e welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. May is a busy month for Hong Kong, as a full slate of events, festivals and performances are happening across the city. Specifically, the month of May can be called the month of festivals, as locals and visitors get to enjoy several high profile traditional and cultural festivals that celebrate Hong Kong’s heritage. First up is the Tin Hau Festival, which celebrates the birthday of Tin Hau – the Goddess of the Sea and the most popular deity in Hong Kong, attested by the large number of Tin Hau temples still in use. Join in one of the festival celebrations if you can. The popular Cheung Chau Bun Festival, an unusual but fun event dedicated to Pai Tak, another deity, is also being held. The week-long island celebration culminates with a colourful parade and one-of-a-kind bun-grabbing contest, which is not to be missed. And Buddha’s birthday also falls in May; the large local population of Buddhist followers will be worshipping at temples and monasteries across the city with much fanfare and colour. Please check out our cover story on Page 10 for your guide to all the traditional festivals taking place. A festival of another kind, the Le French May Arts Festival, has become a prominent feature in Hong Kong’s calendar. The two-month-long calendar showcases all elements of French culture, and since its inception in 1993 has become a major cultural event in the city. The burgeoning French expatriate community, now the largest in Asia, adds to the festival’s richness and vibrancy. Music lovers will be treated to several marquee performances, starting with a concert by pop superstar Bruno Mars, who is in Hong Kong again this month for two nights. Evita, the Tony Award–winning musical by evergreen composer Andrew Lloyd Webber, will stop by Hong Kong for a one-month residency – don’t miss the chance to enjoy this great musical if you happen to be in town. And for opera lovers, Carmen, Bizet’s timeless tragic tale of Carmen and her paramours – will also be performed this month. And if that is not enough, Cirque Du Soleil’s Kooza, featuring a slew of thrilling acrobatic performance and clownish acts, runs through May. So, whatever your fancy, you have come to Hong Kong at the perfect time. Whether it is traditional festivals, cultural and art festivals, world-class musical performances or thrilling circus acts, you are at the epicentre of a bunch of terrific entertainment. So make the most of everything the city to offer and we wish you a fun-filled visit to Hong Kong.

Opera Hong Kong: Carmen

The story, set in Seville, Spain in the 1820s, sees a military man, Don José fall in love with Carmen, a gypsy. After a fight, she is arrested but with the help of Don José, she manages to escape and it’s he who is imprisoned. Upon his release, Carmen persuades him to join her and her smuggler friends. But soon, Carmen loses interest in Don José and is smitten by the bullfighter Escamillo. The tale ends in tragedy when Don José, in a fit of blind jealousy, stabs Carmen to death.

中國古代官職徽章 1

It was a uniform every Chinese man yearned to wear: a sleek surcoat of black satin with embroidered squares on the chest and back. 一件黑色緞面的光滑外套，胸前和背部有正方形刺繡，這曾經是每個中國男人都渴望穿上的服裝。

andarin squares are more correctly described as rank badges. Officials in the Chinese government, whom westerners called mandarins during the Qing dynasty (1644-1911), wore them to denote their grade. Civil mandarins took care of day-to-day administration, while Military officials were employed in the army or navy. Each group was divided into nine grades. Each Civil grade was depicted by a different bird whilst Military grades had different animals. A subordinate could tell at a glance whether the great man was a first rank Viceroy, depicted by the Manchurian crane with white body and distinctive red head, or the lowest ninth grade Police Commander with his longtailed paradise flycatcher. These badges hold a wealth of meaning and insight into Chinese culture and tradition. Men from lowly peasant families and rich merchant clans studied from dawn to dusk in order to take the imperial examinations held every three years in each of the provincial capitals throughout China. For the military the written examination was supplemented with examinations in archery. Success was limited to a tiny minority who were then qualified to apply to become a mandarin. Only then could they wear this emblem of power, wealth and prestige. In reality it was men from influential

