SING moves to area By Betsy Denson For The Leader East Downtown’s loss is The Leader area’s gain. Cuc Lam, the operating partner at the Singaporean-inspired eatery SING opening this spring at Revive’s 34th and Ella development, said that both Garden Oaks/Oak Forest and East Downtown were on the short list for SING. However, news of a highway expansion downtown and questions about what would be taken by the city as eminent domain tipped the ball in our favor. It also caused Lam and business partner Jerry Lasco to fine tune their vision. “We were going to have people walking over from Dynamo games and Astros games, but now we are going to have more families, said Lam. “I’m excited about the opportunity to introduce this food to the neighborhood. Lam said that while some people might find the concept of Singapore cuisine intimidating, she’s eager to open and show customers something different. “Houston is a fascinating food city, said Lam. “This is the city you can try this in. People crave the excitement [of new dishes]. We are going to take it one dish at a time. The food prices will no doubt be popular with patrons. The most expensive menu item is $12 and appetizers will be $4 to $5. Beer, wine and a $6 sake cocktail will also be on the menu. Lam said that more than 90 percent of the menu items are gluten free. As someone who has hosted more than 100 pop-up meals in her home, Lam has had plenty of experience introducing new foods to diners. “You take Bak kut teh which is a strange word to people but then you explain that it’s pork bone noodle soup, she said. “You try to connect all the ways the food came to be. You

tell a story. And as a former Houston Press restaurant critic who was the columnist for the openings and closings section, Lam has gotten a feel for why restaurants succeed, or fail. “There are so many ups and downs in the restaurant industry, she said. “For those who didn’t make it, maybe they didn’t learn fast enough, or change fast enough. Lam says that they are committing to what she calls NextGen dining, providing an app for quicker service and partnering with a delivery service to get hot food fast to increasing numbers of people “who really prefer having food on their couch. Above all, Lam is determined to be flexible. “We’re not going to get stuck in any process and will be constantly looking for ways to improve, she said.

A jack of all trades, Lam has been a middle school English teacher and an IT professional. She used to own a bar and grill in the Westchase area where she honed her cooking chops during theme nights such as Kung Fu Wednesday where she served the Asian dishes she’s been cooking for years with her mother and aunts since her childhood in Long Beach, Mississippi. “My heart is in the kitchen, said Lam. It was her love of food which led her to do pop-ups in her home, and it was serendipity that at one of these popups Thomas Nguyen of Peli Peli was in attendance. “He said he knew of a guy who wanted to open an Asian concept restaurant, said Lam. That guy was famed restauranteur Jerry Lasco of The

Tasting Room and Max’s Wine Dive, and within two meetings Lam and Lasco cemented the deal. “He told me that I was the one he was looking for, said Lam. The focus on Singapore cuisine was Lasco’s idea and after an August business trip to Singapore, Lam understood how she wanted to approach SING. “A lot of the dishes are not new to me, said Lam, whose father is Chinese and whose mother is Vietnamese. “It’s all about the variation of spices, noodle or broth that’s used in presenting each dish. She’s clear that SING won’t be a fusion restaurant but it will honor Singapore’s reputation as a melting pot for cuisines such as Vietnamese, Thai, Chinese, and Indian. “Vietnamese Pho is going to be Vietnamese Pho, said Lam. Monica Danna with Revive told The Leader that SING will be on the end cap of the center closest to the boot shop and that there will be tables and chairs for dine in.

Cadillac ranch gets memorialized By Kim Hogstrom For The Leader In July, The Leader brought news of the new Willie Nelson mini-mural painted on an ugly stoplight box on the corner of Ella Boulevard and 34th Street. Now, a new mural of the famous Texas icon, the Cadillac Ranch, is entertaining passersby at 33&1/3@Thirtyfourth Street, the official name of the center under development at the same address. The center is slated to open in early 2018. Both the murals were commissioned by local commercial real estate developer, Chris Hotze, who is developing the new retail center. Hotze says he is sensitive to the aesthetic of the community; he understands its love of art and treasured one-of-a-kind character. “When we first decided on a mini-mural at 33&1/3, the city’s project managers brought us the idea of Willie, and we loved it, Hotze stated. “Still, I had no idea the feed-

