Summer is in full swing and that can only mean one thing – summer holidays for families and friends alike. For sure Hong Kong is ready for the influx of visitors from all corners of the world. Summer Fun, organised by the Hong Kong Tourism Board, is a comprehensive and multi-faceted programme introducing cool neighbourhoods to explore; spectacular events, fairs, carnivals and performances; fantastic summer sales in the city’s buzzing shopping malls; great offers from merchants and service providers citywide; and special summer programmes from the city’s top attractions. It’s the perfect way to spend a fun-filled and memorable vacation. Please see our cover story on page 10 for more details. The Hong Kong Book Fair is one of the largest consumer fairs of its kind in the world and attracts hundreds of thousands of book lovers, young and old, every year. The three-day fair attracts visitors not just locally, but from around the region, as thousands of vendors offer books and publications from rare to popular, for purchase or perusal. It all takes place at the Hong Kong Convention and Exhibition Centre, which becomes a gigantic book store for three days. Right on the heels of the Book Fair comes the 18th Ani-Com & Games HK & Creative Paradise 03, another popular fair, especially among young people. The “animation, comics, and games” expo will enthral attendees with latest video games and consoles, comic gadgets, and of course comic books, among others. For family fun, the 2016 International Arts Festival will showcase enchanting and enthralling performances by local and foreign artist groups from Japan, Australia, Taiwan, the UK, the US and beyond. Shows include an adaption of The Wizard of Oz, robotic dance, silent slapstick comedy and many more. It’s the perfect way to introduce your child to the magic of theatre. Speaking of children, Hong Kong can be a fun place for kids to play, explore and enjoy, especially when you know where to go. Our feature article on Page 14 offers some interesting places and things to do, on top of our already busy summer itinerary. But that is the great thing about Hong Kong – there are so many things to do, places to eat, landmarks to see, and shops and malls to explore that the city has something for everybody. So be sure to fill your calendar with fun and happy events and explore the enchanting neighbourhoods that reveal the colourful side of Hong Kong, and on behalf of all of us, have a memorable time in Hong Kong!

Scaling New Heights in Zheng Music

Piracy had long been rampant in the South China Sea but as the British colony of Hong Kong took root, other forms of crime also became a problem. 南中國海的海盜活動一直十分猖獗，但自從英國接管香港，其他形式的犯罪亦成為不容忽視的問題。

hen the first traders set up premises in the new City of Victoria on the North side of Hong Kong Island there was no police force. Their premises and goods were a temptation to the Chinese criminal class and robbery and other crimes soon became a cause for concern. A police force was quickly established and the first jail, Victoria prison, was completed in 1845. This was supposedly the first building constructed from durable materials. It formed part of a complex that later encompassed the Magistracy and Central Police Station. Today, it is all undergoing renovation by the Hong Kong Jockey Club to conserve and revitalise the compound and transform it into a centre of heritage, arts and leisure. A report by Hillier in 1855 described the severe congestion in prison cells. In one case, 103 people were crammed into a single room, with only one light hung in the centre at night. This was said to have encouraged “unnatural crime” in dark quarters. It was also observed that the newly convicted were frequently