families that did best and were most likely to be appointed to high positions, but in principle it was a system based on merit. One badge was fixed on the centre back of a plain black satin surcoat, with an identical one on the chest. This front badge was split in two as the surcoat opened down the center. The bird on the man’s badges looked to the wearer’s right; on his wife’s badges, the bird looked to the left. The animal on the military badges faced the opposite direction. They were embroidered in silk thread and the standard is always very high as anything else would be a sign of inferiority. Women of the family embroidered the badges or else they were produced in an embroidery studio. Measuring about 12 inches square, they were carefully stitched in brightly colored silk threads on silk gauze or plain dark blue satin. Badges made of kesi, a kind of cut-silk tapestry, are the rarest, and the finest. Designs varied according to taste, but all followed a set pattern. Surrounding the central bird or animal were lucky symbols chosen to bring good fortune, long life, and continued success in the government hierarchy. In the top corner was a red sun disk symbolizing the mandarin looking up to his superior, the emperor, and a wish to rise higher, and quickly, through the ranks.

Badges from the early Qing period had the bird or animal worked directly into the background. As the dynasty crumbled in the late 19th century, the spendthrift Empress Dowager Cixi, in reality the ruler of China, was more interested in her sumptuous wardrobe, and her boat built entirely of white marble in the grounds of the summer palace. Short of cash, the government took to selling ranks instead of requiring men to pass the arduous examinations first. Moving quickly up the hierarchy, a man need not have a completely new badge made each time. Instead, birds and animals were appliquéd on, meaning the lower ranking one could be ripped off and replaced with a higher one on the old square. Some lower status birds were even designed to resemble the higher grades, and fool the casual observer into thinking the wearer was of a superior rank. The imperial examinations were abolished in 1905 and the new Republic formed in 1912. Insignia badges, and their accompanying regalia, were cast off and sold by impoverished mandarins, now out of a job, often to western traders and missionaries living in Beijing. The spoils of these early collectors are in

museums, or turn up in auction sales and antique shops around the world. Military ranks are much harder to find. Some say that when the dynasty fell in 1911, the military were ordered to destroy their insignia.

Mandarin squares are highly sought after today, since they are easy to display and encourage a growing collection. The increasing number of collectors, and the dwindling number of genuine squares, has inspired clever embroiderers in China to produce fakes. While at first these were easy to detect, with uneven stitches and dubious designs, the quality of workmanship is improving all the time. Be careful when buying sight unseen, especially from a photo on a website. Examine the square to check the ground cloth was not made yesterday. Most of all, the telltale smell of smoke, used by forgers to yellow and ‘age’ the badge, is disguised when hidden behind an old frame. If you do find one you could own a piece of Chinese history.

Cheung Chau Bun Festival 長洲太平清醮

This popular annual festival on the island of Cheung Chau is one of the more idiosyncratic, attracting thousands of locals and visitors. The weeklong festival is dedicated to Pak Tai, a Chinese god who was brought onto the island to quell an outbreak of epidemic disease, according to legend. The highlight of the festival is the construction of massive bamboo towers covered with plastic buns, which contestants climb to the top of and grab as many buns as possible. There is also a colourful and lively parade of lion dances, marching bands, floats, and – famously – young children dressed up as topical or traditional characters, floating ingeniously in mid-air, that all process through the island’s narrow streets. 這個每年一度在長洲舉行的節日向來大受歡迎，甚具特色，吸引了數之不盡的本地人和遊客。據說這個為期一周的節日是為了紀念北帝，相傳居民為驅除瘟疫，將北帝神像搬到長洲的大街上，疫症才消除。太平清醮的亮點是“搶包山”，健兒們努力攀爬以竹枝搭建的包山，爭取在規定時間內搶得更多平安包。此外，更有熱鬧非常的遊行，舞獅、樂隊、花車和著名的飄色會景巡遊令人目不暇給，小孩裝扮成古今人物站在支架上，在大街小巷穿梭巡遊，營造出凌空飄然的效果。