back would be so positive. With the community receiving the first so well, we decided to add the Cadillac Ranch to celebrate our pride in Texas’ remarkable art and artists. The Cadillac Ranch mural depicts the cars jutting out from the Texas soil at sunset. Unlike the Willie mini-mural, the new one is eight feet high and 80 feet long. Its colors are bright and cheerful. It’s almost impossible to view the striking work of art, depicting a quirky icon of Texas art, and not smile. There are about 180 murals in Houston. They are managed by a public-private effort that falls under the umbrella of the Mayor’s Office of Cultural Affairs, the department of public works, the Houston Arts Alliance and several management districts. About 40 percent of the works have been privately funded, such as Willie and Cadillac Ranch. Some are pretty, some abstract, a few murals honor a

local landmark, and a couple depict a person relevant to the work’s location. The graffiti artist who painted both Willie and Cadillac is a resident creative at UP Art Studios. Gelson Lemus, (street name: w3r3on3 – or “we are one) depicted Nelson against a Texas flag (from an original photo shot live by Hotze’s own daughter) and illustrated the Cadillac Ranch at sunset. “The artist is awesome, states Hotze. “Both the works are totally amazing. Mural project managers and married couple Elia and Noah Quiles founded UP Art Studio in the Heights’ Winter Street Studios, and work hand-inglove with the city to execute the murals. The two have experience managing urban public art projects of all sizes - nationally and globally. “We are dedicated to civic pride though civic art, Elia Quiles explained. “We particuSee Cadillac P. 2B

Making Happy Feet One Sole At A Time!

Bobcat Teddy’s blends new and old played inside and out. “One guy brought me in a photo of a blue car in front of Jimmy’s from years ago and asked me if I’d put the picture up in the new place,” said Baker. “I told him I’d do him one better.” A mural sponsored by Lone Star Beer and created by old school muralist Magik replicates the photo on the walls. “They absolutely love it,” said Baker. Another nod to tradition that the old timers might appreciate is the price of beer. “I promised them that all the beers that Jimmy had will stay the same price,” said Baker. The draft beer and cocktail menu will be new however. Bartender Alli Genoway from Revelry will lead the cocktail program. As for the spirits, Baker told CultureMap that he has a simple goal. “The plan is to have the best Irish whiskey selection in the city, which isn’t tough to do because there aren’t that

By Betsy Denson betsy@theleadernews.com Ted Baker knew that when he leased the space at 2803 White Oak Drive from Braun Enterprises that for nearly 70 years had been Jimmy’s Ice House, the community was going to be keenly interested in what he had planned for the bar. His answer – Bobcat Teddy’s Ice House – will have its soft opening this week. Baker, the owner of Revelry on Richmond which has been open for three and a half years, said the location for Bobcat Teddy’s is ideal. “There is such a synergy here with Fitzgerald’s, and Christians Tailgate and BBs Café,” said Baker, who also noted the nearby bike trail. “I love the Heights.” Baker said he knew he wanted to pay homage to Jimmy’s, especially in light of the fact that the regulars were coming weekly to watch the build out. He kept all the old beer signs which are dis-

many Irish whiskies. If they make it, we’re going to carry it. We’re going to put Jameson on tap, which is something no one is doing.” Although the establishment won’t have an in-house kitchen, it will have regular food trucks and plans a steak night. Chapman House Smoked Meats which does BBQ nights at Brash Brewing and Johnny’s Gold Brick also plans to offer their food at Bobcat Teddy’s. Early in the week, Baker said that they were just one inspection away from being able to open Bobcat Teddy’s. When customers stop in for a drink, they should be sure to greet the bar’s namesake, a taxidermy Bobcat. “We were thinking about calling it Jimmy’s but the old owner might open something else with the name,” said Baker. “We were calling it Bobcat Teddy’s new place as a joke but then we needed a name for the liquor license.”

