every kind of human experience, is what makes us unique.”

In the last 12 months alone, Hilton Sydney has been home to some of the country's biggest conferences, cultural weddings, charity luncheons, wine

dinners, private birthday celebrations, hundreds of corporate travelers and weekend escapes designed simply for joy. Malcolm notes that this diversity is not just something the hotel accommodates, it’s what the hotel was built for and what the team thrives on.

“Our people are passionate about creating environments where every guest feels like the only guest,” he says. “Hospitality is not static. It moves, it listens, it anticipates. And our team leans into that with pride. Being a host means shaping an atmosphere that feels effortless for the guest, even when hundreds of hands have contributed behind the scenes.”

This philosophy extends beyond the hotel’s doors. Hilton Sydney plays an active role in the broader community, partnering with charities like the St Vincent de Paul Society, fostering the development of upcoming talent and ensuring the hotel’s influence remains purpose-driven.

“A host doesn’t only welcome people in,” Malcolm reflects. “A host also gives back, uplifts and contributes to the world around them. That’s something we take seriously.” As Hilton Sydney enters its next chapter, Malcolm sees endless possibility and a continuation of the legacy, but with reinvigorated purpose.

“At Hilton Sydney, one address unlocks infinite possibilities,” he says. “And as we look ahead, our commitment remains the same: to be the kind of host that makes every moment, grand or understated, feel meaningful. For fifty years we’ve been home and host to it all, and we are honoured to continue that journey.”

CLASSIC LIFESTYLE

WITH HILTON SYDNEY AND AN ARMY OF CORPORATE MATES BY OUR SIDE, WE RAISED ENOUGH MONEY TO PURCHASE A FULLY EQUIPPED FOOD TRUCK — FUNDED FOR AN ENTIRE YEAR.

ecember 2024 marked the beginning of a week dedicated to giving back, with a series of gala events in support of

the Vinnies Food Vans. Our goal: ensure they had the equipment needed to serve thousands sleeping rough each night.

The celebrations unfolded beautifully: a welcome cocktail event, a long-table lunch, and a festive family Christmas afternoon tea at Glass Brasserie.

Across the week long festivities the Glass culinary Team Headed up by the Hilton Sydney Executive Chef Hamish Neal and Glass head Chef Natalie Murphy, from the Wednesday night cocktail opening the Huon caviar was front and centre and for Friday’s Long Table lunch the delicious Huon Salmon fillets took centre stage with a champagne Beurre Blanc dripping with Huon caviar.

To top of the week a Sunday Morning tea would see all partners and sponsors come together with their respective families showing them just how important this week of support and fundraising is to the homeless.

As the Glass live kitchen sprung into action batches of champagne scones would start to wow the guests -Dom Perignon like you have never seen it before heroing the scones with a truffle, Champagne and Huon caviar sauce served hot, fresh from the oven.

Special thanks to our lunch hosts Moet & Hennessy and Huon Salmon.

TRANSFORMING THE HILTON SYDNEY DRIVEWAY INTO A LUXURY DINING EXPERIENCE WAS NO MEAN FEAT. WITHIN JUST TWENTY-FOUR HOURS, WE BUILT A FULL STAGE, INSTALLED A DIGITAL SCREEN BACKDROP, AND CREATED A GLAMOROUS LONG TABLE SETTING TO HOST ONE HUNDRED VIP GUESTS—ALL COMPLEMENTED BY AN ELEGANT CHAMPAGNE BAR. THE PRESSURE WAS IMMENSE, BUT THE VISION WAS BOLD, AND THE TEAM ROSE TO THE CHALLENGE WITH UNWAVERING PRECISION.

As the 2025 Iconic Event Series is confirmed for Hilton Sydney, my next and most critical focus is aligning with brands that truly reflect the values of excellence, integrity, and authenticity. Iconic events demand iconic

partners—those whose stories, provenance, and standards resonate far beyond the plate.

My first choice was unequivocal: Huon Aquaculture. As a chef of more than five decades, I have the privilege of access to virtually every premium produce option available. Yet it was during a visit to Hobart that I experienced something genuinely remarkable. Huon is a proudly Australian company, internationally recognised for pioneering sustainable aquaculture practices, including land-based Recirculated Aquaculture Systems (RAS) and innovative offshore farming. Their salmon—celebrated for its rich, buttery texture and naturally high Omega-3 content—is among the finest in the world, enjoyed fresh across Australia and exported globally.Spending time with the Huon scientists and operations team was both enlightening and inspiring. The precision, transparency, and depth of commitment to sustainability is extraordinary. From cutting-edge technology to meticulous environmental stewardship, every detail is considered. It is this unwavering pursuit of excellence that positions Huon as a truly iconic Australian brand, and I am immensely proud to support and showcase their product.

Over the past year, I have worked closely with Hamish Neal, Executive Chef at Hilton Sydney, and Natalie Murphy, Chef de Cuisine at Glass Brasserie, to develop a series of spectacular dishes celebrating all things Huon Salmon. Together, we are crafting experiences that honour provenance, sustainability, and flavour—setting the tone for what promises to be an unforgettable Iconic year.

Chef Natalie Murphy

As Head Chef, I’ve always believed that a restaurant should be more than a place to eat, it should be a place where community, connection, and

purpose come together. This past year has given me the honour of using our kitchen and our team to support some truly meaningful charities. That privilege has allowed me to work alongside Phil Harte, and together we have watched our community show up with generosity, purpose, and enthusiasm. It’s been incredibly humbling to use the platform of Hilton’s Glass Brasserie, and the craft I love, to support causes that make a genuine difference in people’s lives.

We began the year with a three day celebration for International Women’s Day, where every dollar raised went directly towards funding a new Vinnies van for the homeless. From closing off the driveway and setting a hundred seats for what was to be the pinnacle of events, boasting chandeliers, fine dinning was the order of the day, to hosting a Sundays spectacular brunch in the restaurant, the energy across those three days was electric. With inspiring guest speakers and overwhelming community support, we reached our goal and helped put a much needed van on the road, one that will make a real difference for every day Australians doing it tough.

We then hosted the Hilton Ruby Club luncheon with the Lions in support of spinal care. A full house, passionate guest speakers, and an incredible auction created an atmosphere of generosity and community spirit that filled the restaurant from end to end. With all the action coming from the stage with wallaby greats George Gregan and Matt Burke challenging British lions star Mike Catt to a pass off into a cheering crowd. For me, crafting a menu that matched the purpose of the day, simple, seasonal, and made to be shared was just another reminder of how food can help carry the heart of an event.

Not long after, we welcomed Dame Quentin Bryce for the launch of her autobiography, an event dedicated to raising money for domestic violence support services.

Hearing her speak about her life’s work, her legacy of service, breaking barriers as Australia’s first female Governor-General, and her tireless advocacy beyond public office was truly powerful. The room felt every word, and the event was a beautiful tribute to a woman whose impact continues to inspire.

Special guest host media giant Sandra Sully navigated the conversation though out Quentin’s incredible life’s journey.Teaming up with our sporting greats

Tonight as we prepare for our season ending Iconic event we are again sold out as the Hilton Sydney Cricket Club welcomes 220 food, wine and cricket buffs to enjoy a money can’t buy evening with Cricketing legend Ricky Ponting all whilst enjoying the Ponting wines and my beef Bourgignon and engaging in lively auctions, fundraising for Spinal Cure Australia. We look back at the hundreds of thousands raised for our chosen charities all made possible via the generosity of our many friends, guests and partners.

Looking back, what stands out most is the power of community. These events weren’t just about food or fundraising, they were about people coming together to make a difference. As Head Chef, it has been a privilege to lend my craft to causes that matter, and to work alongside Phil and so many passionate individuals who share the belief that hospitality can be a force for good.

I’m grateful for every moment, every conversation, and every opportunity to give back. Here’s to continuing the work, strengthening our community, and using what we do best to help those who need it most.

INTERNATIONAL WOMEN’S DAY 2025 in Sydney unfolded with elegance, conviction, and purpose, marking a powerful moment of reflection and forward momentum in one of the world’s most dynamic cities. Observed on 8 March, the day brought together leaders, creatives, advocates, and communities to honour the achievements of women while reaffirming the work still required to achieve true equality.

or the past decade, I have had the privilege and responsibility of staging what has become one of Australia’s most significant annual celebrations of women—the International Women’s Day event on March 8th. Each year, this occasion challenges me to create an environment worthy of the extraordinary women it honours. It is a day that demands more than elegance; it demands authenticity, purpose, and a platform that truly elevates the voices and achievements of women from every corner of the nation.

As always, the red carpet was rolled out and the atmosphere meticulously crafted to be both inspiring and welcoming. The Glass Restaurant at the Hilton Sydney once again played host, its striking ambience forming the perfect backdrop as throngs of corporate leaders, innovators, and community advocates filled the space. They came not only to enjoy an afternoon of exceptional food and wine but to engage in meaningful conversations with Australia’s most influential business minds.