Tin Hau Festival 天后誕 Tin Hau, the Goddess of the sea, is the most popular deity celebrated by locals, thanks to the city’s historical linkage to the sea. There are over 70 Tin Hau temples dotted throughout the territory. Tin Hau’s birthday is celebrated with much fanfare and ceremony. Two popular celebrations are at Joss House Bay Tin Hau Temple in Sai Kung’s Clear Water Bay area which boasts the oldest Tin-Hau temple in the city; and at the Shap Pat Heung Tin Hau Festival Procession at Yuen Long in the northwest New Territories which features a vibrant, colourful procession of lion dances, floats, special Fa Pau (paper flower towers), and noisy music. Many of the islands will also be celebrating Tin Hau’s birthday, including Lamma Island, Cheung Chau and Peng Chau, along with all the Tin Hau temples in the city, so be sure to find one and join in and enjoy the colour and festivities if you can. 天后是香港昔日的海上守護神，廣受本地人擁戴。香港有70多座天后廟，每年天后誕各區都有各種慶祝活動。在眾多慶祝活動中，以西貢大廟灣慶典和元朗十八鄉天后誕會景巡遊最受矚目。大廟灣天后廟位於西貢清水灣，是香港最古老的天后廟。元朗位於新界西北部，巡遊當天將有舞獅、花車和花炮隊伍在區內巡遊，鑼鼓喧天。

Buddha’s Birthday 佛誕

Buddhism is arguably the most popular religion in Hong Kong, and the main man’s birthday, which falls on 22 May this year, is celebrated across the city by its devoted followers. The celebration includes lit lanterns, adorned altars with incense and prayers, and cultural and kung fu performances highlighted by a Buddha bathing ceremony at most of the temples. Tam Kung’s Birthday 譚公誕

Tam Kung, the other sea god alongside Tin Hau, is also worshipped by locals. His birthday also falls on 22 May and the major celebration takes place at the Tam Kung Temple is in Shau Kei Wan on Hong Kong Island and features a colourful parade of dragon and lion dances, floats and acrobatic performances. 除了天后以外，譚公是另一個受本地人愛戴的海上守護神。譚公誕同樣是5 月22日，主要節慶活動將於港島區筲箕灣譚公廟舉行，其中包括舞龍、舞獅、巡遊及雜技表演。

Dragon Boat Races 龍舟賽 The Dragon Boat Festival is an ancient Chinese festival celebrated widely across China, including Hong Kong. The festival itself falls on 18 June this year. A main feature of the festival is the racing of “dragon boats” – long, colourfully decorated paddle boats. Nowhere is dragon boat racing taken more seriously or practised more widely than Hong Kong, with more than a dozen regattas taking place in the weeks leading up to the festival. In the month of May, you can still catch some lively and exciting racing action. 端午節是歷史悠久的中國傳統節日，全國各地包括香港都會舉行慶祝活動，今年的端午節在6月18日。端午節的主要特色是賽龍舟，狹長、五顏六色的龍舟在海上上演連場激鬥。香港的龍舟賽可說是規模最大的，端午節前後一周有十多場龍舟賽舉行。即便在五月，您也可欣賞到精彩的龍舟賽。

Horse Racing 賽

Horse Racing, the city’s favourite sporting pastime for more than 130 years, remains a big part of Hong Kong’s British colonial heritage. The non-profit Hong Kong Jockey Club operates two world-class race tracks – in Happy Valley and Shatin, respectively. The racing season, from September to early July, normally features two race days weekly – Wednesday night and a weekend afternoon, usually Sundays. The locals love to punt on horses, and that is reflected in the average handle (i.e. amount of money bet) on each race, which amounts to almost $150 million, easily one of the highest in the world.

Attending a horse race in Hong Kong is an experience like nowhere else – perhaps it’s a combination of the intensity of the action, the love of gambling, the state-of-the-art facilities and the party atmosphere. It has become a fashionable social event attended by all stripes of society. It doesn’t hurt that a large part of the income earned by the Jockey Club goes to various charitable causes – at least you know your losses are doing someone some good. Be sure to take in a day or night of horse racing action as your quintessential Hong Kong adventure – it’s an experience not to be missed!

