October 2020

MEET KYLA Hey Centennial Place! My name is Kyla Matthews, and I am the Resident Assistant for 3rd floor! I'm in my third year of study in the Computer Systems Technology Networking Co-Op program, and this is my second year as an RA. I really love being outdoors and camping! But you will also just as likely catch me behind a computer screen playing games online with some friends. I am a really enthusiastic and outgoing person, so if you catch me in the hallway, don't be afraid to say hello!

The following women have accomplished outstanding things in their personal fields, from sports to art, leading a country or traveling to space. Take a look and get all the motivation you need to start working for a dazzling future.

VICKI KEITH MUNRO (Top left) She was the face of marathon swimming all over the world, and is still considered the most successful marathon swimmer in history. APPLE PIE RECIPE PREP TIME: 1 HOUR, 15 MINUTES COOK TIME: 55 MINUTES YIELD: SERVES 8 3 POUNDS GOOD COOKING APPLES SUCH AS GRANNY SMITH (ABOUT 6 TO 8 APPLES, DEPENDING ON THE SIZE OF YOUR APPLES AND THE SIZE OF YOUR PIE DISH) 1 TABLESPOON LEMON JUICE OR APPLE CIDER VINEGAR (TO TOSS WITH THE SLICED APPLES SO THEY DON'T BROWN AS YOU SLICE THEM) 1/2 CUP TO 2/3 CUP SUGAR, DEPENDING ON HOW SWEET YOU LIKE YOUR PIE 3 TABLESPOONS ALL-PURPOSE FLOUR FOR THICKENING 1/2 TEASPOON CINNAMON 1/4 TEASPOON GROUND ALLSPICE 1/4 TEASPOON GROUND NUTMEG 1 TEASPOON VANILLA EXTRACT 1 BOX PILLSBURY PREMADE CRUST, OR ALL-BUTTER CRUST, OR YOUR FAVORITE PIE CRUST RECIPE FOR THE EGG WASH: 1 LARGE EGG YOLK 1 TABLESPOON CREAM PEEL, CORE, AND SLICE THE APPLES: PEEL, CORE AND SLICE OR ROUGHLY CHOP THE APPLES INTO 1/4-INCH TO 1/2-INCH SLICES OR CHUNKS. AS YOU CUT YOUR APPLE SLICES, ADD THEM TO A LARGE BOWL AND SPRINKLE THEM WITH A LITTLE LEMON JUICE OR APPLE CIDER VINEGAR TO HELP KEEP THEM FROM TURNING BROWN. MAKE THE APPLE PIE FILLING: COMBINE SUGAR, FLOUR AND SPICES (ALLSPICE, NUTMEG, CINNAMON) IN A BOWL. ADD THE FLOUR MIXTURE TO THE APPLE SLICES AND USE YOUR HANDS TO DISTRIBUTE THE FLOUR THROUGH THE APPLES SO THEY ARE WELL COATED. THEN SPRINKLE WITH VANILLA EXTRACT AND STIR TO COAT ALL THE APPLES. PREPARE OVEN: PLACE ONE OVEN RACK IN THE LOWEST POSITION AND PUT A LARGE RIMMED BAKING SHEET ON IT (TO CATCH ANY DRIPPINGS FROM THE PIE.) POSITION A SECOND RACK THE NEXT RUNG UP (STILL IN THE LOWER THIRD OF THE OVEN) AND PREHEAT TO 375°F. ROLL OUT THE DOUGH AND LINE BOTTOM PIE PLATE: REMOVE ONE DISK OF PIE DOUGH FROM THE REFRIGERATOR. LET SIT AT ROOM TEMPERATURE FOR 5-10 MINUTES. PLACE DISK ON A LIGHTLY FLOURED, CLEAN, FLAT SURFACE. USING A ROLLING PIN, ROLL OUT THE PIE DOUGH TO A 12-INCH CIRCLE, ABOUT 1/8 OF AN INCH THICK. AS YOU ROLL OUT THE DOUGH, CHECK TO MAKE SURE IT ISN'T STICKING. IF AND WHEN IT STARTS TO STICK, GENTLY LIFT IT UP AND SPRINKLE A LITTLE MORE FLOUR ON THE TABLE SURFACE OR ON THE PIE DOUGH TO KEEP THE DOUGH FROM STICKING. GENTLY PLACE THE ROLLED-OUT DOUGH ONTO A 9-INCH PIE PLATE. PRESS DOWN TO LINE THE PIE DISH WITH THE DOUGH.

