Peppermint Cheesecake Ingredients Crust 1 1⁄2 cups chocolate sandwich cookie crumbs (pulsed in the bowl of a food processor) 1⁄4 cup sugar 1⁄4 cup (1/2 stick) butter, melted Filling 1 (8-ounce) package cream cheese, softened 1 (14-ounce) can sweetened condensed milk 1 cup crushed hard peppermint candy 3 drops of red food coloring 2 cups heavy cream, whipped Whipped cream for garnish Whole and crushed hard peppermint for garnish Hot chocolate sauce for garnish

Directions To make the crust, combine the chocolate cookie crumbs, sugar, and butter in a bowl, and mix well until it resembles wet sand. Press in the bottom and up the sides of a 9-inch springform pan. Freeze until set, about 30 minutes. To make the filling, in the bowl of an electric mixer fitted with the whisk attachment, beat the cream cheese on high speed until fluffy. Add the sweetened condensed milk, crushed peppermint candy, and food coloring one drop at a time, mixing after each until you achieve the desired color), and mix well. Remove the bowl from the mixer. Using a rubber spatula, fold in the 2 cups of whipped heavy cream until just combined. Pour the filling into the chilled crust. Freeze, covered, until set, at least 24 hours. Before serving, allow the cheesecake to sit at room temperature about 10 minutes to make it easier to slice. Unlatch the springform pan and slice. Drizzle each slice with hot chocolate sauce, and garnish with whipped cream and peppermint candy.

Praline Cake

Ingredients Cake 3/4 cup granulated sugar 1/4 cup salted butter, softened 1 large egg 1 1/2 cups (about 5 7/8 oz.) sifted bleached cake flour (such as Swans Down) 1 1/2 teaspoons baking powder 1/4 teaspoon table salt 2/3 cup whole milk 1 teaspoon vanilla extract Vegetable shortening, for greasing pan

PRALINE GLAZE 1/3 cup packed light brown sugar 1/4 cup salted butter, melted 2 tablespoons whole milk 1 tablespoon + 1 teaspoon all-purpose flour 3/4 cup chopped toasted pecans Directions Prepare the Cake: Preheat oven to 350°F. Beat sugar and butter in a stand mixer fitted with a paddle attachment on medium speed until light and fluffy, about 3 minutes. Add egg, beating well. Stir together flour, baking powder, and salt in a separate bowl; add to sugar mixture alternately with milk, beginning and ending with flour mixture, beating on low speed until just combined after each addition. Stir in vanilla. Pour batter into a heavily greased 8-inch round or square cake pan. Bake in preheated oven until a wooden pick interested in center comes out clean, 23 to 28 minutes. Transfer to a wire rack. (Do not turn oven off.) Prepare the Praline Glaze: Stir together brown sugar, butter, milk, and flour in a bowl until well combined. Stir in pecans. Spread Praline Glaze over hot Cake. Bake at 350°F for 5 minutes. Transfer to a wire rack; let cool completely, about 1 hour.

Southern Cornbread Dressing Ingredients 1⁄2 cup butter 3 cups diced celery 2 cups diced sweet onions 1⁄2 cup finely chopped fresh sage Cornbread Crumbles 3 cups soft, fresh breadcrumbs 4 large eggs, lightly beaten 7 cups chicken broth 1 tablespoon freshly ground pepper Directions Preheat oven to 400°F. Melt butter in a large skillet over medium-high heat; add celery and onions, and sauté 5 to 6 minutes or until onions are tender. Stir in sage, and sauté 1 minute. Stir together Cornbread Crumbles and breadcrumbs in a large bowl. Stir in eggs, next 2 ingredients, and celery mixture, stirring until blended. Divide cornbread mixture between 1 lightly greased 13- x 9-inch baking dish and 1 lightly greased 8-inch square baking dish. Bake at 400°F for 45 to 55 minutes or until set and golden brown.

BUTTERMILK SPOON BREAD Ingredients 3 tablespoons unsalted butter, cut into small pieces, plus more for greasing dish

2 cups whole milk 1 cup whole buttermilk 1 cup finely ground white cornmeal 2 teaspoons chopped fresh thyme 2 teaspoons kosher salt 1⁄2 teaspoon black pepper 3 large eggs, separated Directions Preheat oven to 350°F. Generously grease a 2-quart casserole dish with butter. Heat milk and buttermilk in a medium-size heavy saucepan over medium until steaming but not boiling. (Look for small bubbles forming around edges of saucepan.) Gradually pour cornmeal into milk mixture in a slow, steady stream, whisking or stirring with a large spoon. (Scrape sides of saucepan as you whisk to prevent lumps from forming.) Reduce heat to medium-low. Cook, stirring often, until cornmeal dissolves completely and mixture thickens, 10 to 12 minutes. Remove cornmeal mixture from heat. Add butter, chopped thyme, salt, and pepper, stirring until butter melts and mixture is combined. Let stand 10 minutes. Place egg yolks in a medium bowl. Stir in 2 cups of the cornmeal mixture until combined. Transfer cornmeal-egg yolk mixture to remaining cornmeal mixture in saucepan, stirring quickly until combined. (Mixture may still look a little grainy or lumpy.) Beat egg whites in a medium bowl with an electric mixer fitted with a whisk attachment on medium-high speed until stiff peaks form, about 1 1⁄2 minutes. Gently fold egg whites into cornmeal mixture using a spatula or large spoon until mixture becomes a smooth batter with no streaks remaining. Spoon batter into prepared casserole dish. Bake in preheated oven until spoon bread is puffed up, firm, and lightly browned, 35 to 40 minutes. (Note that spoon bread will initially puff up to great heights but then deflate within minutes of leaving the oven.) Serve hot or warm.