Hong Kong has arguably the world’s best Cantonese seafood cuisine. The city is full of seafood restaurants catering to customers of all ranges. But none beats the experience of ordering your live seafood from fish tanks and have it cooked right away. Half the fun is staring at a dizzying array of tanks swimming with garoupa, fish, clams, mantis, crabs, and you name it, and trying to figure out what to order. There are several locales famous for live seafood ordered from the tanks. Many of them are open air, lending a more informal but festive ambiance, and the prices are generally reasonable. Sai Kung, in the northeast New Territories, is a popular destination famous for its seafood restaurants – in fact you can even order from the little sampans loitering off the public pier – they’ll bring it to the restaurant of your choice. A day trip to Sai Kung to explore the great outdoors and enjoy a delicious seafood meal is a great Hong Kong experience. Street markets are common in almost every city and typically provide a concentrated dose of the character of their locality. Hong Kong’s street markets stack up well against those of any city. The street markets in Mongkok and Yau Ma Tei – Ladies Market, Jade Market, Temple Street, Goldfish Market and Flower Market are world famous and totally worthy of a visit. On Hong Kong Island, the street markets in Wanchai and the alleys of Central offer a kaleidoscopic shopping experience of their own. If you want real local flavour, we recommend visiting Sham Shui Po, an older local area in north Kowloon. Sham Shui Po is home to the Ap Liu Street Market, often described as Hong Kong’s ultimate flea market, as well as other street markets selling fabrics, buttons and threads, toys, plus the famous computer centres. It’s also a fascinating neighbourhood to catch a glimpse of how the locals really live.

The famed Victoria Harbour is the heart of Hong Kong, offering spectacular views from all angles. Thanks to continuing harbourfront beatification efforts there are now many attractive and pedestrian-friendly waterfront promenades from which to take in Hong Kong’s stunning skyline. For a night view, the waterfront from Tsim Sha Tsui East extending to Hunghom offers a panoramic view of Hong Kong side. We also enjoy the promenade along the Central Harbourfront – the feeling of being surrounded by colourfully lit skyscrapers at night is utterly mesmerising. If you want a relaxing stroll, head to the waterfronts on either side of the eastern harbour – Kwun Tong in Kowloon, and Quarry Bay and Sai Wan Ho in Hong Kong. Yes, you can go squid fishing in Hong Kong if you wish! At night, that is. It’s not the squid itself that makes it a fun event – although eating freshly prepared squid that you caught yourself is a delight in itself – but the social camaraderie of being out with a group of people fishing for cephalopods. Sai Kung is the best place to try squid fishing. Boats which accommodate 15 to 25 people and will take customers out to known fertile squid fishing areas at night. You try your luck using primitive hook, line and sinker and any catch can be prepared right on board to be shared. It’s another great Hong Kong summer experience that you don’t want to miss. Craft beers are all the rage these days among beer aficionados. So, one would expect Hong Kong, ever on the edge, to have its share of craft beer outlets. What surprises though is that the city also boasts many of its own craft beers – “made in Hong Kong”, so to speak. A microbrewery is not hard to set up but making a beer – IPA, ale, wheat beer, whathaveyou – that people will buy is another matter. Some of the better known brands include Yardley’s Brothers Brewery, Gweilo Beer, Lion Rock, Young Master Ale and Hong Kong Beer Company. More and more bars are stocking local craft beers, especially in the popular bar areas. If so, welcome to Le Scene De Junon, a high-end French restaurant that resurrects the 1970s when fine dining was a grand occasion to be savoured. The original Junon opened in 1967 in Mongkok and quickly became a fashionable social gathering place. Time moved on and so did Hong Kong, and the restaurant eventually closed down, but its grandeur was not forgotten. Junon has recently been resurrected, at a new location in Wanchai, another older neighbourhood that’s undergone substantial rejuvenation.