Throughout the day, guests celebrated success, exchanged insights, and shared stories of resilience. Yet the event carried a deeper purpose as well—a commitment to acknowledging the harsh realities of domestic violence, an issue that affects far too many families across our nation. The collective acknowledgment in the room created a sense of solidarity and urgency, reminding us that raising awareness is only the beginning of meaningful change.

Chef de Cuisine Natalie Murphy delivered a spectacular menu, as she does every year. When the Huon salmon was served and the chilled Veuve Clicquot began to flow, the room came alive with energy and gratitude. It was a generous and engaged crowd, eager not only to celebrate but to contribute. The afternoon unfolded as a powerful blend of inspiration, advocacy, and celebration—a testament to the strength and spirit of women everywhere.

EACH YEAR, THIS EVENT GROWS IN IMPACT AND SIGNIFICANCE, AND I AM HONOURED TO BE PART OF ITS EVOLUTION. IT IS MORE THAN A LUNCHEON—IT IS A MOVEMENT, A REMINDER, AND A COMMITMENT TO BUILDING A SAFER, FAIRER, AND MORE EMPOWERED FUTURE FOR ALL WOMEN.

MICHELLE SIMMONS & SANDRA SULLY
HOST SANDRA SULLY
HILTON RUGBY CLUB

As the Old Bailey prepared to tour down under, I was once again placed on high alert. We knew we needed to lift our game, as several major events were scheduled to celebrate the arrival of the Irish and British Lions Tour. The challenge was clear: create an atmosphere that felt intimate, sophisticated, and engaging—without allowing it to slip into the typical rugby rabble that so often dominates large, nondescript ballrooms.

The Glass Brasserie at the Hilton Sydney quickly became my venue of choice. With 200 seats to fill, I knew this event had the potential to be a true showstopper. The star power helped: Wallaby legends George Gregan and Matt Burke were joined by a token Lion, the charismatic Mike Catt, all set to appear live on stage. Their presence alone promised

an afternoon of insight, humour, and plenty of sporting nostalgia.

The day surpassed every expectation. We raised significant funds for SpinalCure Australia, while the trio delivered unforgettable entertainment—passing rugby balls like bullets from the stage into the eager hands of the crowd. Laughter echoed through the room, and the camaraderie between players and guests created a rare sense of closeness.

Every attendee left with a signature rugby ball, countless photos, and autographs to treasure. As the event effortlessly transitioned from a lively lunch into an evening drinks session, the atmosphere only grew warmer. It was the kind of occasion people speak about long after the final toast—a celebration of sport, generosity, and community that will remain etched in the memory of all who were there.

Our Commitment to Community & Mental Health

Community, charity, and mental health sit at the heart of our culture, guiding the way we work and the way we support the people around us. We believe that businesses have a responsibility to contribute to the world beyond their day-to-day operations, and we are proud to take that responsibility seriously.

Each year, our team is hands-on in supporting those who need it most. We participate in the Vinnies Christmas Appeal, volunteer with the Vinnies Van, and dedicate our time at the Matthew Talbot Hostel to help serve warm meals and provide meaningful connection. These experiences remind us of the importance of compassion and community in everything we do.

Mental health awareness is equally important to us. As a team, we recognise RUOK? Day every year, using it as an opportunity to check in on one another and encourage open, honest conversations about wellbeing. It is a reminder that looking after our people is just as vital as looking after our clients.

Our community commitment also extends to sport, culture, and youth development. We proudly sponsor a number of local sporting clubs including Ryde Rugby and the Epping Rams, helping to support grassroots sport and the next generation of players. Internationally, we were honoured to provide Korovuto’s first grade rugby team in Fiji with a full new kit, rugby balls, boots, and apparel for the team and their wider village community. It is one of many initiatives that reflect our belief in uplifting others, no matter the distance.

Our team also comes together each year to take part in the City2Surf, embracing teamwork, health, and community spirit.

At Frigcorp, contributing, supporting, and showing up for others is woven into our values. We believe that strong communities create strong people, and strong people create strong companies. Giving back is not just something we do; it is central to who we are.

rom the moment I was asked, I became relentless in my pursuit of perfection. Every detail mattered. This event needed to be etched into the annals of iconic moments at the Hilton Sydney. Glass Brasserie was transformed with an abundance of yellow roses, chilled Veuve Clicquot, and a beautifully curated menu that set the stage for an afternoon of elegance and intellect.

The guest list read like a corporate and cultural honour roll—a veritable who’s who of Australia’s most influential figures. Award-winning writer Juliet Rieden engaged in conversation with media legend Sandra Sully, weaving context and anticipation through the room as the main course was served. All eyes were fixed on the stage in expectation of the Dame herself.

When Dame Quentin Bryce finally appeared, the room fell into a silence so profound you could hear a pin drop. She spoke with the effortless poise, warmth, and brilliance that have defined her public life. Her presence didn’t just command admiration—it inspired it. Guests were mesmerised, many visibly moved by her reflections, humour, and strength.

As the afternoon unfolded, the commitment to support Women’s Legal Services gained momentum, embraced by all in attendance. Unsurprisingly, the books sold out within minutes. It was more than an event—it was a moment of unity, purpose, and celebration. One that will long be remembered as one of the finest ever held within those walls.

DAME QUENTIN BRYCE AD CVO IS A VERY SPECIAL WOMAN. SHE HAS A HAD A REMARKABLE INFLUENCE ON THE COUNTRY, ESPECIALLY IN RELATION TO WOMEN, BUT FOR SO MANY PEOPLE, HER PERSONAL IMPACT ON THEM IS EQUALLY SIGNIFICANT.

a national level, especially in her role as the first female Governor-General, she helped broaden our national imagination about who can lead and how leadership should be exercised. She showed that grace and compassion were consistent with strength and clear-thinking. As Governor General she was absolutely tireless in her role, and redefined the office through her humanity and warmth and her deep commitment to justice. Throughout her career she consistently used her talents to significantly advance gender equality, promote the safety and dignity of women and children, and support a more honest reckoning with the experiences of First Nations Australians. These were not comfortable conversations, but she approached them with courage, respect and unwavering moral purpose. For many women of my generation, her example quietly but powerfully expanded our sense of what was possible.

At a personal level, Quentin has been to my family and I, and I know was to my mother Carla Zampatti AC, an enormous support and friend. I always admired Quentin enormously, but her support particularly when Mum died was enormous. She gave Mum's eulogy but she also gave my sister Bianca and I advice and support as we prepared for one of the hardest days in our lives. Ever since we have kept in regular contact and I have so appreciated her kind messages and advice on good days and less good ones. I don't know how she manages to keep in such regular and thoughtful contact with so many, providing exactly the sort of encouragement they need.

Quentin Bryce has helped normalise women’s leadership in spaces where it had long been absent. Because of her, the path feels more open for those who follow.

o close the year, we once again pushed the boundaries of what was possible — by recreating the Sydney Cricket Ground in the Hilton driveway between Pitt and George Street. Four hundred guests joined us to celebrate both the 2025/26 Ashes Series and World Poverty Week, raising crucial funds for the Vinnies Vans and SpinalCure Australia.

The celebration fused the spirit of the Ashes Cricket showdown with the recent Ashes Rugby League series. Sporting legends from both codes illuminated the day: rugby league icons Steven Roach and Benny Elias, Vinnies ambassadors Jai Arrow and Campbell Graham, and cricket greats Michael Clarke, Michael Kasprowicz, Greg Matthews, and Moises Henriques.

The last place you’d imagine the former Australian cricket captain/ Michael Clarke and a group of local schoolchildren playing a friendly game of cricket would be between Pitt Street and George Street in the heart of Sydney’s CBD. Yet that is precisely what happened. In one of our most ambitious activations, we transformed the entrance of the iconic Hilton Sydney into a pop-up cricket pitch that stopped pedestrians in their tracks.

We turfed the entire driveway, suspended a 25-metre image of the historic Sydney Cricket Ground Members’ Stand, and set the scene for a few unforgettable overs—all in support of the International Day of the Poor and the vital work of the Vinnies Vans service.

What began as a symbolic gesture quickly evolved into a heart-warming display of community spirit, with school kids laughing alongside elite athletes and city workers gathering to watch the spectacle unfold.

The energy carried seamlessly into a long lunch that followed, attracting celebrities, former players, and cricket tragics alike. More than 220 guests were enthralled—not just by the entertainment but by the hope and awareness this event generated. Funds were raised, perspectives were broadened, and conversations sparked around the often-overlooked reality of homelessness in Australia. It was a day where sport, charity, and community collided in the most meaningful way. Special thanks to John & the VDG Team.

And as if one extraordinary week of cricket wasn’t enough, just seven days later another legend stepped onto our stage. Ricky Ponting joined us to showcase his award-winning PONTING Shiraz and share stories from his remarkable career. Joined by Wallaby great Matt Burke, the evening blended world-class wine, sporting insight, and heartfelt advocacy—all in support of SpinalCure Australia.