robbed by other prisoners during the first night. Clearly more space was needed and by 1862 another jail was under construction on Stonecutters Island. However, overcrowding remained a problem as the colony grew apace. In January 1893, the leaders of the Chinese community sent a petition to the Governor Sir William Robinson expressing strong opposition to the planned gaol extension. The Chinese community leaders held the view that gaol conditions were too good – prisoners were better off in than out of it. They described the Gaol as a kind of “paradise” for bad elements and they stressed that extension of the Gaol would lead to an influx of bad characters into Hong Kong. Their recommendation was that “the power of banishment and the rattan” would be a more useful deterrent to crime than the prospect of prison. obstruction and laughing at the magistrate • Sixty or 100 strokes for theft or robbery (with or without imprisonment, banishment or queue-cutting) • Piracy: 500 strokes or more, administered at intervals of 100, plus several years of imprisonment, periodic exposure in the cangue (cage made of wooden planks), and banishment at the end of the sentence. The use of the cangue is interesting as it was one form of punishment borrowed from the Chinese and was a little like being placed in the stocks. The most serious of the crimes was piracy and although the punishment might seem harsh it was not as bad as that carried out by the Chinese authorities. One infamous case was in 1891 when pirates took over the ship S S Namoa killing some of the crew. They were captured and beheaded at Kowloon City with many westerners looking on. Apart from flogging with a rattan or imprisonment, other measures were also adopted to deter criminals. These included branding, which was actually the tattooing of a small arrow on the lobe of the left ear. By Hennessy’s time, branding was carried out on the neck rather than ear lobe. Another was queue-cutting. The cutting of the queue – the long braid of hair worn by most Chinese men – was considered an extreme form of humiliation and punishment. It was often applied to longterm prisoners to prevent them from hanging

themselves. For more serious crimes prisoners were sentenced to hard labour in the Colony’s public works. Governor Davis reported that the value of convict labour in 1846 was nearly 700 pounds, enough to cover the cost of clothing and food for the whole prison. Crimes not mentioned above were w o u n d i n g a n d m u r d e r, f o r w h i c h t h e punishment could be execution. The first execution took place on 3 July 1845, directed by Governor Davis. The condemned was robber Chun Afoon who wounded an Indian guard and an English blacksmith during an attack on Jardine Matheson’s premises at East Point. On the Peak near Victoria Gap there used to be a small granite cross with the inscription:–“W.W.H. 1869”. This marked the scene of a brutal murder there by a Chinese footpad, the victim being Mr Holworthy, an officer of the Ordnance Department, whom he felled with a bamboo and robbed, inflicting fatal injuries. The culprit was never found. Execution was by hanging and it was also applied to the English murderer Charles Ingwood; to demonstrate the impartiality of British law. Today Hong Kong has a low crime rate and people feel safe. Obviously there are robberies and other offences that make the headlines but generally one can walk the streets without fear of footpads. Hong Kong’s police are respected by the community and their presence on the streets is comforting. They do a good job and are proudly known as Asia's Finest. ■

1840年代早期，中國人犯罪的刑罰是： • 妨礙街道及嘲笑地方行政官判十下笞刑 • 盜竊或搶劫判60或100下笞刑（犯人可能同時被判監禁、流放或髠刑） • 海盜活動：500下笞刑或更多，每次100下，加上數年的監禁，定期帶上枷鎖示眾，最後流放。還有一種刑罰是為犯人戴上腳鐐木枷，這是從中國借鑒而來的，犯人像是被關在柵欄中。最嚴重的犯罪是海盜活動，刑罰看似嚴厲，但仍不及中國當局使用的刑罰。其中一個著名的例子是 1891年海盜登上S S Namoa後，殺死了其中一些船員，後來他們被逮捕並在九龍城被斬首，當時有很多西方人在圍觀。除了笞刑和監禁，還有其他遏制犯罪的刑罰。其中包括烙刑，指的是在犯人的左耳垂紋上一個小箭頭，但在軒尼斯任香港總督的時代，烙刑是將箭頭紋在脖子上而不是耳垂上。另一種是髠刑，這是一種恥辱刑，也是對罪犯的一種刑罰，通常用於刑期較長的囚犯，以防他們利用自己的頭髮上吊自殺罪名更嚴重的囚犯則被判為殖民地的公共事務當苦力。港督戴維斯指出在1846 年此判罰所創造的價值幾乎接近700英磅，足夠支付整個監獄囚犯的衣服及食物費用。以上沒有提到傷人及謀殺的刑罰，因為犯人可能會被判死刑。第一次死刑於1845年7月3日執行，由港督戴維斯指示。被判死刑的是搶劫犯陳阿寬，他在東角渣甸洋行致使一位印度籍保安及一位英籍鐵匠受傷。山頂的爐峰峽以前有一個小的花崗岩十字架，上面刻著：“W.W.H. 1869”. 以記錄一件殘忍的攔路盜賊殺人事件。事件受害者是軍械部官員 Holworthy先生，他被犯人用竹子襲擊和搶劫，造成致命傷害，但犯人卻自此失蹤。當時的死刑是絞刑，英籍殺人犯Charles Ingwood同樣被判絞刑，藉此證明英國法律的公正。如今香港的犯罪率較低，人們的安全感大大增強。但當然仍有搶劫等罪案發生，這些罪案一旦發生通常都會成為報紙頭條新聞，但總體上來說，人們不用擔心走在街上會被攔路搶劫。香港警察向來聲譽良好，備受尊重，在街上看到警察都會讓人十分放心。香港警察出色的表現為他們贏得“亞洲最佳”的稱譽。■