Junon is divided into two sections: Le Scene De Junon – for French fine dining, the Bistro Junon – serving more casual fare, with an expansive bar in the centre. Le Scene Du Junon was our destination, and upon entrance, we were transported to European grandeur of earlier times: plush carpets, Baroque and Louis XVI style furniture and deep cushioned booths. A stage offers music entertainment, headlined by a local chanteuse, plus a French singer, both performing classic songs. We especially enjoyed the Hong Kong singer’s skilful rendition of a medley of English and Chinese oldies accompanied by a photo album of mid-20thcentury Hong Kong. The food was excellent too. Junon offers a selection of tasting dinner menus at varying prices; the menu items are changed frequently to follow the seasons. Our tasting menu, which was priced at $1,388 per person, started with the Amuse Bouche, and then moved along with Lobster Bisque, Sweet Onion Ravioli and Confit

Lemon, a delicious, richly flavoured soup and tasty ravioli. Next was Macaroni Stuffed with Black Truffle and Foie Gras, another dish whose distinct aroma caught our attention immediately. Our entrée was French Poultry “Sot L’y Laisee”, Creamy Mushroom Fricassee with Truffle. The chicken portion, chosen from near the chicken rump, is cooked in a rich mushroom sauce and served with truffles. The dinner ended with pre-dessert, followed by Caremelized Apple Tourbillion with Magadascar Vanilla Ice Cream – a most delightful and surprisingly light dessert, plus petite fours. Between old-time melodies, nostalgic photos and superb food, the time passed quickly for our leisurely meal, and was a memorable experience indeed. Whether it’s a special occasion with loved ones or you just want to capture a piece of old Hong Kong, Junon is well worth a visit. We highly recommend it.■

f ‘American fine dining’ sounds like an oxymoron, consider a perfectly grilled USDA steak, paired with an exquisite full-bodied red wine and served in a finely appointed restaurant and you have a very strong contender. And that’s what we were expecting on our visit Morton’s of Chicago, one of the best-known American steakhouses in Hong Kong.

Pablano Butter 7 oz ($688), USDA Centre-Cut Prime Ribeye Steak 16 oz ($728), and Jumbo Lump Crab Cake ($410, 2 pieces). Interestingly, the Wagyu beef is a Wagyu-Angus cross, and the filet mignon captures the best of both beef types – a rich marbled texture with the strong flavour associated with Angus, making it both tender and flavourful.

Morton’s, now in its 19th year in Hong Kong, is located at the Sheraton Hotel in Tsim Sha Tsui. Known for its quality food, attentive service and refined ambience, Morton’s has long been a favourite for discerning connoisseurs of fine steaks. The restaurant’s renovated décor is contemporary, with subdued lighting. Its expansive windows offer a splendid view of the harbour. The spacious restaurant, which can seat over almost 180 people between its main dining room, private room and the bar, serves dinner only. An impressive and well-stocked wine display and an open kitchen complete the setting.

The ribeye is more traditional, a nice, thick cut of prime beef expertly grilled medium rare. The meat is tender and juicy, just the way we prefer. The crab cake, to our delight, packs healthy portions of crab meat into each piece, giving plenty to savour. Two side dishes: Creamed Spinach ($120) and Nueske’s Bacon Steak with Peach Bourbon Glaze ($138) came with the entrees. The Bacon Steak is a real winner – a thick-cut 12 oz of apple-smoked pork belly glazed with peach-Bourbon. It tastes tender and savoury, almost a meal in itself and perfect for sharing.

Morton’s offers all the menu components one would expect from a fine steakhouse – a wide selection of cuts of beef plus the familiar starters and a few seasonal selections. In the end, though, a steakhouse is judged by the quality of its steaks, and that seems to be Morton’s philosophy, as they put an inordinate amount of care into selecting the right beef and preparing it properly.

We wrapped up our dinner with Morton’s Legendary Hot Chocolate Cake ($170) and Crème Brûlée ($130). The generous portions were shared, of course, a fitting end to a sumptuous meal. Our visit to Morton’s was a most enjoyable dining experience – great steaks in a lively and comfortable setting, and perfect for a business meal or special occasion. Book early.■