The dinner flowed deep into the night, with Glass Brasserie once again proving why it remains one of Sydney’s premier event destinations. As we closed out the year, it was clear that we hadn’t just hosted events—we had created lasting, iconic moments that brought people together, championed great causes, and reminded us of the extraordinary things that can happen when passion and purpose meet.

PHIL HARTE & RICKY PONTING

As a sold-out lunch seamlessly unfolded into an oversubscribed dinner, the atmosphere rose to a palpable crescendo. The arrival of cricketing royalty Ricky Ponting further elevated the evening, with his award-winning Ponting Wines taking centre stage alongside Head Chef Natalie Murphy, who curated a masterful menu. A standout moment came in the form of a Ponting Shiraz reduction, exquisitely enriching the Beef Bourguignon and delivering a pairing of rare finesse.

The presence of Ricky’s close friends — Mark Waugh, Mark Ella and Jarrod Croker — added to the vibrant energy of the room, united in support of the launch of the Phil Donaldson Foundation and SpinalCure Australia. As anticipation peaked, the charity auction reached exhilarating heights, buoyed by the charismatic involvement of surf champion Sam Bloom and respected media icon Sandra Sully.

The final event of the year stood as a testament to exceptional collaboration, made possible by the generosity of valued corporate partners and the impeccable hosting of SYDCAP and Ponting Wines.

STRATEGICALLY LOCATED IN THE PRESTIGIOUS BURJ DAMAN BUILDING, THE HOTEL OCCUPIES FLOORS 18 TO 50, PLACING ME IN THE CITY’S PREMIER BUSINESS AND CULTURAL HUB. MOST OF MY MEETINGS ARE JUST A STONE’S THROW AWAY, AND I’M ONLY 10 MINUTES FROM LANDMARKS LIKE THE BURJ KHALIFA, DUBAI MALL, AND THE MUSEUM OF THE FUTURE.

he accommodation feels more like a sophisticated residence than a hotel room. Each suite showcases elegant brass and walnut accents, marble bathrooms, and breathtaking skyline views. After a 15-hour flight and an early arrival, I headed straight to the gym—fully equipped with Technogym gear—followed by a steam session and a mandatory 90-minute deep tissue massage. It was the perfect reset.

Guests can choose from four uniquely themed wellness suites, each designed for privacy, restoration, and balance. These spaces offer exclusive treatments tailored to individual wellbeing, making them ideal for escaping the pressures of business travel.

Recharged, I returned to my suite—now ready— before heading down to Waqud Café for a perfectly brewed coffee and a bowl of Greek yogurt, where I

prepped for the first of many meetings. Lunch was scheduled at The Bull & Bear, Waldorf’s signature NY-style steakhouse. Located on Level 18 with panoramic views of the Burj Khalifa, this elegant Art Deco-inspired space delivers world-class cuisine and is ideal for both high-stakes business lunches and intimate celebrations. The food and service? Impeccable.

To unwind after a demanding day of meetings, I took a dip at the rooftop pool—a tranquil oasis featuring a timber deck, whirlpool, and those stunning skyline views. It was the perfect backdrop to catch up with a few old friends over drinks.

In short, when time is tight and efficiency is critical, Waldorf Astoria DIFC stands out as more than just a hotel—it’s a full-service executive retreat designed for business travelers who value style, substance, and serenity.

DUBAI

LUXURY IN SINGAPORE extends inward. World-class spas, holistic wellness sanctuaries, and bespoke health experiences invite travelers to restore body and mind—often framed by serene gardens, tranquil waters, and thoughtful design rooted in balance and calm.

BEING THE NATURAL GATEWAY TO ASIA, SINGAPORE HAS LONG SET THE BENCHMARK FOR GLOBAL FINANCE, URBAN PLANNING, AND DISCIPLINED EXCELLENCE. IT'S A CITY THAT RAISES THE BAR QUIETLY AND CONSISTENTLY—EFFORTLESSLY BALANCING EFFICIENCY WITH ELEGANCE—WHILE DEFINING WHAT IT MEANS TO BE A TRUE GLOBAL ICON.

ouching down at Changi Airport after several years away is always memorable. Turbulence feels almost ceremonial—descending through thick afternoon cloud into thunderstorm season—but once the wheels hit the runway, Singapore does what it does best. Precision takes over. From touchdown to curbside took less than three minutes: thumb scan, passport scan, no queues, no friction. Efficiency here is not just a system; it is an art form. Arriving into the city in an awaiting Hilton Singapore limousine, Orchard Road unfolding ahead. Perfectly positioned in the heart of Singapore’s most iconic shopping boulevard, Hilton Singapore Orchard immediately asserts its presence. With 1,080 rooms, it stands proudly as Hilton’s largest hotel in Asia Pacific—a flagship that reflects both the brand’s evolution and the city’s scale, ambition, and pace.

The sense of arrival continued at Ginger.Lily, my first stop and quickly my daily anchor. A celebratory piccolo awaited—courtesy of my good friend Thomas Diehl (formerly of Hilton Sydney)—and what began as a welcome drink soon became my makeshift office for the stay. It’s easy to understand why locals consider Ginger.Lily one of the city’s standout cocktail destinations: refined without stiffness, social without noise, and perfectly attuned to Singapore’s rhythm.

Checking into my suite, the hotel’s scale reveals itself—but never overwhelms. It feels grand yet contemporary, luxurious yet highly functional. Two expansive gyms, fully outfitted with Technogym equipment and open 24/7, speak directly to both business travellers and wellness-focused guests. An inviting outdoor pool completes the balance. In a city defined by precision and performance, Hilton Singapore Orchard feels entirely at home. My daily ritual—5am training followed by a second session at 5pm—fit seamlessly into the hotel’s design.

Singapore eats exceptionally well, and Hilton Singapore Orchard takes that national identity seriously. Its five dining concepts weave together history, technique, and culture, offering experiences rooted in heritage while pushing both flavour and design forward.

With just two nights in town, my focus was clear: Ginger.Lily for meetings and cocktails, Chatterbox for a beloved national classic, One-MICHELINStar Osteria Mozza for dinner, and Estate for both breakfast and an indulgent dinner buffet.

Estate’s Taste of Heritage dinner buffet is culinary theatre at its finest. Eight chef-driven signature dishes arrive à la minute—Singapore Laksa crowned with Boston lobster claw, pan-seared foie gras paired with spicy-sweet tahu goreng—alongside an expansive spread that invites grazing: softshell crab–studded Singapore rojak, kong bak pau with melting Kurobuta pork, double-boiled black chicken soup, king prawn noodles, miso-glazed halibut, and more. Add freshly shucked Cadoret oysters, artisanal French cheeses, and desserts presented in elegant glass jars, all delivered with energy and precision.

Chatterbox, meanwhile, remains synonymous with Mandarin Chicken Rice—fragrant, tender, and beautifully plated—but nostalgia here continues to evolve. Dishes like Lobster Laksa reflect Singapore’s love of luxury comfort, served in a space that is casual, energetic, and proudly local. Heritage, here, is delivered with heart.

Beyond leisure, Hilton Singapore Orchard also shines as an events destination, offering awardwinning, highly flexible venues. Its expansive Grand Ballroom and dedicated pre-function spaces provide the scale and sophistication required for gatherings of any size, from corporate summits to celebratory occasions.

Two nights was nowhere near enough, but Hilton Singapore Orchard delivered a concentrated expression of modern hospitality grounded in local stories. This is a hotel that celebrates Singapore— its flavours, its discipline, its innovation—and leaves you wishing the stay were just a little longer.

Until next time. And perhaps, fewer thunderstorms on landing.

VISIT ON A FRIDAY OR SATURDAY AND THE EXPERIENCE ELEVATES FURTHER: BOSTON LOBSTER, ALASKAN KING CRAB, FRENCH OYSTERS—CHILLED OR BAKED INTO DISHES LIKE LOBSTER THERMIDOR. THIS IS A BUFFET THAT TRULY EARNS THE WORD PREMIUM.

AT THE HELM IS AUSTRALIAN CHEF PETER BIRKS FROM BRISBANE, WHO TREATED ME TO AN OFF-MENU SPAGHETTI AGLIO E OLIO THAT SANG WITH RESTRAINT AND TECHNIQUE. PAIRED WITH A WOOD-FIRED MARGARITA PIZZA AND HOUSEMADE GELATO, IT BECAME IMMEDIATELY CLEAR WHY NANCY SILVERTON’S LOS ANGELES INSTITUTION EARNED ITS MICHELIN STAR. QUEENSTOWN

QUEENSTOWN DELIVERS ONE OF THE WORLD’S MOST CINEMATIC LANDSCAPES—SNOW-DUSTED PEAKS, GLASSY LAKES, AND VAST OPEN SKIES—PAIRED WITH AN UNDERSTATED LUXURY THAT FEELS ORGANIC RATHER THAN IMPOSED. HERE, NATURE IS THE ULTIMATE STATUS SYMBOL, FRAMED BY IMPECCABLE LODGES AND DISCREET SERVICE.

ucked away at the southernmost tip of Aotearoa, the land of the long white cloud, lies the pictureperfect town of Queenstown, New Zealand. When it came time to reflect on our favourite getaways over the past thirty years, choosing a long weekend beneath the Remarkables was a no-brainer — the only real challenge was finding a weekend long enough. Queenstown has long been the goto ski destination for Aussies. Just a three-hour flight from Sydney, and you’re practically landing at the base of the Remarkables.

