I learned some new things while putting this issue together!
Our focus is on “Eat, Stay, Play,” reveling in our great eateries and outings around town. Plus, we hope you enjoy some backstories on how some have made it to where they are today. We want to give a big shout-out to all owners, managers, and staff of the local restaurants and businesses that have been affected over the last eighteen months by the pandemic, and have worked tirelessly to adapt to changing guidelines and mandates. We know many of you are understaffed and we appreciate the employees who end up working even harder to make up for it. Thank you for continuing to open your doors and serve the Shreveport-Bossier community, so we can enjoy our favorite meals and visit our favorite places. Geek’d Con Geek’d Con is a fun, safe, family-friendly annual event that took place over 3 days this year at Shreveport Convention Center. Abstractions on Steel by Byron May An opening reception for Byron May’s Abstractions on Steel, an exhibition
of unique three-dimensional abstract art, was held at Artspace in Downtown Shreveport on August 27. May supplied 3-D glasses for guests to view the depth of his artwork. May uses vivid colors with a proprietary soy-based paint on sheets of stainless steel, creating bold images that literally lift from the surface. “The stainless steel gives a unique quality to my art along with the bold colors in my one-of-a-kind paint. Because of the steel, light opens up the layers of the art. The sun does not change the vividness of the colors. heresa Gullo, owner of Gullo’s Fresh Produce and Classic Bake Shop, is a fighter. Since 2011, she and a small team have operated the homestyle restaurant and farm stand that her parents opened in 1970 at 724 E. Flournoy Lucas Rd. in Shreveport.
Spring of 2020 marked the restaurant’s fiftieth year in business, but Gullo was too busy surviving to celebrate. She’d been through too much—including a fire that gutted the restaurant’s kitchen in 2015—to let the pandemic put her out of business. “I knew we were gonna make it when someone came by for curbside pick-up, a regular who’s been coming in here for years,” she said. “I said: ‘Bob, I don’t know if I’m going to make it.’ He said: ‘Aw, yeah, honey, you’re gonna make it. You’re stronger than a garlic milkshake.’” Gullo laughed at the memory, but her eyes sparkled with emotion. It has not been an easy road. She grew up farming Gullo land, which her first-generation Italian immigrant grandparents purchased up and

down the Southeast Shreveport riverfront. Much of what is now the southernmost end of East Kings Highway, formerly Hart’s Island Road, once belonged to her grandfather, a truck farmer named Joe Gullo. The original, hand-painted sign for Joe Gullo’s Produce can still be seen at her business. “When I was five or six years old, my grandfather would put all five of us grandkids in the back of his farm truck,” she recalled. “He’d take us to the field, and he’d leave us there to pick produce ‘til lunch. The next morning, he’d head to South Highlands, and the housewives would come out to buy produce from him.” Gullo’s parents, John and Reatha Gullo, began cooking hamburgers and plate lunches to bring in money during the winter months when farming operations ground to a halt.
“They had a little kitchen in the back, where mom cooked hamburgers in a skillet and had a FryDaddy for the fries,” Theresa said. “Then she started doing casseroles, and she kind of made a name for herself.” Gradually, the restaurant came to be revered for Reatha’s stick-to-your-ribs plate lunches like chicken-fried steak, smothered pork chops, fried catfish (still served every Friday), and spaghetti and meatballs. Theresa assumed responsibility for the restaurant in 2011 after both of her parents passed away within months of one another. Her mother’s funeral was held three days before Christmas. Reatha Gullo had left behind a notebook stuffed with unfulfilled holiday orders for Christmas hams, turkeys, cakes, and pies. The same day that they buried Reatha, Theresa and one of her cousins reopened the restaurant. “We came back to the kitchen after the funeral, and I didn’t know what we were gonna do, but we filled every single order,” Theresa said. A fire in 2015 threatened to shutter the business for good, requiring nine months of renovations prior to reopening. Without a dining room for customers, she was able to hang on thanks to regular customers who continued to purchase to-go meals, fresh produce, and frozen casseroles. Gullo never considered shutting the place down. She remembered her mother’s warning: Because the restaurant is “grandfathered-in” to local zoning ordinances, it would be difficult or impossible to reopen if it were ever to close. “A lot of people would have said, ‘Well, that’s it,’” she said. “I came in here the morning after the fire, and it was the worst thing I’ve ever gone through. But it never occurred to me not to reopen.” In recent years, the reputation of Gullo’s hamburgers has spread throughout the region. he calendar says September. It’s time once again for a changing of the seasons.
I’m not talking about fall. Or back-to-school. Or even Pumpkin Spice season. No, this is the season that every host and hostess looks forward to. It’s the season for entertaining. It’s time to have family and friends over for football games and Halloween, Thanksgiving and Christmas parties. But wait, we haven’t gathered in months. Not to worry. If your hospitality skills are rusty and your turkey platter is dusty, there’s still time to break them out and polish them off. Food is the heartbeat of any great get-together. The key to serving a great spread is variety, according to Chef Blake Jackson, owner of Drake Catering and Whisk Dessert Bar. “A good, simple rule of thumb is to make sure you have a protein — meat or seafood — a veggie and something cheesy,” he said. “Those things, plus sweets, and you have a pretty good spread.” The hottest thing in party food today is charcuterie boards. Don’t worry if you can’t pronounce it. It’s a French word that translate to “the products of a fancy pork butch-

er.” If that still doesn’t clarify things for you, then think of it this way — it’s an adult Lunchable. “That’s absolutely what it is,” Jackson said. “It’s a great phrase, and it’s 100 percent accurate.” A charcuterie board offers an open palette for any host or hostess to mix and match flavors that satisfy any palate. “Keep in mind it doesn’t always have to be the fancy, outrageous cheeses,” he said. “In fact, it doesn’t even have to be all cheese. Here we use a lot of smoked sausage and pimento cheeses.” With the charcuterie laid out, it’s time to turn our attention to the meat of the issue. “Any sort of larger, carved meat is good,” Jackson said. “It’s easy to make sandwiches with. And those can sit out and rest. I’m talking about a sliced pork tenderloin, a brisket, or maybe a smoked salmon. Those can sit out for a while without having to stay piping hot.” Jackson said you want to serve “things that are easy to eat and walk around while snacking.” In this post-COVID environment, the trend has turned from community dips to more individual items, like mini tart shells and shooter cups for things like individual shrimp cocktails or brie and pepper jelly.

