As in every Chinese community, the New Year is celebrated by reuniting with family and eating generously, donning new, brightly coloured clothes, giving red packets (envelopes) containing “lai see” money, and playing mahjong. Hong Kong does all this and much more, and the Chinese New Year festival is celebrated enthusiastically with a fabulous parade, stunning fireworks over the harbour, flower markets teeming with crowds and well-wishers, and more. You can also get into the spirit of the New Year by sampling the best Chinese regional cuisines on offer here in the city. he Han Chinese tradition of binding women’s feet to make them appear as small as a lotus bud lasted well over a thousand years. The fashion was thought to have started at the end of the Tang dynasty when a favourite consort of the emperor, while dancing, bound her feet to represent a new moon. The style was quickly taken up by the women at court, and gradually spread outside until it was almost universal in China. The Manchus, on taking power in 1644, tried unsuccessfully to ban the custom, and a small minority did not bind their feet. But the smell and the size of the small foot, together with the woman’s teetering gait, produced erotic associations for men, and few mothers would risk their daughters being unable to marry by allowing them to have natural feet.

Method of Footbinding Footbinding began when the girl was aged between three and twelve years. A binding cloth, about 4 inches wide, made of woven cotton or silk was tightly wrapped around the foot, starting at the toes which were forced in towards the sole. The bandage continued

around to the heel so that the toes and heel were forced towards each other. Sometimes a wet cloth was used which, as it dried, tightened to give greater support. At other times a small block of wood was inserted under the heel for support and the bandages wrapped over. The process was very painful and there are many heart-breaking stories of what young girls had to go through. The feet were usually bound to a length of 5 inches; the ‘3 inch lotus’ was quite rare, and only for those women who had servants to support them while walking. In some cases the woman was even carried on the back of a servant. “The appearance of the deformed member when uncovered is shocking, crushed out of all proportion and beauty, and covered with a wrinkled and lifeless skin like that of a washerwoman’s hands immersed daily in soapsuds,” in the words of a mid-nineteenthcentury missionary.

纏足是古代漢族女性的一種習俗，以女子小腳為美，有“三寸金蓮”之說，這種習俗保持了過千年。相傳此習俗源於唐朝末期，一位跳舞妃子用布帛將雙腳纏成新月狀。這種風俗很快就在宮女中流傳開來，後來幾乎在全中國流行起來。滿族人在1644年入主中原後曾嘗試廢除此習俗，但並沒有成功，當時只有少部分人放棄纏足。但纏足女性足部的氣味和大小以及她們步履蹣跚的姿態，對當時的男性來說存在性吸引力，若放棄纏足，有可能終身無法出嫁，很少母親願意讓女兒冒險。

纏足的方法女孩們在三歲至十二歲開始纏足，用一條約四吋寬的棉製或絲製的纏足布緊緊地包裹雙腳，將腳趾向腳掌和腳跟處屈曲。有時還會用一塊濕布，等它乾了之後就可以將位置緊緊固定。有時會將一小塊木頭放在腳跟處作支撐，然後用布裹緊。整個過程非常痛苦，令女性們身心都受到不少傷害。通常她們的雙腳被裹成五吋長，“三吋金蓮”實際上是很少見的，而且將雙腳裹成三吋長的女性們都需要有僕人輔助才能行走，有時還需要僕人背著。“將纏足布拆開時可謂觸目驚心，包裹至變形的雙腳完全失去了應有的比例和美態，被一層皺巴巴的皮膚包裹著，就像洗衣婦每天被浸泡在肥皂泡沫的雙手一樣。”

best with the whiteness of the limbs. Made to be worn in the bedchamber, these had bells inside the heels to fuel the erotic associations.

Bound Feet Shoe Designs Shoes from the north, especially Beijing, had a ‘bow’ shape, an exaggerated curved sole and heel in one piece, often with leather reinforcements at the toe and heel. In the late 19th century and early 20th century, styleconscious women from Shanghai – then the fashion capital of China – liked a multiple heel, while those from the southern provinces such as Guangdong wore shoes often made of black cotton or silk, with a fairly flat heel. Most shoes were a fashion item and hence were lavishly embroidered to show off the wearer’s wealth and position. Pattern books of designs were produced so that no-one was short of ideas. Motives, as with all embroidery, included auspicious symbols. In the Chinese language many things are symbolic because their name sounds the same as something believed to be lucky. For instance the homonym fu stands for both bat and happiness, so that bat is a popular symbol. Similarly, the butterfly is an old and very common symbol that suggests the meaning “great age” because in Chinese, die also sounds like the word for eighty years of age. It is also a symbol of joy and marital happiness. Usually, embroidered ankle covers were also worn