On final descent, it feels like you could reach out the window and scoop up a handful of snow.

In past visits, we’d dived headfirst into Queenstown’s famously lively nightlife — a bustling party hub known around the world. But this time, we opted for a more refined escape. Enter: the Hilton Queenstown Resort & Spa. Perched on the edge of Lake Wakatipu, about ten kilometres from downtown and just a fiveminute drive from the airport, it offers the peace of a true retreat without sacrificing convenience.

The Hilton is everything you want from a luxurious alpine resort — think European ski chalet vibes, but without the chaos. We didn’t feel the need to head into town at all. Our days were filled with morning workouts, steam room sessions, sunset drinks around the Pinot fire pit, and delicious dinners at the on-site Wakatipu Grill.

When we did want a change of pace, a short stroll down to the pier let us catch the water taxi, which runs regularly into town from 7:00 AM until 9:45 PM — perfect for anyone looking to dip into the buzz without committing to it.

The rooms? Cozy open fireplaces, plush beds, private balconies overlooking the lake and snow-capped peaks — everything you’d hope for in a winter hideaway. And if that’s not enough, just six minutes away is the newly developed Queenstown Central. It’s a modern hub of boutique shopping, fantastic eateries, and home to our mate Chef Connolly’s Pavilion Bar and Kitchen — arguably the best dining spot in town.

Add in a quick 15-minute Uber ride to the stunning Amisfield Winery, historic Arrowtown, or a round at Queenstown Golf Club, and you’ve got the full package.

So, if this doesn’t tempt you, well — you might just be too hard to please. Whether it’s winter or summer, Queenstown is truly one-of-a-kind.

ean Connolly is a celebrated international chef renowned for his ability to bring authentic flavour and a true sense of place to every dish he creates. Originally from Yorkshire, England, Connolly began his culinary journey in the UK before making his mark across Australia and New Zealand — regions where his name has become synonymous with exceptional dining. His style blends a deep respect for ingredients and regional traditions with a contemporary edge, delivering modern yet soulful interpretations of timeless classics.

With a career spanning more than three decades, Connolly has built a reputation for simple, honest food that speaks directly to the heart. His philosophy is rooted in sourcing the finest seasonal produce and allowing its natural quality to shine. Whether it’s the ocean’s freshest catch or the finest cut of beef, Connolly approaches each dish with precision, passion, and a craftsman’s touch. He is particularly celebrated for his mastery of seafood and steak — two cornerstones of Australian dining that he continues to elevate with effortless elegance.

Tucked away in a charming corner of Queenstown, one of Connolly’s signature bistros is building a loyal following for exactly that — impeccable seafood and perfectly grilled steak. The menu celebrates New Zealand’s rich natural bounty, drawing from the coast and regional NZ in equal measure. Each dish captures the essence of the country’s culinary diversity — comforting yet refined, familiar yet full of surprise.

The atmosphere mirrors Connolly’s approach to food: casual yet sophisticated. Warm wood tones and soft lighting create a relaxed backdrop, while contemporary design touches remind you that this is no ordinary bistro. From the open-plan kitchen, guests can hear the satisfying sizzle of steak hitting the grill or watch as a seafood platter is assembled with delicate precision — a sensory experience that bridges the gap between kitchen and table.

What truly defines Sean Connolly, however, is his presence. He’s not the kind of chef who stays hidden behind the pass — you’ll often find him moving through the dining room, greeting guests, chatting with regulars, and ensuring that every plate leaving his kitchen meets his exacting standards. It’s this hands-on approach that has made his restaurants more than dining destinations; they’re reflections of his personality — vibrant, genuine, and unpretentious.

Connolly’s career is far from slowing down. Ever the innovator, he continues to push boundaries, explore new culinary collaborations, and expand his restaurant portfolio both locally and abroad. Yet no matter how far his career takes him, his philosophy remains unchanged: to cook food that brings people together — honest, heartfelt, and unforgettable.

In an era where trends come and go, Sean Connolly’s work stands as a reminder that great cooking isn’t about reinvention — it’s about connection, craft, and the courage to stay true to your roots.

AIRES u nos B

A BUENOS AIRES

s we began our descent into Santiago—anticipating an ontime arrival and knowing we had a tight connection for our final leg into Buenos Aires—I was already gathering my things when the captain’s voice broke through the cabin: a herd of deer had taken over the runway. We would need to circle until the coast was clear.

Any hope of a relaxed transit evaporated. By the time we touched down, only thirty minutes remained before our next flight. What followed was a frantic dash through the terminal to gate C04—breathless, urgent, just making it. Welcome to South America.

Arriving in Argentina’s capital felt like stepping back in time. Buenos Aires’ historical facades, ornate and dignified, framed our journey through the lateafternoon traffic as we made our way to the wonderfully positioned Hilton Buenos Aires—one of the city’s most iconic hotels, nestled along the river’s edge in the elegant Puerto Madero district.

The Hilton offers plush accommodations with sweeping views of both river and skyline, but it wasn’t until I walked through its soaring 30-meter glass atrium that I felt the hotel’s true character. There was something uniquely personal about this place, something that reflected the vision of its designer and owner, Alberto Gonzalez.

We were warmly greeted by Andrés Alfonso, the hotel’s Marketing Director, eager to share the remarkable story behind this property. First, though—check-in, a quick gym session for the client, and then preparations for our first restaurant review at Alberto’s.

That evening, the hotel was alive with celebration. It was the annual Christmas tree lighting ceremony, complete with a 30-minute theatrical performance featuring a local theatre company’s choir and musicians. Two hundred children, invited by the hotel, eagerly awaited Santa’s arrival. Our role was to photograph the festivities, along with culinary highlights and a signature cocktail from Alberto’s Bar.

While setting up for a shot, I politely asked a gentleman if he could shift slightly out of frame—only to discover moments later that he was Mauro, the architect of the building and husband to the hotel’s owner. Oop’s. It turned out to be a fortunate faux pas: Mauro introduced me to his wife Silvana and Hotel President Paula Gonzalez, coowners. What followed was unforgettable.

As the Hilton celebrates its 25th anniversary, Paula shared cherished stories of her father and the hotel’s beginnings. Listening to her, it became clear why the property exudes such individuality and warmth—a testament to the creativity, vision, and community spirit of her remarkable

family. Even at the end of the night, Paula and her relatives were the last to leave, still greeting guests and families at what has become a beloved annual Christmas tradition in Buenos Aires.

When we finally returned to our suite—realizing it had been thirty hours since leaving Sydney—the sight was heavenly. Positioned on the corner of the building, the executive suite welcomed us with abundant natural light and a spacious layout. The premier one-bedroom configuration featured a separate living and dining area, walk-in closet, contemporary bathroom with a double rain shower, two 65-inch LED screens, and a dedicated workspace with complimentary Wi-Fi. A coffeemaker station and laptop safe rounded out the amenities. The suite also offered a private dining room for in-suite meals and a grand lounge overlooking the river. Day 2 began luxuriously: a sleep-in, breakfast at 10 in the Executive Lounge, a workout, a 90-minute massage, and an afternoon by the rooftop pool—an indulgent reprieve we had long awaited.

SILVANA, PHIL & PAULA

At 5 p.m., cocktails at Alberto’s set the tone for our final evening, followed by dinner at El Faro, one of Buenos Aires’ premier steakhouses. Known for its signature Tomahawk and Ribeye cuts, accompanied by gourmet sides such as creamy spinach and decadent truffle pasta, the experience culminated with irresistible desserts— the house-made tiramisu and cheesecake, both rich enough to silence the table.

Today it’s a stroll through town to the local flea markets—a simple plan that took an unexpected turn. Unbeknownst to us, we stumbled upon a lively local festival bursting with colour and culture. Dance troupes performed traditional routines, tango experts dazzled the crowd, and a full marching band filled the streets with music. Dozens of food stalls served local favourites, while market stands offered everything from handmade jewellery and artwork to T-shirts and intricately carved keepsakes. Four hours later, it was finally time for a swim and a workout before our 4 p.m. check-in for the Viking Antarctic voyage.

WITH THE CRUISE TEAM SET UP IN THE HOTEL LOBBY, WE JOINED FELLOW TRAVELLERS FOR A CUSTOMARY GROUP DINNER, TURNING IN EARLY—BECAUSE TOMORROW BEGINS THE JOURNEY OF A LIFETIME TO THE FINAL FRONTIER: ANTARCTICA.