Once they invitations are sent, she has a system for predicting party attendance. “A rule of thumb I have gone by is to expect at least 50 percent of the invitees,” she said. “I usually go up a little more than that.” A supportive co-host is a great asset, too. “My husband’s a phenomenal help,” she said. Thompson said her eagerness to host events in her home never wavered during the COVID-19 pandemic. But as a healthcare worker, she understood that some people were more reluctant to gather. She thinks that’s changing, and that suits her just fine. Last, but certainly not least, everyone gets their just desserts. “This time of year, it’s good to do a lot of shooter cups with layered cheesecakes and mousses,” he said. “Cookies and brownies are always a good stand by, especially with kids around.”
“I think people are more willing to come, so I am more eager to throw a party together,” she said.
Jackson offered this tip to anyone trying to keep their guests sated and their own sanity. “It’s about having enough variety that there’s something for everyone without driving yourself crazy trying to make it all,” he said. OK, the menu is set. Now, how do you make the house look inviting and casual without it looking like you spent all day doing it? Jere Thompson says preparation is the key to eliminating stress. And she should know. Her family hosts a party at least once a month at their home in Waters Edge on Cypress Lake in Benton. “I just don’t stress out about it,” she said. “I make sure everything is clean in advance. What I can do in advance, I do. Once the party’s going, I like to mingle and chat.” Thompson makes sure her home is warm and inviting. You won’t find a lot of breakable knickknacks or uncomfortable furniture. She makes sure everyone knows where to find party essentials, from napkins to towels and swim diapers for the pool. She’s also quick to make introductions when she’s sees guests who might not know each other well. The guest list can be the biggest challenge, she said. To mitigate any issues, she likes to identify the type of party

“Art is subjective,” he said. “Somebody put their heart on a plate. It’s so creative. Everybody’s food is so creative. It’s truly an art form. It’s one of those things where you take what you want out of it and get what you put into it. Not a science.” Johnson continues to honor his great-grandmother by keeping her traditions alive in his kitchen. “I do the etouffee, I do the Creole, the red beans and rice, all the traditional New Orleans dishes,” he said. “I take it and I elevate it a little bit, but the root of it is what she taught me.” While he has added his own flair to several of her recipes, there’s one that still falls short in his mind — his favorite — that gumbo he used to stir on great-grandmother’s stove. “I do a really amazing gumbo; it still never touches hers… ever,” he said.

hreveport-based Chef Darrell Johnson won season 10 of Food Network’s “The Great Food Truck Race.” Before that, he competed on the networks “Cutthroat Kitchen.” He also competed in the Louisiana Food Prize and the World Food Championships. He is a culinary school graduate and a food industry veteran. And it all started in his great-grandmother’s kitchen in New Orleans.
“She was my first chef,” he said. “She was a very Creole lady. She was an amazing chef. Everybody in the neighborhood came to her house to eat.” “She loved food. Had a passion for it. We were really, really close. I was the kid at 5 years old on a stool stirring the big ol’ pot of gumbo. She really kept me out of trouble. New Orleans wasn’t a safe place at the time, growing up in the ‘80s and ‘90s, when it was really chaotic. For me, cooking was my peace. It was what kept me calm.” Johnson said his great-grandmother not only kept him safe during some rough years in the Crescent City, she also gave him one of the credos that continues to guide his work in the kitchen — food is an art.