Hotze’s choice will actually help mitigate Houston’s flooding, rather than add to it. “Our new 33&1/3 is meant to enhance the lives of people by setting a standard of quality that will impact the entire neighborhood. What does working for The Leader mean to you?

The Leader means “community in every sense of the word. I have met many people at our front desk, some who are advertisers and have become friends, some I have known since high school and haven’t seen for 40 years! Our neighbors come by sometimes just to comment on something that we have run in the paper. Even though they may not always agree with us, when they comment we know they are reading us so we must be doing something right! I do know one thing about living in this neighborhood for almost 60 years: neighbors may move away during the course of their lives for various reasons but a really high percentage move back. I think it has something to do with a love for our community.

SPX, St. Thomas dominate All-State, District teams

Need a fast response handyman

By Mike Tenney For The Leader The St. Pius X football team pretty much dominated the TAPPS landscape this past season, averaging 50 pooints a game and losing the Division I state championship by a point. So it would make sense that the Panthers, who were 11-2 overall, undefeating Division I, District 3 champs and state runner-ups, would dominate the All-District and even the All-State selections. The Panthers had basically their entire starting lineups on both the first and second team offenses with eight players named to the first team and three to the second unit. Defensively, it was almost the same way with six players voted on to the first squad and three more onto the second. St. Thomas, which placed third in the district, was also well-represented on both sides of the ball, getting 10 players onto the first and second team offenses and nine on the defensive units. A total of 17 players were chosen to the District 3 firstteam offense and St. Pius X had nearly half of them with eight. Senior tackle Tyler Vrabel, senior wide receiver Jacob Jefferson, junior quarterback Grant Gunnell, junior tackle McKade Mettauer, junior wide receiver Jalen Curry, junior wide receiver Chase Lane, junior running back Kaleb Ducros, and senior kicker Connor Spiller were all named to the first team for the Panthers. Five of those players also achieved TAPPS first team AllState status as well with Gunnell, Vrabel, Ducros, Curry, and Jefferson the ones earning double honors. Lane, Mettauer, and Spiller were also named to the All-State second team offense. As for the all-district second team offense, senior lineman Matthew Morgan, junior wide receiver Trenton Waggoner, and sophomore running back Jalen Davis were the Panthers selected. For St. Thomas, which placed third in District 3, it

went the other way with a trio of Eagles named to the first team offense with seven others were on the second team Senior lineman Max Banes, senior wide receiver Parker Nelms, and junior running back Ian Wheeler were the St. Thomas All-District firstteamers. Banes and Wheeler were also TAPPS second-team nominees. Senior running back Blaine McDaniel, senior kicker Jacob Manley, junior quarterback Peyton Matocha, junior lineman Bryan Guidroz and Corey Felan, and junior receivers Dylan Dixon and Hunter Cheek were the Eagles’ second team offensive selections. Defensive, St. Pius X again had nearly half of the 14 players chosen with six players on the elite list. Senior defensive back Ricky Lester, senior defensive back Jarvis Johnson, senior linemen Jacob Craig and Benil Johnson, senior linebacker Colby Bonds, and junior linebacker Bruno Forestieri represented the Panthers on the first team rundown crew. Lester, Craig, and Forestieri were also named to the AllState first team defense. Senior Matt Dillard, junior lineman Thomathan Good, and junior linebacker Cody Roberts were the Panthers’

listed on the All-District second group. St. Thomas had four players named to the first team defense, including Motacha, who was their quarterback but also played some safety during the season when the Eagles faced a team that like to throw, which was most of the teams they played. Senior cornerback Jackson Reese, senior lineman Jackson Hanna, and senior linebacker Kristopher Brolan were the other Eagles on the All-District defense and Reese was a second-team All-State defender as well. The Eagles had six players voted onto the seocnd team District 3 defense, including three sophomores who got a lot of playing time last season. Senior linebacker Melvin Larkins, senior lineman Christopher Rose, junior back Brandon Hondros, sophomore safety Daniel Coco, and sophomore linebackers Jackson Phillips and Cooper Thomas were among the 16 players named to the second team defense. Nelms, Brolan, and Matocha were also All-State honorable mention at their respective positions for St. Thomas.