ANTARCTIC EXPLORER

Buenos Aires to Ushuaia

13 DAYS | 2 COUNTRIES

SET SAIL: JAN, FEB, DEC 2026; JAN, FEB, NOV, DEC 2027; JAN-MAR, NOV 2028

Journey to the Antarctic Peninsula, a landscape de ned by blue-hued icebergs, immense glaciers and snow-covered shores. Walk in the footsteps of great explorers as you venture into the world’s last truly wild frontier and participate in meaningful science on board your state-ofthe-art expedition vessel. Each day can bring unexpected wonders as you embrace the ever-changing Antarctic weather and sail pristine waters in search of epic wildlife.

VIKING ADVENTURE to the end of the world

It is 3am in Buenos Aires. The Hilton lobby is hushed as I sit with a perfectly baked croissant and a strong coffee, savouring the stillness before departure. In a few hours, our chartered flight will carry us south to Ushuaia — the final outpost of civilisation, the last place you could fit onto the map before the world quite literally dissolves into Antarctica.

As we descend, the harbour reveals our vessel: Viking Octantis, elegant and poised against the Patagonian backdrop. This purpose-built expedition ship will be our home for the next two weeks as we cross the infamous Drake Passage toward the Antarctic Peninsula.

Having previously sailed with Viking on both river and ocean voyages, we arrived with high expectations — impeccable service, thoughtful design, exceptional cuisine, and a deep commitment to wellness. Yet nothing quite prepares you for waking each day on the very edge of the world: beginning with a 6am workout, followed by steam and sauna, then breakfast on the aft deck as the ship glides silently toward the most pristine frontier on Earth.

As our first expedition ship, the Octantis immediately impresses with an atmosphere that feels wonderfully intimate, almost private. There is an abundance of thoughtfully designed lounges, both indoors and out, quiet sanctuaries for reflection, and breathtaking views at every turn. Dining is exceptional throughout, though we find ourselves repeatedly drawn to the pool, ice room, sauna, steam room, and beautifully curated spa — spaces that quickly become personal favourites.

One of Viking’s greatest strengths lies in its seamlessly integrated experience. From the moment the journey is booked, the Viking app allows guests to reserve every restaurant, confirm all excursions — on land and at sea — arrange airport transfers, and even coordinate flights from home. It is luxury without friction, thoughtfully executed.

Following our orientation tour, we retreat to our suite and settle in. The accommodation is nothing short of exceptional: a refined sanctuary featuring a queen-size bed, elegant lounge area, and a striking retractable viewing window that opens to uninterrupted, cinematic views of the coastline. It feels far removed from a traditional ship’s cabin — more akin to a sophisticated hotel suite — complete with generous proportions, plush towels, slippers, indulgent dressing gowns, and premium amenities that speak to Viking’s uncompromising commitment to comfort.

The true icing on the cake is the inclusion of full Arctic expedition gear — insulated pants and jackets, puffer coats, sturdy boots, and life jackets — all meticulously provided. There is no need to pack specialist equipment; everything required for the journey has already been seamlessly integrated into the experience. Each suite is equipped with a 50-inch television offering an extensive film library, alongside impressively reliable high-speed internet — a rare luxury this far south. With just 360 guests and an extraordinary 364 crew onboard, service feels deeply personal, delivered with a perfect balance of professionalism and genuine warmth.

Our daily wellness ritual in the gym soon becomes a grounding constant. Outfitted with a full suite of Technogym equipment and framed by views of the frozen horizon, it allows us to maintain familiar routines while serving as a gentle reminder of just how far from the ordinary we truly are.

That evening, Spa Manager Irene Mihajlovic, together with Coco-Ke Fan and Salome Kandare, introduces us to the Viking LIV Nordic Spa Ritual — a private, deeply immersive experience inspired by ancient Nordic traditions. Skin brushing, blueberry scrubs, steam, ice plunges, birch-branch whipping, and silent sauna time unfold in carefully choreographed succession. Wrapped in towels beside the pool, ice melting against warm skin, we surrender to stillness. Sleep comes deeply. We wake renewed, quietly grateful for yet another unforgettable moment at the edge of the world.

THURSDAY 11 DECEMBER

That evening we dine at Manfredi’s, Viking’s Italian restaurant, where the scampi linguine and warm chocolate pudding with house-made vanilla gelato are nothing short of sublime. As I finish the final spoonful, Executive Chef Jean-Benoît Estazar joins us.

This vibrant young Mauritian chef commands one of the most ambitious culinary operations on Earth — and does so with humility, warmth, and unmistakable passion. For this eleven-day voyage alone, provisioning includes

Arrival in Antarctica FRIDAY 12 DECEMBER

We wake to the low purr of Viking’s engines and the rhythmic wash of waves against the hull. As the automatic windows slide open, towering Antarctic mountains come into view. Relief washes over us — the weather gods have been kind, and the Drake Passage has allowed safe passage. Ahead lies Antarctica in all its purity, waiting to reveal its secrets.

Fournier Bay

SATURDAY 13 DECEMBER

At 6am, I stand in the bow lounge as we glide toward Danco Island, surrounded by snow-covered cliffs and jagged glaciers so pristine they feel almost unreal. This is the end of the world — and somehow, the beginning of something profound.

Today we are introduced to the expedition “toys”: Zodiacs, kayaks, and even two onboard submarines. Viking’s investment in technology and safety reinforces what is already clear — this is the ultimate way to experience Antarctica. As our call sounds, ten wide-eyed adults board a Zodiac, childlike with excitement. Moments later, we step onto the Antarctic continent itself, surrounded by thousands of penguins, pods of whales, and an overwhelming sense of disbelief. WOW. It is the only word available as the Octantis threads her way through the legendary Lemaire Channel.

Lemaire Channel

SUNDAY 14 DECEMBER

Nicknamed Kodak Gap, the Lemaire Channel is one of Antarctica’s most photogenic passages.

Glacier-draped cliffs rise dramatically from mirrorstill waters scattered with icebergs. The scene is made even more magical as Chef Jean-Benoît and GM Boži serve fresh lemon and cinnamon crêpes, while the bar team pours steaming hot chocolate.

Penguins race alongside the bow. Whales surface and dive. Icebergs drift silently past as mountains plunge more than 3,000 feet into the sea.

Later, we embark on what becomes the highlight of the journey: open-water kayaking. Conditions are flawless — glassy water, no wind, sunlight refracting off snow-covered peaks like shards of crystal.

We paddle through a dreamscape. Penguins dart beneath our kayaks, a lone humpback glides past the bow, elephant seals lounge along the shoreline. Then we drift in silence as ice calves from towering cliffs, exploding into the sea — crackling, thunderous, unforgettable.

For a moment, it feels as though we are the only people left on Earth. That evening, we shower, dine by the window, and sit quietly — humbled, grateful, changed.

Recess Cove

MONDAY 15 DECEMBER

Recess Cove greets us with an ice gallery of sculptural beauty. As we approach the landing site, a curious seal pup surfaces, studying us with wide eyes.

The climb reveals a perfect view back to the Octantis, framed by low-hanging clouds and colossal glaciers. As Kayaks ferry guests ashore ten at a time, it becomes clear: our storybook journey is nearing its final chapters.

Brown Station

TUESDAY 16 DECEMBER

We arrived at Brown Station at first light, the Antarctic dawn breaking just as kayaks, Zodiacs and submarines slipped quietly into the glassy water. By the time breakfast was finished and we were layered into our polar gear, the stage was set for a landing that felt almost cinematic.

Waiting onshore were thousands of curious locals—penguins porpoising through the shallows, seals sprawled lazily across the ice. As our boots touched land, we began the steady hike toward the ridge, rewarded at the summit with a sweeping bird’s-eye view across Paradise Bay. Below us, glaciers spilled into an inky sea, while our expedition ship lay anchored in the distance, its hull glistening

as the sun pierced the low cloud and ignited the morning sky.Set along Paradise Bay on the Antarctic Peninsula, Brown Station is an Argentine research outpost instantly recognisable by its bold red buildings against a monochrome wilderness.

Operating seasonally, it occupies one of the most photogenic locations in Antarctica, framed by towering ice cliffs, still waters and an abundance of wildlife. For visitors, the reward is twofold: a short but stirring hike to panoramic viewpoints, and a glimpse into the station’s role as a scientific and educational hub—where human curiosity continues to meet the raw power and beauty of the White Continent.

Today belongs to the whales. Humpbacks feed in spectacular displays, lunging skyward before plunging back into icy depths. I’m reminded of watching these same travellers years ago in Queensland — having journeyed more than 4,500km from these very waters.

As snow begins to fall, I am invited to the bridge by Expedition Leader Olivia Dellow, joining Captain Ivo Botica for a ringside view of Viking’s cuttingedge navigation systems. Mid-conversation, we are ambushed — more than twenty orcas charge toward the ship like torpedoes, veering away at the last moment. Humpbacks scatter. Every deck fills with guests, cameras raised, hearts racing.