Shikigiku 四季菊

The venerable Inagiku, one of Hong Kong’s best known Japanese restaurants, now has a new name: Shikigiku Japanese Restaurant. The moniker rebrand, which can be interpreted as “the four seasons”, reflects a move towards a new era in Japanese cooking in which chefs continuously expand their ingredient selection, skills and creativity. Executive Chef Goto and Tempura Chef Sakuma will continue to take charge of both Shikigiku outlets, serving artisan tempura, sashimi, sushi, teppanyaki and Kaiseki, using only the choicest, freshest and most natural ingredients, sourced mostly from Japan. Shikigiku’s trademark item is still tempura, lovingly prepared from a proprietary recipe using superior batter, quality sesame oil and fresh ingredients. Prepared at the table, watching the tempura chef at work is an absorbing experience and a highlight of the meal. To mark the name change, a special launch menu is available between 1 April and 31 May at both outlets. Priced at $1,580 per person, the menu showcases Chef Goto and Chef Sakuma signature items. They include, among other things, Tempura Wagyu Beef Rolled with Sea Urchin; Grilled Kagoshima Wagyu Beef with Sea Urchin; Grilled Abalone with Rock Salt; Mieken Lobster Simmered with Chef’s Special Stock; and Kama Steamed Rice with Saga Beef and Mitsuna Vegetables.

美食情報 Odelice!

Odelice! is a French bistro offering quality casual French dining at reasonable prices. It was started in Shanghai in 2012 by two passionate French foodies, Julien and Joyce – French and Hong Kong natives respectively. Odelice! now operates seven outlets including two in Hong Kong, which are overseen by its Hong Kong co-founder Mathieu.

Odelice! serves tasty, hearty French fare in a casual, friendly setting, targeting busy and trendy urban millennials. The new outlet at The ONE perfectly reflects that ethos: casual modern kitchen style, bright and friendly décor, and – when it’s ready – a terrace outside with a view of bustling Tsim Sha Tsui. For our dinner, we shared several of Odelice!’s popular dishes, starting with its two signature tartares: Le Frenchie ($138), a blended steak tartare served with country bread; and Le Hongkie, a nicely blended salmon tartare with interesting condiments. Far East Lobster Risotto ($218) was the pasta of choice. Our entrees were U.S. Angus Beef Rossini ($265) with pan-fried French foie gras and Hoisin Glazed French Duck Leg Confit ($158). We chose for dessert Mango, coconut shreds, almonds, coconut ice cream, fresh mint ($70) – a light, refreshing dish to complete our meal. It’s rare for a restaurant to deliver a fizzing combination of good price, fine food and friendly service; Odelice! seems to have hit the sweet spot. Give it a try!

Queen’s Dining 皇后小聚

Queen’s Dining, located in Tsim Sha Tsui, is the first restaurant in Hong Kong to combine authentic Thai, Vietnamese and Cantonese cuisines, offering one-of-a-kind home-made style dishes. Queen’s Dining is an offshoot of Queen’s Kitchen, a popular Thai restaurant and cooking school founded by Joanna Fu, a second-generation Thai Chinese whose passion for cooking at home has led to a successful restaurant career. Queen’s Dining reflects her business’s evolution in the creation of innovative dishes and the fusion of Southeast Asian cuisines.

To mark the opening of Soravit on Granville – the boutique Thai-style hotel where the restaurant is located – Queen’s Dining is offering a new menu, from which we sampled some of the new items. They include Black Truffles and Crab Meat Omelette ($198) – a fluffy omelette nicely flavoured with black truffle and fresh crab meat; Thai Green Curry Lamb Shanks ($148) – the lamb meat is tender and bites easily, its flavour nicely accented by the curry; Tofu with Associated Mushroom in Red Curry – another delightful surprise, we can clearly see the influence of Thai and Cantonese cuisine. Other dishes we sampled include Deep-fried Stuffed Crab Meat Fritters ($98) and Fried Thick Rice Noodles with Mushrooms in Belacan Sauce ($68, available in lunch set menu only).

Tucked away in a quiet street in Sai Wan Ho in the eastern part of Hong Kong Island, this unassuming five-storey building is home to a fascinating repository of the Hong Kong film industry’s glorious past. The archive regularly hosts screenings of old movies and its resource centre has all the information a movie buff could dream of.