纏足鞋的設計從北方特別是北京來的鞋子會做成弓形，腳掌處做成誇張的弧形與腳跟連接，在腳趾和腳跟處通常有皮革加固。十九世紀末二十世紀初的上海是中國的時尚之都，女士們開始注重款式，他們喜歡多層鞋跟的設計。來自南方省份如廣東省的女士們則喜愛用黑棉或絲做成的平底鞋。大多數鞋子都屬於時尚物品，因此會繡上奢華的圖案，以展示穿著者的財富和地位。當時還有設計樣板書，因此總是有各種款式的鞋可供選擇，鞋子上通常是吉祥的圖案和符號刺繡。在中文裡面很多東西都有象征意義，因為他們的名字的發音與一些被認為是吉祥物的東西相近。例如“蝙蝠”的“蝠”字和 “幸福”的“福”字同音，因此蝙蝠是很受歡迎的圖案。除此之外，蝴蝶是一個古老而常見的有象征意義的圖案，它帶有長壽的意義，因為“蝴蝶”的“蝶”字與“耄耋之年”的“耋”字同音，更有歡樂和婚姻幸福的含義。通常在腳踝處還有帶有刺繡的布遮蓋，這讓設計師有更大的設計空間，有時這塊布和鞋子是一體的。插圖中的纏足鞋上繡有禱文：天上有誰，為我所賴，爾欲安然，在浪中行。有些纏足鞋鞋底會加上鐵製或木製的防滑釘，以保護繡花鞋及防塵。

Bound Feet Shoes Die Out in 20th Century It was not until the end of the 19th century that foot-binding started to decline. Various anti-footbinding societies were formed by westerners to promote its demise. It was banned by the new Republic in l9l2, and gradually died out, though there was resistance to having natural feet throughout much of the country for some decades after that. I still remember seeing some old ladies with bound feet in the 1970s at Rennie’s Mill where the Nationalists fleeing from China had been housed. Also in Taiwan you could find shops still selling shoes for bound feet. Nowadays it seems unthinkable that women allowed themselves to be put through such agony for the sake of attracting a partner, and yet the endurance by modern women of the output of Jimmy Choo suggests that some part of that thinking may still be with us today. ■

Traditional Hong Kong Villages: Poon Choi 香港圍村菜：盆菜 Literally, “basin cuisine” or “big bowl feast”, Poon Choi is a Chinese dish adopted by residents of the walled villages in the New Territories in Hong Kong centuries ago. Layers of food are piled into a big wooden basin and then stewed. The bottom layer usually comprises vegetables such as Chinese radish and tofu plus pigskin, to absorb the juices and flavour, then pork is put in the middle layer, along with Chinese mushrooms, while the top is laden with seafood, other meat and more expensive ingredients such as abalone, dried fish maw, sea cucumber and dried scallops. Poon Choi has been urbanised in the last several decades and many Cantonese restaurants will serve it during Chinese New Year. Prices vary according to the ingredients chosen but the value is typically very reasonable. You do need a gather a party of or least four to eat all that food, and the more the merrier.

Chiu Chow Cuisine: assorted soy marinated meats 潮州菜：滷肉

Hunan Cuisine: Steamed Fish Head clay pot with chili peppers 湖南菜：剁椒魚頭 Hunan cuisine, also known as Xiang cuisine, has been popular internationally for decades. Food from the province is known for its pure use of various chili flavours, fresh aroma, deep colours, and heavy use of oils; a good Hunan meal will make you sweat but also stimulate your palate vigorously. The steamed fish head (usually a carp) is prepared with chopped and salted red peppers, garlic, ginger and scallions. The fish head may be spicy hot, but you’ll find the meat tender and fresh, and mouthwateringly delicious.

One of life’s sublime pleasures is to order a plate of Chiu Chow marinated meats as a snack or appetiser and enjoy them with a cold glass of beer. Chiu Chow – a coastal region of eastern Guangdong province, known for the industriousness of its people and a strong overseas presence, including in Hong Kong – has its own distinct dialect, way of life and cuisine. Its most iconic dish is arguably the soy marinated meats in which various meats, most notably goose, but also octopus, pig’s ear and pig’s intestine, are served on a bed of tofu slices, accompanied by a special vinegar sauce on the side. Hakka Cuisine: Salt-baked Chicken 客家菜：鹽焗雞 Another world-renowned regional cuisine is Hakka, named after the Hakka people – China’s own nomads who centuries ago migrated from northern China to the south of the country and thence widely overseas. Remarkably, the Hakka people have managed to preserve their own dialect and culture including its cuisine, for which we are grateful. Many Hakka dishes have become integrated into mainstream Cantonese cuisine, but there are still quite a few specialty Hakka restaurants available in the city. Salt-baked Chicken is perhaps this cuisine’s standard bearer: the baked chicken is tender, accented by the infused salty flavour. You can also order a version with the chicken heaped with spring scallions for a more aromatic twist.