THE MAKING OF A CELEBRITY CHEF
Cooking became Johnson’s escape from those mean streets of his childhood. It was not his only way out. He also was an accomplished athlete and had scholarship offers. Some of his peers chose that route. Others from the neighborhood found their own paths, too. He knew if they could follow their dreams out, so could he.
“Anthony Mackie, who is Falcon on The Avengers, he went to my high school. Li’l Wayne grew up in the same block as me. So many people around me did great things. But there was also some people who did some negative things. For me, I decided to keep myself safe. “I fell in love with cooking. No matter what’s going on, when I cut the stove on, my soul gets calm. It’s one of those things that gives me peace. I knew I could make a great living at it, and do something I love that’s a part of my heritage.” Johnson went from his great-grandmother’s kitchen to Commander’s Palace, where we worked under Emeril Lagasse, who further inspired Johnson to make his way in the kitchen. Johnson then traveled to Paris, where he studied for 10 months before returning to Louisiana. “It came full circle from being the kid at my great-grandmother’s stove to working for world-renowned chefs,” he said. “That gave me the energy and the pride to know I could do it.” Those qualities in Johnson shined through in his work. It’s what caught the attention of Gregory Kallenberg, executive director of the Prize Foundation, when he invited Johnson to participate in Food Prize.
“The Louisiana Food Prize prides itself in elevating the food culture of Northwest Louisiana,” Kallenberg said. “We look for the best and brightest who can help our area become a food capital. Darrell Johnson was an obvious choice for us to pick as a Food Prize Golden Fork Chef. He has the talent, the swagger and, from the moment I was able to hang out with him in his kitchen as he hustled around making his Golden Fork dinner, I knew he’d be a superstar.” As his confidence in the kitchen grew, Johnson set his sights on another goal — television. “I had been trying to get on Food Network for years,” he said. “In 2008, I auditioned for ‘Hell’s Kitchen.’ I made it all the way to the finals. But I didn’t feel comfortable with the process. So, I backed away.” He never gave up, though. He competed in the World Food Championships and traveled, perfecting his skills and building his reputation. Seven years later, in 2015, he charged back into the fray on “Cutthroat Kitchen.” “It was a great show,” he said. “I loved it. I should have won. I finished second, but I got bamboozled. I got hoodwinked. It was a fried food episode. I was the only guy from the South. I said, ‘I got this.’ I made the final round, and the judges went a different way. But I still feel like the champion.” The loss did take a toll on Johnson’s psyche, he said. He was forced to close a restaurant, Crescent City Bistro, in Shreveport. He moved to Atlanta, where he opened a wing restaurant and a pizza restaurant to support his family.
wife and a sous chef he had hired only a month before went to work. “That was part of the show — you could never had done a food truck before,” he said. “There were some episodes with veteran food truckers, but they didn’t do great ratings. The whole purpose of the show was taking people who never had the experience and putting them through the wringer.” His hand-me-down truck was held together with twist ties, he said, and the burners often wouldn’t light. The whole experience taught him to think on his feet. “It was a challenge, but I loved every minute of it,” he said. Johnson said it was hard work and a great team that propelled him to victory on “The Great Food Truck Race.” After the victory, he wanted to take the winnings and invest in another restaurant. It was his wife, “the supreme marketer,” who suggested a different direction. “She said, ‘Hey, we won a food truck show. Why not get a food truck?’ We got the food truck and wrapped it and branded it like the show, and went right into it.”
“It was a challenge, but I loved every minute of it.
“I was in a state of depression,” he said. “Me being a chef, my relationship with food is different. I weighed 360 pounds, I was Type 2 diabetic, with blood pressure through the roof. I was hospitalized for a week. Just in a bad place.” It was his wife who suggested hitting the reset button with a return to The Food Network on season 10 of “The Great Food Truck Race.” “My wife said, ‘We’re going to do this show.’ I’m like, ‘They’re not going to call us.’ They called my phone the day I got out of the hospital and said, ‘Hey, this is Food Network.’ I’m like, ‘Whatever,’ and hung up the phone. She called back and said, ‘No, this is really Food Network. Please don’t hang up.’” Johnson didn’t hang up. The more he listened, the more he believed it could happen. With no previous food truck experience, Johnson, his
But NOLA Creations, with its 40item menu, is no ordinary food truck. “Food truck food is normally a lowered-down version of quick service, because you want to turn and burn,” Johnson said. “Chef’s food takes time. I want them to have that food that looks good and taste good.” Johnson knows it was his passion for food and his enthusiasm for fitness that led him to accomplishing his goals. He also combines those loves to help others through his business.
In addition to the food truck, NOLA Creations offers cooking classes and a food services program for things like summer camps and senior living centers. He also consults with clients on meal preparation and meal planning. He offers low-carb and vegan options. He also is working on a vegan Cajun cookbook. Johnson developed his own line of low-sodium spices as well. “You put them on the bottom of your shoe and it still tastes good,” he said. The key to success in all of it he said is balance, even with foods that are traditionally “bad for you.” “Balance is one of the strongest principles in the universe,” he said. “Understanding how food relates to your body. Number two, you’ve got to make sure you have it in moderation. If you want a cookie, eat a cookie. One cookie won’t make you fat, just like one salad won’t make you skinny.” SBMAG.NET

uccess is personal to each of us. For Heather Harris, it’s achieving her personal best in the hair and makeup industry. Growing up as a pageant girl, she was exposed to the beauty industry early on but embarked on a couple of different career paths. Today, she is 5 years into her dream career in hair and makeup—something she always wanted to do—and loving every minute of it.
“Whether it’s coloring someone’s hair pink or purple or just a natural root touch-up, I love helping my client to feel beautiful,” says Heather. “When my client is elated, I am elated!”
Feeling as if she’d gotten a late start, she was determined “to make up time.” She told herself, “If I’m going to do it, I’m going to do it 150%.” “I hit the ground running and within six months was a Redken hair specialist.” The training to become a specialist from New York Citybased Redken teaches discovering solutions to every hair need in order to meet the needs of all clients.
She works closely with friend and colleague Chrystal Bassett and together they are affectionately known as the “Dream Team” when it comes to hair and makeup for wedding parties. Heather’s goal for a bridal portrait is that the bride “feels the best she has ever felt in her life.” Since weddings are a stressful day, she tells her brides, “Let me take on the stress for you.” And she doesn’t leave the premises once her job is done. She stays with the bride to maintain her hair and makeup for the photographs and reception.
Nominated by Grace Anne Blake, the salon owner at Avalon Hair Salon, Heather became a Salon Ambassador for Mirabella Beauty, a top minerals-based cosmetic line (cruelty free, gluten free and paraben free) sold only in

