FROM THE EDITOR-IN-CHIEF This month begins the long, humid journey through summer that is both “boom and bust” when it comes to the local foodie community.

To counteract these annual doldrums, programs like Coral Gables Restaurant Week and Miami Spice help ensure the boom, while the tropical heat and low season for tourists often lead to a slowdown in our restaurant economy, that is a bust. Of course, we are used to these cycles and even with a beautiful new Streetscape project nearing completion along Miracle Mile and Giralda Avenue, we all need to pull together to help our local restaurants thrive over the next few months. If you are a fan of food, then this upcoming summer is the perfect way to satisfy your appetite and enjoy all the social aspects of dining out. And, just to make it even more interesting, there are a number of new faces – and familiar ones – open now in The City Beautiful that will be participating in these foodie events over the course of June, as well as both August and September. The latest issue of Let’s Eat Magazine celebrates all the things we love about our summer. About to begin our third year in the foodie magazine biz, our Chamber and local business community continue to showcase the best part of Coral Gables – our restaurants. This month, we feature the team behind such amazing concepts as Shula’s 347, Glass & Vine, as well as new eateries The Big Easy and American Harvest. Contributing writer Cindy Avila will also reveal the big plans this group has for the waterfront in the Grove where Scotty’s Landing used to be. Food 4 Thought features the minds behind the wines at Uvaggio on Miracle Mile. Craig DeWald and his partners have been slaying it since the day they opened in The City Beautiful and it is our great pleasure to share a passion that transcends great wines, bubbles and a delightful menu. Our prodigal sommelier Jacqueline Coleman returns from her six-week sojourn to South America, visiting hidden gems that produce amazing wines (and art) in Buenos Aires, Salta, Mendoza and Patagonia. Finally, if you happen to be walking along Miracle Mile or Giralda Avenue, or moving slowly up Ponce de Leon Boulevard, you might see our very own Publisher Jessica Wilcox in her nifty new Smart Car, courtesy of Mercedes-Benz and their Smart Center here in the Gables. In celebration of the dealership’s 60th anniversary and their on-going relationship with the amazing Smart Car brand, they have loaned us a beautifully blinged-out model to showcase our magazine and tout our local restaurants. It is a sweet ride and perfect for Jessica and her love of our restaurants. The co-founders and chief executive officers of Grove Bay Restaurant Group operate Glass and Vine (Coconut Grove), Big Easy (Brickell), American Harvest (Brickell), Shula’s 347 Grill (Coral Gables), Corona Beach House (Miami International Airport), Grove Bay Grill (Coconut Grove) and many more planned eateries. We were excited to talk to Balli about the South Florida food scene. What makes operating a restaurant group here in Miami so rewarding? Miami is home to our family and friends, and contributing to the community we belong to is at the heart of what we do. We aim to be an industry leader in innovative and profitable restaurant concepts, while enhancing the lives of our guests, employees, communities and investors. What makes the Miami restaurant scene different from others? Miami’s culinary scene is rapidly growing, and being at the center and ground up of this revolution is thrilling. We have global celebrity chefs and restaurant groups opening and scoping out locations throughout Miami, to launch their South Florida operations. Being among the company of these industry leaders, drives us to be the best at what we do. The challenge that comes along with this excitement is staying competitive in recruiting great talent. Once we find quality team members, we do everything we can to make sure they’re happy to work with our group and want to stay with our restaurant family for a long time. What is up next for both of you? Up next is the opening of Stiltsville; located in the heart of the Sunset Harbor neighborhood, Stiltsville Fish Bar encapsulates a relaxed and casual neighborhood restaurant. Featuring Chef Jeff McInnis and Chef Janine Booth at the helm, we’ll be serving up quality seafood & Key West-inspired drinks. We also just recently announced a partnership with Top Chef winner Jeremy Ford on two new concepts, both launching here in Miami.

Proseccos bubble up to the top of your menu – tell us a bit about your inspiration and fascination with them and what are FOUR ways we can enjoy them at Uvaggio? Yes, we definitely have a love affair with Prosecco! Why?...because this Italian sparking wine is perfect for Miami, especially in the summer months. It’s light, crisp and super fresh, Prosecco cools down the Miami heat! The first fun way to enjoy this at Uvaggion is simply on its own, Prosecco is a great wine to start your meal. The one we serve is delicious and crisp, to be enjoyed while sitting outside on the Mile’s beautiful new sidewalk, just like in Venice! Number two is our very popular Gingie, which is our take on the classic Bellini. We use house-made ginger syrup and finish off with a fun sliver of candied ginger. Number three is our Blueberry ‘Jito, our version is a unique take on the ubiquitous Mojito. It is made with Prosecco gently stirred with blueberry jam and mint syrup, a mojito Uvaggio style! And number four, our Prosecco pairs especially well with our cheese plate and pickled shrimp. It’s not just about the wine at your wine bar – as local beers make a star turn at Uvaggio, as well. What are FOUR brews you are currently pouring that are a must try for the discerning customer? We work hard to be local in all that we do; local farms, local purveyors and of course local craft brews. Right now we are pouring some of the best that Florida brewers’ have to offer, Wynwood Brewery’s Pops Porter, Saltwater Brewery, Delray Beach, Bone-a-fied Blonde, Tampa Bay Brewery, Reef Donkey American Pale Ale and soon to be added Native Lager from the Native Brewing Co in Ft. Lauderdale. Your wine menu is top notch and well known – what FOUR vinos are tickling your palate right now the very most and where do these faves hail from? On our “By the Glass” menu I have two favorites right now, the first is Firriato, Altavilla Della Corte Grillo from Sicily, Italy, vivacious with hints of almonds and lemon on the nose and intense minerality on the palate, just darn refreshing. The second is Janz sparking Rosé from Tasmania, Australia, This is a classic blend of chardonnay and pinot noir, bone dry and tastes like a basket of fresh strawberries. It is my “go to” sparkler relaxing at home on a Sunday afternoon. The second two favorites come from our “Wines by the Bottle” list. The first is Santos Brujos, Chardonnay from Guadalupe, Mexico, yes Mexico and this wine gives you everything you want from chardonnay and at $39 a bottle it’s a steal! The number four wine that I am really enjoying now is Domaine Diochon, Moulin-a-Vent from Beaujolais, France. The grape is Gamey, it’s light with great flavors of cassis and earthiness and a perfect red wine for the hot months in Miami. You feature delicious small and large plates at Uvaggio, but we are sure you have some real standouts that people clamor for. What FOUR items are flying off the menu right now – and pair them with an adult beverage for us just for fun! Two of our guests favorite dishes right now have been on the menu since we opened three years ago. The first is our Salt Cod Croquetas. I would pair these delicious nuggets with our Janz Rosé sparkling wine. The second is our Octopus “Naranja Agria” served with Aji Amarillo and orange puree and papas bravas, we pair this with our Movia Ribello from Slovenia. Two seasonal dishes that are big guest favorites are the hand-made Potato Gnocchi, sautéed shrimp, spring pea purée, snap peas, Pecorino Romano paired with Ostertag Sylvaner, and the Baharat-spiced Short Rib served on top of a carrot-orange purée and finished with a fennel relish and puffed wild rice. This one is flying out of the kitchen and we pair this dish with our Barbera d’Alba from Italy.