Beijing Cuisine: Peking Duck 北京菜：北京填鴨 As one of the most recognised Chinese delicacies, Peking duck needs no introduction, but perhaps Beijing cuisine does. The imperial capital for many of China’s dynasties, Beijing took on influences from cuisines all over the country. However, the Shandong cooking style – itself one of the four traditional cuisines of China and where the imperial palace usually went to find its chefs for the emperors – probably had the biggest influence, along with the Muslim halal cooking prevalent in northwest China. Beijing cooking includes roasting and braising, and uses lots of meat, including mutton. A well-roasted Peking duck is a treat fit for the emperor – melting, crispy skin and tender meat, all wrapped in a delicate pancake with shallots and plum sauce. Shanghai cuisine: Lion Head Meat Balls 上海菜：獅子頭 For perhaps the benchmark by which all other pork dumplings are measured, look no further than Shanghai. Shanghainese food is popular worldwide, and for nonpurists it broadly represents cuisines from Jiangsu and Zhejiang provinces along the Yangtze River. Shanghai food tends to be light, sweet and sour in taste, so as to bring out the freshness of the food, many of which are river catches such as crab, shrimp and fish. The lion head meatball, in which the main ingredients are marinated ground pork and cabbage, is simple, easily made, and universal likely. The broth is full of flavour, and the meat is tender and freshly sweet. Another popular cuisine the world over, Sichuan food evokes images of dishes in smothered in the deep reds of Sichuan peppers and tasting numbingly spicy. Many dishes are worth trying. In “water cooked fish” the meat (which may also be beef) is poached for a couple of minutes in boiling water to preserve its tenderness, and then served in a dish with lots of peppers, vegetables and vermicelli and hot vegetable oil. Chinese Halal Cuisine: Minced Beef cake 清真菜：清真牛肉餅 Islam made its mark on China centuries ago and there are sizable Muslim populations of different origins living mostly in northwest and northern China. “Typhoon Shelter Chili Crabs” are an iconic Hong Kong dish created during the 1970s when hundreds of small sampans made their home in the Causeway Bay Typhoon Shelter, many offering fresh seafood cooked on the spot for hungry customers. Along with the delicious seafood those little fishing sampans were known to partake in certain unsavoury activities also, all of which added to the folklore of this vibrant chapter in Hong Kong’s history. In due course, the sampans were removed, their inhabitants resettled in urban dwellings and the typhoon shelter became just another functional space for junks and leisure boats. But the seafood offerings that they had invented survived, as the proprietors set up hawker stalls nearby, and eventually moved into regular restaurant spaces. Today a few seafood restaurants along Jaffe Road and Lockhart Road specialise in chili crabs, but none is better known than Hee Kee, whose owner, Uncle Hee, is the original and authentic creator of this emblematic dish. Uncle Hee’s colourful past rightfully deserves a much lengthier exposé – his exploits of survival and success, mostly through hard work and resourcefulness – are the stuff of legend and a true testament to the Hong Kong spirit that made this city such an entrepreneurial success. Against this legendary background, we went to Hee Kee’s with a heightened sense of anticipation, and were richly rewarded. We began our meal with Clams with Soup ($93) and Kwo To Fish with Spiced Salt ($98). The soup is light and delicious and the clams taste