Heather does makeup for the Krewe of Centaur royalty for their Coronation and Bal (where she was past royalty) and has worked on a few short films and with a team of makeup artists and hair stylists for the Fashion Prize.
In 2020, Heather received the call of her dreams: to inter-
view as a hair and makeup artist for a reality television show. After she was hired, the show was delayed by months due to COVID-19. But once it was finally time, the producers released the name of the show to her: “At Home with the Robertsons.” She was ecstatic. “My children were obsessed with Duck Dynasty. We even have a chocolate lab named Sadie.” Being a busy stylist in Shreveport and a busy mom to three children, she was determined to make it work, even though she would need to travel to Monroe for a few weeks at a time. Heather was able to work out her schedule at the salon in order to participate in the show. “I feel incredibly blessed to work for a salon owner who has my back, and serves as a mentor and a guide. No dream is too big; she’ll do everything in her power to make it happen.”
She wasn’t interested in taking just any television job. “I wanted to be involved in a project I truly believe in. I’m not going to compromise my integrity for any job. I want to make my children proud. This was an easy job to take.” She was fortunate to work alongside a hair and makeup artist who was a trusted friend from high school, and she liked the fact that she shared Christianity and a strong belief in family with the Robertsons. ‘Miss Kay’ was her first client on the first day. “Within 30 seconds of meeting her I knew it would be a good day. She is kind and funny with a sweet presence,” says Heather. She describes the Robertson family as “what you see is what you get—a genuine, kind, sweet, caring family.” Overall, Heather says that working on this show was “the most raw experience I ever had.” She loved being involved and learning the production process and seeing firsthand what goes into reality TV. Her position also gave her an eye into a different side of the hair and makeup industry. After hair and makeup was complete, she would then go on set to check the looks through the cameras during filming and help make any adjustments. While Heather aspires for more opportunities working in the media industry, she doesn’t plan to do it apart from the salon. “Whatever I’m accomplishing, I want to bring my team along with me. Avalon is a very, very, very special place to me.”
Looks like she’s well on her way to achieving that success.

WHAT ROLE DOES MY WINDSHIELD PLAY IN AN ACCIDENT? The windshield is a structural component of the vehicle providing integrity to the cabin when an accident occurs. It absorbs the force of the collision and is a part of the safety restraint system. The windshield keeps the roof from crushing the occupants of the vehicle, allows airbags to deploy correctly, and prevents the occupants from being ejected during a crash. Some assume that windshield cracks are only a cosmetic distraction and do not realize that it can affect the safety of the vehicle. With the addition of ADAS technology to vehicles, many cameras are mounted to the windshields now and have to be calibrated after the windshield is replaced.
WHAT IS ADAS TECHNOLOGY? Advanced Driver Assistance
Systems (ADAS) technology is a group of rapidly growing new features that make the vehicle safer and provide additional tools when operating the vehicle. Some examples of this technology include adaptive cruise control, blind spot detection, collision avoidance system, lane departure warning system, lane keep assist and night vision. Glass Services can calibrate the cameras for most makes and models.
WHAT IS CALIBRATION? Calibration is the process of returning a vehicle’s ADAS to the original manufacturer’s specifications. It is necessary after a new glass installation when a camera is mounted at the windshield. This ensures the safety features function as originally intended. If the system is not properly calibrated, then the system may not function safely. Glass Services employs two full-time calibration technicians so calibrations can be performed at the same time the windshield is replaced. There are a couple of ways these problems can be revised in your child, and the sooner the revision, the better. One of the best options to “fix” these lip and tongue ties is with a medical laser. Similar to the way tattoos can be removed, we can use a special laser that can “cut” the tissues. It sounds like a terrible process, but actually, it is far easier than the traditional method of using either scissors or a scalpel. The process as a whole takes no longer than 30 seconds with a properly trained doctor who has the right equipment. Lasers not only cut and relieve the restrictions, but they also cauterize the wound as the cutting is done, creating almost little to no bleeding. There are other post-procedure exercises the parent needs to perform with the child to prevent any reattaching of the tissues, but the reattachment after having laser revision is much lower than in the traditional method of using scissors or scalpel. If you have questions, it’s always best to consult with your doctors before deciding which method best fits your baby’s needs!
WHAT ARE TETHERED ORAL TISSUES? Tethered oral tissues or “TOTS” for short are areas where there are restrictions in movement due to excessive tissue attachment. Everyone has probably heard the word “tongue-tied” at some point in their lives. Believe it or not, this is a real diagnosis and condition for lots of people! Along with tongue-ties, there are also lip ties on the top lip! Infants born with these ‘TOTS’ can struggle tremendously nursing due to the inability to get a good latch. They also may snore at night due to the tongue not moving freely, thereby creating an airway concern. When they get to the point of trying to talk, they may struggle to speak properly and enunciate certain words.

THE LSUS HUMAN PERFORMANCE LAB BRINGS CUTTINGEDGE TESTING TO THE REGION Louisiana State University Shreveport’s $1.2 million Human Performance Lab, made up of three connected sub-labs, will provide pathways for increased research potential, new teaching opportunities, and community engagement in areas such as oxygen consumption, aerobic capacity, temperature tolerance, motor control, visual tracking, biofeedback, reactivity, and brain activity. The Exercise Science Lab will feature a 20 by 10-foot environmental chamber, the only one of its kind in the region. Opening in January 2022, the chamber will enable human performance research in exercise and environment physiology, human thermoregulation, temperature stress on vulnerable populations such as geriatric chronic disease, and worker health and safety in adverse environments. The Motion Analysis Lab features state-of-the-art Vicon motion analysis capture cameras as well as AMTI force plates to measure both kinematics and kinetics. Finally, the Motor Behavior Lab can analyze and train the central and peripheral nervous system as they relate movement and perception. LSUS students can apply academic concepts to hands-on learning opportunities in fields such as physical and occupational therapy, exercise physiology, strength and conditioning coaching, and rehabilitation, along with earning nationally accredited certifications.