PLACE APPLE SLICES ON TOP OF THE BOTTOM CRUST: ARRANGE THE APPLE SLICES IN THE DOUGH-LINED PIE PLATE. MOUND THE APPLES IN THE CENTER. ROLL OUT TOP CRUST, PLACE OVER APPLES, TRIM AND CRIMP EDGES: ROLL OUT THE SECOND DISK OF DOUGH, AGAIN TO 12-INCHES. GENTLY PLACE THE SECOND ROUND OF PIE DOUGH OVER THE APPLES. TRIM EXCESS DOUGH WITH KITCHEN SHEARS, LEAVING A 3/4-INCH OVERHANG FROM THE EDGES OF THE PIE PAN. FOLD THE DOUGH UNDER ITSELF SO THAT THE EDGE OF THE FOLD COMES RIGHT TO THE EDGE OF THE PAN. PRESS THE TOP AND BOTTOM DOUGH ROUNDS TOGETHER AS YOU FLUTE EDGES USING THUMB AND FOREFINGER OR PRESS WITH A FORK. BRUSH WITH EGG WASH, CUT VENTS: PLACE EGG YOLK AND CREAM IN A SMALL BOWL AND USE A FORK TO STIR UNTIL WELL COMBINED. USE A PASTRY BRUSH TO BRUSH THE EGG WASH OVER THE TOP AND FLUTED EDGES OF THE PIE. USE A SHARP KNIFE TO CUT SLITS IN THE TOP OF THE PIE CRUST FOR STEAM VENTS. BAKE: PLACE PIE ON OVEN RACK CENTERED OVER THE BAKING SHEET ON THE RACK BELOW IT TO CATCH ANY DRIPPINGS. BAKE THE PIE AT 375°F UNTIL CRUST BEGINS TO LIGHTLY BROWN, ABOUT 20 MINUTES, THEN REDUCE HEAT TO 350°F. BAKE UNTIL CRUST IS GOLDEN AND JUICES ARE BUBBLING, ANYWHERE FROM AN ADDITIONAL 45 MINUTES TO AN HOUR, DEPENDING ON THE TYPE OF APPLES YOU ARE USING. (ABOUT HALFWAY THROUGH BAKING CHECK TO MAKE SURE THE PIE ISN'T BROWNING TOO MUCH. WHEN IT'S NICELY BROWNED, TENT THE PIE WITH A LARGE PIECE OF ALUMINUM FOIL TO KEEP THE PIE FROM BROWNING FURTHER.) LET COOL: TRANSFER THE APPLE PIE TO A RACK TO COOL FOR AT LEAST 1 HOUR. SERVE SLIGHTLY WARM OR AT ROOM TEMPERATURE. GREAT WITH A SIDE OF VANILLA ICE CREAM. (BAUER, 2019)

What's your Best Friend story? This month we had a best friends' interview and we have residents living here at Centennial Place that have been life long friends as well as others that have made friends for life. Today we are featuring Arman & Amir. They both grew up in Iran, and have been friends since childhood.

“We always argue,” says Arman, “mainly because we have nothing in common.” They both burst into laughter. Do you have a life long friend? Maybe a a best friend you met at Centennial Place? We would love to hear your story! Send a picture and quick description to our Instagram Account (@Centennialres1) and you could be featured in our monthly newsletter.

