Summertime CORN SALAD
• 3 cans shoepeg corn
• 1 cucumber, peeled & chopped
• 1 tomato, seeded & chopped
• 1 bunch of green onion, chopped
• 1 green pepper, chopped
• 1 jar diced pimiento
For Dressing:
• 1/3 cup plain or vanilla yogurt
• 2 Tbsp mayo • 2 Tbsp vinegar • 1/2 tsp dry mustard
• Combine veggies • In a separate bowl whisk together the ingredients for the dressing • Pour over veggies and chill for several hours