WAYS TO ENTERTAIN TODDLERS without Electronics
Y
ou are somewhere in public. Maybe it’s in your doctor’s waiting room. Or maybe it’s in your favorite restaurant, and it’s taking longer than you expected. Your child is getting restless. And irritable (I mean REAL irritable). You start to panic. What do you do?
The simple notion that, as a parent, you turn to your phone or tablet whenever your child becomes bored, or unhappy, is not the kind of life-lesson we need to be teaching our children. Admittedly, it’s very tempting to quickly shove an iPhone into a child’s hands—alleviating any potential temper-tantrum. That being said, don’t you want them growing up with the ability to entertain themselves? Listed below are a few fun,

brain-boosting ideas to keep on deck should a meltdown start to arise. All can be modified, within reason, to meet your child’s level of cognition for spontaneous fun and endless entertainment. Give it a try! What’s the worst that could happen? 1. I Spy Something… This is classic entertainment and is good for all ages. Pick an object both you and your kid can see, and say, “I spy something .” If your child has a modest vocabulary, as well as a basic understanding of the alphabet, fill in the blank with a letter. “I spy something, and it begins with the letter B.” It can help if you sound it out: “Ba-Ba-Ba.” For younger kids who may only know shapes or colors, substitute those categories instead. I spy something blue, like the sky.” You can also describe the object’s properties: “I spy something, and it’s rough and shiny and smooth.”
2. Name That Tune As best as you can, hum a familiar song. Example include “Twinkle, Twinkle Little Star,” “Old McDonald,” “If You’re Happy and You Know It,” “Baby Shark,” etc. See if your child can identify the song and correctly name it.

3. What is Missing? This game is great to do at a restaurant. Take a few objects—for example, a spoon, a fork and a sugar packet— and ask your child to carefully look at the collection before them. Then cover the items with your napkin. Once covered, remove an item without them being able to see which item was removed. Finally, remove the napkin altogether, and ask your child to correctly name which item is missing.
6. Hidden in the Hand Simultaneously, let your kid see your open, empty hands. Then put an object like a coin in one of your hands and close both of them. Put your hands behind your back and switch the object back and forth between them. Bring your closed hands back in front of you, and ask your child to guess which one is holding the object. Once you’ve done this a few times, reverse the roles and let them hide the object in their hands.
4. What am I? Pick an animal, object or place, and then let your kid ask questions to try to get the correct answer. Examples of questions are “Do you roar?” “Do you live somewhere in a cold or hot climate?” “Are you furry?”
7. Simple, Easy Riddles Come up with easy riddles for your child to solve. For example, “What bank never has any money?” or “What has hands and a face, but can’t hold anything or smile?” If you’re stumped on what riddles to ask, simply Google search “simple, easy riddles for kids.” Just try not to use your smartphone in front of them. It would kind-of defeat the purpose.

Along the way, discover bat stars, wolf eels and all kinds of cool and creepy sea creatures, mermaid stories, sing-a-longs and other Halloween surprises. At the end, meet the Pirate Captain and grab some loot from his treasure chest.

he Shreveport Aquarium has been open downtown since 2017 and is home to over 1000 creatures made up of over 300 different species of marine life ranging from turtles and eels to seahorses and sharks. Regular exhibits and special events cater to both kids and adults. The motto: Come Curious, Leave Inspired. Hunt for treasure, gems, fossilized shark teeth, and ancient marine specimens in the treasure mine. Meander through the exhibit to view all the varieties of marine life. Experience touch pools including a moon jelly and watch feedings of alligator snapping turtles, sharks and sting rays (check the feeding schedule)! See how John Michael and Amber Fleming paired French Acadian charm with traditional Southern influences—such as gentle hues, hardwood floors and reclaimed materials—all to create an elegant yet welcoming space for the whole family. 60

rierson, LA. John Michael Fleming has seen it all. Being a third-generation carpenter and owner of Mike Fleming Construction of Louisiana, he has garnered lots of inspiration for designing and building a home. Over the years, he has been involved with a wide range of projects, from the suburban, South Highland fixer upper to the rural, East Texas ranch house estate. So when John Michael and his wife, Amber, decided to embark on the journey of building a new home for their blended family, they knew exactly what to design for. Their aim? To design a family home rooted in traditional, Southern Louisiana architecture with modern conveniences that met the needs of their family and lifestyle. Inspired by some of Louisiana’s finest residential architects—Al Jones, Ben Patterson, and the late A. Hayes
Town—the Fleming’s considered the region’s rich architectural past, diverse culture, and all the finest design elements it had to offer. Reflecting colonial and Georgian influences, along with John Michael’s expertise in residential construction, the home needed to incorporate practicality—or as John Michael stated, “it needed a sense of proportion and symmetry.” Likewise, in the true spirit of A. Hayes Town, the Fleming’s also wanted the ability to use old salvaged materials to better add texture and create an “unsupervised interest” in their new home. Simply put, they wanted to create a sense of place. “The goal was for this to be our forever home,” says Amber. “Both John Michael and I understood how important it was to capture the authenticity of the style of home we wanted to design. We worked very hard to ensure we were getting exactly that essence and practicality.” John Michael admits the design of the home was rooted in many factors aside from its architectural history and design details. “We also wanted to incorporate our personal taste, the site, and the local surroundings of Desoto Parish. And even though Amber and I had a good understanding of architectural design, ultimately we saw the house as an opportunity to identify not only our needs, but the needs our entire family.” It was very important to both John Michael and Amber that each of the children have their own space and
all have equal “ownership” of their new family home. The result is the ultimate place for Southern comfort and style that counterbalances all its rustic elements—wood beams, exposed reclaimed brick, fireplaces—with refined fixtures and beautiful finishes. Nothing is too particularly precious or formal. The home boasts five bedrooms and three-and-a-half bathrooms, covering a little over 3,850-square-feet of heated space, and is full of modern conveniences and vintage touches. There is a chef-style kitchen, an open living-dining area, a master suite with 18’ vaulted ceilings, and a second-level entertainment room. SBMAG.NET