sumptuous buffet lunch or dinner served at a five-star hotel has long been one of Hong Kong’s favourite dining options. It’s seen as a treat for special occasions and appeals to value-minded patrons, of which Hong Kong has many. In response, more restaurants are serving buffets and their menu offerings are becoming more elaborate and varied. So the idea of trying out a seafood-themed dinner buffet at the Hyatt Regency’s Café made us tingle with anticipation. After all, among international hotels, Hyatt is known for its emphasis on providing quality and innovative dining options. And for most buffet aficionados, seafood sits on top of the hierarchy of preferred menu items. The buffet served at the Café, which is brightly decorated with comfortable and relaxed seating arrangements, has more than seafood of course. It quickly becomes apparent that we will only be able to sample a fraction of the offerings. Almost half of the spacious Café area is taken up by food stations. The numerous stations offer many regional cuisines including Japanese, Western, Chinese, Indian and Malaysian, and a generous dessert buffet rounds off the selections. Still, seafood clearly is the order of the day, and we quickly go to work with the signature offering: live Boston lobster that is boiled in front of you and served piping hot and fresh. In fact freshness is the overriding theme of this delicious buffet and the helpful food servers endeavour to cook most food

items to order – the short wait is certainly worth it just from the psychological comfort derived from knowing all items are freshly prepared. There is more than lobsters of course; the sashimi counter, a staple of high-end buffet, offers up fresh and succulent salmon, tuna, octopus and more. The special offering is the whole raw shrimp which is sweet and tender – it’s all too easy to wolf down three of four of them, but one must hold back, of course, for all the other items. For this buffet, fish maw – highly esteemed among the Chinese for its beneficial effect on the skin – is featured in a few dishes across several cuisines. The Seafood Saffron Risotto with fish maw is certainly interesting, as is the Teppanyaki Fish Maw stuffed with Shrimp Mousse with Teppanyaki Sauce, both worth trying for their taste and novelty. Another signature cooking station is the Grill station, serving up quality sirloin, ribeye and lamb, carved and grilled to order, which certainly enhances the dining experience. In the end, our eyes prove bigger than our stomachs and we had to leave a lot of great-looking dishes on the table, so to speak, at a price of $578 on Mondays through Thursdays and $638 on Fridays and weekends (50% off for children under 12), it is truly good value for money. or celebrations such as birthdays or anniversaries, or just to treat yourself to a special meal, a highend steak house, and an American one at that, surely ranks high on the list. While Hong Kong boasts a decent range of steak options, the venerable Ruth’s Chris Steak House, with its Louisiana beginnings and a favorite among steak lovers in Hong Kong for many years, comes to mind as the perfect venue for such occasions. Ruth's Chris operates two outlets, one in Admiralty, on Hong Kong Island, and the other in Tsim Sha Tsui East, which is where we headed for our lunch outing. The restaurant is decked out in classic American steakhouse décor with red leather dining booths and tables in a classy but relaxed setting. We turn our attention quickly to the task at hand, picking the right steak and the right combination of appetisers and dessert for this special meal. First the steak: As one would expect, Ruth Chris’s chooses only high-quality USDA cornfed, Midwestern prime beef. The beef is then custom-aged and broiled (grilled) in its trademark 1800-degree-Fahrenheit oven to lock in natural flavour and tenderness. And each steak is then served on a 500-degree plate and sizzled in butter to bring out the flavour consistently and ensure it stays hot throughout the meal. We started our meal with several signature starters. First the Sizzlin' Blue Crab Cakes ($180) – two succulent jumbo lump crab cakes with sizzling lemon butter; the Barbecued Shrimp ($380) sautéed New Orleans–style in reduced white wine, butter,