This urban park in Sai Ying Pun on Hong Kong Island is a hidden gem even for locals as it is shielded from view by elevated expressways and a cross-harbour tunnel. That just doubles the pleasure of finding it: a well-landscaped park with a water fountain, a promenade with a spectacular vista of the harbour, and spacious lawn for kids to run around on – a perfect respite from a busy day of shopping.

One of the city’s top Instagram spots. This public housing estate in Kowloon and one of its oldest, whose name literally means ‘rainbow’ is, not surprisingly, painted in various colours. The colours match up beautifully with its geometrically shaped facade. The colourful basketball courts in front of the estate offer a different but equally cool perspective.

‘KAWS’ at PERROTIN 26 Mar – 19 May. Perrotin presents the simultaneous exhibitions in its Tokyo and Hong Kong galleries by the multifaceted American artist KAWS. ‘So long as they are wild’ by Catherine Opie at Lehmann Maupin 17 May—7 Jul. Lehmann Maupin presents So long as they are wild, a solo exhibition of recent work by Catherine Opie. For the Los Angeles-based artist’s first solo exhibition in Hong Kong, Opie will present a series of photographs shot in one of the United States’ most revered and naturally beautiful locations, Yosemite National Park in California. Opie is known for her ability to create photographs that unite contemporary themes and issues with a classical aesthetic that expands upon her exploration of the tradition of photography as well as the greater art historical canon. In addition to the photographs, Opie will include a series of ceramic sculptures. This recent undertaking of sculpture began as a personal pastime but has evolved into an alternative aesthetic pursuit. Since 2009, a group of teachers and students at the Hong Kong Institute of Vocational Education (IVE) have been developing a series of solar cars named SOPHIE in Hong Kong. Their aim is to develop a greener vehicle that can convert renewable solar energy into electricity more efficiently for use. The SOPHIE team and their fourth-generation solar car, SOPHIE IV, participated in the "World Solar Challenge" in 2013 for the first time and was the third runner-up in the 3,000-kilometre race from Darwin in the Northern Territory of Australia to Adelaide in South Australia. In 2015, SOPHIE IV became the first solar car to run on a highway in Hong Kong. We selected one of the comprehensive Spa Journey services – De-aging & Hydrating Retreat ($2,300 for 2.5 hours), which comprises a 30-minute Age-defying Organic Body Wrap, a 60-minute Aromatherapy Massage, and a 60-minute Hydrating Facial. The body wrap had to be tried as it is not commonly offered in Hong Kong. The therapist scrubs the back with natural salt and sugar, then lathes the body with organic avocado oil before wrapping the body, helping it to absorb the nutrients. The skin feels firmer, fuller and better moistened afterwards. This is followed by the aromatherapy massage and facial. It’s worth noting the exceptionally comfortable treatment table, and the ultra-smooth and soft towels and sheets, all attesting to the spa’s attention to detail. GENERAL MANAGER Richard Hatter, General Manager of Hotel ICON shares thoughts on his career and the innovative hotel that he now manages. 唯港薈總經理海德與我們分享他對職業生涯的看法，並為我們詳細介紹他管理的這間創新型酒店。 I went to school on the Isle of Wight and then at the University of Portsmouth where I studied a Higher National Diploma in hotel, catering and institutional management. I became general manager of the Royal Southern Yacht Club at Southampton, and the deputy general manager of the Treasure Isle hotel on the British Virgin Island of Tortola in 1983. Subsequently I spent 17 years with Shangri-La Hotels and Resorts, and I was director of development prior to joining Hotel ICON in 2009. I was involved in the development of Hotel ICON pretty much from scratch, after the Government agreed to provide this site to the Hong Kong Polytechnic University to build a teaching hotel and the School of Hotel and Tourism Management (SHTM). It’s been a fantastic experience – from conceptualising the design of the building and its facilities, to formulating the hotel’s commercial positioning and its operating strategy, to recruiting the right kind of people to join the business. Hotel ICON is unique in so many ways. It’s an exceptional hotel with a special purpose: not only does it embody all the creative energy and spirit of Hong Kong, it is also the world’s first integrated teaching and research facilities in a real business environment. As part of the university, we have an important training mission to develop our students to be self-motivated and independent. Hotel ICON is ranked no. 3 on Trip Adviser’s best hotels in Hong Kong. We position the hotel as one providing affordable luxury and Asian hospitality with a modern twist – I think our ranking reflects the success in achieving that. In a way, Hotel ICON’s success is a direct outcome of our recognition of the increasing influence of OTAs and social media on how hotels operate, and our conscious decision to leverage that from the very beginning. This has been a great job. I am a director of the board of the hotel. The board, headed by Dr Victor Lo, has been very supportive and allows the hotel a lot of freedom in how it operates. I have full responsibility for the hotel’s commercial and academic objectives. I am also associate professor of SHTM and 25 percent of my time is spent teaching under- and postgraduate students, which is a wonderful part of what I do. I enjoy the creativity and the freedom of my job to work towards our mission. We use the hotel as a lab to experiment and engage with our guests to bring them happier experiences – we want the hotel to live up to its name and be an icon of Hong Kong, and that is a huge but fun challenge. I like Hong Kong for its caring, hardworking people. The city is great too, especially for visitors - there are terrific hotels, beaches, wet markets and street vendors. My three recommendations on what to do in Hong Kong: 1. Visit the markets – the Flower Market, Goldfish Market, and Jade Market, and others. They are simply fascinating to explore. 2. Buy some good quality tea, or jade or other nice gifts to take home. 3. Explore Hong Kong’s great outdoors – whether it’s a hike or going to an island, especially in the cooler months.