In addition to the graceful Southern front porch, there are two additional large, outdoor gathering spaces in the rear of the home—both offering panoramic views of the back yard and expansive wooded lot. Dormers, porches, sloped roofs, exposed beams, reclaimed timber lintels and reclaimed brick—what’s not to love? Step inside to see what makes this Southern belle of a home really stand out.
ENTRY
Upon entering the front door, you are greeted by soft, white oak-hued flooring which extends throughout the main floor. To the right is the dining room (more on that space below). Straight ahead is the living room, which opens up to the backyard thtough its floor-to-ceiling windows. The layout, and all the details—from the color selection, exquisite light fixtures, hardware, and furnishings—offers a natural gathering spot for guests. “Using many of the basic fundamentals I’ve learned through residential construction, the home really is about the way we, as a family, live,” confesses John Michael. “Each thoughtfully design space helps enrich our lives and experiences. While beautiful, the house is very much functional.”
DINING ROOM
Custom crown molding milled from antique heart pine beams, along with the library paneling add character to the dining room’s striking black walls. “This room was inspired by an article I found in Architectural Digest,” claims Amber. “I had never seen deer heads look more beautiful and knew this was the perfect compromise with John Michael to display his mounts in the house.” A vintage, gold colored French mirror flanked by of two of John Michael’s deer mounts helps create a beautiful vignette in the space—offering not only the right amount of balance, but providing a ‘pop’ of color that creates a stunning distraction. The dining table, in demure tones, comfortably caters to the special niche of the space.
KITCHEN
The chef’s kitchen is designed and equipped to satisfy the needs of the family. This sleek, space, with a central island, easily allows one to serve up snacks or drinks with ease, while carrying on a conversation with friends and family— whether they be in the living room or breakfast nook. The marble countertop and backsplash, along with the farmhouse sink, adds a sense of history to the space, complementing the walls’ white hues. The Fleming’s were very particular in being able to use the same countertop material as the backsplash, for a seamless look. “The solid-surface backsplash creates a look that tile simply cannot,” says John Michael. In unexpected harmony with the traditional feel of the space, the kitchen features modern, stainless-steel ap-

pliances. The showpiece being a sizable GE Monogram® range cleverly placed under a wall of windows. A discrete flush-mount vent hood provides the needed ventilation. White oak mixed with white painted cabinetry provides generous space for dinnerware and kitchen appliances. The mixing of the natural wood with white gives a warmer feel to the trendy all-white kitchen. Lighting is everything this kitchen—not only for being able to see what you’re cooking and eating, but to set the mood. The light pouring in from the windows is amazing in the morning. In the evening, you get to really appreciate how pretty the scones and pendants are,” says Amber. The under-cabinet lighting provides ample brightness for food preparations but also illuminates the marble backsplash.

Both John Michael and Amber appreciate simple elegance. And no area reflects that notion better than the living room—which is immediately adjacent, and open to, the kitchen and dining areas—creating one contigu-

“Among the living room’s many virtues,” adds Amber, “it instantly makes the home feel larger than it actually is. It is comfortable enough for a small number of people and big enough for large gatherings when we have friends over. It’s the best of both worlds.”

ous space. Its reclaimed heart pine beams help define the space in the 18’ vaulted ceiling, soft white, gallery finish walls allow for the beams and brick to sand out. Avoiding the use of any interior walls, the living room’s openness helps connect the indoor spaces with the adjacent kitchen and dining room. Amber appreciates the openness which allows for ease of conversation and congregating, a treat when its just family or when entertaining. The abundance of light allows a continuous view of all things outdoors, whether you’re cuddled up on the couch or socializing with friends and family in the kitchen.

Understanding the need to delineate between private and public spaces, the master suite is nicely isolated from the rest of the house—inconspicuously tucked away off the living room. Downplaying the link between the rest of the house by keeping it isolated, the main design elements are the reading nook surrounded by its large, floor-toceiling windows—which brings in both natural light and views of the backyard. An 18’ cathedral ceiling, coupled by a fireplace with a custom-made antique cypress mantle, helps complement the space. According to Amber, “there are so many beautiful elements in the master suite—the vaulted beamed ceiling, fireplace, and the nook with floor-to-ceiling windows— that the area can easily stand on its own without having to add too much. We were able to bring in simple, but thoughtfully designed, furnishings that allow the room to stand on its own.” The master bath is a true work of art. Large porcelain

joyable outdoor spaces are. When you work from home, your outdoor space is your get away” adds Amber. The painted brick fireplace creates a focal point, adds a heat source, and visually links the space with several design elements from inside. The fireplace, with mounted flat-screen television above, is practical and stunning. The symmetry of the furniture arrangement sits easily and elegantly underneath the exposed, reclaimed beams of the terrace’s upper architecture. Granite countertops help frame the terrace. Small touches add visual interest to the smooth blend of colors and textures in this sophisticated, but comfortable, outdoor escape. The furniture and decor create just enough contrast to the hardness of the brick and sandstone pavers, furniture edges, and exposed beams.
WHAT’S NEXT?
The Flemings admit their home isn’t done. The lists continues to grow, but hopefully a few up-and-coming projects will materialize in the near future—a shop for John Michael (for all his toys), an in-ground pool, and more landscaping. “Creating a home takes time,” Amber admits. “There is no character if you simply go to the store and buy everything at once. It is a journey. And one to be enjoyed!” “Hopefully this winter,” Amber adds, “I will also create a more cozy porch space, off the living room and master bedroom. A farmhouse porch just begs for a deep swing, piled with pillows and a tiny place to plant my cup of coffee.” tiles align the shower, and a marble mosaic tile mat helps balance the arc of the beautifully shaped tub. A large unobscured window can be found behind the tub, complimented by a smaller window in the shower. This look completely transform the baths, a nod to the Fleming’s thoughtful creativity. “I wanted light,” Amber confessed. “John Michael gave me light.”
UTILITY / LAUNDRY / SHE-ROOM
Focusing on maximizing storage, the space within the laundry room is very organized and simplistic as possible to avoid clutter. As Amber can be incredibly efficient at keeping the house clean and tidy, this room doubles as her ‘she-room.’ Located between the porte-cochere and the kitchen, it gets a dose of Amber’s personality with its sea salt cabinets and acrylic pulls. Surrounding a large window, a mural from the Rifle Paper Company adorns the back wall. “I spend a lot of time in this room,” admits Amber. “I wanted it to be fun and bright; a place I wouldn’t mind being. And it is!”
COVERED TERRACE
Are there any memories sweeter than those of childhood suppers on a covered terrace, or swinging the night away on the perfectly-designed porch? Face it—Southerners pay for our mild winters with our sultry summers, and while modern air-conditioning may have made those spaces of the past unnecessary, the Fleming’s couldn’t imagine their home without this covered space. “During the quarantine, I think we all learned how important en-

