A MINUTE WITH OUR GENERAL MANAGER SPRING CLEANING is over. All hands were on deck this past month. Thanks to the Board, Members and Managers for your extra time and effort. Completed Projects: Coach House thorough cleaning with preparations for the upcoming swim season New floor in fitness and new ceiling tiles New Pilates floor Organization of storage and inventory areas New laundry equipment installed. (To ensure clean towels during the summer season.) Repaired stone wall around the parking lot Clubhouse roof repaired In Process: New sidewalk ramp between Clubhouse and pool deck Resurfacing of the parking lot Landscape lighting and spring planting (coming this month) Researching options to change the flooring on the stairs in Coach House Repaired and repainted pool deck Maintenance is the key to keeping the Carriage Club facility in optimal condition. We appreciate your understanding as we continue to make the Carriage Club the best experience for you and your guests. We are excited to report we have eight returning summer service staff to the Coach House and have hired more. The Food and Beverage Department has been diligently recruiting and interviewing. We are currently seeking strong Food and Beverage Managers. If you have a recommendation, please reach out to Courtland Gerhart at Courtland@thecarriageclub.com. Congratulations to the new Board of Directors and committee members, I am looking forward to keeping the Carriage Club moving forward. Congrats to Mindy Williams, Accounts Receivable Specialists, who had a healthy baby girl, Amari Faith, on March 15. Both mom and baby are doing well. Bret and his wife, Tasha, are doing great with their new son, Ryder Samuel on March 29th. As many of you may have noticed, we have a hired a new Chef! If you have not met him yet we encouraged, you to stop by and say hello! Over the last month the Management Team has released multiple new menus in the Coach House and Main Dining Room! On these menus you will see some club favorites that have returned like the club sandwich and tomato soup! The Chef plans on changing the menu on a regular basis! You will also find many local products being used like farm to market breads, house made chocolate chip cookies, and house made dressings! If you have not dinned with us recently the Food and Wine Committee invites you to come, try these new menus! Tennis has started their grab and go again, and we are so excited to see some new items in this location! Make sure you stop by to grab something! Over the next couple of months, you will start to see the new summer food menus, beverage menus and many surprises along the way! We are excited to start programing again here at the club. During the last year one of the many challenges that we have had as a club is staffing. Over the last month we have currently hired six new servers, three new cooks, and have confirmed that we will have eight returning servers for the summer. We are still currently looking for a few key positions including two Coach House Managers, Food and Beverage Director, Banquet Chef, and more servers and bartenders. If you know of anyone looking for fulltime, part-time, seasonal please send them our way! We are looking forward to having a great summer, with a great Food and Beverage program! Ingredients
1 Pound Refrigerated Blue Crab Meat (strained not rinsed) 4 oz Celery 2 oz Red Bell Pepper 2 oz Green Bell Pepper 2 Tablespoons Lemon Juice 2 Tablespoons Chopped Parsley 1 Tablespoons Dijon 2 Teaspoon Worcestershire Sauce 1.5 Cups Mayo ½ Teaspoon Salt ½ Teaspoon Pepper 3 Cups of Course Panko Bread Crumbs

Instructions
1. Small dice peppers and celery. 2. Mix the vegetables, lemon juice, Parsley, Mayo, Dijon, Worcestershire, salt and pepper in a medium bowl. 3. add the Strained Crab meat. 4. Mix everything very lightly. One of the things that make our crab cake so good is the chunks of meat. 5. Once the mix is made scoop you referred serving into breadcrumbs. 6. place and roll the crab in the breadcrumbs to where the whole exterior is coated. lightly press the mix to form a patty. 7. Sear on a medium high heat in vegetable oil. If the crab cakes are larger than 2.5 oz, once seared place in a 350 degree oven to make sure they are nice and warm. 8. serve with remoulade sauce and enjoy.