What a day!

Dancer Island (final landing)

WEDNESDAY 17 DECEMBER

Our final Zodiac ride is filled with anticipation. Snow falls softly as we wait for our call, coffee warming our hands. The last hike brings us back to the penguin colonies, and with every step memories flood in.

Over two extraordinary weeks, we have experienced the unimaginable. We have stood on the seventh continent. We have witnessed nature in its purest, most powerful form.

That evening, we return to Manfredi’s — just as we did at the beginning — with prawn linguine, warm chocolate cake, and a single espresso. Outside the window, humpbacks surface one last time.

Adios Antarctica

THURSDAY 18 DECEMBER

Tomorrow we return to Ushuaia. Today is for reflection. Who could have imagined drifting through Antarctica by Zodiac and kayak, being entertained daily by whales, seals, and penguins, while enjoying steam rooms, massages, and worldclass cuisine night after night? Our challenge now is convincing anyone it truly happened — thank goodness for photographs, and for memories that will last a lifetime.

More importantly, we leave with a deeper understanding of climate change and a renewed responsibility to advocate for the protection of this fragile, extraordinary environment.

To the crew of Viking Octantis, and to Viking Expeditions, thank you for delivering a journey that has not only transformed how we travel — but how we see the world.

HAVING NOW JOURNEYED ACROSS ALL SEVEN CONTINENTS, IT WAS TIME TO RETURN TO A QUESTION I’M OFTEN

ASKED: WHERE IN THE WORLD COULD YOU TRULY LIVE? THE ANSWER, WITHOUT HESITATION, IS THE AMALFI COAST.

his year, our story unfolds alongside my good friend and master storyteller, Paulo Crisp—a man who doesn’t merely guide you through southern Italy, but brings it vividly to life. When you want history layered with legend, the finest restaurants tucked away from the crowds, museums that matter, art galleries with soul, vineyards worth lingering in, or hotels that truly belong to their setting, Paulo is the definitive one-stop authority.

Our journey begins in his home territory, the vibrant streets of Naples, as we drift across to the glamour of the Isle of Capri, we arrive at Jumeirah Capri Palace. The jewel in the Amalfi crown, then down the coast to the storybook village of Atrani—a place many will recognise from The Equalizer 3. Along the way, Paulo traces the echoes of antiquity through Pompeii and Herculaneum, before returning us to the living, breathing theatre of Naples itself.

Here, art and history are inseparable from daily life. Fine wines are poured with pride; sunbright lemons, ripe tomatoes and golden olive oil define the table; and cuisine tells stories passed lovingly from one generation to the next. In 2025, Italian cuisine was recognised by UNESCO as Intangible Cultural Heritage—a global acknowledgement of something locals have always known. Here, good living is culture.

These are enchanted places not just to be admired, but to be savoured and deeply experienced. With Paulo and his trusted team of experts, every detail is thoughtfully curated, allowing your time on the Amalfi Coast to unfold effortlessly and beautifully. He’ll be waiting for you—right there, at his place.

LUXURY MEETS COASTAL ESCAPE

pending a few nights at Bells at Killcare is always special, but arriving in the spectacular new 2025 Range Rover Sport, courtesy of Jaguar Land Rover Parramatta, made the one-hour trip up the M1 unforgettable in itself.

As a proud Range Rover owner, I was thrilled to be offered the chance to drive the latest model, complete with every imaginable upgrade. The striking electricblue finish turned heads at every stop, but it was the seamless onboard technology and luxurious interior finishes that truly stole the show.

The stay began in fine company: breakfast with my mate and rock legend Mark Gable—still Running from Paradise, but as relaxed as ever here on the Central Coast. From there, the day rolled into a shoot with hospitality visionaries Karina and Brian Barry, the powerhouse duo behind Bells. Their passion and dedication have shaped this sanctuary into one of Australia’s most celebrated boutique resorts.

Morning brought a hike through native bushland down to the raw, wild beauty of Killcare Beach, followed by a long, indulgent lunch at The Wildflower. This acclaimed restaurant champions the produce of the Central Coast, and its cellar is nothing short of extraordinary—an international-caliber collection, curated under Brian’s stewardship, that has become a defining feature of the dining experience.

AFTERNOONS SLOWED INTO PURE LUXURY: A SWIM IN THE PRIVATE POOL, TIME TO BREATHE IN THE TRANQUILITY, AND THE QUIET REALIZATION THAT THIS IS NO ORDINARY ESCAPE. OUR HOME BASE WAS A REMARKABLE TWO-BEDROOM, THREE-LEVEL LODGE COMPLETE WITH A SPACIOUS LOUNGE, FULL KITCHEN, FIREPLACE, OUTDOOR DINING TERRACE, AND PRIVATE POOL. THE ROOFTOP LOUNGE, WITH SWEEPING VIEWS BACK TOWARD SYDNEY AND PALM BEACH, WAS THE CROWN JEWEL.

Styled with the finesse of a world-class interior designer, Karina has transformed these four exclusive lodges into something truly unique— spaces that rival any I’ve seen internationally. Arriving along a sandstone pathway through forest thick with indigenous trees and flowers, guests are immersed in a story of the land itself before even stepping inside.

On our final morning, we jumped into the “Rangy” and headed to Killcare Beach for a sunrise that lit the horizon in gold. Afterwards, the aroma of fresh bread and pastries pulled us into Bells Pantry, where croissants straight from the oven and strong lattes made for the perfect farewell. If there’s a better getaway within reach of Sydney, I haven’t found it. Bells at Killcare is more than a weekend retreat— it’s a transformation. With its unique blend of coastal charm, refined luxury, and world-class hospitality, it’s a destination that lingers with you long after you leave.

55 years of

WORDS BY: DANIEL RESNIK 8 AT TRINITY NATALIE JOHNSON

’ve always envisaged Lake Macquarie to be a sleepy region dotted with quaint little towns, it certainly wasn’t somewhere I’d expect an exciting landmark development to be launched. Twenty-five years in the making, the Trinity Point precinct in Morisset has finally received development approval and will transform the area into a luxury waterfront destination.

The announcement for this epic project was revealed recently at a fabulous black-tie event held at 8 at Trinity, located at Trinity Point in Morisset, to celebrate a vision realised. This multiple award-winning restaurant, that’s been in operation since November 2019, has redefined luxury affordable fine dining on a grand scale. It is loved by locals and frequented by regular clients from Sydney, many who drive up just to experience the atmosphere, outstanding cuisine, mouth-watering cocktails and impeccable service.

The evening’s celebrations were hosted by juggernaut Natalie Johnson, who owns and operates this magnificent restaurant, alongside with her property developer husband Keith Johnson, over many years they’ve changed the face of Lake Macquarie forever.

Initially the best restaurant operators in Sydney were approached but no operator could be convinced it would be successful and many said it would never work.

Natalie decided to do it herself; design and run it as she did with all her previous businesses. Since the restaurant’s opening in 2019, the land sold at record pricing and the marina is completely full, with a waitlist for the next stage of the development.

The restaurant employs over 100 staff and serves up to 1000 customers a day. Build it and they will come! Natalie was always going to be a success at whatever she did as she throws herself into her work one hundred percent. She started working for her father in property development at the age of 14 whilst also doing courses at night to further her education. This early experience in the business world and studying 7 days a week from a young age, gave her the confidence and financial savings for her first venture of her many successful cafes. In just a short time, Natalie’s hard work, passion and exceptional vision turned each venture into a success.

After feeding and caffeinating the masses over the years, Natalie decided to go back into property and sold her businesses. She was then recruited as a consultant to lease the whole of Manly wharf and helped to turn the existing failing retail businesses into a thriving multimillion-dollar successful food focused destination with some of the best restaurants and food operators in Sydney.

In 2010 Natalie opened her own business, Candylicious, on Manly Wharf, which became so successful that she opened 4 candy stores within a 2-year period that sold over 4 tonnes of confectionary a week. It was after this that Natalie met her husband Keith Johnson, Managing Director and founder of The Johnson Property Group, a large residential land developer. At the time Keth had owned the land at Trinity Point for 15 years and had received concept plan approval. They started working on a DA which was eventually approved in 2016 and started selling the 196 blocks of land at the location, however, the land sales were slow due to the low valuations as valuers would not take into account the approved DA.

Many people did not believe anyone would go to Trinity Point, but against all the expert’s advice and opinions, it was decided that they would build half of the 188 berth marina, which was built by Bellingham’s, one of the best Marina builders in the world and would also open a temporary restaurant on site (8 at Trinity) to show that people would visit and that the project would be commercially successful and showcase the quality and standard that was envisaged.

It was then decided that award winning internationally acclaimed Australian firm ‘Koichi Takada Architects’ would be commissioned to design a world class resort, which then became a state significant development and one that will put Trinity Point on a world stage with some of the best resorts in the world.