'DO SOMETHING NICE' DAY OCT 5TH 2020 IS “DO SOMETHING NICE” DAY. IN A WORLD WHERE SOME PEOPLE HIDE BEHIND THEIR KEYBOARDS TO SAY HORRIBLE THINGS TO EACH OTHER, IT IS IMPORTANT TO REMEMBER THE IMPORTANT VIRTUE OF KINDNESS. SO, FOR DO SOMETHING NICE DAY THIS YEAR, HERE’S A FEW THINGS YOU CAN DO TO CELEBRATE: 1. CALL FAMILY AND LOVED ONES. WITH THE PANDEMIC MAKING IT HARDER TO TRAVEL, IT’LL BE ESPECIALLY HARDER FOR TO CONNECT WITH FAMILY AND FRIENDS. SO, THIS YEAR, CALL YOUR LOVED ONES ON FACETIME, SKYPE, ZOOM, TEAMS, WHATSAPP OR ANY OTHER SOCIAL MEDIA PLATFORM AND JUST REMIND THEM THAT YOU LOVE THEM. 2. GIVE SOMEONE A COMPLIMENT PEOPLE ON THE INTERNET CAN BE CRUEL, SO FOR THIS YEAR’S “DO SOMETHING NICE” DAY, YOU COULD PAY A COMPLIMENT UNDER SOMEONE’S INSTAGRAM POST. A LITTLE KINDNESS GOES A LONG WAY. 3. TREAT YOURSELF THE MOST IMPORTANT PERSON TO BE KIND TO IS YOURSELF. YOU COULD DECIDE TO BUY YOURSELF THOSE PAIR OF SHOES THAT YOU’VE HAD YOUR EYES ON FOR A WHILE OR DO AN AT HOME SPA DAY WHERE YOU SOAK IN A TUB, DO A FACEMASK, EAT ICE CREAM AND WATCH YOUR FAVOURITE MOVIE. JUST TAKE SOME TIME OUT TO FOCUS ON YOURSELF. THIS LIST IS NOT EXHAUSTIVE, THERE ARE MANY MORE THINGS YOU CAN DO TO MARK “DO SOMETHING NICE” DAY. THE MOST IMPORTANT THING IS TO REMEMBER TO BE KIND AND CONSIDERATE OF OTHER PEOPLE.

'Make a Difference' Day This day is celebrated every year on the fourth Saturday of October. It is to encourage people to participate and volunteer their time and resources to help a cause that matters to them. For instance, if you love animals, you might want to consider donating to a few charities that help get animals to loving homes or maybe even volunteer to work at an animal shelter for a day. If you are more interested in social justice, you could decide to donate to a few causes that speak to you. Take this day and use it to make a difference in your community, a little goes a long way!

Breast cancer starts in the cells of the breast. A cancerous (malignant) tumour is a group of cancer cells that can grow into and destroy nearby tissue. It can also spread (metastasize) to other parts of the body. Cells in the breast sometimes change and no longer grow or behave normally. These changes may lead to non-cancerous (benign) breast conditions such as atypical hyperplasia and cysts. They can also lead to non-cancerous tumours such as intraductal papillomas. But in some cases, changes to breast cells can cause breast cancer. Most often, breast cancer starts in cells that line the ducts, which are the tubes that carry milk from the glands to the nipple. This type of breast cancer is called ductal carcinoma. Cancer can also start in the cells of the lobules, which are the groups of glands that make milk. This type of cancer is called lobular carcinoma. Both ductal carcinoma and lobular carcinoma can be in situ, which means that the cancer is still where it started and has not grown into surrounding tissues. They can also be invasive, which means they have grown into surrounding tissues. Less common types of breast cancer can also develop. These include inflammatory breast cancer, Paget disease of the breast and triple negative breast cancer. Rare types of breast cancer include non-Hodgkin lymphoma and soft tissue sarcoma.

Global Cancer Incidence:

Breast cancer is the second most common cancer worldwide, contributing with 12.3% of the total number of new cases diagnosed in 2018.