我在懷特島上學，之後我在樸茨茅斯大學取得酒店、餐飲和企業管理高級國家職業文憑。隨後我成為了南安普頓皇家南方游艇俱樂部的總經理。 1983 年，我在英屬維京群島托爾托拉島的 Treasure Isle hotel 擔任副總經理。之後我在香格里拉酒店集團度過了17年的時間。在2009年加入唯港薈之前，我的職位是項目發展總監。我幾乎是從一開始就參與了唯港薈的發展計劃，就在政府同意將這塊地提供給香港理工大學建造教學酒店和酒店及旅遊管理學院（SHTM）之後。這是一趟奇妙的旅程，從建築設計和設施的概念化、制定酒店的商業定位和運營策略，到招募合適的人加入酒店，整個過程我都投入其中。唯港薈在很多方面都是獨特的。這是一間有特殊用途的出色的酒店，它不僅體現了香港的創意和精神，更是全球第一間在真實商業環境中的綜合教學和研究設施。作為大學的一部分，我們有一個重要的培訓使命，就是培養學生的自我激勵和獨立。唯港薈在 TripAdvisor 上的香港最佳酒店排行榜中排名第三。我們的定位是一間以經濟實惠的價格提供奢華服務的酒店，以及具現代感的亞洲特色酒店。我認為我們的排名反映了我們成功實現了這個定位。在線酒店預訂網站和社交媒體對酒店營運的影響力不斷增加，某程度上，唯港薈的成功正是由於我們意識到了這一點，以及我們從一開始就充分利用它的影響力。這是一份很棒的工作。我是酒店董事會的董事，而羅仲榮博士帶領的董事會一直非常支持酒店發展，並對酒店的營運提供了很大的自由度。我負責酒店的商業和學術目標，也是 SHTM 的副教授，我有25％的時間花在本科生和研究生的教學上，這是我很喜歡做的事。我喜歡我的工作的創造性和自由度，不斷朝著目標前進。我們把酒店作為實驗室，致力於為顧客營造快樂的體驗。我們希望酒店能像它的英文名字一樣，成為香港的一個標誌，這是一個很艱巨但也充滿樂趣的挑戰。我喜歡香港的人文關懷、勤勞和這裡的人。這個城市本身就很棒，特別是對遊客來說，這裡有着出色的酒店、海灘、街市和小販。關於訪港旅程的三點建議：

1.到市集遊覽 - 花墟、金魚街和玉器市場等等，這些特色市集值得一遊。 2.買一些優質的茶葉、玉器或其他漂亮的禮物帶回家。 3.探索香港的戶外活動，遠足或到離島放鬆均可，最好在涼快的季節前往。