SHELDON & HAMMOND

IN 1935, ERNST ECCLESTON SHELDON AND JACK HAMMOND LAID THE FOUNDATION FOR WHAT WOULD BECOME ONE OF AUSTRALIA’S MOST TRUSTED NAMES IN HOME AND LIFESTYLE PRODUCTS. STARTING AS AN IMPORTER AND WHOLESALER FOR THE HARDWARE AND RURAL INDUSTRIES ON KENT STREET, SYDNEY, THEN THE BEATING HEART OF HARDWARE SUPPLY, FOCUSED ON PRACTICAL TOOLS AND OUTDOOR ESSENTIALS FOR EVERYDAY LIFE. IN ITS INFANCY, SHELDON & HAMMOND’S CATALOGUE FEATURED RUGGED NECESSITIES: POCKET KNIVES, SHEEP SHEARS, BULL RINGS, AND FISHING KNIVES— ITEMS THAT SPOKE TO THE RHYTHM OF RURAL LIVING. THE COMPANY’S REPUTATION GREW STEADILY, AND IN 1951, A PIVOTAL CHAPTER BEGAN WHEN DOUG ANGUS JOINED THE TEAM. JUST FIVE YEARS LATER, ANGUS ACQUIRED THE BUSINESS, STEERING IT TOWARD A FUTURE OF BOLD EXPANSION.

YEARS OF INNOVATION

THE YEAR 1974 MARKED A TRANSFORMATIVE MOMENT. A SUPPLIER OF BARBER SCISSORS INTRODUCED SHELDON & HAMMOND TO KITCHEN KNIVES—A CATEGORY THAT WOULD REDEFINE THE COMPANY’S TRAJECTORY.

SOON AFTER, THE TEAM TRAVELLED TO JAPAN, SOURCING PREMIUM KNIVES AND LAYING THE FOUNDATION FOR A THRIVING HOMEWARES DIVISION.

“TO UNDERSTAND THE SCALE OF THIS SHIFT, CONSIDER THIS: IN 1974, HOMEWARES MADE UP JUST 10% OF OUR RANGE. TODAY, IT’S 80%,” SAYS SANDY ANGUS, MANAGING DIRECTOR.

EXPANDING IN THE WORLD OF HOMEWARES

By the mid-1980s, Sheldon & Hammond was firmly entrenched in the kitchenware market. In 1985, the company introduced Denmark’s iconic Scanpan cookware to Australian homes. Four years later, it launched its first proprietary brand— Avanti—signalling a new era of innovation and brand development.

A PORTFOLIO THAT DEFINES QUALITY

Fast forward to today, and Sheldon & Hammond boasts an impressive lineup of private-label and iconic global brands:

Private Labels: Avanti, Bakemaster, Pyrolux, Excalibur, Edgemaster, Bundanoon, Peer Sorensen, Wilkie Brothers, and more.

Global Icons: AeroPress, Global Knives, Brabantia, Kilner, Mason Cash, OXO Good Grips, Scanpan, Victorinox, Zippo—the list goes on.

With 10 private-label brands and over 60 international names, Sheldon & Hammond delivers premium products to retailers across Australia and New Zealand.

LOOKING AHEAD: CELEBRATING CRAFTSMANSHIP

As the company enters its 90th year, it continues to welcome prestigious brands like Peugeot salt and pepper mills and André Verdier cutlery—both proudly crafted in France. These additions reinforce Sheldon & Hammond’s commitment to quality and heritage.

A LEGACY OF LEADERSHIP

For nine decades, Sheldon & Hammond has been more than a distributor—it has been a brand builder, a market leader, and a trusted partner to retailers. With a focus on innovation, quality, and strategic marketing, the company curates products that meet consumer demand and drive retail success.

WAKE UP AND SMELL THE COFFEE

coffee format HOW IS REDEFINING PREMIUMISATION ACROSS EVERY

For decades, premium coffee was synonymous with whole beans, master blending, artisan roasting, and the out-of-home café ritual. But in 2025, “best in class” is no longer confined to a single format or channel. Quality beans have extended to capsules, instant, sachets and concentrates, as more consumers seek an elevated experience across the entire coffee spectrum.

This is happening even as raw coffee bean prices have risen significantly, forcing every format to prove its value. And brands are responding with offers that blend connoisseurship with convenience.

INSTANT COFFEE'S GLOW UP

Once seen as the budget end of the market, instant coffee has been reimagined as consumers move into the premium freeze-dried segment. New innovation is trending in the wellness space with formulations infusing collagen, protein and antioxidants. Instant has become an on-the-go luxury, positioned for gym bags, business travel, and outdoor adventures. Vittoria has elevated the category even further with collectable vase containers, turning everyday instant into a premium ritual and a design piece for the kitchen.

MIXERS & FLAVOUR EXPLORATION

Espresso will always set the benchmark, but premiumisation recognises that other formats can still be elevated. Brands like Vittoria are entering the mixers space with products built on a premium proposition, using freeze-dried coffee and higher-quality ingredients to elevate the athome experience. It's about raising the quality of formats consumers already enjoy.

CAPSULES: FROM CONVENIENCE TO CREATIVITY

Capsules have outgrown their reputation for cheap convenience. They are now a best-in-class format, fuelling coffee creativity with consumers using capsules as the base for coffee tonics, espresso martinis, and other mixology trends at home. Vittoria’s capsule range, recognised as Australia’s #1 Rated Capsules by Canstar Blue in 2025, reflects this evolution. The introduction of microgrind technology has set a new benchmark for the category, producing a finer, more consistent grind that results in a smoother, richer espresso, showcasing how capsules can deliver both convenience and excellence.

COFFEE BAGS: SIMPLICITY ELEVATED

Coffee bags work just like a tea bag, offering one of the fastest and most convenient ways to brew fresh coffee. As consumers increasingly seek quality alongside convenience, the format is gaining new relevance, led by Vittoria’s range of high-quality blends that bring café-style flavour to this simple, sustainable option.

BEANS & GROUND: THE CLASSIC CORE

CONCENTRATES: THE NEW FRONTIER

Cold brew concentrates and liquid espresso bases are powering the next generation of coffee habits. Consumers are blending them for quick iced lattes, or mixing them into cocktails for athome entertaining.

Amid all the innovation, beans and ground coffee remain the heart of premiumisation. Sales of whole beans continue to grow, supported by grinders, pour-over kits, and home espresso machines, as consumers seek to recreate authentic café experiences at home.

What’s striking is how households are no longer loyal to just one format. It’s about choice, variety, and matching the right coffee to the right moment. Beans for weekend rituals, capsules for weekday mornings, instant sachets for travel, syrups for indulgence, and concentrates for cocktails.

In an era where consumers are willing to spend more on small luxuries despite economic pressure, coffee has become one of the clearest signals of “best in class” behaviour. A category that stretches across price points, formats, and cultures, while continuously reinventing itself.

he images in this collection were captured in March 2025 while on a small ship expedition to Antarctica, which had been on my bucket list for a long time. I was looking forward to the opportunity to finally step foot on the seventh continent and explore one of the last great frontiers and I knew the photographic opportunities would be priceless. Departing from Ushuaia in southern Argentina, we set out on the 1000km voyage to cross the infamous Drake Passage to the Antarctic Peninsula, which is a 1300km northward extension of the Antarctic continent.

Majestic mountain peaks approaching 3000ft form a range which runs along more than half the length of the Peninsula. Often shrouded in low cloud, they overlook glistening bays, many filled with wide expanses of brash ice, rising and falling in rhythm with the movement of the water beneath, while occasionally the haunting sound of distant winds would present a background soundtrack to the everchanging scenes before us. This is a place where magic and mystery meet, it can be fragile and wild, loud and quiet at the same time. Antarctica is home to an abundance of wildlife, both above and below the surface of the sea, including numerous species of seabirds, penguins, seals and whales, all living in a special harmony not often found in more northern climes.

Each day filled us with new experiences to wonder at. Giant tabular icebergs tower like silent sentinels punctuating the horizon, and the sound of calving

glaciers cracked open the silence. Mesmerising shades of whites and blues, as if appropriated from the palette of some great artist’s work, washed through the landscape, sharing the cold in a more visual sense.

Moving through this amazing environment is a spiritual experience and one not easily forgotten, offering the chance to reflect on the power of nature and discover what untouched and untamed truly looks like. As we disembarked from our zodiacs to set foot on the continent for the first time in Neko Harbour, we were greeted by a welcoming committee of noisy and inquisitive Gentoo penguins. Ranging from 70 to 90 cm tall, they seemed unconcerned by our arrival, and although the odd individual seemed a little curious at times, they nonetheless were happy to go about their business. I stood quietly, taking it all in, grateful for the circumstances that had conspired to bring me here.

The stillness in the crisp morning air was intermittently punctured by the sound of moving ice and crying seabirds, while somewhere in the distance the distinct sound of the blow from a surfacing whale could be heard. My first morning in Antarctica had exceeded all my expectations and I was looking forward to what lay ahead of us.