garlic and spices; the Cajun Gumbo Soup ($140) – which is delightfully spicy and tasty, and finally Ruth’s Chop Salad ($120) consisting of countless ingredients tossed and piled in a unique cup shape. While gorging ourselves on the starters, each of which offered the palate a new and pleasurable sensation, we were mindful to save space for our steak orders to come. And for those, we chose the Prime Filet ($540), an 11-ounce slab that is tender with a rich texture, and the always-in-favour Ribeye ($510 for 12 ounces) that brings out the full flavour of the prime beef and is deliciously juicy. Both steaks were cooked medium rare, as they must be for optimal taste and tenderness. For side orders we chose Lyonnaise Potatoes ($90) sautéed with onions, and Sautéed Mushrooms ($90), both in generous portions. We savoured each bite of the steak as the flavour lingered in our palate, and managed to finish every last bite, with ease. It’s said that a superbly prepared steak is one of the top choices for a condemned man’s last meal. We can recommend this offering as a worthy candidate, if you ever have the choice to make. We rounded up our leisurely lunch with three desserts, all of which we highly recommend: Cheesecake ($125), which is a whole smooth, creamy cheesecake served with fresh berries, the classic Crème Brulee ($110) and the irresistibly tempting Chocolate Sin Cake ($110) with espresso. So mark your visit to Hong Kong with a special meal at Ruth’s Chris – it’s well worth the visit! ■

為慶祝生日、周年紀念日等特別日子，或者是純粹為了大飽口福，很多人都會選擇在一間高級美式扒房大快朵頤。茹絲葵牛排餐廳

歷史悠久，第一間分店位於路易斯安那州，香港分店同樣歷史悠久，一直深受牛扒愛好者歡迎，雖然香港有不少同類型餐廳，但茹絲葵牛排餐廳無疑是最佳選擇之一。餐廳在香港設有兩間分店，分別是港島區的金鐘分店，以及我們這次前往的尖沙咀東分店。餐廳裝潢屬經典美國扒房風格，卡座及餐桌採用紅色皮革，整體氛圍典雅而舒適。入座後我們馬上著手選擇扒類、前菜及甜品的搭配。首先介紹這裡的牛扒：茹絲葵牛排餐廳採用的牛肉經過美國農業部有機認證，是來自中西部以玉米為飼料的優質牛肉。他們採用濕式熟食牛肉的方式進行處理，然後用1800度高溫的獨家方式烹調，鎖住牛肉原本的味道，保持肉質鮮嫩。每一塊牛扒都是用500度高溫的熱碟盛載著，加入牛油後熱得滋滋作響，以帶出牛肉的風味，以及保證吃到最後肉還是熱的。率先登場的是幾道招牌前菜，首先是蟹肉餅 ($180)，兩大塊蟹肉餅與檸檬牛油盛放於滾燙的碟子上，發出嘶嘶的聲響。第二道前菜是紐奧良炒蝦 ($180)，以濃縮白酒、牛油、大蒜和香料調味，之後奉上的紐奧良香料雜燴湯 ($140) 香辣而美味，十分獨特。最後是茹絲葵精選沙律 ($120) 材料十分豐富，攪拌後堆成獨特的杯狀。我們還沉浸在每道前菜帶來的不同感官享受之中，突然意識到主菜牛扒要來了。我們選擇了頂級牛柳 ($540) 11盎司的牛柳肉質鮮嫩而結實，向來大受歡迎的肉眼扒（$510, 12盎司）將頂級牛肉的味道完全帶出，美味多汁。兩種牛扒都是三至四成熟，因為這樣最能帶出牛肉的風味及口感。至於配菜我們選擇了洋蔥炒馬鈴薯 ($90) 以及炒蘑菇 ($90) ，份量都十分大。這裡的牛扒每一口都令我們回味無窮，甚至捨不得吃得太快。據說許多被判處死刑的囚犯都會選擇一道精心製作的牛扒作為最後一頓飯。不知道吃什麼的時候，我們誠意推薦您選擇這道菜式。悠閒的午餐以三道美味的甜品作結，一整個柔滑的芝士蛋糕 ( $125) 加上新鮮紅莓及藍莓，味道濃郁份量較大。經典法式布甸 ($110) 及濃縮咖啡朱古力蛋糕 ($110) 味道同樣吸引，令人無法抵擋。您的訪港行程中怎能少了茹絲葵牛排餐廳？這裡絕對是必試餐廳之一！■