fresh. The little fish fillet sautéed and coated with spiced salt practically melts in the mouth. Stir fried with spiced salt is a favourite Hong Kong cooking technique for seafood: the salt enhances the taste and yet keeps the seafood fillet tender and hot, and the ubiquitous Worcester Sauce on the side lends a nice balance to the palate. Such was the case with our next dish, Squid with Spiced Salt ($102), a Hee Kee classic, and much recommended. Next came the Popping Prawn with Spiced Salt ($250), the large mantis Shrimp is wok-fried and served piping hot. This dish is all about the wonderful taste of the shrimp and its aroma, and always a local favourite. Then came our prized dish, Fried Crab with Chili ($26 per tael). The crab, a large Vietnamese crab known for its meatiness and succulent texture, is stir fried in generous quantities of Hee Kee’s secret recipe of fried crab oil garlic. The garlic, which can also be bought in jars at the restaurant, infuses the meat and creates the aroma. The crab legs taste garlicky good, yet the meat of the claws retains its fresh sweet taste and is incredibly tender. It was well worth the wait. For good measure, we rounded out our meal with Lai Moun Fish Congee ($96) which we can’t commend highly enough, along with the Fried Noodles with Crab Sauce ($52). We polished them both off, even after all that food. For a truly memorable dining experience and a chance to step back into Hong Kong’s past, a meal at Hee Kee’s is a must – don’t miss it!

出海歸來立即為顧客烹調新鮮美味的海鮮。雖然當年這一帶偶有不良行為發生，但無論如何，這些過去都是香港歷史的重要一頁。因為某些歷史原因，這些漁船終究還是要撤走，原本居住在這裡的漁民陸續上岸，遷入市內的住宅中，而避風塘也成為了停泊漁船和遊艇的地方。雖然如此，避風塘的美食被保留了下來，當年水上餐廳的艇戶在附近以小販攤檔的形式繼續經營，然後開設正式的門店。如今謝斐道和駱克道上有數間海鮮餐廳專營避風塘炒辣蟹，但其中最有名的當屬喜記，老闆喜叔多年來精心研製避風塘炒辣蟹，為這地道著名菜式的始祖。喜叔幾十年來經歷了種種困難，最終憑著勤勞和足智多謀取得成功，其白手興家的歷史足以寫成一本書，充分體現了獅子山下的香港精神。這次《東方之珠》的美食之旅來到喜記，聽聽喜叔的故事，品嚐出色佳餚。我們首先品嚐的菜式是上湯水浸蜆 ($93) 和椒鹽九肚魚 ($98) 上湯湯底清淡美味，蜆新鮮肥美。九肚魚經過油炸後外層香脆，魚肉依然十分嫩滑，竟有入口即化的感覺。以椒鹽炒或煎炸是香港人烹調海鮮時常用的技巧，椒鹽可增加菜式風味，而肉質仍可保持鮮嫩。隨附的喼汁也是很常見的調味料，味道酸甜微辣。椒鹽火局鮮魷 ($102) 也是店內招牌菜之一，是顧客的必點菜式。下一道菜是椒鹽瀨尿蝦 ($250/隻) 分量十足，上菜時還冒著熱氣，瀨尿蝦有著獨特的鮮甜味，加上香氣撲鼻的椒鹽，令人無法抗拒，這也是本地人最愛的菜式之一。這一頓的重頭戲是避風塘炒辣蟹 ($26/兩) 喜記的肉蟹來自越南，以體積大、蟹肉豐富和鮮甜多汁著稱。避風塘炒辣蟹以大量秘製蟹油蒜蓉王醬料炒製而成，這種特色醬料可在餐廳獨立購買，用來烹調美食可突出肉類鮮味，香氣逼人。蟹腳帶著濃濃的蒜香味，但蟹鉗裡的蟹肉依然鮮甜嫩滑，絕對是一道值得等待的菜式。除了以上的美味菜式，我們還點了生滾泥魚孟粥 ($96/小窩) 和蟹油炒麵 ($52) 兩道菜式均值得推薦，雖然我們已經飽得差不多了，但仍然很快就將食物吃得精光。既能體驗難忘的用餐經歷，又能重溫香港昔日情懷，您的訪港之旅怎能少了喜記這一站？

hai cuisine is highly popular in Hong Kong and Thai restaurants abound, serving refreshingly spicy food with that herbal, zesty touch. Still, refined Thai dining is a relatively recent phenomenon in which preparation and presentation of the dishes is taken to another level, matched by a restaurant's décor, ambience and service. Such establishments are gaining in popularity as discerning diners are always on the lookout for high-end, quality food. Of this genre, Mango Tree is one of the better known. Its outlet in the Elements Mall in West Kowloon showcases all the attributes of fine dining: open view of Victoria Harbour, high-ceilinged floors and spacious seating with modern and stylish decoration, attentive and pleasant service, and, of course, very tasty Thai dishes. Our dinner at Mango Tree was shared, as they should be, allowing us to sample as many dishes as possible. We promptly tucked into five appetisers. The Chicken in Pandan Leaves ($98), consisting of deep-fried tender chicken pieces marinated with garlic and mixed herbs wrapped in fresh pandan leaves and served with a sweet sesame sauce was first, followed rapidly by the Char-Grilled Pork Neck Fillet ($118) – its tender slices are dipped in Esan-style tamarind sauce; the refreshing Banana Flower Salad with Chicken ($128) accompanied by a light, sweet tamarind coconut sauce; the classic Thai Shrimp Cakes ($138) with plum sauce, its skin deep-fried just so, while preserving the freshness