On this polar journey with Aurora Expeditions, we also travelled to South Georgia Island in the Southern Ocean on our return to South America. Home to abundant colonies of King Penguins, Elephant Seals and other wildlife, it is one of the world’s most isolated locations, with no airstrip and access only by ship.

ONE TRUTH BECOMES INCREASINGLY CLEAR: NOTHING IS MORE VALUABLE THAN HEALTH AND WELLBEING. I GREW UP WITH A SINGLE-MINDED DEVOTION TO SPORT—7 DAYS A WEEK IN PURSUIT OF SOMETHING HOPED WOULD DEFINE ME. SOCCER GAVE WAY TO LEAGUE, LEAGUE TO RUGBY, AND THEN, AT TWENTY, DISCOVERED SQUASH.

ROAD TO recovery

hat I didn’t realise then was that the elegant, unforgiving game of squash, would quietly begin the long chapter of my physical undoing. Fast forward 46 years and I found myself in recovery at Wyvern Private Hospital. As any seasoned squash player will tell you, surgery is almost a rite of passage. My own tally reads like a medical résumé: two rotator cuff operations, a fused big toe now held together with seven screws and a plate, and finally the pièce de résistance—a full knee replacement following the complete deterioration of cartilage in both toe and knee.

Knowing I had only one chance to get this right, there was no room for compromise—neither surgically nor in the environment that would support my recovery. Enlisting Dr David Carmody was immediate. He had already given me new life with the earlier toe fusion, and this time, together with the most advanced technology available, he would do the same for my knee.

Securing a place at Wyvern—fast becoming Australia’s most technologically advanced private hospital—felt like winning the ultimate reservation. After reviewing hundreds of luxury hotels and resorts over the years, I can say without hesitation: Wyvern is the closest thing to a luxury product I’ve encountered in the medical world.

Much like exceptional hospitality, Wyvern has elevated hospital care to an entirely new level. The fact that the facility is owned, designed and operated by surgeons themselves is profoundly reassuring. Add to this the extraordinary lengths taken to recruit only best-in-class clinicians and support staff, and the result is a genuine sense of confidence and calm.

Then there’s the food. Hospital cuisine has long been questionable—Wyvern rewrites that narrative entirely. Head Chef Puti delivers a full room-service experience with a restaurant-quality menu, complemented by an eat-at-yourleisure philosophy that respects the patient, not the clock.

I awoke from surgery having spent time with “Thelma”—one of the most sophisticated surgical robots in the country—which, alongside Dr Carmody, meticulously rebuilt my 66-year-old right knee. Day two saw the physio team guiding my first tentative steps down the hallway, oversized walking frame and all. I knew the road back would be long—but the risk felt worth the reward.

Eleven months on, I’m pleased to say I’m back doing what I do best: running riot between airports and hotels, planes and trains, ships and shorelines. Deciding to undergo major surgery was the biggest decision of my life. All I can do is share my experience—and my unequivocal recommendation. Thanks to Dr David Carmody and the extraordinary team at Wyvern Private Hospital, I’m here to enjoy a far

Dr Sears is a past President of the Spine Society of Australia, the Asia-Pacific Cervical Spine Society and of the NSW Neurosurgical Association.

Yep, he’s impressive. But ask Dr Sears what his most impressive feat has been and it’s getting Wyvern from a seed of an idea to the living, breathing, operational facility it is today. Incorporated into its very walls are the people that have meant much along the way. Each ward bears the name of someone important to the journey.

Edwards Ward is named after Lindsay Edwards (1952 - 2018), a Nurse Unit Manager at Dalcross Private Hospital with a big heart, a sharp mind and an easy humour. Patients and their families loved her. She held the doctors’ respect. Ayscough Ward is named after Dr Rodney Frederick Ayscough (1953 - 2020) who founded the school of Musculoskeletal Medicine at Macquarie University. His talents for both surgical assisting and for Musculoskeletal medicine became legendary but it was his compassion, his honesty, his courage, his work ethic and his humour that stood out.

Yeo Ward honours Associate Professor John Douglas Yeo A.O. (1933-2023). His interest in spinal injuries led to him gaining the appointment of Medical Director of the Spinal Injuries Unit of Royal North Shore Hospital. Empathy and a deep care for his patients made him a wonderful choice as a campion for Wyvern’s mission to bring that same level of care to both patients and staff.

Charlie’s Café is named after Charles Smuts (1953 – 2019), a great radiographer and a wonderful person. He embraced the vision to create Wyvern, and it was he who found the site to build the hospital. He would have loved to share a coffee with the patrons of his namesake. Wyvern is all about the story, the people and the vision of care. Just how Dr Bill Sears envisaged back in 2016. No wonder he’s so proud.

Wyvern Private Hospital is a feat of architecture. From the northerly neighbour’s vantage point it’s barely visible, it sits so snugly in its bushland surrounds at Terrey Hills, yet its streetscape is magnificent. A blend of glass, concrete and timber, it speaks of thoughtful process, considered purpose and impressive engineering.

Designed by SRH Architecture, built by Hacer Group and project managed by Podia, it was born from the minds of surgeons. Surgeons who had experienced the true value of care. Heralding from the well-regarded Dalcross Private Hospital in Killara, the team, headed up by founder, Chairman and Neurosurgeon Dr William Sears, are immensely proud of what they have achieved. It’s a hospital owned by doctors, not a mainstream healthcare company, but doctors who wanted to create something different, something special. ‘CARE WITHOUT COMPROMISE’ is the philosophy underpinning everything Wyvern do. Care of its patients, with a highly experienced clinical team brought together by respect for the mission and its chief.

Care of the surroundings with a focus on sustainability and environmental responsibility.Care of its staff, with a positive, respectful and nurturing culture that is evident in the enjoyment that they exhibit in working in this impressive facility.

A wyvern is a mythical two-legged dragon, strong, brave and challenging. The vision of a modern, financially astute and care-focused hospital may well have seemed mythical. It certainly seemed to have been historically elusive. But Wyvern is a brave vision with a strong focus, determined to challenge the existing ways of hospitals in Sydney.

Wyvern specialises in spinal surgery, orthopaedics, vascular surgery, pain medicine, ENT, plastics and general surgery. It houses 8 operating theatres and 85 beds plus consulting suites for specialists. It also offers on-site medical imaging, pathology, pharmacy, outpatient rehabilitation and a hydrotherapy pool. On-site parking and Charlie’s café provide ease and comfort. The wards are flooded with natural light, each room having immense glass windows, window seating and a wealth of thoughtful provisions. It’s often likened to a high-end hotel. On-demand dining offers up a healthy array of options from the stateof-the-art kitchen, managed by Puti Firmansyah.

And the staff. They’re the kingpin of Wyvern. Reviews all mention the staff. “Above and beyond’, ‘attention to detail’, ‘so professional, helpful and friendly’. From setting foot through the door and being greeted by smiles and a warm welcome, to the caring attention given by nurses, to the friendly chats around the ward, it’s blatant that everyone is on the same page – giving this special ‘care without compromise’. It’s not just a script.

KNOWN TRADITIONALLY AS ULURU, the monolith has been a sacred site for the Anangu people for tens of thousands of years. Its caves, fissures, and contours are inseparable from Tjukurpa—the living law and creation stories that define Anangu identity, spirituality, and stewardship of the land.

RENOWNED CONTEMPORARY ARTIST GOOMPI UGERABAH HAS BEEN MAKING A QUIET YET POWERFUL IMPACT ON THE INTERNATIONAL ART SCENE FOR YEARS. HIS SOLO EXHIBITIONS ROUTINELY SELL OUT ON OPENING NIGHT, AND HIS WORK HAS TRAVELLED AS FAR AS FRANCE AND ROMANIA, ATTRACTING AN EVER-GROWING GLOBAL FOLLOWING OF DISCERNING COLLECTORS.

Most recently, Goompi exhibited alongside some of the most celebrated figures in Aboriginal art history. His pieces featured in Connection, the immersive visual and sound experience presented at The Lume in Melbourne,

which concluded earlier this year and is anticipated to tour nationally and internationally in the coming seasons.

A defining milestone came in September of last year, when Goompi’s artwork Body Paint was awarded the prestigious Paddington Art Prize in Sydney. Reflecting on the honour, he shared: “I am beyond thankful and honoured. I have practiced the ancient written language of Aboriginal art for nearly two decades now, and began creating artworks simply to share my cultural stories with the world. Each piece carries its story, written in English on the back, so that the knowledge continues to be passed on. It makes up for lost time, as generations before me weren’t allowed to practice or share their culture. I do this for them, and so my children can learn and, hopefully, continue the tradition. Winning this award helps my work reach more people, which means more of my stories can be shared. It’s a wonderful feeling to know my creations are being so warmly received.”

With several exciting projects planned for 2025—still under wraps for now—Goompi’s trajectory continues to rise. Remember his name; there are undoubtedly more accolades, exhibitions, and cultural milestones ahead.