SCI-PORT STEAMS AHEAD
A
little more than three years ago, Sci-Port embarked on a journey that was as unpredictable as Louisiana weather. The entity was completely reorganized under a new and separate entity, Red River STEM, Inc. With the assistance of the Community Foundation of North Louisiana and its Chief Executive Officer, Kristi Gustavson, a Board was formed for the new entity which was chaired by Jay Pierson who has since led Sci-Port through an incredible re-emergence as a premier science center. As the new Sci-Port Discovery Center celebrates its third anniversary, the Board is also celebrating the fact that the month of July marked a record admission revenue for the Center! According to Pierson, “We have endured some rough moments as we struggled to reorganize and keep the doors open for our guests throughout the COVID-19 crisis. Our Board and staff are to be commended for their efforts to save Sci-Port Discovery Center. We believe we are now on stable ground and see evidence of success through increased attendance, event rentals, grant receipts, outreach programming recognition and accolades from our community.” Under the direction and leadership strength of Pierson, the Sci-Port Discovery Center is now emerging from what was at first conceived to be an emergency stabilization reorganizational effort to a vibrant and ambitious team of dedicated individuals who are committed to providing the community with hands-on STEM (Science, Technology, Engineering and Math) educational opportunities through the Sci-Port Discovery Center. With the recent appointment of new Board members, Jay has identified priorities for the new Board which include the assignment of committee responsibilities in: Finance & Accounting, Fund Raising & Grants and Programs & Exhibits. According to Executive Director Dianne Clark, “Sci-Port is so much more than a building. So often I discover community members who are unaware of the breadth and depth of our community outreach initiatives. This summer, in just one of our many grant-funded programs, GSK Science in the Summer’s “Be an Engineer!” was held at 19

sites through nine community partners whose missions focus on serving homeless, migrant and foster children. Nearly 800 youth were provided with hands-on STEM-related educational activities!” Recently selected by the Louisiana Board of Regents to serve as the STEM center for Region 7, Sci-Port is developing a network of resources to improve the availability of STEM resources for the region and beyond. One example of their commitment to this new responsibility is the establishment of a partnership with the Caddo Parish School System’s Broadmoor STEM Academy (BSA) to provide STEM-based resources for students and faculty. In addition, Sci-Port will work with BSA administration and faculty to help the school reach its goal of becoming the premier STEMbased educational facility in our area. We are rebuilding and focused on our mission.” Sci-Port Discovery Center’s mission is to provide a fun, educational environment for people of all ages to explore and actively engage in the world of mathematics, science, and technology. Sci-Port serves to spark curiosity about the world around us, provides hands-on tools for using scientific discovery in everyday life, and encourages a passion for life-long learning. One of Sci-Port’s newest learning experiences is the Chandra X-Ray Observatory, currently on loan from NASA until Fall 2022. Chandra is one of this nation’s greatest observatories, sharing this honor with the Hubble Space Telescope and the Spitzer Space Telescope. It is designed to explore the many wonders of space such as exploded stars, colliding galaxy clusters, and swirling matter around black holes. The exhibit includes some of the first x-ray images of Sagittarius A, the supermassive black hole located at the center of the Milky Way. Another immersive exhibit at Sci-Port is the Adventures of Intrigue. This new and permanent exhibit is an open air Escape Room type adventure. Visitors use the entire Gallery of Intrigue to solve history-based adventures by answering puzzles, riddles, and mysteries. The gallery is filled with relics and replicas from Shreveport history dating back to Captain Henry Miller Shreve’s arrival in 1835. Look for Sno-Port 2021 in November. Lending a Paw NATIONAL SERVICE DOG MONTH
S
eptember is National Service Dog Month, a time to honor the extraordinary work these special dogs do every day for the people they love and serve. A service dog is specially trained to protect, take care of, and be a companion for a person with a disability, allowing them to lead a more independent life.
As well as being devoted and loving, service dogs are specifically trained to perform certain tasks so that a person can manage their disability and live a fuller life. Some service dogs are trained to retrieve objects or help with balance for individuals with physical limitations, while others are trained to give seizure or diabetic alerts. The bottom line is that a service dog is trained to perform tasks directly related to their person’s disability.

For example, vision support dogs help blind or visually impaired individuals get around obstacles and navigate streets, sidewalks, and crosswalks. Hearing support dogs help alert deaf or hard-of-hearing individuals to important noises, such as doorbells, smoke or fire alarms, telephone, or even an oven timer. Mobility dogs assist individuals with physical disabilities or individuals with balance issues with tasks like turning lights on/off, retrieving objects, and pushing elevator buttons. Medical alert dogs help alert the onset of medical emergencies such as a seizure or low blood sugar or the presence of allergens, and many more medical-type emergencies. Psychiatric service dogs assist individuals with disabilities such as obsessive-compulsive disorder, schizophrenia, and other conditions. The work performed by these service dogs includes actions like entering dark rooms
and turning on a light to help mitigate what might be a potential stress-inducing situation for certain individuals, interrupting repetitive behaviors by people with obsessive-compulsive disorders, and reminding a person to take medication. Additionally, many psychiatric service dogs help our nation’s wounded warriors suffering from conditions including Post-Traumatic Stress and Traumatic Brain Injury. They help individuals that suffer from PTSD by alerting them to impending mental episodes and generally being a comforting presence by giving support and a sense of calm for daily psychological stresses. Service dogs can range from small to large. A service dog’s size is condition based on the tasks needed to help mitigate a disability. For example, a Chihuahua is not a good choice to pull a wheelchair but could make an excellent hearing support dog. In contrast, a good choice for a mobility or vision support dog could be Labrador Retrievers, Golden Retrievers, or German Shepherds.
Training a service dog is intensive and can take up to two years. In addition, the process is costly, with training costing up to $30,000 per dog. With the help of a service dog, a person with a disability can better manage and live a better life.