The Trick Eye Museum, hailing from Seoul, caters perfectly to our love for self-photoshoots while having loads of fun. So what is the Trick Eye Museum? Simply put, Trick Eye intends to create a vivid three-dimensional (3D) visual effect using two-dimensional painting or artwork when captured on camera. Unlike other museums, visitors are more than welcome to touch and pose with these artworks and have their pictures taken – the more hilarious the pose, the better. In this interactive approach lies the secret of Trick Eye’s success – it is a fun experience exploring the different 3D scenarios while capturing that experience on one’s smart phone to share with friends. Our job scope is quite wide: portering, arranging transport, making reservations, and much more. I get the most satisfaction from helping guests to get what they really want during their stay. CL: Any memorable requests from your guests that you can share? Nick: A guest was planning to propose to his girlfriend; he had the ring, but not the flowers and it was 3am in the morning when most flower shops were closed. I found out from a friend that there were some stores still open at the flower market. So we rushed to buy the flowers and our guest was able to totally surprise his girlfriend

Nick: Guests are becoming more sophisticated and demanding as they themselves can access a lot of information using their computers and smart phones. As concierges we need to really understand their mindset and provide more up-to-date and detailed advice and recommendations. CL: What do you like to do in Hong Kong when you are away from work? Nick: I like the outdoors. So in my spare time I might go to Sai Kung or the Dragon’s Back to hike and enjoy the clean air and sunshine. At night I may go to SoHo for a drink or two. ■

A two day itinerary for his hotel guests: First Day: In the morning visit Stanley Market for souvenirs, then lunch with a cold beer at one of the seaside promenade restaurants. Take the double decker to Repulse Bay to enjoy the sand and the sun. Go to Ladies Street in the evening for some bargain shopping and then visit Soho and relax at one of the many western restaurants and bars to cap off a great day.

