Happy Holidays This time of the year usually finds us gathering around a table, enjoying special holiday dishes and exchanging laughter, stories and memories. This year, our get togethers with family and friends may be via Zoom or FaceTime. But what binds our hearts is still there, and we’re all finding ways to connect from afar.

As I reflect on this past year and the unique challenges that we’ve all faced, I cannot express how deeply I appreciate our partnerships. It is the reason I smile each and every day. We’re all smiling at how strong and resilient our guests and students have been, and how even during tough times, associates are reaching out to offer those less fortunate their helping hands. Please also know that we are all smiling behind our masks while we serve you. And despite the challenges, we continue to explore new and creative ways to offer you our best every day. May you enjoy some peace and joy this holiday season.

The MEATeor There are three forms of pork in this sandwich, dreamed up by Executive Chef Michael Tyler: Capicola, porchetta and Sriracha bacon. The “three little pigs” are dressed with arugula, grilled tomatoes, red onion jam, zesty horseradish pickles and brown sugar aioli on a toasted ciabatta roll. Now that’s hand-held nirvana!

KICKIN’ TOFU
Chicken Run, Flying Pig and Kickin’ Tofu Ramen and pho are customer faves, but they can’t exactly be slurped on the go. So, the Dining team came up with this: A ramen-style French Dip sandwich that’s portable and features all the iconic ramen ingredients, minus the noodles. The components: Local bread roll, nori mayo, choice of marinated protein (sliced pork, chicken thigh or fried tofu, all marinated for 24 hours) and ramen broth to dip. Lift Up Vikes!
Pack to Give Back
Cleveland State University is home of the Vikings. So naturally the Dining team joined in the Lift Up Vikes! (LUV) campaign to help stock up the campus pantry and resource center. Team members donated food staples and hygiene essentials like shampoo. Holly, director of LUV, sent the team this kind email in response: “We just want to thank you all again for the donation last week and make sure that your staff knows we appreciate them as well.”
It was recently Hunger & Homelessness Week at Catholic University. To help those in need, the “Pack to Give Back” committee invited the campus community to join them in packing lunches and hygiene items to donate to local shelters. The CU Chartwells team donated 500 bottles of water, 500 apples and 500 bags of chips to help the committee reach its goal of packing 500 meals. What an awesome way to give back this holiday season!

Free-Range Feast ‘Tis the season to give thanks! Northwestern Dining showed appreciation and gratefulness to its associates as well as dedicated, hardworking managers by giving them free-range turkeys just in time for the holidays. Thanks to the NU Dining team for continued excellence in service.

UNIVERSITY OF NORTH CAROLINA, CHARLOTTE
Bountiful Food Bank Members of the UNC-Charlotte Dining Services leadership team served its local community on November 11 at the Second Harvest Food Bank in Charlotte, North Carolina. Second Harvest is a regional warehouse that provides groceries and general merchandise to charitable agencies assisting people in need. This food bank serves more than 24 counties, including some in neighboring South Carolina. UNCC managers had an amazing time giving back by providing more than 27 volunteer hours of support. While volunteering, the team sorted donations that included medicine, diapers and houseware items. UNCC Campus Controller Jonathan Dubose, who organized the event, says, “It is extremely important for us to volunteer our time, particularly with this organization. We enjoyed bonding as a team and helping others!”

Traditions Bring COMFORT & JOY Although some things may look a little different this year, the Chartwells team kept traditions going that mean so much. UNIVERSITY OF WISCONSIN – LA CROSSE
Bright Lights, Big Hearts In a year that has had some dark moments, the lights are once again shining bright! Rotary Lights is an amazing annual event that celebrates the season while helping to stock the shelves of local food pantries. With more than 3 million lights and some 350,000 food items that have been donated during the event’s 25-year history, it is a holiday spirit-filled tradition. UW La Crosse Dining Services was incredibly honored to once again be a part of Rotary Lights. The Catering team (Kelly Kamrowski, John Unesch and Rosa Briggs) worked hard to help feed the volunteers who make this event possible. And, as an added bonus, they decorated their own tree in the park! This year, UW La Crosse Dining wanted to make sure that they honored all of their past associates, including three who passed away in 2020. But they also used this opportunity to celebrate and thank their current associates for their

hard work. First and foremost, the tree prominently featured three angels and a thank-you note. And then they added some fun memorabilia from Erbert & Gerbert’s, Einstein Bros Bagels and the Student Union kitchen. And, since it is 2020, they topped the tree with a sparkly face mask. UNIVERSITY OF NORTH CAROLINA GREENSBORO
Toys and Touring! On December 8, UNC Greensboro held its third annual Toys for Joy Parade, hosted by Chancellor and Mrs. Franklin D. Gilliam, Jr. and the UNCG Board of Trustees. The community was asked to bring a new, unwrapped toy for a child between the ages of 4 and 16 while touring the beautiful lit-up campus as a drive-thru event. UNCG’s Spartan Catering was proud to once again be a part of this holiday tradition. The team provided hot apple cider, hot cocoa, coffee and bottled water as well as some tasty treats for patrons
to enjoy during their experience. UNCG Catering loves spreading joy in their community! NORTHEASTERN UNIVERSITY
Confectionery Contest Continues Traditions continue at Northeastern Dining where students competed in the 20th annual Gingerbread Construction Contest. This year, these elaborate cookie-dough creations were displayed online for virtual voting via social media and texts. Students vied for cash prizes, and after the competition, these gingerbread houses were sent to Rosie’s Place to help enhance the holiday spirits at this area homeless shelter.