he Louisiana State Exhibit Museum has opened a display of two prominent women artists titled, “Origins and Retrospective: A Celebration of Color,” which will be open through October 8, 2021. A Curators’ Reception will be held on Thursday, September 16, from 5-7 pm in the West Wing Gallery. “Origins by Jerry Wray” will feature works in watercolor and acrylic on paper, canvas, and driftwood by Shreveport artist Jerry Wray (1925-2018). Lovingly curated by her daughter, Mary Virginia Hill, you can expect a true celebration of color. Her creations were her non-verbal language for expressing her spiritual journey. “The message in my art is my love for God,” she said. For decades, Jerry Wray shared what she saw in God’s beautiful handiwork with a multitude of art lovers, collectors, and art students. Now, if you’ve never heard of

Jerry Wray or seen her vast collection of work, here’s all you need to know to convince you that she is a Shreveport legend and art world icon. Disciplined and certainly prolific, Jerry Wray painted over 1000 pieces of art in the last 10 years of her life. Still, she found the time to paint with her daughters and grandchildren. Her goal of leaving something for prosperity has been accomplished. Her legacy is not only what she has left on her canvas but how she touched the lives of so many people. Mabruka Alfaidi, PhD, Postdoctoral Fellow in Pathology at LSU Health Shreveport, has been selected as a recipient of an American Heart Association Career Development Award. This prestigious award supports highly promising healthcare and academic professionals in the early years of their career by funding innovative research and training to assure the future success of the awardee as a cardiovascular independent scientist. During this award’s funding duration of three years, Dr. Alfaidi will complete her postdoctoral fellowship (which is also supported by the American Heart Association) and transition to a tenure track faculty position. She plans to continue studying the mechanism by which heart disease is developed, particularly heart attacks, with a goal of creating a small molecule inhibitor that can prevent endothelial dysfunction from inside endothelial cells. Achieving this goal holds tremendous promise in the treatment and possible prevention of heart attacks. LSU PRESIDENT WILLIAM F. TATE IV VISITS LSU SHREVEPORT, AIMS TO UNITE THE LSU CAMPUSES LSU Shreveport hosted LSU President William F. Tate IV as part of its faculty and staff back to school festivities. Tate’s visit started with a meet-and-greet and open forum with LSUS faculty and staff, and concluded with a tour of the Cyber Collaboratory. The visit was President Tate’s second of the calendar year after he toured the campus in May as part of the LSU presidential interview process. Chancellor Clark fondly recalled President Tate’s particular excitement about the Shreveport campus and how whether he was named LSU’s new leader or not, he wanted to return. Chancellor Clark said, “President Tate was asked during his interview what made the greatest impact on him out of all the things he saw and experienced while learning about the LSU system, and without hesitation, he said it was when his inner ‘geek’ came out at the LSU Shreveport Cyber Collaboratory. His acknowledgement of and desire to be a part of the Shreveport campus means a lot to us, and we’re excited to welcome him back.” President Tate’s presidency began on July 1, and he utilized his return to the Shreveport campus to encourage and inform. “I know I’m excited about partnering with Chancellor Clark about things we can do systemwide to add value here in Shreveport, add distinctiveness to Shreveport that will link us to other parts of the system so that we look better to the outside world with the LSU flag flying”, President Tate said. “So, I think that’s a big part of what the strategy has to be going forward. We look better when we’re united.” The LSUS Foundation organized the visit by ensuring a seamless schedule and experience for President Tate.
The Psychology and Business programs at LSU Shreveport have been ranked #2 in the state for affordability by UniversityHQ, a leading independent organization offering resources for prospective college students. Fellow purple and gold campus, LSU Alexandria, was ranked number 1. Nationally, the LSUS Psychology program was ranked #29 and the Business program was ranked #43. “The business department is proud to lead business programs in affordability without sacrificing the academic quality people have come to expect from LSUS,” Interim Dean of the College of Business Dr. Mary Lois White said. “Our goal is to provide students from diverse backgrounds access to state-ofthe-art resources, instruction, and mentorship from industry-leading faculty.” Dean of the College of Education and Human Development Dr. Dennis Wissing added, “I am so proud of our dedicated faculty and staff of the Department of Psychology, and especially our graduates. We proudly offer a high-quality degree at an affordable cost.” LSUS NOEL MEMORIAL LIBRARY FEATURES “CARTOGRAPHIC CURIOSITIES” HISTORICAL MAP EXHIBIT, FIRST SINCE EARLY 2020 The James Smith Noel Collection, located on the third floor of the LSUS Noel Memorial Library, unveiled its latest exhibit, Cartographic Curiosities” on August 23 which will be available to the public through October 15. Guests are welcome to visit from 8:00 a.m. to 4:30 p.m., Monday through Friday. The exhibit showcases cartography featuring maps from around the world dating from the sixteenth to the nineteenth century. Maps have served as detailed visual representations of the human desire to explore and learn. From oblique city views, to the creation of orderly grids, to elaborate charts plotting travel to distant lands, maps have grown in scope and complexity alongside humanity. Per state recommendations, guests are asked to wear a mask or face covering at all times while on the LSUS campus.