of the minced shrimp cake; and the Pomelo Salad ($148) tossed with prawns, roasted coconut, crushed peanuts and spicy lime juice – a healthy end to the starters indeed. The soup, a classic, the Tom Yum Kung ($178), came next. The soup hits all the right notes: perfect blend of sour and spicy flavours, succulent and tender prawns, and a most appetizing soup base that had us begging for refills. The eagerly anticipated entrée, Yellow Curry Crab ($538), finally arrived and it did not disappoint. We gawk at the gargantuan Sri Lankan crab: its chunky meat is sweet and fresh tasting, and we eagerly dip the Roti Canai into the sublime creamy coconut curry sauce. The crab is fingerlicking good – the best way, albeit messy, to eat this delicious dish. Amazingly, we still found room for more: Prawn Phad Thai ($138) which is beautifully presented, Sticky Rice with Mango ($98) in which the flavour of the slightly sweet sticky rice is accented by the tender, juicy mango chunks, and for dessert, Water Chestnut in Coconut Cream ($88) served in a young coconut. It would be remiss to omit mention of the creatively concocted Thai cocktails that accompany the meal and which bring out the best in Thai ingredients: Lychee Smash ($70), Watermelon Pop ($85) and Lemongrass Mojito ($85). For a relaxed dinner with zesty and appetizing food, you can’t go wrong with Mango Tree.

才開始嶄露頭角，除了食材的處理和菜式的呈現手法都提升了一個層次，還要配上優雅的裝潢、氣氛和服務。但因為挑剔的食客們總是在尋找高質素的食物，這種高級餐廳越來越受歡迎了。 Mango Tree是城中最有名的高級泰國菜餐廳之一，位於西九龍的圓方分店將高級泰菜應有的水準發揮得淋漓盡致：開揚的維多利亞港景色，高天花和寬敞的座位，現代而有格調的裝飾以及細緻窩心的服務，當然還有不可缺少的美味菜式。泰國菜一般是點幾個菜大家一起吃的，我們這頓晚餐也不例外，這樣我們就可以品嚐到更多不同的菜式。首先品嚐的是五道令我們胃口大開的前菜，斑蘭葉嫩雞卷 ($98) 經油炸的雞肉肉質依然保持嫩滑，混合蒜和多種香草的味道，再用新鮮的斑蘭葉包裹著，配上甜芝麻醬。燒豬頸肉 ($118) 緊跟其後，切成片狀的豬頸肉十分嫩滑，搭配獨特的羅望子果醬。而味道清新的香蕉花雞絲沙律 ($128) 搭配的則是帶有淡淡甜味的羅望子椰子醬。經典的泰國菜泰式炸蝦餅 ($138) 加上梅子醬，外層麵粉炸得恰到好處，保留了蝦餅的鮮味。柚子大蝦沙律 ($148) 將大蝦、烤過的椰子片、花生碎和青檸汁混合起來，是一個不錯的健康之選。至於湯類我們選擇了冬蔭功 ($178) 這道經典菜式，水準無可挑剔，酸辣味平衡得恰到好處，大蝦鮮嫩多汁，湯底十分開胃，令我們欲罷不能。最令人期待的黃咖喱炒蟹 ($538) 終於出場了，果然沒有令我們失望。來自斯里蘭卡的大肉蟹蟹肉鮮甜美味，煎餅蘸上柔滑的椰子咖喱，簡直是完美配搭。吃蟹最好就是直接用手抓，雖然吃起來有點麻煩，但保證你吃完還要一直舔手指。賣相十分好看的泰式大蝦炒金邊粉 ($138) 將我們的美味之旅延續。香芒糯米飯 ($98) 香甜多汁的芒果肉將糯米飯的微甜味帶出。椰汁紅馬蹄 ($88) 以原隻椰青盛載，健康美味。最後不得不提的是獨特的泰式雞尾酒特飲。Lychee Smash ($70), Watermelon Pop ($85)和Lemongrass Mojito ($85) 均以多種泰國水果和香草調製而成，味道清新怡人。訪港期間想享用一頓輕鬆而美味的晚餐？Mango Tree一定是您的最佳選擇。