Second Day: Head to Lantau and take the Ngong Ping 360 Cable Car in Tung Chung to visit the Ngong Ping Village, the Big Buddha and Po Lin Monastery, where you can enjoy a vegetarian lunch. Then take a bus to Tai O, the fishing village where local fishermen have retained their traditional way of life. For over a century, trams on Hong Kong Island have been an inexpensive mode of transportation. GENERAL MANAGER We spoke with Robert Hon, General Manager of Hong Kong Gold Coast Hotel, to share his experience in the hospitality industry. 香港黃金海岸酒店總經理韓鵬程先生與我們分享他在酒店業的經歷。 I’ve spent almost 30 years in the hotel industry in Hong Kong and have seen it grow and change a lot. I started at the front office of the Furama Hotel Hong Kong, an icon in Central that has since been torn down. Then I went into sales and marketing at another hotel for 15 years, and then to open a new hotel in Causeway Bay to gain more experience. Then I joined Hong Kong Gold Coast Hotel and have been here ever since. I joined the hotel sector kind of accidentally, when I was quite young. A friend told me at lunch of an opening at the Furama which I jumped at for an interview. It sounded interesting, plus back then working in a fivestar hotel still created a sense of glamour; less so today though as many more hotels have since opened. Managing people is quite different today, especially the younger colleagues, both in terms of the communication style and being more attuned to their feelings and needs. While performance is still important, the way we provide that feedback has become more nuanced. Our hotel is unique in that we are the best known and one of the very few resort hotels in Hong Kong. We have all the amenities to cater to families, especially for kids. We are next to the marina where some of Hong Kong’s biggest yachts are berthed. And the Golden Beach is right next to us. It’s great for a weekend retreat and for MICE events – and we do get a lot of local guests as well. I consider operating results, teamwork and client satisfaction as top metrics for me as a general manager. And they tend to go together in any case. As to my management style, I used to be a bit tougher and more direct when I was in administrative positions. As I mature, I try to be more understanding and empathetic to our staff’s problems and situations. I do think it’s a better way to get at the issues and help motivate them and improve performance. The hotel industry has changed much and so have the guests’ expectations. As more hotels open and younger people have more career options, it’s become more challenging to maintain the same level of service standards. At the same time, guests’ expectation of services are becoming more sophisticated and demanding. The hotel industry has managed to cope well so far. I often recommend shopping and eating for our guests: private kitchens and street markets, for example. But the tourism industry is becoming more competitive across Asia. Visitors expect more and new experiences. So Hong Kong will always need new attractions or selling points to maintain our competiveness. ■

我在香港的酒店業工作了超過30年，見證著這個行業的成長與變遷。我一開始是在香港富麗華酒店的前線工作，當時富麗華酒店是中環的地標之一，之後被拆卸。然後我進入了另一間酒店的銷售及市場部門，在那裡工作了15年，之後在銅鑼灣的一間新酒店工作，積累了更多經驗。然後我就加入了香港黃金海岸酒店，一直工作到現在。我很年輕的時候就加入了酒店業，這其實是意料之外的。當時一位朋友告訴我富麗華酒店有一個空缺的職位，我馬上就去參加面試。當時覺得這份工作很有趣，而且那時在五星級酒店工作聽起來是十分體面的事情，如今情況已經不一樣了，因為香港的酒店數量已十分多。

我們現在採取的管理方式和以前截然不同，特別是面對年輕的同事，我們要更加注重交流方式，留意他們的感受和需求。雖然員工的表現依然很重要，但我們要更留意評核的方式及細節。我們的酒店是香港最有名的度假酒店之一，有各種便利設施供家庭享用，特別是為小孩而設的娛樂設施。酒店位於碼頭旁邊，碼頭停泊著部分香港最大型的遊艇，黃金泳灘同樣近在咫尺，因此我們酒店是周末度假以及舉行會議展覽的最佳選擇，吸引了不少本地客人。作為一名總經理，我認為績效、團隊合作以及客人的滿意度是最重要的，三者的關係密不可分。我以前的管理模式比較嚴格、直接，累積更多經驗後，我更懂得理解和體諒員工，我認為這種方式更有利於解決問題以及提升員工積極性和工作表現。酒店業瞬息萬變，顧客對我們的要求同樣在不斷變化。如今酒店越來越多，年輕一代在職場上有更多選擇，要保持高質素的服務對我們來說是一大挑戰。同時顧客對服務的要求變得更複雜、細緻，但到現時為止我們還做得不錯。我經常會向顧客推薦一些購物及飲食的好去處，例如一些私房菜和市集。但如今整個亞洲的旅遊業都面對著很多挑戰，遊客希望獲得更多不同的體驗，因此香港需要有更多新的旅遊景點吸引遊客，保持我們的競爭力。■