Rustico You’ ll find Rustico in D2, a trendy landmark mall in Lai Chi Kok, Kowloon. The restaurant, named for its rustic décor, is a 1930s-inspired traditional Spanish Taverna – wooden beams, an open kitchen and a partially al fresco enclave under grapevines – serving down-home Spanish cooking. Our tasting experience started with a few tapas: the Spanish Spicy Chorizo in Sherry Wine ($88) which is bite-size perfect; the Prawns"al ajillo", Fried with Garlic, Chili & Extra Virgin Olive Oil ($125), in which the aromatic garlicky shrimp tastes tender and zesty; and the Rustic Salad, Iberico Ham, Tetilla Cheese & Quince Jelly ($98), in which the cheese texture and the sweet jelly nicely balance out the ham ﬂavour. Our main course was the Suckling Pig Slow Cooked with Sauce & Baked Potatoes ($298). As with any well roasted pig, we loved the way the crispy skin contrasts with the moist, succulent meat. Alongside it, the“Rustico”Seafood Paella ($178) came in a generous portion, loaded with seafood chunks. To complete our repast we opted for the Spanish Churro with Vanilla Ice Cream & Chocolate Mousse ($55), a delightful dessert. Lastly, be sure to order a glass or two of their signature Sangria to accompany the delicious meal. Wong Xiang Yi 'Whispering Void' at Artify Gallery

Through the perspective of the Malaysia-based artist Wong Xiang Yi and her understanding as a Fujoshi (a Japanese term for a ‘rotten girl’), the male protagonists in her work are transformed. In Whispering Void, Wong presents her new work where her use of gong bi, a fine brushwork technique from tradition Chinese painting styles, will juxtapose harmoniously with the gentle characters depicted in her work. CONCIERGE CHAT CityLife: Can you tell us how you got started in the hotel industry? Joe: I applied to the JW Marriott Hotel after finishing school. Back then working for a five-star hotel was still thought as a prized opportunity. And I’ve been doing it for the 23 years since. I really enjoy my job as a concierge.

CL: What changes do you see in the 20 some years you have been in the industry? Joe: The guests are much more well-travelled and savvy. Hotels need to keep pace with their

CL: Any memorable experience from guests that you can share with us? Joe: A taxi driver who had taken a guest to the airport came back to our hotel to give us a bag that the passenger had left, containing a personal laptop and other valuables. We found a name and a US telephone number from the computer. It didn’t match that any of our guests, but we called it anyway. There was no answer so we kept trying. After a week, we were going to report to the police as lost, but then, right before we turned the bag into the police, I called one more time, and somebody answered. It turned out he had lost his phone too and had only just got the replacement. Amazingly, within 30 minutes of the call, someone from his company came and picked it up. He was absolutely delighted and wrote to us later to thank us.

東方之珠：你是怎樣進入酒店行業的？黎：我畢業之後就申請到JW萬豪酒店工作，當時人們都覺得在五星級酒店的工作機會非常難得。現在我做禮賓司已有23年，非常喜歡這份工作。

東方之珠：最喜歡工作的哪一部分？為什麼？黎：禮賓司可以幫助客人解決問題和需求，我從中得到滿足感。不止如此，我還跟許多常客建立了非常好的私人關系，我非常珍視這樣的友誼。比如有個韓國客人跟我們認識好幾年了，他的兒子是我看著長大的，現在長得比我都高了。這樣的友誼和親密感是非常特別的。

東方之珠：有沒有比較難忘的經歷？黎：有一位的士司機載客去機場又回到我們酒店，說那位客人遺落了一只包，裡面有電腦等用品。我們在電腦裡發現了一個名字和一個美國電話號碼，但我們的住客裡沒有叫這個名字的人，打了好幾次電話也沒人接。我們打算聯系警察進行失物招領，但一星期之後，就在報警前，我又打了一次電話，終於有人接聽了，原來他連電話也丟了，又換了個新的。非常神奇的是，打完電話半小時後，他的公司就有人過來領取了失物。失主非常高興，寫郵件感謝了我們。■

CL: What is your favourite part of the job and why? Joe: Naturally, I derive satisfaction from helping our guests with their needs and problems. But, more than that, I treasure the personal relationships I’ve established with some of our frequent guests. For example, one Korean guest who’s been staying with us for years brought his family to Hong Kong and his son whom I met when he was a little boy was now taller than me. That feeling of friendship and familiarity is quite special.
